Opis:
The effects of combined aminoethoxyvinylglycine (AVG) and modified atmosphere packaging (MAP) treatments on quality attributes of ‘0900 Ziraat’ sweet cherry fruit during the cold storage and shelf life were investigated in this study. Significantly lower weight loss and decay ratios were observed in all treatments throughout the cold storage period as compared to the control. A similar case was also observed referring to the shelf life. MAP treatments were found to be more effective in retarding the weight loss and decay ratio. Higher hue angle values were measured from AVG-treated fruit at harvest. Similarly, hue angle of AVG and MAP-treated fruit were also higher than for the control in all periods of cold storage and on the 7th and 21st day of shelf life. AVG-treated fruit had higher firmness values than the control at harvest. However, higher firmness values were measured from MAP-treated fruit during the cold storage and shelf life. At the end of cold storage, lower SSC and higher titratable acidity values were observed in AVG and MAP-treated fruit than in the control. AVG + MAP treatments yielded significantly higher vitamin C, total phenolics and antioxidant activity values than the control. Contrarily, the control fruit had significantly higher total monomeric anthocyanin than the other treatments. Based on current findings, it was concluded that combined AVG + MAP treatments could be used as a beneficial tool to maintain the quality of sweet cherry fruit throughout the cold storage and shelf life.

This study was conducted to investigate the effects of pre-harvest Harpin treatments and post-harvest MAP treatments on fruit quality attributes and bioactive compounds of ‘0900 Ziraat’ cherry cultivar throughout cold storage and shelf life of the fruits. Weight loss and decay ratios were significantly reduced with Harpin and MAP treatments. In general, lower L* and chroma values were measured in Harpin-treated fruits. As compared to control fruits, higher firmness, titratable acidity and vitamin C contents were measured in MAP and Harpin + MAP treated fruits throughout the cold storage and shelf life. On the other hand, lower solible solids content (SSC) values were observed in the same treatments. At harvest and shelf life measurements, higher total monomeric anthocyanin (TMA) and total phenolics (TPs) were measured in Harpintreated fruits than in control fruits. Although lower anthocyanin contents were obtained from MAP-treated fruits throughout the cold storage, higher values were observed throughout shelf life. Throughout cold storage and shelf life, MAP-treated fruits had lower total phenolics and total antioxidant activity (according to FRAP and TEAC assay) values than the control and Harpin-treated fruits. It was concluded that Harpin and MAP treatments could be used reduce weight losses and decays throughout the cold storage.

The present study was conducted to investigate the effects of different package types and ozone treatments on post-harvest quality of figs. Three different package types (classical-type, modified atmosphere –MAP, consumer-type) and different ozone treatments (0, 5, 10 and 15 minutes) were used in experiments. Purple figs grown in Tekkeköy town of Samsun province were used as the experimental material of the study. Fruits harvested at optimum harvest period were subjected to pre-cooling for a day and then stored in a cold storage at 4°C temperature and 85–90% relative humidity. At the beginning of cold storage and each week of storage, fruits removed from the storage were subjected to weight loss, water soluble dry matter content, titratable acidity, wrinkle, leakage, mold spots, peeling and degustation analyses. Current findings revealed that MAP and 10 or 15-minute ozone treatments had positive impacts on weight loss prevention in figs. While there were not significant differences in other characteristics of treatments, 10 and 15-minute ozone treatments retarded mold spots and leakage in consumer and modified packages.

This study was carried out to determine the effects of packaging materials and storage periods on seed quality and longevity dynamics of an endangered tropical tree species, Pericopsis elata. The experimental period was December, 2015 to June, 2016. Seed collection was done at the Bobiri Forest Reserve. The seed storage experiment was set up using 3 x 6 factorial arrangements in Completely Randomized Design with three replications. Six packaging materials (jute, nylon, paper, ziplock bag, airtight bottle and no packaging) and three storage periods (no storage, three months storage and six months storage) were used. Germination percentage, seed vigour, 1000 seed weight, moisture content, carbohydrate, protein and oil contents were assessed before storage, three months and six months after storage. P. elata seeds with initial moisture content of 7.5% and packaged in airtight bottle and ziplock bags maintained their moisture contents even as storage periods increased. The initial amounts of seed carbohydrates (1.9%), proteins (37.4%) and oil (31.3%) were maintained in the airtight packaging materials (bottle and ziplock bag) thereby improving seed storability. The seed viability equation predicted that P. elata seeds could be stored for 243 years after six months of storage. Seed viability dropped to 164 days after the accelerated aging test was performed on the six-months old stored seeds. The study concluded that the seeds of this important endangered tree can be stored in airtight containers before the next planting season without any loss in seed quality.

The aim of this study was to evaluate the post-harvest changes in the quality of red currants (Ribes rubrum L.) cv. ‘Rovada’ after 60 days of storage under modified atmosphere packaging (MAP) conditions. The storage unit was a pallet, and two treatments were performed. The CO2-MAP treatment was used as a control, while the SO2-MAP treatment was CO2-MAP plus SO2. The initial gas composition was 15.0 kPa O2 and 10.0 kPa CO2 inside all MAPs, while SO2-generating active sheets were added to pellets in SO2-MAP treatment. Weight loss, total soluble solid content, titratable acidity, total phenolic and anthocyanin contents, antioxidant activity, microbial count, and visual and sensorial appearance were monitored after 30 and 60 days. The results showed that berries stored with SO2 maintained the quality parameters for up to 60 days. Exposure to SO2 was effective in controlling yeast evolution, reducing the population both at 30 and 60 days at one and two orders of magnitude, respectively. Red currants stored under SO2 MAP obtained better visual quality score compared to CO2 MAP-treated berries throughout storage. Active emitters of SO2, such as those proposed in this study, can be promising solutions to improve the post-harvest storage of red currants and the berries marketability.

W pracy przedstawiono wyniki pomiarów podatności na biodegradowalność oraz wpływu przechowywania w glebie na wybrane właściwości mechaniczne folii otrzymywanej z mieszanek skrobi termoplastycznej z udziałem gliceryny i emulgatorów. Badania wykazały zróżnicowany wpływ kompozycji mieszanek, warunków wytłaczania oraz przechowywania na zakres i efektywność biodegradacji badanych produktów.

In this communication, selected physicomechanical characteristics of ground turmeric (cv. Prabha) were investigated for cryogenic and ambient grinding conditions of turmeric at different moisture contents (4, 6, 8 and 10% w.b.). A cryogenic grinder (Model: 100 UPZ, Hosokawa Alpine, Germany) and a micro pulverizer (hammer mill) were used for cryogenic and ambient grinding, respectively. The ground turmeric was graded in three grades viz. Gr-I, Gr-II and Gr-III with a sieve shaker using BSS Nos. 40, 85 and pan, respectively. Tap densities for cryogenic and ambient ground turmeric decreased from 678.7 (Gr-I) to 546.7 kgm-3 (Gr-III) and from 642.3 (Gr-I) to 468.6 kgm-3 (Gr-III), respectively, with the moisture increase. The angle of repose for cryogenic and ambient ground turmeric increased linearly from 26.85 (Gr-I) to 34.0° (Gr-III) and from 23.10 (Gr-I) to 28.06° (Gr-III), respectively with the increase in moisture content. The static coefficient of friction was the highest on plywood surface followed by mild steel sheet and galvanized iron sheet. The cryoground samples were found better in colour. Thermal conductivity of cryo-ground samples was higher than that of ambient ground samples. These physico-mechanical characteristics of cryogenic and ambient ground turmeric will be helpful for packaging, handling, and storage.

Opis:
Wheat hot dogs are an attractive food product, consumed throughout the world. As bakery products, they are subject to staling proces and associated quality decrease, which limit their shelf life. One of the methods designed for bakery products durability prolongation are cooling and freezing processes in combination with the packaging system under modified atmosphere with a high concentration of carbon dioxide. Hence the aim of the study was to assess the rate of retrogradation process and starch structure changes in hot dog rolls packed by modified atmosphere system (MAP) during storage under refrigerated (1°C) and freezing (-18°C) conditions. Changes in moisture content, sensory, crumb hardness via TPA method and basic chemical composition of hot dog roll i.e. protein and lipids were analysed. Starch retrogradation processes were investigated by calorimetric method and spectrophotometrically. Comparative analysis of hot dog rolls storage variants indicated that the lower storage temperature is, the higher the level of maintenance of textural and sensory properties of the product. It has been shown that freezing hot dog rolls storage temperatures limited an increase in resistant starch content. In case of hot dogs storage under deep freeze conditions (-18°C), growth of RS was lowered by 46% compared to the refrigerated conditions. There was a significant increase in rolls hardness, whereby it was almost three times higher when hot dogs were refrigerated. It has been demonstrated that use of deep-freezing in combination with MAP significantly reduces the adverse effects caused by aging processes in hot dog rolls, especially RS formation.

The present study was undertaken to determine the combined effffect of microwave blanching and micro-perforated modifified atmosphere packaging in maximizing shelf life on the basis of quality attributes which were evaluated during storage. The carrots were blanched in water using a microwave at 360 W and then stored in micro-perforated modifified atmosphere packaging. The results indicated that blanched carrots in micro-perforated modifified atmosphere packaging showed an improved storage quality. In particular, it was observed that the fifirmness of the pretreated samples in the micro-perforated package were signifificantly improved. The enzyme activity (peroxidase) initially increased and then decreased with longer storage times. There was also a greater reduction in water content in sample C8, probably due to a higher rate of evaporation through the perforations. Water mobility which comprises tightly bound water, loosely bound water, and immobilized water were observed in all samples, while the free water level was insignificant in pretreated micro-perforated samples. The free water, T24 peak was observed for the control sample which increased with increase in storage duration. Also, the effects of this preservation method on other quality parameters such as β-carotene, water activity, moisture content, and microbial load was limited. However, sample C8 was more effective in retaining quality. Overall, this study demonstrated that blanching carrot in micro-perforated MAP at C8 was the most useful technique in preserving the storage qualities of carrot.

Opis:
Celem pracy była ocena wpływu opakowania na jakość pieczywa bezglutenowego w trakcie jego przechowywania. Pieczywo pakowano do trzech różnych opakowań: torebek papierowych pergaminowych (TPP), woreczków polietylenowych (WPE) oraz szklanych pojemników próżniowych (SPP). Próbki przechowywano w opakowaniach przez pięć dni, w czasie których poddano je badaniom instrumentalnym, które obejmowały: pomiar aktywności wodnej, oznaczenie wilgotności, pomiar barwy oraz analizę profilu tekstury przy użyciu testu TPA. Badania prowadzono na świeżym miękiszu pieczywa w dniu wypieku oraz w 1, 3 i 5 dobie przechowywania w każdym z opakowań. W dniu wypieku dokonano także oceny sensorycznej pieczywa metodą profilowania tekstury oraz skali hedonicznej. Na podstawie wyników badań stwierdzono, iż zarówno opakowanie jak i czas przechowywania ma zasadniczy wpływ na jakość pieczywa bezglutenowego. Mniejszy spadek wilgotności miękiszu pieczywa oraz aktywności wodnej stwierdzono w przypadku pieczywa pakowanego w WPE oraz SPP w porównaniu do TPP. Rodzaj opakowania wpływa także na barwę miękiszu pieczywa. Największe obniżenie jasności oraz parametru a* zaobserwowano w przypadku pieczywa przechowywanego w TPP. Zmiany parametrów tekstury miękiszu już od pierwszego dnia przechowywania były największe w przypadku pieczywa bezglutenowego opakowanego w TPP. W 5 dobie przechowywania najmniejsze zmiany w wartościach kruchości, elastyczności i żujności miękiszu stwierdzono dla pieczywa opakowanego w WPE. Na podstawie oceny sensorycznej stwierdzono, iż świeże pieczywo bezglutenowe było zbliżone do standardu w metodzie profilowania tekstury oraz cechowało się wysoką akceptacją zespołu oceniającego. Opakowanie z folii polietylenowej i szklany pojemnik próżniowy w większym stopniu przyczyniły się do opóźnienia procesu czerstwienia badanego pieczywa niż torebka papierowa pergaminowa. Jednakże przechowywanie pieczywa w SPP spowodowało wystąpienie pleśni na skórce już w trzecim dniu analizy.
The aim of the work was to evaluate the effect of packaging on the quality of gluten- free bread during storage. Bread was packed in different types of packaging: parchment paper bag (TPP), polyethylene bag (WPE) and glass vacuum container (SPP). During five days of storage samples were subjected to the following instrumental measurements: water activity, moisture content, colour parameters and texture profile using TPA (Texture Profile Analysis) method. Bread crumb was analysed on the day of baking and on the first, third and fifth day of storage in each of the packaging types. Fresh bread was also analysed using sensory methods, such as texture profile analysis and hedonic scale method. On the basis of the results, it was concluded that both packaging type and time of storage had an effect on bread quality. The smaller decrease in crumb moisture and water activity was found for bread stored in WPE and SPP compared to TPP. Packaging types influenced also the colour of bread crumb. The highest decrease in lightness and a* parameter was observed in the case of bread stored in TPP. Also the changes in crumb texture parameters were the highest from the first day of storage of gluten-free bread packed in TPP. On the other hand, the smallest changes in the values of brittleness, elasticity and gumminess at the end of the storage period were observed for bread crumb packed in WPE. On the basis of the sensory evaluation, it was concluded that fresh gluten-free bread was similar to the standard in the case of texture profile method and was characterised by a high acceptance by the evaluation team. Polyethylene bag and glass vacuum container delayed in the greater extent than parchment paper bag the process of bread staling. However, bread packaging in the vacuum container caused mould on the crust on the third day of storage.
