The reason for studying the paintings by Xawery Dunikowski was the conservation and restoration of six canvases from the large set of works by this artist, conducted by the Institute for the Conservation of Paintings and Polychromed Sculpture. The examined compositions included three canvas paintings, one collage, and two paintings on plywood, featured in the Królikarnia Branch of the National Museum in Warsaw. One of the plywood paintings was executed on both sides. Despite numerous conservation undertakings performed in the course of recent years, and encompassing not only the paintings under discussion but also the whole Królikarnia collection, so far no publications has discussed the conservation, technical construction, and execution technology of works by X. Dunikowski. The purpose of the presented operations was to offer basic knowledge which in the future will facilitate all sorts of ventures focused on the conservation, restoration and prophylactic protection of the artist’s oeuvre. The research has made possible a technical and technological analysis and an examination of the state of the preservation and conservation of the works of this prolific artist. At the same time, methods which could serve as a basis for the conservation of his whole oeuvre have been devised. The selection of paintings involved an attempt at creating a set which would present damage typical for all the Dunikowski paintings. The titular conservation and restoration posed a number of problems caused primarily by the artist’s approach to his workshop. The majority of the damage is the result of an incorrect choice of material. Certain sources indicate that Dunikowski relegated all technical issues to the sidelines, and apparently was unconcerned with the durability of his works. At the very outset, therefore, we should ask about the extent to which one should interfere in cases such as this, and the range of the ensuing conservation, as evidenced by the intense discussion about the unusual appearance of the painting entitled Abstract Composition with a Skull. It would be difficult to ascertain unambiguously whether the uneven canvas around the cardboard attached with stiff glue is the effect of the lengthy impact of atmospheric factors. Equally controversial proved to be the purposefulness of gluing and supplementing damaged corners in the Portrait of a Daughter (obverse) and the Portrait of a Girl (reverse). Since the artist painted the portraits on an already damaged base, such an undertaking would not be tantamount to a restoration of the original state, but constitute a creation. Ultimately, it was decided to opt for moderation in restoring the state of the monument according to our vision of its original condition. Certain technical and aesthetic problems are posed by the exposition of this two-sided painting, since the obverse had been executed across the rectangular plywood, and the reverse – longitudinally. The above considered examples of complex problems prove that in this particular case conservation was by no means routine. This experience made it possible to once again heighten our awareness of the fact that the conservation and restoration of modern art remain an open issue, and that questions which only at first glance appear to be of minor importance actually call for individual treatment.

In reference to the discussion that is being led in this country with concern to application of provisions contained in the Charter of Venice the author expressed a view th at the art of conservation can be considered as the interpretative humanist activity which is by no means in conflict with the main rule of conservation. The rules of conservation tre atments formulated in various times, though ranging over the national levels and progressive in their nature, while gathered to form a collection grew to an expression of views typical of a certain defined stage of historical development. Thus there arises a need of permanent confronting the present views of conservators with the relevant regulations in force and with documents declaratory as to their character. The Charter of Venice, a document that was not subjected to discussion in Poland until 1974 may be considered such an act. It did not also have any essential rank of a document governing the practice of conservation. On the other hand a legal act that makes the sign of equality between the rebuilding and reconstruction which, however, is in contradiction with rules of the Venice Charter. According to the author the Charter of Venice does not constitute a document covering the problems of both conservation and restoration of all historical monuments, but it relates to part of them only. So it seems quite easy to arrive at a reflection th a t the Charter of Venice has been confined in its coverage to architectural objects alone. But a definition of historical monuments is considered inadequate, for the material succession of the past forms a certain contained entity to which the passing years has been making their contributions and which is being also lessened with elapsing time. Each of its components is a document of the past. The appropriate formulations made by conservators relating to one area of art do not, however, exclude the integrated approach to the problem. In the case of conservation of architecture and te movable historical monuments the common undertaking of the problem of authenticity and of original matter of a historical monument will prove profitable for conservation of architecture where the primple of respect for an original object too often gives to place in favour of the object’s function and of technology. There is an urgent need to prepare a document on conservation having national character that could ' give a rise for international discussion.

Dr. Janusz Lehmann (1924-2002) was a conservator of historical monuments and an expert on theory and praxis. He was also an outstanding organiser of scientific and social undertakings in numerous fields of conservation as well as an author and translator of numerous professional publications. Participant and co-organiser of numerous specialist conferences on the conservation of historical monuments held both at home and in Italy, Spain, the United States, Germany, the Czech Republic, the former Soviet Union, Tunisia, India and Hungary. Dr. Janusz Lehmann was a member of the International Institute of Conservation (IIC), the International Committee of Museums (ICOM) and an expert for the UNESCO commission dealing with the conservation of stone monuments. Up to his death he also fulfilled the function of the chairman of the Poznań Branch of the Society for Protection of Historical Monuments (TOnZ).

The article concerns the issue of conservation and restoration of wooden elements of the cabinet construction of a church tabernacle and its decoration painted in the lean tempera technique. After the initial presentation of the object’s characteristics, technology of its creation, history and state of preservation, there is also a detailed description of treatment with some methods and means that were used during the conservation and restoration process. Furthermore, the work refers to some specific procedures of dealing with the strengthening of polychrome wooden boards with a weakened internal structure of wood, without the possibility of dismantling the artefact. Moreover, the article also describes the designed and implemented special aluminium outer construction that – embracing the whole church tabernacle from the outside - took over the load affecting the weakened structural joints. The description is complemented with the reference to the discussion on defining the extent of reconstruction of the Vir Dolorum painting located on the door of the tabernacle, where paint layer was damaged in more than 30%.
W artykule poruszono problematykę konserwacji i restauracji drewna skrzyniowej konstrukcji tabernakulum oraz jego dekoracji malarskiej wykonanej w technice chudej tempery. Po wstępnym przybliżeniu charakteru obiektu, technologii wykonania, historii oraz stanu zachowania, opisano proces konserwacji, zastosowane metody oraz środki. Przedstawiono konkretne procedury postępowania konserwatorskiego przy polichromowanych deskach o osłabionej strukturze wewnętrznej drewna bez możliwości demontażu zabytku na poszczególne elementy. Ponadto opisano zaprojektowaną i wykonaną aluminiową konstrukcję zewnętrzną, która obejmując całe sakrarium z zewnątrz, przejęła obciążenia oddziałujące na osłabione złącza konstrukcyjne. Dopełnienie opisu stanowi przybliżenie dyskusji dotyczącej określania zakresu rekonstrukcji malowidła Vir Dolorum znajdującego się na drzwiczkach tabernakulum, którego warstwa malarska była zniszczona w ponad 30%.

The object of the research is the alabaster portal of the parish church of Assumption of the Virgin Mary, Holy Cross and Bartholomew the Apostle in Drohobych. The portal consists of fourteen separate blocks cut out of alabaster, and only blocks No.1, 2, 13, and 14, which are the results of the previous restoration, cut out of sandstone. Conservation and longevity maintenance leads to the further discussion of the restoration problems. This article covers a range of issues, in particular the scale of the portal and the size of the blocks, which must be disassembled and transported, numerous secondary additions of different types of alabaster and cement mortars; deterioration of structure of the stone and portal forming of two types of stone – alabaster and sandstone. This paper gives a scheme of losses and suggestions for restoration: 1) disassembling of the unstable parts of the portal; 2) cleaning of contaminated surfaces; 3) strengthening of the stone; 4) portal waterproofi ng; 5) reconstruction of lost portal fragments; 6) application of protective coating. Sandstone blocks of the portal: 1) cleaning of contaminated surfaces; 2) stone desalination; 3) strengthening; 4) addition of lost fragments.
Przedmiotem badania jest portal alabastrowy kościoła parafialnego pw. Wniebowzięcia NMP, św. Krzyża i św. Bartłomieja w Drohobyczu. Portal składa się z 14 oddzielnych bloków z alabastru, bloki nr 1–2 oraz 13–14 są wynikiem poprzednich renowacji i są zrobione z piaskowca. Potrzeba zachowania oraz zabezpieczenia długowieczności portalu powoduje aktualność kwestii restauracji. Ten artykuł obejmuje szereg problemów, w tym rozmiar portalu oraz waga bloków, które trzeba demontować i transportować, liczba wtórnych dodatków różnego rodzaju zapraw cementowych i gipsowych; zniszczenie struktury kamienia i to, że portal składa się z dwóch rodzajów kamienia – alabastru i piaskowca. Podany został również kartogram strat oraz zalecenia do restauracji: 1) demontaż niestabilnych elementów portalu; 2) usuwanie zanieczyszczeń powierzchniowych; 3) wzmocnienie kamienia; 4) hydroizolacja portalu; 5) rekonstrukcja utraconych fragmentów portalu; 6) nałożenie powłoki ochronnej. Bloki portalu z piaskowca: 1) usuwanie zanieczyszczeń powierzchniowych; 2) odsalanie powierzchni kamienia; 3) wzmocnienie; 4) uzupełnienie strat.

Restauracje oraz inne obiekty świadczące usługi gastronomiczne stanowią istotną część hoteli, mogą być ich wizytówką lub decydować o ich niepowtarzalności. Zgodnie z Rozporządzeniem Ministra Gospodarki i Pracy z dnia 19 sierpnia 2004 r. w sprawie obiektów hotelarskich i innych obiektów, w których są świadczone usługi hotelarskie gestorzy mają obowiązek świadczenia usług gastronomicznych w hotelu. Jednak mimo dynamicznego rozwoju gastronomii w XXI w. prowadzenie obiektów znajdujących się w hotelach jest często dla gestorów obowiązkiem, a nie źródłem dodatkowego dochodu. W niniejszym artykule został zaprezentowany produkt gastronomiczny w łódzkich hotelach, rozumiany jako wszystkie usługi w hotelu związane z gastronomią. Analiza została przeprowadzona pod kątem marki obiektów, oferty związanej z lokalną kuchnią oraz dostępności gastronomii hotelowej dla potencjalnych gości. Ponadto wyróżniono czynniki, które mogą ułatwić dostęp do gastronomii hotelowej, przełamując jej stereotyp jako uznawanej za dostępną tylko dla osób korzystających z noclegu, oraz przedstawiono zalety dobrego wykorzystania możliwości produktu gastronomicznego hotelu.

Hotele i lokale gastronomiczne były ważną częścią życia codziennego mieszkańców II Rzeczypospolitej. Zakłady gastronomiczne stanowiły niekiedy miejsca spotkań. Toruń będący w okresie międzywojennym ważnym ośrodkiem administracyjnym i kulturalnym północnej części państwa, w momencie przyłączenia do Polski posiadał bazę hotelową i restauracyjną. W eleganckich kawiarniach, modnych cukierniach, zadymionych i szemranych knajpach zacieśniano więzy międzyludzkie. Torunianie chętnie korzystali z oferty licznych lokali, jedząc, pijąc, słuchając koncertów, będąc niekiedy świadkami skandali obyczajowych i przestępstw. Artykuł ma na celu ukazanie działalności wybranych hoteli i lokali gastronomicznych międzywojennego Torunia zarówno z tej jasnej, jak i ciemnej strony. Na materiał źródłowy składają się m.in. prasa regionalna („Dzień Pomorski”, „Słowo Pomorskie”) i archiwalia (Akta miasta Torunia 1920–1939).

The article concerns frescos from the 15th century bourgeois tenement house called “Pod Aniołkiem” in Cracow. Most important issues raised here are: contemporary conservation and restoration of classical polychrome on the eastern wall of the front room on the second floor and the visualisation of this room with regard to restoration and design works conducted there in the seventies. The room is such an excellent example of the variety of historical layers that it has become the subject of the computer three-dimensional visualisation. The spectator can be easily sent to different appearances of the room – in chosen periods of time. The history of the tenement house called “Pod Aniołkiem” and the description of the frescos inside are also included in the article. Other issues discussed here are: problems with conservation in the seventies of the twentieth century and the attitude of restorers towards the exhibition of wall paintings. Last but not least, the condition of frescos’ conservation in the room and the physical-chemical researches carried out there are tackled as well. Translated by Dobromiła Kwiatkowska

Artykuł dotyczy jedzenia w kontekście konsumpcjonizmu i jego krytyki. Osnową rozważań jest film Menu. Fabuła filmu posłużyła do stawiania zasadniczych pytań o mechanizmy współczesnej kultury konsumpcji. Autorzy odwołali się do koncepcji społeczeństwa kapitalistycznego Herberta Marcusego, a szczególnie do kategorii represyjnej desublimacji. Restauracje oferujące wykwintne jedzenie (fine dining) stawiają sobie za cel stworzenia możliwości całościowego doświadczenia bliskiego doświadczeniu sztuki. Ceną takiej koncepcji gastronomi jest często nie tylko gigantyczny rachunek, ale też wyzysk pracowniczy i przemoc. Kryzys tego tylu wskazuje z jednej strony, na ekonomiczne uwarunkowania konsumpcjonizmu, ale z drugiej też na niemożność ucieczki od sprzeczności kultury społeczeństwa kapitalistycznego, które się z nim wiążą. 
The presented text pertains to eating within the context of consumerism and its critique. Reflections are based on the film Menu, whose plot served posing fundamental questions about the mechanisms of the contemporary culture of consumption. The authors referred to Herbert Marcus’ conception of capitalist society and in particular the category of repressive desublimation. The goal of restaurants offering fine dining is to create the possibility of a holistic experience close to experiencing art. The price of such a conception of gastronomy is often not merely an exorbitant bill but also the exploitation of workers and violence. The ensuing crisis indicates, on the one hand, the economic conditioning of consumerism, but on the other hand the impossibility of evading the contradictions of the culture of capitalist society with which they are associated.

Service quality, because of their specificity, it is difficult to assess, especially since there is no its materiality her, it can't be seen. In such quality analysis special types of methods are used, among which the Servqual method and its variation the Servperf method should be mentioned. In the article the Servperf method was used to evaluate the quality of services in the chosen brewery. In this method the customer does not evaluate his expectations for the service, but only the final service. The aim of the chapter was to evaluate the quality of services offered by chose brewery in Czestochowa and to show superiority method Servperf over by Servqual method.
