Introduction. The subject of the article is a chemical compound belonging to the carotenoid family, i.e. lycopene. Aim. The aim of this study was to describe interest among scientists regarding lycopene due to its unique properties, general availability and potential for wide application in medicine. Material and methods. This article is a review in which the properties of lycopene, its chemical structure and sources (especially in the form of tomato fruits and its products), as well as its important role and importance in medicine, is presented. Analysis of the literature. Lycopene is an interesting compound with interesting properties. It may prove to be an important and readily available means of preventing and fighting cancer (especially prostate cancer, uterine cancer and breast cancer). Additionally, lycopene can counteract cardiovascular diseases that are common nowadays. Conclusion. The data indicates increased number of papers regarding applications of lycopene in medicine.

Lycopene is the most abundant carotenoid found in tomatoes and thus has been touted as the bioactive component for the reduced risk of chronic diseases such as prostate cancer. We and others hypothesize that lycopene metabolites are responsible for positively modulating biomarkers and risk factors for the prevention of chronic diseases. Lycopene metabolites circulate in serum and accumulate in tissues at concentrations equivalent to bioactive retinoids. Recent studies report that lycopene metabolites reduce the proliferation of cancer cells, induce apoptosis, enhance gap junction communication between cells, alter normal cell cycle progression, and modulate androgen signaling pathways. Here we review recent literature and provide new evidence to suggest that lycopene metabolites may be bioactive at physiological concentrations.

Plants are rich and still unexploited sources of bioactive compounds, attractive for their therapeutic properties and as the raw material for the formulation of pharmaceutical and food products. The colour of the plants, especially comestibles as vegetables or fruits, results from chemical compounds whose metabolic activity is the aim of many studies nowadays. The carotenoids, a group of organic compounds with an unsaturated skeleton of hydrocarbons, results in the colours of yellow, orange and red. Having antioxidant activity and, for some of them, being the precursors to vitamin A in the animal organisms are willingly used in very different medical applications. The article describes the current state of knowledge regarding the types and quantities of carotenoids in vegetables, the advancement of knowledge of their metabolic impact, their possible applications in medicine, as well as the desired directions for further research. Also, the scope of their industrial use and the prospects of carotenoids’ market development are included. This work is carried out in the framework of the COST Action – EUROCAROTEN CA15136, with the aim of the exchange and development of knowledge between European researchers working on carotenoids.
Rośliny są bogatymi i wciąż niewykorzystanymi źródłami związków bioaktywnych, atrakcyjnymi ze względu na swoje właściwości terapeutyczne i stanowiącymi surowiec do tworzenia produktów farmaceutycznych i spożywczych. Kolor roślin, zwłaszcza produktów spożywczych, takich jak warzywa czy owoce, wynika z obecności związków chemicznych, których aktywności metaboliczne są obecnie celem wielu badań. Karotenoidy – grupa organicznych związków o nienasyconym szkielecie węglowodorów – powoduje barwy żółtą, pomarańczową i czerwoną. Mają aktywność przeciwutleniającą, a niektóre z nich, będąc prekursorami witaminy A w organizmach zwierzęcych, są chętnie stosowane w medycynie. W artykule przedstawiono obecny stan wiedzy na temat rodzajów i ilości karotenoidów w warzywach, postęp wiedzy na temat ich wpływu metabolicznego, możliwych zastosowań w medycynie, a także pożądanych kierunków dalszych badań. Ponadto omówiono ich wykorzystanie przemysłowe oraz perspektywy rozwoju rynku karotenoidów. Praca ta jest prowadzona w ramach działania COST – EUROCAROTEN CA15136, mającego na celu wymianę i rozwój wiedzy między europejskimi badaczami zajmującymi się karotenoidami.

Blakeslea trispora is a good alternative source for producing such carotenoids as lycopene and β-carotene. The objective of this research was to elaborate a method for the simultaneous determination of lycopene and β-carotene in Blakeslea trispora products using a usual UV-vis spectrophotometer. The standard solutions of the mixture of different concentrations of β-carotene and lycopene were measured with the UV-vis method and correlation formula for the extinction coefficients of 1% standard solution of lycopene in the solvent (hexane) and the ratios of the optical densities at the character peaks of 470 and 502 nm was elaborated. This gives a possibility to calculate the concentrations of lycopene and β-carotene in the mixture. The prediction quality of the UV-vis method was sufficient and the obtained results were very close to the ones, being measured with the HPLC technique. The proposed method can be used for both routine industrial work and academic research, providing the rapid analysis for simultaneous measurements of lycopene and β-carotene.

It has been suggested that lycopene, the major carotenoid found in tomato, exhibits health-beneficial effects by virtue of its antioxidant activity. However, recent literature suggests that lycopene can actually "perform" roles independent of such capacity and involving a direct modulation of redox signalling. Reactive oxygen species are known to act as second messengers in the modulation of cellular signalling leading to gene expression changes and pharmacological responses. Lycopene may control redox-sensitive molecular targets, affecting enzyme activities and expressions and modulating the activation of MAPKs and transcription factors, such as NF-κB and AP-1, Nrf2.

Tomato (Solanum lycopersicum) is an economically important vegetable crop grown in tropical and sub-tropical parts of the world. The objective of this paper is to review nutritional benefits of tomato, its different bioactive components and their application in food products. Tomato and tomato products are very beneficial to our health as they decrease the risk of many diseases, such as cancer, asthma, heart disease etc. The whole fruit of tomato i.e pomace, seed and tomato solids have many nutraceutical benefits and is extensively used in food processing industry either as raw or in powder form. Many bioactive components are present in tomato, such as lycopene, oleoresin, carotenoids etc. Tomato is very popular for high content of antioxidant compounds and antioxidant activity. It is preserved mainly by drying (tray drying, freeze drying) and encapsulation process. We have tried to focus on to get the answer, which one is better in food application, lycopene supplementation or direct tomato powder fortification in food products.

In tomato fruits, chlorophyll, lycopene and ß-carotene are mostly responsible for the color. During ripening of tomato fruits, the color of the pericarp changes from green to red as chlorophyll is degraded and carotenoids accumulate. These changes are associated with an increase in respiration and ethylene production. Carotenoid biosynthesis pathway in plants can be disturbed by herbicide fluridone (1-methyl-3-phenyl-5-[3-trifluoromethyl(phenyl)]- 4(1H)-pyridinone), which inhibits the activity of phytoene desaturase, an enzyme responsible for conversion of phytoene to phytofluene. Fluridone is also used as an inhibitor of biosynthesis of abscisic acid (ABA) and strigolactones, and it reduces chlorophyll production in plants. In our research we studied the effect of fluridone on some physiological parameters, such as color, firmness, ethylene production, lycopene and chlorophyll content during ripening of the tomato fruit. Tomato plants cv. Altadena (Syngenta) were cultivated in a greenhouse in controlled temperature and both immature and mature fruits were used for the experiments, performed between August and November 2016. Fluridone at concentrations of 0.1% and 1.0% in lanolin paste was applied as a 2-3 mm stripe from the top to the base of tomato fruits, and as a control a stripe of lanolin was applied in the same way on the opposite side of the fruits. Fluridone at a concentration of 1.0% greatly inhibited lycopene accumulation in the pericarp of tomato fruits from the treated side. The measurements of fruit firmness have shown no significant differences between firmness of the part of the tomato fruits treated with fluridone, and the non-treated ones. Tomato fruits treated with fluridone produced amounts of ethylene similar to those found in control tissues on the opposite side of the same fruit. Fluridone delayed chlorophyll degradation in tomato fruits. The metabolic significance of these findings is discussed with the role of carotenogenesis inhibition in tomato fruit ripening.

Lycopene, the pigment principally responsible for the red color of tomatoes, is well-known for its strong antioxidant property and substantial health benefits. In this study, the optimal combination of factors for lycopene extraction from tomato pomace was identified using response surface methodology. The best practically feasible results maximizing both lycopene yield and antioxidant activity of the extract were obtained by applying a ratio of ethyl acetate to tomato waste of 35:1 (v/w), at a temperature of 55ºC for 100 min of extraction. The extract was then added to the peanut oil to evaluate its oxidative stability during 60 days of storage at 40ºC. It was shown that the addition of 2 g extract/kg oil offered the lowest level of peroxide value, p-anisidine value, and total oxidation value, followed by the oils with 50 mg butylated hydroxytoulene/kg oil and 1 g extract/kg oil, indicating the effect of lycopene-rich extract on enhancing the oxidative stability of peanut oil. The results in this study suggest that incorporation of extract rich in lycopene from tomato waste products may be an effective method to reduce oxidation and extend the shelf-life of peanut and other vegetable oils.

Lycopene inhibits oxidative changes in meat during storage. Newborn animals may ingest great amounts of lycopene in colostrum and milk. Lycopene is the main carotenoid of human colostrum. The aim of this paper was to present the aspects connected with antioxidative lycopene activity in animals feed.

Processing tomato production represents an important part of the total production of processed vegetables in the world. The quality characteristics of processing tomato, important for the food industry, are soluble solids content and antioxidant content (such as lycopene and polyphenols) of the fruit. Analytical quantification of these components is destructive, time and labour consuming. That is why researchers try to develop a non-destructive and rapid method to assess those quality parameters. The present study reports the suitability of a portable handheld visible near infrared spectrometer to predict soluble solids, lycopene and polyphenol content of tomato fruit puree. Spectral ranges of 500-1000 nm were directly acquired on fruit puree of five different tomato varieties using a FieldSpec HandHeld 2™ Portable Spectroradiometer. Immediately after spectral measurement, each fruit sample was analysed to determine soluble solids, lycopene and polyphenol content. Partial least square regressions were carried out to create models of prediction between spectral data and the values obtained from the analytical results. The accuracy of the predictions was analysed according to the coefficient of determination value (R2), the root mean square error of calibration/cross-validation.
