Celem pracy jest określenie wpływu trzech metod suszenia: konwekcyjnego (SK), sublimacyjnego (SS) i mikrofalowo-podcisnieniowego (SMP) na wartości pracy ściskania i wartości pracy przecinania marchwi ponownie uwodnionej. Badano wpływ blanszowania (BL) i odwadniania osmotycznego (OS) na odporność materiału na ściskanie i na przecinanie. Marchew po ponownym uwodnieniu charakteryzuje się obniżoną odpornością na ściskanie i podwyższoną odpornością na przecinanie w stosunku do surowca. Cechy mechaniczne zależą od wielkości ubytków rozpuszczalnych składników suchej substancji występujących podczas rehydracji i od stopnia zachowania pierwotnej struktury komórkowej.
The purpose of the work is to determine the impact of three drying methods: convection (SK), sublimation (SS) and microwave-vacuum (SMP) on the values of compression work and cutting work for rehydrated carrot. The scope of the research included the impact of blanching (BL) and osmotic dehydration (OS) on material resistance to compression and cutting. Rehydrated carrot is characterised by reduced resistance to compression and higher resistance to cutting, compared to raw material. Mechanical properties depend on the amount of losses in dry substance soluble ingredients occurring during rehydration and on primary cellular structure maintenance level. - Źródło:
