Opis:: When I came to Krakow for the first time several years ago and tried to get some information about the Jewish Krakow, among the first-hand information I was offered in the bookshops were a few small booklets with legends about the Jews in this town. This is nothing special, for wherever one goes as a tourist one gets the same genre of literature: local legends and tales. It seems, therefore, that the popular legends indeed offer the first-hand information about the specific climate and the self-estimation of the inhabitants at a specific place. It is obviously the tales of a city that infuse life to its stones and places more than all exact historical data one can gather. The legend gives, so to speak, a short-hand résumé of the most typical and central features as well as the spirit of a place.

Opis:: The Toruń gingerbreads are one of the most distinctive elements of Toruń’s history and tradition. Yet not only inhabitants of the city of Copernicus associate them with that place. Their unique taste is also highly valued by the foreigners. The well-developed apiculture in the neighborhood of the city strongly and directly contributed to the Toruń gingerbread craft. One of the first Toruń gingerbread bakers, who were mentioned in the historical records, was Nikos Czan, who lived in the 14th century. The other one Henryk Kuche was active long before the Battle of Grunwald in 1410. In the year 1577 the Gingerbread Guild in Toruń was granted a royal privilege that enabled it to sell its products at royal markets. Since then, one could observe a bitter rivalry between gingerbreads bakers from Toruń and Królewiec; and it was Toruń that was successful. In the 19th century the various branches of industry were developed. Among others confectionery manufacturers were established; they focused not only on gingerbread’s production, but also the production of sweets, i.e. companies of Gustaw Weese, Hermann Thomas or Jan Ruchniewicz. Nowadays the tradition of Torun gingerbreads is safeguarded by the „Kopernik” confectionery. Multi-layered history of Toruń gingerbreads is reflected by various local tales. In the vast set of Toruńʼs tales one can distinguish those that refer to the origins of the gingerbreads and their unique taste (thanks to the fact that the dough was enriched by honey and spices). Other tales refer to the origin of „Katarzynka” (Catharin’s Gingerbread) and its unique shape. The image of the city, encapsulated in the above mentioned tales, is the expression of admiration, experiences resp. reflections of both former and current inhabitants of Toruń and visitors enchanted by the beauty of the city.
Die Thorner Lebkuchen spielen in der Geschichte und Tradition der Stadt eine besondere Rolle. Der Leidenschaft für dieses Süßgebäck haben nicht nur die Bewohner der Stadt des Kopernikus, sondern auch Ausländer gefröhnt. Die in der Umgebung der Stadt erfolgreich betriebene Zeidlerei und Imkerei hat besoders gute Entwicklungsmöglichkeiten für das hiesige Lebkuchenhandwerk geschaffen. Ein thorner Lebkuchenbäcker, ein gewisser Nikos Czan, wurde erstmals im 14. Jahrhundert in schriftlichen Quellen erwähnt. Ein weiterer – Henryk Kuche – war schon lange vor der Schlacht bei Tannenberg in der Stadt tätig. Im Jahre 1577 wurde der thorner Lebküchlerzunft ein Privileg verliehen, das den Verkauf des Gebäcks auf königlichen Jahrmärkten bewilligte. Schon damals begann die Rivalität zwischen den thorner und königsberger Lebkuchenbäckern, die letztlich zugunsten der Thorner entschieden wurde. Im 19. Jahrhundert begann die Entwicklung einer industriellen Herstellung dieser Süßware. Zu den damals bekanntesten Produktionsbetrieben gehörten die Anlagen von Gustav Weese, Herman Thomas und Jan Ruchniewicz. Sie produzierten nicht nur Lebkuchen sondern auch andere Süßigkeiten. Heute greift die Süßwarenfabrik „Kopernik” auf die Tradition der thorner Lebkuchenbäcker zurück. Die vielschichtige Geschichte der Thorner Lebkuchen spiegelt sich in den lokalen Erzählungen und Sagen wider. Es gibt z. B. Erzählungen welche die Geschichte des Lebkuchengebäcks erläutern und seinen vollen und einzigartigen Geschmack der sorgfältigen Auswahl besonders erlesenen Gewürzen und Honigarten zuschreiben. Andere Erzählungen beinhalten eine Deutung der besonderen und einzigartigen Gestalt dieser Gebäckart. Sie wird mit dem Kosenamen Kathrina (Kathrinchen) in Beziehung gesetzt. Das Bild der Stadt welches in den genannten Sagen festgehalten wurde, zeugt von der Intensität der Erlebnisse und Reflexionen der ehemaligen und jetzigen Einwohner und Besucher, die durch die Schönheit dieser gotisch geprägten Stätte bezaubert wurden.
