One of the processes of wet area is the separation of soybean’s skin using water as its media, with the cycle time is 45.59 minutes. The object of this research is the wet area on Tempe production in Indonesian Tempe House (ITH) at Bogor City to reducing the cycle time by designing soybean peel separator machine. This research was conducted using the reverse engineering method by performing an in-depth analysis of the tools used and developing the existing peel separator equipment based on user needs. Concept screening and concept scoring are done to select one of the best concepts of 48 possible concepts. The result of the selected concept of the soybean peel separator is the need for a propulsion motor as a replacement energy source for the operator's power and the mechanisms for separating skin and soybeans using water force from the bottom of the container. After that, the concept will be done by make a prototype and testing it in Rumah Tempe Indonesia with the result of cycle time is 70.77 minutes for all processes in a wet area, which means the cycle time is decreasing 39%.

High organic matter content is a basic problem in food industry wastewaters. Typically, the amount and composition of the effluent varies considerably. In the article four groups of advanced processes and their combination of food industry wastewater treatment have been reviewed: electrochemical oxidation (EC), Fenton’s process, ozonation of water and photocatalytic processes. All advanced oxidation processes (AOP`s) are characterized by a common chemical feature: the capability of exploiting high reactivity of HO radicals in driving oxidation processes which are suitable for achieving decolonization and odour reduction, and the complete mineralization or increase of bioavailability of recalcitrant organic pollutants.

In the paper numerical analysis of the liquid energy regarding the spray nozzle jet parameters optimisation for a cleaning process has been presented. Special attention has been paid to the comparison between the energy contained in the stream of liquid going out from a nozzle, and the energy needed to remove fouling at the surface. In the example a lot of parameters influencing those energies have been taken into account. It has been found that the proposed analysis of the liquid energy and the energy needed for cleaning is an adequate description of geometry and parameters of equipment and devices, especially in the Clean In Point (CIP) systems.

Purpose – The main purpose of the work is to analyse the relationship between the net working capital management strategy and selected financial results of enterprises belonging to the WIG-food index. Research method – As part of the assessment, the financial data of 12 companies belonging to the WIG-food index for the period 2008-2018 were analysed. The dependent variables were the following measures: net profit/loss (NPL), current liquidity ratio (CLR), inventory turnover ratio (ITR), general debt ratio (GDR), return on sales (ROS). To achieve the objective of the research a one-way ANOVA variance was used. Results – The research results indicate that the net working capital management strategy adopted by the companies belonging to the WIG-Food index significantly affects the achieved financial results. Originality/value – The conducted research showed that the most common differences in shaping individual financial results occur between the use of aggressive (A) and conservative (C) strategy, aggressive (A) and moderately conservative (MC) strategy, conservative (C) and moderately aggressive (MA) strategy, as well as moderately aggressive (MA) and moderately conservative (MC) strategy.

The food and beverage production in Bulgaria has dramatically changed after the full EU membership in 2007. This change has affected not just the production structure, but also the import and export structure as well as overall production potential of the agri-food sector. The aim of the paper is to look inside the changes from the perspective of the single producer. This means to answer to the question: why has the Bulgarian agri-food production been getting worse? The analyses showed that food industry does not have the ability to move over the 1980s values. Partially this state is a result of misunderstanding by food processors how to manage their production more efficiently. The greatest potential for dynamic change of Bulgarian food industry is in the innovation inputs (development of new products and technologies improvement overall marketing). For food sector the major role, among all types of innovations, is played by product innovations.
Produkcja żywności i napojów w Bułgarii zmieniła się dramatycznie po pełnym przystąpieniu do UE w 2007 roku. Zmiana ta wpłynęła nie tylko na strukturę produkcji, ale także na strukturę eksportu i importu jak też na całkowity potencjał produkcji sektora rolno-spożywczego. Celem artykułu jest wejrzenie w te zmiany z perspektywy pojedynczego producenta. Oznacza to odpowiedź na następujące pytanie: dlaczego bułgarska produkcja rolno-spożywcza pogorszyła się? Analiza pokazała, że przemysł spożywczy nie ma zdolności do przekroczenia poziomu produkcji z lat osiemdziesiątych XX wieku. Ważną przyczyną jest niezrozumienie przez przetwórców, że powinni zarządzać bardziej efektywnie produkcją. Największy potencjał dla zwiększenia dynamiki zmian w bułgarskim przemyśle spożywczym kryje się w innowacjach (rozwój nowych technologii i produktów, poprawa marketingu). Dla sektora spożywczego najważniejsze są innowacje produktowe.

The capability of bacteria to colonize food processing surfaces and to form biofilm has become an emerging concern for food industry. The presence and persistence of biofilm on food processing surfaces may pose a risk of food spoilage or food poisoning. A better understanding of bacterial adhesion and resistance of biofilms is needed to ensure quality and safety of food products. This review focuses on microscopic approaches incorporated to explore biofilm mode of existence in food processing environments. An application of antimicrobial agents for the biofilm control, in particular for bacteria connected with food processing environments, is also highlighted. In addition, some aspects of biofilm resistance, especially the phenomenon of persister cells, are discussed.

Agri-food sector is one of the traditionally well-developed sectors in Bulgaria. The export picture of Bulgarian food industry has been changed after the full EU membership of the country in 2007. Thus, the food import exceeds the food export more than twice nowadays. The aim of the paper is to reveal why Bulgarian food producers have lost their competitive advantages so fast, what kind of factors drives the food producers to worsen their production in comparison with other food-market players? The analyse showed that the food producers do not use effi ciently inter-business competitive factors (technology development and transfer as well as package design and service development). On the sectorial level, the food producers focus on to the resource management and they miss to enlarge their competitiveness by cooperation with suppliers, consumers or other food processors.
Sektor rolno-żywnościowy jest jednym z tradycyjnie dobrze rozwiniętych sektorów w Bułgarii. Obraz eksportu bułgarskiego przemysłu żywnościowego zmienił się po uzyskaniu pełnego członkostwa kraju w UE w 2007 roku. Celem niniejszego artykułu jest odkrycie, dlaczego bułgarscy producenci żywności stracili tak szybko swoje przewagi konkurencyjne, jakie czynniki spowodowały pogorszenie się produkcji producentów żywności w porównaniu z innymi uczestnikami rynku żywnościowego? Z przeprowadzonej analizy wynika, że producenci żywności nie stosują efektywnie takich środków poprawy konkurencyjności, jak rozwój i transfer technologii, rozwój wzornictwa opakowań czy usług. Na poziomie sektora producenci skupiają się na zarządzaniu zasobami, a nie dostrzegają możliwości poprawy konkurencyjności poprzez współpracę z dostawcami, konsumentami czy innym przetwórcami.

This article's aim is an attempt to identify the scope and ways of implementing content marketing on the websites of dairy companies. To achieve the stated objective, 15 dairy company websites were analysed using the content analysis method. It was observed that the companies surveyed use content marketing in different ways on their company websites, with the aim of distributing attractive content designed to persuade the customer to act accordingly. Companies are recognising the increasing role of content marketing and the opportunities for its implementation on the company website. However, there is great potential to intensify activities in this area.

The relatively limited application of lean in the food process industries has been attributed to the unique characteristics of the food sector i.e. short shelf-life, heterogeneous raw materials, and seasonality. Moreover, barriers such as large and inflexible machinery, long setup time, and resource complexity, has limited the implementation and impact of lean practices in process industries in general. Contrary to the expectations in the literature, we bring in this paper a successful experience of lean implementation in a company of the food-processing sector. By focusing on two lean tools (VSM and SMED), the company reduced changeover time by 34%, and increased the production capacity of the main production line by 11%. This improvement enabled the company to avoid the use of temporary workers by extending the worktime of its workforce during peak months. Moreover, the reduction of setup time avoided the use of large lot size in production, which, in turn, reduced the total cycle time of production and the incidence of quality problems.

Research background: Food industry is of key importance to each economy due to its role in ensuring food security, balancing the labour market, as well as contributing to the economic growth and international trade. With a limited increase in demand for food in many highly developed countries, further growth in this sector of the economy will largely depend on the ability to successfully distribute manufactured goods in international markets and cope with competitive pressure from other entities. Purpose of the article: Therefore, the study attempts to assess the determinants of international competitiveness of the food industry worldwide measured by the trade balance. Methods: The research was based on data from the United Nations Conference on Trade and Development Data Center (UNCTADStat) and the World Input-Output Database (WIOD). The time frame for the analyses was determined by the availability of internationally comparable data and thus covered the period of 2000?2014. The empirical analysis was performed with the use of panel models, while international competitiveness was measured by trade balance (net export). Findings & value added: It was proved that increasing trade openness and relative demand, as well as decreasing relative unit labour costs have a positive impact on international competitiveness of the food industry worldwide. However, the nature of the relationship between relative labour productivity and trade balance appears to be ambiguous. A stronger impact of the examined factors on net exports in the long-run rather than the short-run was also evidenced. The novelty of our analysis is that we consider trade balance determinants of the food industry worldwide using panel models, whereas most of the existing studies focus either on one or a narrow group of countries.

The food industry is one of the traditional areas of management, the so-called low-tech. For this reason, technological and spatial proximity may be the key to create new solutions in the Polish food industry. The main objective of the study was an attempt to seek infl uence of relationships with suppliers on innovation activities of enterprises in the food industry in Poland. As a consequence, this would allow to determine the boundary conditions for the model structure of innovation networks within producers of food and beverages, with special reference to the Polish economy. The study was conducted on a group of 631 companies food industry companies located in Poland. Methodical part of the analysis was based on probit regression (probability theory).
Przemysł spożywczy należy do tradycyjnych obszarów gospodarowania, czyli tak zwanych niskich technologii. Z tego powodu bliskość technologiczna i przestrzenna może być kluczem dla kreowania nowych rozwiązań w polskim przemyśle spożywczym. Głównym celem badania była próba poszukiwania wpływu powiązań z dostawcami na działalność innowacyjną przedsiębiorstw w przemyśle spożywczym w Polsce. W konsekwencji pozwoli to na określenie warunków brzegowych dla modelowej struktury sieci innowacyjnych producentów artykułów spożywczych i napojów, z uwzględnieniem specyfiki polskiej gospodarki. Badanie zostało przeprowadzone na grupie 631 przedsiębiorstw przemysłu spożywczego zlokalizowanych w Polsce. Część metodyczna prowadzonych analiz bazowała na regresji probitowej (rachunek prawdopodobieństwa).

The aim of the study was to characterize the changes in the way of obtaining food by man, showing the development of food industry and the specific nature of its actions, to define renewable raw materials base, to characterize the volume of production and purchasing basic agricultural products in 1990, 2000 and 2010, to show the changes in the sizes of concentration the production of basic agricultural products in 2002 and 2010 and to characterize changes in the forms of food industry supply of agricultural raw materials. The paper is based on the literature compact and continuous research and statistical information. The satisfaction of human needs has a long history, and food is among these needs in the first place. The invention of methods of food preservation formed the basis for the development of food industry. The food industry is an economic activity involving the processing of agricultural products into finished or semi-finished food products and fodder using industrial production methods. According to the European Classification of Activities it is Chapter 15, “Manufacture of food products and beverages” which includes nine groups (industries) of activities. The beginnings of the development on Polish lands date back to the turn of the eighteenth and nineteenth centuries. Previously, farmers and artisans dealt with the processing of agricultural raw materials. Today, the food industry produces approx. 20% of sold production of industry, employs approx. 14% of the staff and participates in approx. 10% of investment. It is subject to transformations in which the number of micro, small and medium-sized entities is reduced, and the number of large entities is increased. Similar changes occur in the number of employees: the value of the total production sold and from small, medium and large entities increases, and from micro-entities decreases. Agriculture is a source of renewable raw materials used for different purposes, while their use by food industry to produce food is at the forefront. Relatively stable demand for food products is accompanied by the variable supply of raw materials. In addition, these materials are characterized by a diverse durability. Therefore there is a need to develop various forms of cooperation between primary producers and processors to ensure their rhythmic delivery, because this ensures efficient processing. The various branches of the processing industry develop various forms of cooperation with the manufacturers of raw materials. There are spatial, organizational, technological and economic ties between processing units and primary producers. The production of raw materials is subject to fluctuation and concentration: the number of manufacturers of individual products is reduced and the scale of production is increased. All this is aimed at attracting more better quality and easier accessible resources to processors. In terms of supplying processing plants with raw materials, in principle there are three forms: free-market purchase, buying from regular suppliers (often contractual), and own production organized by plants.

In conditions of increased competition, development of biotechnology and the ever growing demands of the consumers, innovations are becoming an important factor of competitiveness in the food industry. The aim of the conducted research was to evaluate the barriers of innovativeness in the food industry based on chosen European Union countries during 2014-2016. Based on research of CIS-2016 carried out in accordance with the Oslo methodology developed by OECD, the barriers of innovativeness within the food industry enterprises which were active and non-active were analyzed. As for the evaluation of the analyzed factors within the countries of the EU, descriptive statistics and Ward’s method, which is an agglomeration form of grouping method, were used. From the conducted research, it followed, that the representations of innovative active enterprises more often reported on the barriers which were impeding the introduction of innovations. The most common which were reported included big competition, lack of internal funding and high costs. Representatives of inactive innovative enterprises were reporting low demand on the market, lack of internal funding and high costs.
