The aim of this study was to determine the microbiological stability and changes occurring in selected physicochemical properties of raw pork sausages during hyperbaric storage at subzero temperature (HS-ST). It was shown that storage at moderate pressures (up to 111 MPa) led to a reduction in microbial populations. After 21 days of storage under these conditions, no microorganisms were detected in the samples. Additionally, the inhibition of thiobarbituric acid reactive substance (TBARS) formation was observed under HS-ST conditions. The negative effect of the storage at 111 MPa/−10℃ was the sausage colour change from pink to grey-pink or grey, visible to the naked eye. Such changes did not occur in the samples stored at 60 MPa/−5℃ for 35 days. The results showed that applying HS-ST at 60 MPa/−5℃ allowed the shelf-life of raw pork sausages to be effectively extended by at least 35 days without visible quality deterioration.

Edible flowers are food products that are usually eaten fresh without prior heat treatment. Due to their chemical composition and low degree of processing, they can be an excellent breeding ground for microorganisms, and thus a source of infection. Methods of their preservation include proper packaging and storage at low temperatures. Therefore the aim of this study was to evaluate the effect of type of packaging (vacuum-sealed polyamide/polyethylene bag and polyethylene terephthalate box) on the microbial contamination of edible flowers including nasturtium, calendula, and daisy during refrigerated storage. The counts of selected pathogenic bacteria, total yeasts and moulds on the day of harvesting and after 1–3 days of refrigerated storage were determined. The results showed that the edible flowers did not contain Salmonella sp. or Escherichia coli (except nasturtiums), while all flowers contained both yeast and moulds at counts about 4–5 log cfu/g, and Staphylococcus aureus at numbers ranging from 1.89 to 2.72 log cfu/g. The differences in the counts of moulds and S. aureus were statistically significant depending on the type of flower. Neither the type of packaging nor storage time under refrigerated conditions influenced the degree of microbial contamination of the flowers.

Red raspberries (Rubus idaeus L.) are often chosen by consumers for their flavour, taste, and health-promoting properties A relevant issue related to these fruits is their high perishability. The aim of this study was to investigate the effect of the ultraviolet C light-emitting diode (UVC-LED) treatment on soil-grown and pot-grown raspberries in extending their shelf-life, maintaining their high quality throughout the preservation period, and improving features related to their phenolic compound content. The UVC-LED treatment increased the total phenolic content (158 to 200 mg GAE/100 g) and ferric reducing antioxidant power (55.3 to 78.6 mmol Fe2+/kg) of the pot-grown raspberries when the UVC-LED treatment was followed by storage in a climate-controlled room (20°C). Total anthocyanin content did not increase significantly compared to the control samples. Contrary to expectations, no effect of reducing the microbial count after storage was observed due to the exposure of raspberries to the UVC-LED radiation. The positive outcomes derived from the analyses of bioactive compounds may be implemented in further studies on the same matrix to better manage the treatment and its conditions, such as the exposure time, the distance from the LED lamps, and the UVC-rays’ dose, in order to find the best combination in terms of efficacy and efficiency.

Opis:
Appropriate product categorization in distribution centres is important for business success because of the possibility of intuitive product finding by the picker and increased product movement. Both of these factors result in the operational efficiency of the distribution centre. The goal of this paper is to explore a model of shelf space dimensioning of storage location on a rack with vertical and horizontal product categorization in a distribution centre, where the aim is to increase total product movement/profit from all shelves of the rack. This is controlled by a packer who must complete orders by getting the goods from shelves and picking them to the container. In this problem, we develop two heuristics and compare the archived results to the CPLEX solver. The average profit ratios of both heuristics are high and approximately equal to 99%. In 10 cases, optimal solutions have been found by heuristics. The total number of possible solutions to be checked for the largest instance was reduced from 1.33 ·10156 to 1.19 ·107 thanks to the heuristic rules.

Shelf space is one of the essential resources in logistic decisions. Order picking is the most time-consuming and labourintensive of the distribution processes in distribution centres. Current research investigates the allocation of shelf space on a rack in a distribution centre and a retail store. The retail store, as well as the distribution centre, offers a large number of shelf storage locations. In this research, multi-orientated capping as a product of the rack allocation method is investigated. Capping allows additional product items to be placed on the rack. We show the linearisation technique with the help of which the models with capping could be linearised and, therefore, an optimal solution could be obtained. The computational experiments compare the quality of results obtained by non-linear and linear models. The proposed technique does not increase the complexity of the initial non-linear problem.

Opis:
Currently, the main quality problem of beer is the change in its chemical composition during storage, which influences the sensory change of the drink. Unlike some wines, brewing is usually considered negative for the quality of the taste. Properly carried out technological activities, from the selection of raw materials to the bottling, can significantly improve the flavor durability of the beer. The aging process of the beer as expressed by the evaluation of the flavor stability of the beer is described by various analytical parameters as well as by sensory evaluation of beer. The analytical assessment usually relates to different tracer substances or to the capture of substances accelerating or inhibiting the oxidation process. However, the proper analysis to determine the flavor durability is the sensorics, which is the final sensory evaluation of the beer should always be carried out.
Obecnie głównym problemem jakościowym piwa jest zmiana jego składu chemicznego podczas przechowywania, co wpływa na zmianę sensoryczną napoju. W przeciwieństwie do niektórych win, starzenie piwa jest zwykle uważane za negatywne dla jakości smaku. Odpowiednio przeprowadzone czynności technologiczne, począwszy od wyboru surowców aż po rozlew mogą w wyraźny sposób poprawić trwałość smakową piwa. Proces starzenia piwa wyrażony oceną stabilności smakowej piwa jest opisany przy użyciu różnorodnych parametrów analitycznych jak również za pomocą oceny sensorycznej piwa. Ocena analityczna odnosi się zazwyczaj do różnych substancji wskaźnikowych lub wychwycenia substancji przyspieszających bądź hamujących proces utleniania. Właściwą analizą do określenia trwałości smakowej jest ostatecznie sensoryka, stąd też należy zawsze dodatkowo przeprowadzać ocenę degustacyjną piwa.

The storage-stability of extractable colour in paprika powder is strongly influenced by the processing steps. The purpose of this research work was to decrease the degradation rate of extractable colour of paprika powders to 3-4 ASTA units/month and increase the shelf-life. Fractional factorial experimental design and desirability function-based approach was applied to moderate the adverse effect of the key-importance processing steps on colour agent content. Photochemical-accelerated shelf-life test was used for the empirically-based quality improvement. Post-harvest ripening, drying, sorting (seed content), milling and additives (paprika seed oil, tocopherol extract) were identified as important for the degradation rate of extractable colour. The colour stability was very sensitive to the milling and drying intensity, while proper setup of other processing steps compensated the adverse effect of drying and milling parameters. The supplementation with cold-pressed spice paprika seed oil was demonstrated as a natural way of colour stabilization. At the highest desirability value (0.986) the rate constant of accelerated colour stability test (k) and shelf-life time (θS[100ASTA]) were −0.494 ASTA units/day and 2326 days, respectively. Alternative factor level settings enabled taking into account processing-tradition and efficiency expectation. In these cases, desirability values and the predicted shelf-life were 0.5-0.8 and 712-918 days, respectively. Validation study showed that the real observed rate constant and shelf-life values met the predicted values and their 95% confidence interval.

Distribution centres are the important elements of modern supply chains. A distribution centre stores and ships products. In this paper, we investigate the model of the dimensioning of shelf space on the rack with vertical and horizontal product categorisation in a distribution centre, where the objective is to maximise the total product movement/profit from all shelves of the rack which is being managed by a packer who needs to complete orders selecting the products from the shelves and picking them to the container. We apply two newly developed heuristics to this problem and compare the results to the optimal solution found by the CPLEX solver. There are 8 steering parameters that allow for reducing the search space implemented in heuristics. Among them are parameters that decrease the number of prod- ucts on the shelves, the category width range for assigning most space for the most profitable products within the category, two versions of steering parameters for the number of generated product allocations, the step parameters for the intensity of solution diversification, and the movement/profit below which the solutions are not generated. The computational results are presented and indicate that higher-quality solutions can be obtained using the new heuristics. In 10 from 15 tests, both heuristics can find optimal solutions without exploring the whole solution space. For the rest test sets, the solutions received by heuristics are not less than 92.58%.

Aim/purpose – Shelf space is one of the most important tools for attracting customers’ attention in a retail store. This paper aims to develop a practical shelf space allocation model with visible vertical and horizontal categories. and formulate it in linear and non-linear forms. Design/methodology/approach – The research is mainly based on operational research. Simulation, mathematical optimization, and linear and nonlinear programming methods are mainly used. Special attention is given to the decision variables and constraints. Changing the dimensioning of the decision variables results in an improvement in the formulation of the problem, which in turn allows for obtaining an optimal solution. Findings – A comparison of the developed shelf space allocation models with visible vertical and horizontal categories in linear and nonlinear forms is presented. The computational experiments were performed with the help of CPLEX solver, which shows that the optimal solution of the linear problem formulation was obtained within a couple of seconds. However, a nonlinear form of this problem found the optimal solution only in 19 out of 45 instances. An increase in the time limits slightly improves the performance of the solutions of the nonlinear form. Research implications/limitations – The main implication of research results for science is related to the possibility of determining an optimal solution to the initially formulated nonlinear shelf space allocation problem. The main implication for practice is to take into consideration the practical constraints based on customers’ requirements. The main limitations are the lack of storage conditions and holding time constraints. Originality/value/contribution – The main contribution is related to developing mathematical models that consider simultaneous categorization of products vertically, based on one characteristic, and horizontally, based on another characteristic. Contribution is also related to extending the shelf space allocation theory with the shelf space allocation problem model in relation to four sets of constraints: shelf constraints, product constraints, orientation constraints, and band constraints.

The middle and upper parts of the Skały Fm, Early to Middle Givetian in age, were investigated in four sections at Miłoszów Wood in the Łysogóry Region (northern region of the Holy Cross Mountains, central Poland). The dating is based on conodonts (Polygnathus timorensis Zone to the later part of the Polygnathus varcus/Polygnathus rhenanus Zone; early Polygnathus ansatus Zone cannot be excluded) and spores (Ex1–2 subzones) and, coupled with cartographic analysis and geophysical investigation, allows correlation within the strongly faulted succession. Significant lateral facies variations within the carbonate ramp depositional system in comparison with the better studied Grzegorzowice–Skały section, about 3 km distant, are documented, thanks to conodont-based correlation of both successions. Foraminifers, fungi, sponges, rugose and tabulate corals, medusozoans, microconchids and cornulitids, polychaetes (scolecodonts), molluscs (bivalves, rostroconchs, and gastropods), arthropods (trilobites and ostracods), bryozoans, hederelloids, ascodictyids, brachiopods, echinoderms (mostly crinoids, rare echinoids, holuthurians, and ophiocistoids), conodonts, fish, plants (prasinophytes, chlorophycophytes, and land plant spores), and acritarchs are present. Brachiopods are the most diverse phylum present (68 species), other richly represented groups are bryozoans and echinoderms; in contrast, cephalopods and trilobites are low in diversity and abundance. The muddy, middle to outer ramp biota (200 marine taxa, including 170 species of marine animals, 22 photoautotrophs, 6 forams) represents a mixture of allochthonous shallower-water communities (upper BA3), including storm- and possibly tsunami-affected coral mounds, and autochthonous deep-water soft-bottom brachiopod (e.g., Bifida–Echinocoelia) communities (BA 4–5). The richness and diversity of the Miłoszów biota is relatively high, comparable with other approximately coeval pre-Taghanic ecosystems during the Devonian climatic deterioration (cooling). Preliminary data indicate that in the Holy Cross Mountains, no large-scale replacement of brachiopod (and probably many other benthic ones, like crinoids) communities took place between the Early–Middle Givetian and the Early Frasnian, in contrast to the demise of the Hamilton/Upper Tully fauna in the Appalachian Basin. Such a similarity of pre- and post-Taghanic faunas does not exclude the occurrence of environmental perturbations and transient community turnovers, caused by immigrations during the Taghanic Biocrisis, but evidences the successful recovery of the indigenous biota.

The article deals with studying the hydrodynamic characteristics of the fluidized bed in gravitation shelf dryers. The algorithm to calculate hydrodynamic characteristics of the fluidized bed in the dryer’s workspace is described. Every block of the algorithm has a primary hydrodynamic characteristics theoretical model of calculation. Principles of disperse phase motion in various areas in the gravitation shelf dryer are established. The software realization of the author’s mathematic model to calculate disperse phase motion trajectory in a free and constrained regime, disperse phase residence time in the dryers’ workspace, polydisperse systems classification is proposed in the study. Calculations of disperse phase motion hydrodynamic characteristics using the software product ANSYS CFX, based on the author’s mathematic model, are presented in the article. The software product enables automating calculation simultaneously by several optimization criteria and visualizing calculation results in the form of 3D images. The disperse phase flow velocity fields are obtained; principles of a wide fraction of the disperse phase distribution in the workspace of the shelf dryer are fixed. The way to define disperse phase residence time91 in the workspace of the shelf dryer in free (without consideration of cooperation with other particles and dryer’s elements) and con-strained motion regimes is proposed in the research. The calculation results make a base for the optimal choice of the gravitation shelf dryer working chamber sizes.

Opis:
W artykule przedstawiono symulacje komputerowe wpływu architektonicznych rozwiązań elewacyjnych, systemów doświetlających oraz systemów ochrony przeciwsłonecznej na ilość światła dziennego w pomieszczeniach biurowca. W badaniach zastosowano metody statyczne. Symulowano warunki nieboskłonu w pełni zachmurzonego oraz czystego. Wyniki pokazały, że każdy element dodany do części przeszklonej elewacji (półki świetlne lub przesłony przeciwsłoneczne) znacznie obniża natężenie promieniowania słonecznego w warunkach nieboskłonu zachmurzonego, co powoduje w Polsce, że ilość światła naturalnego przez wiele dni w roku spada poniżej akceptowalnego poziomu. Ponadto badania wykazały, że półki świetlne równoważą rozkład natężenia oświetlenia w pomieszczeniu, co podnosi komfort wizualny.
The article presents computer simulations of the influence of architectural facade solutions (daylighting systems and sun protection systems) on the daylight availability in the office building. Static methods were used in the research. The conditions of an overcast and clear sky were simulated. The results has shown that each element added to the glazed part of the façade (light shelves or sun shades) significantly reduces the daylight availability under overcast skies, which means that in Poland the amount of natural light falls below the acceptable level for many days a year. In addition, research has shown that the light shelves balance the daylighting levels throughout the room, which increases visual comfort.

Visual merchandising is assumed to be the main component of retailing; the significance of it is highlighted by academics and practitioners. This research focused on the in-store merchandising strategy of product allocations and describes the relations between such tactics and customers' perception of store layout, traffic direction, brand awareness, and the appropriate assigning of products to shelf levels, based on their brand as well as price. Wizualna prezentacja produktu na sklepowych półkach jest uważana za główny czynnik w handlu detalicznym; fakt ten podkreślają badacze akademiccy, jak również praktycy handlu. Niniejsza praca koncentruje się na strategii przydzielania miejsca produktom na sklepowych półkach i opisuje wpływ na postrzeganie przez klientów zmian w układzie sklepu, kierunku ruchu, świadomości marki, a także właściwym przypisywaniem produktów do odpowiednich półek z uwzględnieniem ich marki i ceny. Praca zawiera przegląd różnych taktyk przydzielania miejsca produktom, które mają szczególne zastosowanie w sklepach oferujących markowe i szybko zbywalne produkty. Autorzy starannie dopasowali sposób alokacji produktów na planogramie, jak również sposób ich rozmieszczenia na różnych poziomach półek. Zaproponowany model jest zgodny z potrzebami wskazywanymi przez handlowców, a jego zastosowanie może mieć istotne znaczenie na wielkość sprzedaży. Z tego względu, zaprezentowana praca dostarcza niezbędnych informacji na temat wpływu innych produktów, takich jak komplementarne, substytucyjne oraz zestawy produktów, w zakresie całego asortymentu.

Opis:
Apples, like other fruits, are exposed to stress during their growth and development in the field, also during harvest and the postharvest environment (processing, storage, and transportation). The refrigeration system allows for bulk handling of food products from harvest to market, ensuring that food products are maintained in their freshness and integrity for an extended period through careful management of storage temperature and humidity. This study investigated the effects of storage on the weight loss of apples (Golden Delicious fruits harvested at maturity), under refrigerated conditions at a temperature of 5 ± 0.5°C and relative humidity of 82% and under ambient storage at a temperature of 25 ± 0.5°C and relative humidity of 60%, over 3 months. The findings revealed that the two groups of apples experienced weight reduction at different levels. Apples placed at cold storage presented a loss of weight between 3.31 g and 4.49 g; however, apples stored at ambient temperature showed a significant loss of weight between 21.90 g and 31.76 g.
