Opis:
The relatively limited application of lean in the food process industries has been attributed to the unique characteristics of the food sector i.e. short shelf-life, heterogeneous raw materials, and seasonality. Moreover, barriers such as large and inflexible machinery, long setup time, and resource complexity, has limited the implementation and impact of lean practices in process industries in general. Contrary to the expectations in the literature, we bring in this paper a successful experience of lean implementation in a company of the food-processing sector. By focusing on two lean tools (VSM and SMED), the company reduced changeover time by 34%, and increased the production capacity of the main production line by 11%. This improvement enabled the company to avoid the use of temporary workers by extending the worktime of its workforce during peak months. Moreover, the reduction of setup time avoided the use of large lot size in production, which, in turn, reduced the total cycle time of production and the incidence of quality problems.

High organic matter content is a basic problem in food industry wastewaters. Typically, the amount and composition of the effluent varies considerably. In the article four groups of advanced processes and their combination of food industry wastewater treatment have been reviewed: electrochemical oxidation (EC), Fenton’s process, ozonation of water and photocatalytic processes. All advanced oxidation processes (AOP`s) are characterized by a common chemical feature: the capability of exploiting high reactivity of HO radicals in driving oxidation processes which are suitable for achieving decolonization and odour reduction, and the complete mineralization or increase of bioavailability of recalcitrant organic pollutants.

The paper presents the results of research on differentiation of the ad- vancement level of solutions and logistics management systems based on ICT (Information and Communication Technologies) used in the Polish food industry. The research was conducted in terms of industry, employment size and three market characteristics of the surveyed enterprises: investment level, financial situation and market position. The study used the IAI (Information Advancement Index) synthe- tic indicator and two methods for categorizing its values: uniform across the range of values and based on mean values and standard deviation. The paper also presents the reference of the obtained research results to the productivity paradox of Solow and the results of similar research previously carried out on the level of advance- ment of logistics solutions and systems in the Polish food industry.

The agri-food sector contributes significantly to economic and social advancements globally despite numerous challenges such as food safety and security, demand and supply gaps, product quality, traceability, etc. Digital technologies offer effective and sustainable ways to these challenges through reduced human interference and improved data-accuracy. Innovations led by digital transformations in the agri-food supply chains (AFSCs) are the main aim of 'Agri-Food 4.0'. This brings significant transformations in the agri-food sector by reducing food wastage, real-time product monitoring, reducing scalability issues, etc. This paper presents a systematic review of the innovations in the agri-food for digital technologies such as internet-of-things, artificial intelligence, big data, RFID, robotics, blockchain technology, etc. The employment of these technologies from the ‘farm to fork’ along AFSC emphasizes a review of 159 articles solicited from different sources. This paper also highlights digitization in developing smart, sensible, and sustainable agri-food supply chain systems.

Opis:
The objective of the research is to compare the importance of agribusiness in the economies of the EU countries. The results suggest that the agribusiness share in national economy and its internal structure depends on the country’s level of economic development. In the better developed countries the share index value is low, while in the less developed countries it is relatively high. The main condition for changing the situation in Poland is to generate an economic growth.

Przedstawiono agrobiznes jako specyficzny dział gospodarki narodowej. Zdefiniowano pojęcie agrologistyki, czyli działalności logistycznej dostosowanej do specyfiki gospodarki żywnościowej. Zaprezentowano wyniki badań dotyczące stanu logistyki w przedsiębiorstwach przemysłu rolno-spożywczego. Dokonano rozpoznania sytuacji w zakresie gospodarki zapasami i magazynowej, transportu, zarządzania informacją oraz gospodarki opakowaniami. Stwierdzono, że przemysł rolno-spożywczy napotyka problemy spowodowane rozproszeniem dostawców, stosuje zróżnicowane rozwiązania w zakresie zaopatrzenia, gospodarki zapasami, magazynowania, transportu, relacji z klientami i konsumentami czy też wykorzystania systemów wspomagania decyzji i sieci informatycznych. Relatywnie słabo wykorzystywane są nowoczesne technologie bazujące na falach radiowych, chętniej wykorzystywane są kody kreskowe. W relacjach z klientami/partnerami dominuje kontakt telefoniczny. Wśród przedsiębiorstw posiadających systemy informatyczne dominują programy związane z finansami, księgowością oraz pracą biurową.
Agribusiness has been presented as a specific branch of the national economy. The concept of agrologistics, that is logistic activity adapted to the specificity of the food economy, has been defined. The results of research on the state of logistics in agri-food industry enterprises are presented. The situation in the area of inventory management and warehouse management, transport, information management and packaging management was recognized. It was found that the agro-food industry faces problems caused by dispersal of suppliers, uses diverse solutions in the field of procurement, inventory management, storage, transport, customer and consumer relations, or the use of decision support systems and IT networks. Modern technologies based on radio waves are relatively poorly used, bar codes are more eagerly used. In relations with customers / partners, telephone contact prevails. Companies with information systems dominate related to finances, accounting and office work.

W polskim rolnictwie dominują niewielkie gospodarstwa, a w przemyśle MŚP i mikroprzedsiębiorstwa. Taka struktura wymusza ukierunkowanie produkcji roślinnej na uprawę roślin ogrodniczych i niszowych dających wyższe przychody z jednostki powierzchni niż tradycyjna produkcja roślinna. Producenci maszyn rolniczych powinni specjalizować się rozwoju technologii dla takiej produkcji i maszyn specjalistycznych wytwarzanych w krótkich seriach. Z kolei przetwórstwo spożywcze oczekuje na innowacyjne bardziej efektywne rozwiązania techniczne umożliwiające spełnienie rosnących wymagań konsumentów, którzy oczekują na nowe, zdrowe i smaczne produkty. Żywność tradycyjna powinna być wytwarzana w małych gospodarstwach, dla których przetwórstwo przydomowe może być źródłem dodatkowych przychodów. W związku z tym wsparcie ze strony placówek badawczych zajmujących się agroinżynierią jest niezbędne w rozwoju nowych maszyn i technologii dla sektora rolno-spożywczego.
The polish agriculture is dominated by small farms, and industry - by small and mediumsize companies and micro-companies. This structure extorts the plant production orientation to growing horticultural and niche plants giving higher incomes from area unit than any conventional plant production. Farm machinery manufacturers should specialise in the development of technology for this production and specialist machines produced in short series. On the other hand, food processing expects innovative and more efficient technological solutions allowing to meet the increasing requirements of consumers, who wait for new, healthy and tasty products. Conventional food should be produced in small farms, for which home-garden processing may constitute the source of extra income. Therefore it is necessary to support research units operating in the agroengineering sector in the development of new machines and technologies for agricultural and food industry.

W pracy zaprezentowano wyniki badań nad alternatywnym środkiem smar-nym, jakim może być gliceryna. Badania prowadzono na klasycznej maszynie czterokulowej. Analiza wyników badań wstępnych pozwala stwierdzić, że rozważane może być zastosowanie gliceryny do smarowania węzłów tarcia. Przedstawiono wyniki badań w przypadku zastosowania wodnych roztworów gliceryny o różnych stężeniach oraz dla celów porównawczych przedstawiono wyniki badań wybranych smarów przemysłowych.
The paper presents the results of research about alternative grease - glycerin. Tests were made on four-ball apparatus. Analysis of results confirms that glycerin can be used for lubrication in friction nodes. This work includes results of wear tests in case of using a few glycerin water solutions with different concentration and comparison with typical greases.

Food quality management is nowadays an indispensable element that focuses all activities in the food industry. Each company operating in the food industry that supplies products to the market is obliged to implement and use systems that ensure the required quality of manufactured products. The aim of the study was to analyze the advisability of implementing quality management systems in the light of the opinions of employees from the food industry. To carry out the research, the original questionnaire that consisted of 31 questions was used. The questions included in the survey, single and multiple choice, focused on collecting information about issues such as the concept of food safety, the benefits resulting of implementing quality management systems, quality management systems operating in the enterprise, training in their scope and assessing the need to implement these systems and their impact on safety of produced food in the opinion of employees. The survey was primarily attended by the company’s production employees and employees from the management staff, as well as from administrative and office department. The answers to the questions were presented in the form of graphs, with some of them being analyzed in terms of the position held by the respondents or their seniority in the company. By conducting a thorough and in-depth analysis of the research results, it was possible to verify the hypotheses that were formulated at the beginning of the work, as well as to draw conclusions.

In the article the seals diagnostic problems, especially mechanical seals use in machines and devices of food industry, are discussed. The methods assessments of the state of mechanical seals are shown. The examples of diagnostic of seals use in brewery and sugar factory are presented. Possibilities of diagnostic of mechanical seals by using leakage are analyzed.

W artykule przedstawiono przykład zastosowania metody oceny cyklu życia LCA do analizy środowiskowej etapu eksploatacji obiektów technicznych. Scharakteryzowano metodę badawczą oraz obiekty wybrane do analiz ekobilansowych. Zaprezentowano również wybrane wyniki analizy ekobilansowej procesów eksploatacyjnych, podając sumaryczne wskaźniki środowiskowe, kinetykę zmian oraz rozpoznanie głównych czynników stanowiących o obciążeniu środowiskowym maszyn na etapie eksploatacji.
In the paper, the example of environmental analysis of the operation period of technical objects is presented. The used research method and the objects chosen for analysis, are also described. The selected results of analysis are presented, including the total environmental indices, the study of the kinetics and the main factors determining the environmental impacts of machines during the operation period.

Opis:
Raising the awareness of workers with regard to the occupational health and safety should be a key role in every workplace. Promoting safety is aimed at involvement of employees in this issue and the change of attitude. The article presents an analysis of the awareness of employees in the food sector. The analysis was developed on the basis of the questionnaire. The questions focused on some important issues concerning the employees’ awareness. The survey which was conducted in the agri-food industry in the Lublin region, indicated that employees understand the issues of safety and health at work, they can use the knowledge obtained in the training in their workplace and know the hazard in the workplace.
Podnoszenie świadomości pracowników w zakresie bezpieczeństwa i higieny pracy powinno stanowić kluczową rolę w każdym zakładzie pracy. Promowanie bezpieczeństwa ma na celu zaangażowanie pracowników w tę problematykę i zmianę postawy. Celem pracy była analiza świadomości bezpieczeństwa i higieny pracy pracowników sektora spożywczego. Analizy dokonano na postawie opracowanej ankiety, której pytania zwracają uwagę na kilka istotnych kwestii dotyczących poziomu świadomości pracowników. Ankieta, która została przeprowadzona w zakładach przemysłu rolno-spożywczego na terenie Lubelszczyzny, wykazała że pracownicy znają problematykę z zakresu bezpieczeństwa i higieny pracy, potrafią wykorzystać zdobytą na szkoleniach wiedzę na swoim stanowisku pracy oraz znają zagrożenia występujące w miejscu pracy.

Municipal WWTPs often receive industrial wastewater including the bakery sewage. The effluent of the bakery industry has a high biological oxygen demand (BOD). In addition to high BOD, this wastewater contains high chemical oxygen demand (COD), total Kjeldahl nitrogen (TKN) and is characterized by a dark color. The effect of bakery wastewater contribution on the COD fraction changes in the municipal sewage is presented in this paper. The study was conducted in July 2016 in a WWTP located in Lipsk, East-North Poland. The sewage receiver is the Biebrza River. The volume contribution of bakery wastewater is 10%. The analytical results were used to compute the percentage value contribution of individual COD fractions in wastewater. During the study, the following fractions were identified: SS – COD of readily-biodegradable dissolved organic matter, SI – COD of non-biodegradable dissolved organic matter, XS – COD of slowly-biodegradable non-soluble organic matter, XI – COD of non-biodegradable non-soluble organic matter. The method used for the COD fraction determination in wastewater was developed based on the ATV 131P guidelines (ATV-DVWK-A131P). The aim of the study was to determine the effect of bakery wastewater contribution on the COD fraction changes during the technical scale biological wastewater treatment with an activated-sludge process. The percentage contributions of individual COD fractions in wastewater were compared with the shares in the wastewater from other food industries (dairy, olive mill, tomato, sugar beet, potato processing, winery). In raw wastewater, the XS fraction was dominant 44.2%. SS fraction was 38.8%. In raw wastewater, the SI, XI fractions ranged from 2.3 to 14.8%. In the effluent the SS fraction was not noted, which is indicative of microorganisms consumption. The WWTP effluents mostly (43.4%) contained slowly-biodegradable non-soluble organic matter (XS). Non-biodegradable dissolved organic matter (SI fraction) had a high share of 42.3%.
