Germinability and the content of soluble carbohydrates were analysed in cereal seed (winter rye, cv. Warko; spring wheat, cv. Santa; hexaploid winter triticale, cv. Fidelio and cv. Woltario). Seed moisture content (mc) was equilibrated over silica gel to 0.08 g H2O/g dry mass and stored in a desiccator at 20oC for up to 205 weeks or were equilibrated to mc 0.06, 0.08 or 0.10 g H2O/g dm and subjected to artificial aging at 35oC in air-tight laminated aluminium foil packages for 205 weeks. It was shown that the rate of seed aging depended on the species and seed moisture content. The fastest decrease of germinability upon storage was observed in seed with the highest moisture level. Complete germinability loss for winter rye, winter triticale cv. Fidelio, winter triticale cv. Woltario and spring wheat seed with mc 0.10 g H2O/g dm3 occurred after 81, 81, 101 and 133 weeks, respectively. Fructose, glucose, galactose, myo-inositol, sucrose, galactinol, raffinose, stachyose and verbascose were the main soluble carbohydrates found in the seed. The obtained data on the contents of specific sugars and the composition of soluble sugars fraction in seed of rye, wheat and triticale did not corroborate any profound effect of reducing sugars, sucrose and oligosaccharides on seed longevity.

This study aims to analyze the lipid, carbohydrate and protein content of Chlorella pyrenoidosa after being treated with the tofu wastewater. The method used in this study was an experimental method with 4 treatments and 3 replications. The treatment was performed by administering different concentrations of the tofu wastewater to the C. pyrenoidosa. The concentrations used were 10%, 15% and 20%. Determination of these concentrations was based on the preliminary test. The main parameters observed were the lipid, carbohydrate and protein content of C. pyrenoidosa and the supporting parameters were the growth rate, doubling time and characteristics of the tofu wastewater. The study was conducted for 8 days using the batch culture method. In the exponential phase, the microalgae were harvested and then their contents were analyzed. The data obtained were analyzed using MS Office Excel 2016. The highest content of lipid, carbohydrate and protein of C. pyrenoidosa was in the treatment of 20% tofu wastewater, reaching 1.56%; 28.92%; and 28.92%, respectively. Meanwhile, the highest growth rate and the smallest doubling time in the treatment of 20% tofu wastewater accounted for 0.8264 day-1 and 0.0349 hours-1. Moreover, the rates of BOD and TSS of the tofu wastewater at the end of the study decreased. It can be concluded that administering different concentrations of the tofu wastewater can affect the lipid, carbohydrate and protein content of C. pyrenoidosa. It was suggested that further research is needed to conduct semi-continuous cultivation of C. pyrenoidosa using a higher density so that the results obtained can be optimized.

Enzymatic depolymerisation of starch to glucose or maltose is carried out by starch- degrading amylases during a two-stage hydrolysis: liquefaction using bacterial α-amylase followed by saccharification with glucogenic (fungal amylase) or maltogenic (fungal or bacterial) amylases. As a rule, these enzymes are applied separately, following the recommendations concerning their action provided by the enzyme manufacturers. The study presents our attempts to determine the reaction conditions for a simultaneous action of liquefying and saccharifying enzymes on pre-treated potato starch. Hydrolysis was run by Liquozyme Supra, Maltogenase 4000L and San Super 360L enzymes (Novozymes) at different temperatures. During the single-stage method of starch hydrolysate production the most desirable results was obtained for the maltose hydrolysate at 80°C (51.6 DE) and for the glucose hydrolysate at 60°C (96 DE). The analyses indicate that the application of a single-stage hydrolysis of starch to maltose or glucose makes it possible to obtain a degree of starch saccharification comparable with that obtained in the traditional two-stage hydrolysis.

Acoustical attenuation spectra in the frequency range 12 kHz – 2 GHz and nonequilibrium time domain measurements are briefly reviewed for aqueous solutions of various mono- and disaccharides as well as alkyl glycosides. Several relaxation regimes emerge with relaxation times between 10^-11 s and 10^3 s. In this paper relaxation terms reflecting conformational changes are discussed, particularly mutarotation (10^3 s), chair-chair ring inversion (1 ąs), two modes of pseudorotation (100 ns, 10 ns), disaccharide ring isomerisation (10 ns), and exocyclic side group rotation (1 ns).

The mesh size of sieves has a significant impact upon soil disturbance, affecting pore structure, fungal hyphae, proportion of fungi to bacteria, and organic matter fractions. The effects are dependent upon soil type and plant coverage. Sieving through a 2 mm mesh increases mineralization of exogenously supplied carbohydrates and phenolics compared to a 5 mm mesh and the effect is significant (p<0.05), especially in organic horizons, due to increased microbial metabolism and alteration of other soil properties. Finer mesh size particularly increases arabinose, mannose, galactose, ferulic and pthalic acid metabolism, whereas maltose mineralization is less affected. Sieving through a 5 mm mesh size is suggested for all type of experiments where enhanced mineralization of low-molecular-weight organic compounds needs to be minimalized.

The physic-chemical result of the analysis of proso millet (Panicum milliaceum) showed the optimum water uptake of the millet to be 96 hours, optimum malting time 96 hours, ash content 3.26 ±0.03, moisture content 11.37 %, ±0.33, crude fat content 1.30 % ±0.20, crude protein content 13.87 % ±0.5, carbohydrate content 71.46 % ±0.80, reducing sugars 35.08 % ±0.80, hydrolysable sugars 54.29% ± 0.70 and fibre content 6.37 % ±0.30. the mineral composition of proso millet in mg/100g showed that the millet contains K (2.14), Fe (1.04), mg (0.85), Ca (0.65), Na (0.17), Al (0.13), Mn (0.013), Zn (0.04), Pb (Lead) was not detected in the milled. Temperature and pH Shidies on the malted millet showed the optimum values to be 50-60 °C and 5-6 respectively. The blending ratio of the gelatinized maize flour ground with the chaff with malted millet was found to be 50 %, while the blending ratio of gelatinized maize after removing the chaff with malted milled was determined to be 60 %. The blending ratio of the gelatinized rice flour with malted millet was also found to be 60 %. The decrease of about 10 % in the value of reducing sugar production between the two maize flours could be due to the fact that, the unprocessed seeds have more lignified materials which could inhibit access to amylase during hydrolysis. The absence of heavy metal lead (Pb) and high carbohydrate content of proso millet indicates that it could be used in the brewing industry as an adjunct to barley.

In order to evaluate promising lines in terms of grain yield and water-soluble carbohydrates remobilization, an experiment with fifteen promising lines and two checks was carried out under full irrigation and terminal water stress conditions at Miyandoab Agricultural Research and Natural Resources Station. Mobilized dry matter content and remobilization percentage from shoot to grain under water deficit (177mg)(11.2%) were greater than those under well watering condition. The lowest (110 mg) and the highest (260mg) mobilized dry matter to grain were obtained for C-79-18 and C-83-15lines, respectively. Water deficit reduced grain yield of barley genotypes by 200-1600 kg/ha, and mean grain yield reduction was 800 kg/ha. Line 14 with 5.880and 5.300t/ha grain yield in favorable and water stress conditions was superior to the other lines. Under water deficit condition, line 14 had greater grain yieldby20% and 38% than the Bahman and Makouee cultivars, respectively. The results showed that greater grain yield in tolerant lines under water deficit was due to remobilization of unstructured carbohydrates from shoot to grain.Thus, it seems that selection of lines with higher translocated dry matter and contribution of pre-anthesis assimilate in grain filling under water stress, the suitable way for achieving genotypes with high grain yield under water stress condition.

The suitabilty of the baking improver A (the mixture of full-fat milk powder and vitamin C), AKO, Artisan, Magimix 35 and soybean flour was studied for improving bread from Malno triticale flour of poor baking quality (the wet gluten content 132 g/kg). The flour was fortified with vital wheat gluten at the rate of 10 g/kg or 20 g/kg. Due to the fortification, baking loss decreased by 23 g/kg to 30 g/kg, on average, and the bread yield increased by 53 g/kg, on average. The organolepti-cally tested bread quality did not improve and the bread staling rate was not affected. The improver AKO (20 g/kg) and Artisan (40 g/kg) increased the crumb elasticity and volume (by 64 mL) of the bread from the fortified triticale flour. The staling rate of breads with improvers was more rapid than breads without improvers.
Mąkę pszenżytnią z odmiany Malno uzyskaną z przemiału laboratoryjnego i wzbogaconą dodatkiem glutenu witalnego w ilości 10 lub 20 g na 1 kg mąki, w celu poprawienia jej wartości wypiekowej (Tabela 1), użyto do wypieku chleba. Wypiek laboratoryjny przeprowadzono metodą jednofazową. W celu polepszenia jakości pieczywa do wypieków dodawano także następujące polepszacze piekarskie: polepszacz A czyli mieszaninę mleka pełnego w proszku i witaminy C, AKO, Artisan, Magimix 35, mąkę sojową. Dodatek glutenu witalnego do mąki pszenżytniej zmniejszał straty piekarskie i zwiększał wydajność pieczywa (Tabela 2) ale nie poprawiał jakości chlebów. Spośród zastosowanych polepszaczy najbardziej efektywnie na jakość chleba pszenżytniego wpłynęły Artisan, AKO, Magimix 35 oraz polepszacz A (Tabela 3). Podobnie korzystny wpływ na objętość i elastyczność miękiszu zaobserwowano w przypadku dodatku 10 g glutenu witalnego na 1 kg mąki i zastosowaniu polepszaczy Artisan oraz AKO. Proces starzenia się, oceniany na podstawie zmian wilgotności miękiszu w czasie 3 dni przechowywania w temperaturze pokojowej, przebiegał szybciej w chlebach z dodatkiem polepszaczy, a dodatek glutenu nie miał większego wpływu na tę cechę (Tabela 4).

The effect of carbohydrate compounds of soybean protein preparations on their functional properties in meat model systems with 20 and 40% of meat protein replaced by soy protein was investigated. The ratio soy protein - carbohydrate compounds in soybean additives was regulated. Significant influence of mixture of soy protein – carbohydrate compounds was observed at a 40% substitution level, but carbohydrates seemed to play a secondary role as a factor influencing the functional properties of soybean protein preparations.
Przeprowadzono badania nad wpływem węglowodanów występujących w sojowych preparatach białkowych na ich funkcjonalność w mięsnych układach modelowych symulujących produkt mięsny. Badania wykonano dla dwóch poziomów substytucji białka mięsa (20 i 40%) białkiem preparatu sojowego (Promine D), przy uwzględnieniu w układach modelowych różnych stosunków-białka sojowego do składników węglowodanowych. Jako źródło węglowodanów, dodawanych łącznie z białkiem sojowym stosowano mieszaninę węglowodanów (50% sacharozy, 25% celulozy, 25% skrobi) lub płatki sojowe, bardziej zbliżające układ doświadczenia do naturalnego. Mięsne układy modelowe z dodatkami białkowo-węglowodanowymi, imitującymi różne preparaty sojo,we oceniano pod względem lepkości i poziomu wycieku wymuszonego, a po poddaniu ich standardowej obróbce termicznej również pod względem konsystencji i ubytków cieplnych. Stwierdzono, że dodatki węglowodanowe stosowane łącznie z białkiem sojowym powodują istotne zmiany właściwości mięsnych układów modelowych (wzrost poziomu wycieku wymuszonego, wzrost ubytków termicznych) tylko przy wyższym poziomie substytucji - 40% białka mięsa. Zastąpienie w doświadczeniu rozpuszczalnego białka sojowego (Promine D) białkiem izoelektrycznym (Promine R) wykazało, że głównym czynnikiem zmian właściwości układów mięsnych jest ilość i stan fizykochemiczny białka sojowego. Natomiast składniki węglowodanowe odgrywają drugorzędną rolę w kształtowaniu właściwości funkcjonalnych preparatów sojowych.

Seeds of Lathyrus sativus cv. Derek and Krab were used as biological material for induced mutagenesis. Three mutant lines were obtained from seeds of grass pea cv. Derek and 15 lines from mutagenised seeds of cv. Krab. Twelve ethanol-soluble carbohydrates were identified in the seeds. We have selected grass pea mutant lines with high oligosaccharides content (lines D4, K56, K25, and K7) and lines with low raffinose family oligosaccharides (RFO) content (lines K12, K29 and K13). Mutations changing the levels of RFO have not affected the contents of galactosyl cyclitols.

Opis:
Postoperative insulin resistance, used as a marker of stress response, is clearly an adverse event. It may induce postoperative hyperglycemia, which according to some authors can increase the risk of postoperative complications. One of the elements of modern perioperative care is preoperative administration of oral carbohydrate loading (CHO-loading), which shortens preoperative fasting and reduces insulin resistance. The aim of the study is to establish the influence of CHO-loading on the level of insulin resistance and cortisol in patients undergoing elective laparoscopic cholecystectomy. Material and methods. Patients were randomly allocated to one of 2 groups. The intervention group included 20 patients who received CHO-loading (400 ml Nutricia pre-op®) 2 hours prior surgery. The control group received a placebo (clear water). In every patient blood samples were taken 2 hours prior to surgery, immediately after surgery, and on the 1st postoperative day. Levels and changes in glucose, cortisol and insulin resistance were analyzed in both groups. Results. Although there were differences in the levels of cortisol, insulin, and insulin resistance, no statistically significant differences were observed between groups in every measurement. The length of stay and postoperative complications were comparable in both groups. Conclusions. We believe that CHO-loading is not clinically justified in case of laparoscopic cholecystectomy. No effect on the levels of glucose, insulin resistance and cortisol was observed. Even though such procedure is safe, in our opinion there is no clinical benefit from CHO-loading prior to laparoscopic cholecystectomy.

Opis:
Concentrations of total nonstructural carbohydrates (TNC), soluble carbohydrates, starch, sucrose, glucose, fructose, raffinose, galactose, stachyose, mannitol and specific activities of soluble acid (AI) and neutral (NI) invertases, sucrose synthase (SuSy), hexokinase (HK), fructokinase (FK), glyceraldehyde 3-phosphate dehydrogenase (GAPDH) and glucose 6-phosphate dehydrogenase (G6PDH) were analyzed in fine roots of Populus deltoides Bartr. ex Marsh growing at a polluted site (near copper smelters) and a control site (free from heavy pollution). Also chemical properties of the soil from both sites were assessed. In comparison with the control, fine roots from the polluted site contained greater concentrations of TNC, soluble sugars, starch and sucrose but less hexoses, so they had higher values of sucrolysis index (sucrose/hexoses). The activity of AI, NI and SuSy declined insignificantly, while specific activities of HK, FK, GAPDH and G6PDH were significantly inhibited. The results suggest that a long-term heavy metal stress leads to an accumulation of carbohydrates and altering activities of glycolysis and the oxidative pentose phosphate pathway in fine roots.
