Zastosowanie wymuszonego mieszania podczas fermentacji
brzeczki słodowej jest jednym z potencjalnych sposobów
skrócenia czasu produkcji piwa. W pracy zaprezentowanej w
artykule porównano wpływ intensywności mieszania brzeczki
podczas jej fermentacji, wyrażony częstością obrotów mieszadła,
na przebieg procesu i wyróżniki jakościowe brzeczki
i młodego piwa. Na podstawie analizy uzyskanych wyników
wykazano, że mieszanie brzeczki mieszadłem o prędkości obrotowej
1000 rpm skraca czas fermentacji o ok. 72 godziny
w stosunku do próby kontrolnej (bez mieszania), natomiast
mieszanie o prędkości 50 rpm skraca czas o ok. 48 godzin.
Wykazano również, że stosowanie mieszania nie wpływa na
końcowe stężenia takich wyróżników piwa jak: alkohol etylowy
i ekstrakt. W brzeczce poddanej mieszaniu z prędkością
1000 rpm stwierdzono zwiększenie liczebności komórek drożdży
w czasie fermentacji, skrócenie czasu fazy logarytmicznego
wzrostu komórek drożdży oraz wystąpienie nadmiernego
zmętnienia piwa młodego. Natomiast w brzeczce poddanej
mieszaniu z prędkością 50 rpm wykazano ponad 3-krotnie
mniejsze stężenie trehalozy, będącej wskaźnikiem warunków
stresowych komórki, w odniesieniu do próby mieszanej
1000 rpm oraz kontrolnej.
The use of mechanical mixing during brewing fermentation is one of the potential ways to reduce time of beer production. The paper presents a comparison of the effect of two mixing speeds (50 and 1000 rpm) on the fermentation performance and quality of wort and green beer. Based on the obtained results it was shown that agitation with a stirrer at a rotational speed of 1000 rpm shortens the fermentation time by approximately 72 hours compared to the control (without stirring), while mixing at 50 rpm reduces the time by about 48 hours. It has also been shown that the use of mechanical mixing does not affect the final concentrations of ethanol and extract. In the 1000 rpm mixed trial we observed: the increase in yeast cell count during fermentation, the shortening of the lag phase of the cell growth, and the occurrence of excessive haze in green beer. No excessive haze was observed in the sample 50 rpm, and more than 3-fold lower concentration of trehalose was shown (trehalose is an indicator of stress conditions) compared to 1000 rpm and reference trial. - Źródło:
