Garlic (Allium sativum L. fam. Alliaceae) is one of the most researched and best-selling herbal products on the market. For centuries it was used as a traditional remedy for most health-related disorders. Also, it is widely used as a food ingredient – spice and aphrodisiac. Garlic’s properties result from a combination of variety biologically active substances which all together are responsible for its curative effect. The compounds contained in garlic synergistically influence each other so that they can have different effects. The active ingredients of garlic include enzymes (e.g. alliinase), sulfur-containing compounds such as alliin and compounds produced enzymatically from alliin (e.g. allicin). There is a lot of variation among garlic products sold for medicinal purposes. The concentration of Allicin (main active ingredient) and the source of garlic’s distinctive odor depend on processing method. Allicin is unstable, and changes into a different chemicals rather quickly. It’s documented that products obtained even without allicin, such as aged garlic extract (AGE), have a clear and significant biological effect in immune system improvement, treatment of cardiovascular diseases, cancer, liver and other areas. Some products have a coating (enteric coating) to protect them against attack by stomach acids. Clinically, garlic has been evaluated for a number of purposes, including treatment of hypertension, hypercholesterolemia, diabetes, rheumatoid arthritis, cold or the prevention of atherosclerosis and the development of tumors. Many available publications indicates possible antibacterial, anti-hypertensive and anti-thrombotic properties of garlic. Due to the chemical complexity of garlic and the use of different processing methods we obtain formulations with varying degrees of efficacy and safety.
Czosnek (Allium sativum L. fam. Alliaceae) jest jednym z najdokładniej zbadanych i najlepiej sprzedających się produktów ziołowych na rynku. Przez wieki był on używany jako tradycyjny środek w leczeniu wielu problemów prozdrowotnych. Ponadto, czosnek stosuje się powszechnie jako składnik żywności – cenna przyprawa czy afrodyzjak. Właściwości prozdrowotne czosnku są wynikiem odpowiedniej kombinacji substancji biologicznie czynnych, które to razem są odpowiedzialne za jego działanie lecznicze. Związki zawarte w czosnku, synergistycznie wpływają na siebie tak, że mogą one razem mieć całkiem odmienny efekty. Aktywne składniki czosnku obejmują min. enzymy (np. alliinaza), związki zawierające siarkę - alliina oraz związki wytwarzane enzymatycznie z alliiny (np. allicyna). Spośród produktów powszechnie sprzedawanych istnieją znaczne rozbieżności w składzie substancji aktywnie czynnych. Ilość allicyny, głównej substancji czynnej oraz charakterystyczny zapach czosnku zależą od sposobu przygotowania. Wynika to z tego, iż allicyna jest niestabilna i zmienia się dość szybko w inne substancje chemiczne. Udowodniono, że produkty uzyskane nawet bez allicyny, takie jak np. ekstrakt z czosnku poddany specjalnemu procesowi starzenia (AGE) mają wyraźny i znaczący wpływ na poprawę systemu odpornościowego, w leczeniu chorób układu krążenia czy na postęp w leczeniu nowotwór wątroby. Niektóre produkty apteczne mają powłoki (powłoka dojelitowa), chroniące substancję czynną przed atakiem kwasów żołądkowych. Czosnek, był oceniany kliniczne pod względem wielu właściwości, jednak głównie brano pod uwagę leczenie nadciśnienia tętniczego, hipercholesterolemii, cukrzycy, reumatoidalnego zapalenia stawów, przeziębienia czy zapobieganie miażdżycy tętnic czy rozwój nowotworów. Wiele dostępnych publikacji wskazuje na możliwe przeciwbakteryjne, przeciwnadciśnieniowe i przeciwzakrzepowe działanie czosnku. Ze względu na złożoność chemiczną czosnku i stosowanie różnych metod przetwarzania, można otrzymać preparaty o różnym stopniu w zakresie skuteczności i bezpieczeństwa.

The aim of the study is to determine the antioxidant activity and influence of Allium ursinum L. leaf extract on physicochemical and electrical properties of erythrocytes in order to help clarify its capacity to alleviate oxidative stress. The phenolic compounds were isolated from the leaves of bear garlic. The composition of the extract is well documented and was earlier analyzed quantitatively and qualitatively by UPLC methods. The impact of the extract constituents on the erythrocyte membrane properties was determined on the basis of its osmotic fragility, fluidity, organization of the hydrophilic area and transmembrane potential with spectrophotometric and fluorimetric methods. Furthermore, the effect of the extract on the level of membrane lipid oxidation and also on the extent of hemolysis of erythrocytes subjected to oxidation induced by AAPH compound was determined. The study showed that the extract at 40 µg/mL lowers the level of erythrocyte hemolysis caused by 76.8% oxidation. In addition, the extract protects lipid membranes against hemolysis better than ascorbic acid. The extract, in examined range of concentrations, did not induce hemolysis of erythrocytes, caused small decrease in their electric potential and osmotic fragility, and increased disorder of the polar heads of membrane lipids. The high antioxidant efficiency and determined effects of the interaction of bear garlic leaf extract with the erythrocyte membrane suggest that its constituents may not only protect cells against free radicals but also mitigate the effects of oxidative stress.

Dermatophytic infection is a common infection that constitutes public health problem among children. Anti dermatophytic activity of aqueous, ethanolic and methanolic extracts of garlic (Allium sativum) was investigated against isolates of dermatophytic fungi obtained from sixty primary school children in Aba. The well in agar diffusion technique was used to determine the sensitivity patterns of the test organisms. The results were compared with the activity of a known antifungal drug nystatin. The isolates included Trichophyton mentagrophytes, Trichophyton rubrum, Microsporum gypseum, Trichophyton verrucosum and Epidermophyton floccosum. The result of the antifungal activity of garlic showed high but varied levels of antifungal effectiveness on the different species of the dermatophytes at four different concentrations of 12.5 %, 25 %, 50 % and 100 % used. T. rubrum was the most susceptible followed by M. gypseum, T. mentagrophytes, T. verrucosum and E. floccosum respectivey. The diameter zones of inhibition exhibited by the extracts against test fungal species ranged between 4.50 mm and 30.67 mm. Further purification and extraction of active principle of garlic would give an antidermatophytic activity comparable to standard antifungal drugs.

Aims: To evaluate the phytoconstituent and antitrypanosomal effects of aqueous extracts of Ginger and Garlic bulbs in mice experimentally infected with Trypanosoma brucei brucei. Design: A total of 30 adult male mice (weighing 25-40 g) were randomly grouped into six groups (I, II, III, IV, V, and VI) of 5 animals each. Five Groups (II-VI) were intraperitoneally injected with T. brucei brucei (5×105 cells/ml). Methods and Material: Aqueous extract of ginger and garlic bulbs were obtained using the procedure described by Wabo Pone and the extracts were subjected to phytochemical screening using the standard screening method of Silva. Also, each mice was inoculated with 0.1 ml of blood containing approximately 5×105 cells/ml as described by Herbert and Lumsden. Finally, the aqueous extracts were tested on the inoculated mice. Statistical analysis used: Data obtained were expressed as mean ± standard error of the mean (SEM), and subjected to one-way analysis of variance (ANOVA), SPSS 17.0 statistical software. p<0.05 was considered significant. Results: The aqueous extracts increased the survival time, packed cell volume, rectal temperature, and body weight (Ginger extract only) of mice infected with Trypanosoma brucei brucei. Phytochemical analysis revealed alkaloids, steroids, cardiac glycosides, phenol, and saponins in both Ginger and Garlic. Conclusions: Aqueous extracts of Ginger and Garlic bulbs do not have an anti-trypanosomal effect on Trypanosoma brucei brucei. Consequently, geographical location and time of collection of plants are factors that accept therapeutic on ginger and garlic on tryps and should be considered when testing the plants' efficacy on Trypanosoma brucei brucei.

The aim of this study was to comparison of chemical components and antioxidant activity in leaves of winter and spring varieties of garlic, obtained from POLAN Company; Krakow, Poland) as well as in leaves of wild (bear’s) garlic. The content of basic chemical components were determined according to the AOAC methods. Selected minerals content was determined according to the PN procedure. Vitamin C and polyphenols were determined using the Tillman’s and Folin-Ciocalteau’s methods, respectively. The ability to scavenging of the ABTS•+ was analyzed by Re et al. method. Leaves of wild garlic had the significantly lowest amount of dry matter (79.0 g·kg⁻¹), proteins (13.7 g·kg⁻¹), total carbohydrates (50.8 g·kg⁻¹), dietary fiber (26.9 g·kg⁻¹), ash (8.9 g·kg⁻¹), vitamin C (956.1 mg·kg⁻¹), and antioxidant activity (25.0 mmol TEAC·kg⁻¹), but the highest level of crude fat (5.6 g·kg⁻¹), potassium (34.6 g·kg⁻¹), magnesium (1.72 g·kg⁻¹), iron (230.3 mg·kg⁻¹) and zinc (58.8 mg·kg⁻¹) as compared to winter and spring varieties. At the same time, there was no unambiguous differences in the level of basic chemical components (proteins 20.9 ÷ 35.7 g·kg⁻¹, fat 1.6 ÷ 2.8 g·kg⁻¹, total carbohydrates 61.3 ÷ 116.5 g·kg⁻¹, fibre 33.7 ÷ 57.0 g·kg⁻¹, ash 8.9 ÷ 14.1 g·kg⁻¹), antioxidants (vitamin C 75.4 ÷ 459.7 mg·kg⁻¹, polyphenols 335.3 ÷ 1895.1 mg·kg⁻¹), antioxidant activity (27.0 ÷ 30.1 mmol TEAC·kg⁻¹) and the amount of minerals (calcium 7.55 ÷ 28.9 g·kg⁻¹, potassium 15.9 ÷ 28.0 g·kg⁻¹, magnesium 0.85 ÷ 1.32 g·kg⁻¹, sulphur 2.41 ÷ 6.22 g·kg⁻¹, iron 34.4 ÷ 85.7 mg·kg⁻¹, zinc 9.32 ÷ 13.8 mg·kg⁻¹) between winter and spring varieties, as well as between winter varieties.
Celem badań było porównanie podstawowego składu chemicznego, zawartości mikro- i makro-składników, aktywności przeciwutleniającej w liściach czosnku odmian ozimych i jarej otrzymanych z firmy POLAN (Kraków, Polska), a także w liściach czosnku niedźwiedziego. Analizowano zawartość: suchej masy, białka, tłuszczu, węglowodanów ogółem, błonnika pokarmowego oraz popiołu standardowymi metodami AOAC, jak również zawartość wybranych składników mineralnych metodą ASA. Oznaczono także zawartość witaminy C (metodą Tillmansa), polifenoli metodą Folina-Ciocaltea’a. Wykonano ponadto oznaczenie zdolności eliminowania wolnego rodnika ABTS•+ metodą Re i wsp. Liście czosnku niedźwiedziego charakteryzowały się istotnie najmniejszą zawartością suchej masy (79,0 g·kg⁻¹), białka (13,7 g·kg⁻¹), węglowodanów (50,8 g·kg⁻¹), błonnika pokarmowego (26,9 g·kg⁻¹), popiołu (8,9 g·kg⁻¹), witaminy C (956,1 mg·kg⁻¹) i najmniejszą aktywnością przeciwutleniającą (25,0 mmol TEAC·kg⁻¹), ale największą zawartością tłuszczu surowego (5,6 g·kg⁻¹), potasu (34,6 g·kg⁻¹), magnezu (1,72 g·kg⁻¹), żelaza (230,3 mg·kg⁻¹) i cynku (58,8 mg·kg⁻¹) w stosunku do czosnku odmian ozimych i odmiany jarej. Równocześnie nie stwierdzono jednoznacznych różnic w składzie podstawowym (białko 20,9 ÷ 35,7 g·kg⁻¹, tłuszcz 1,6 ÷ 2,8 g·kg⁻¹, węglowodany ogółem 61,3 ÷ 116,5 g·kg⁻¹, błonnik 33,7 ÷ 57.0 g·kg⁻¹, popiół 8.9 ÷ 14.1 g·kg⁻¹), poziomie przeciwutleniaczy (witamina C 75,4 ÷ 459,7 mg·kg⁻¹, polifenole 335,3 ÷ 1895,1 mg·kg⁻¹), aktywności antyoksydacyjnej (27,0 ÷ 30,1 mmol TEAC·kg⁻¹) i poziomie składników mineralnych (wapń: 7,55 ÷ 28,9 g·kg⁻¹, potas: 15,9 ÷ 28,0 g·kg⁻¹, magnez: 0,85 ÷ 1,32 g·kg⁻¹, siarka: 2,41 ÷ 6,22 g·kg⁻¹, żelazo: 34,4 ÷ 85,7 mg·kg⁻¹, cynk: 9,32 ÷ 13,8 mg·kg⁻¹) pomiędzy odmianami ozimymi a odmianą wiosenną, jak również pomiędzy odmianami zimowym.

Introduction and aim. Garlic is one of the most popular traditional medicinal herbs which has a number of desirable health benefits. The study was designed to depict the improvement of serum biochemical parameters as well as the histomorphological recovery potential of garlic aqueous extract in hypercholesterolemic mice. Material and methods. A total of thirty Swiss albino mice weighing 24±5g and aged 5 weeks were randomly divided into three groups. Group A: supplied standard mice pellet and water; Group B: standard mice pellet + hypercholesterolemic diet (cow brain: 2 g/kg b.w.t.); and Group C: standard mice pellet + hypercholesterolemic diet (cow brain: 2 g/kg b.w.t.) + garlic extract (25 ml/kg b.w.t.). After four weeks of experimental tenure, samples (blood, liver, and kidney) were collected from each group of mice for serum biochemical analysis and histomorphological study. Results. Compared with hypercholesterolemic mice, total cholesterol (TC), triglyceride (TG) concentration, and low-density lipoprotein (LDL) levels significantly decreased respectively by 7%, 20% and 48% along with high-density lipoprotein (HDL) levels significantly increased by 47% in garlic extract supplemented group. Based on the histological evaluation in the liver sample of group C, both portal and central veins were normal, and fat droplets were not found in the hepatocytes which were found in the liver of group B. On the other hand, unchanged renal cortex, glomerulus, Bowman’s space, and kidney tubules were seen in group C. Conclusion. Therefore, the above findings of the present research would assist to provide affirmation about the cholesterol-decreasing and cellular restoration potentiality of garlic aqueous extract.

This study was conducted in the years 1997-1999. From the collection of the UMCS Botanical Garden, nine species of garlic were selected (A. aflatunense, A. atropurpureum, A. caeruleum, A. cernuum, A. ledebourianum, A. lineare, A. sphaerocephalon, A. victorialis, A. ursinum) and one subspecies (A. scorodoprasum subsp. jajlde). Pollen grain viability was evaluated on microscopic slides stained with acetocarmine, germination ability on the agar medium and measurements of grains were made on glycerin jelly slides. The studied species were characterized by high pollen viability (87-99%) what indicates the great value of garlic flowers as a source of protein-rich feed for honey-bee and wild pollinating insects. Very low germination of pollen on the agar medium was recorded. The length of the equatorial longitudinal axis ranged from 24.3 µm to 37.5 µm and it allowed pollen of most garlic species to be classified as medium-sized grains and only the pollen of A. caeruleum and A. cernuum was included in the group of small-sized grains.
Badania prowadzono w latach 1997-1999. Z kolekcji roślin jednoliściennych Ogrodu Botanicznego UMCS w Lublinie wytypowano dziewięć gatunków czosnku (Allium aflatunense, A. atropurpureum, A. caeruleum, A. cernuum, A. ledebourianum, A. lineare, A. sphaerocephalon, A. victorialis, A. ursinum) i jeden podgatunek (A. scorodoprasum subsp. jajlae). Żywotność ziaren pyłku oceniano w preparatach z acetokarminem, zdolność kiełkowania na pożywce agarowej, natomiast pomiary ziaren wykonano w preparatach gliceryno-żelatynowych. Badane gatunki charakteryzowały się wysoką żywotnością ziarn (87-99%), co wskazuje na znaczną wartość kwiatów czosnku jako źródła pokarmu białkowego dla pszczoły miodnej i dziko żyjących owadów zapylających. Stwierdzono natomiast bardzo niską siłę kiełkowania pyłku na pożywce agarowej. Wymiary podłużnej osi równikowej ziarn w zakresie od 24,3 µm do 37,5 µm pozwoliły zaklasyfikować pyłek większości gatunków czosnku do ziaren średnich, jedynie ziarna pyłku Allium caeruleum i A. cernuum zaliczono do małych.

In this paper, an electro-kinetic technique was applied to remove chromium from contaminated soil. This technique is appropriate for the soils with low permeability. Various experiments were carried out under different operating conditions, including various purging solutions. Garlic peels powder (GPP) was used in this study as a cheap adsorbent substance to avert the flow of reverse osmosis, which may affect the removal percentage. The results proved that the removal percentage increased as the pH of the purging solutions decreased. The first three experiments were performed with purging solution at pH of 4, 6, and 8 respectively. The highest removal percentage was 66.3% at pH of 4 compared to the other two experiments at pH of 6 and 8, where the removal percentages were 53.3% and 49.7%, respectively. This paper showed that the percentage of chromium removal decreased along with the voltage. The removal percentage at 1.5 V/cm was 66.3%, while at 1 V/cm was 61%. Garlic peels powder (GPP) is considered as an effective adsorbent material to avert the reverse osmosis flow. Therefore, the use of this material in this study will give a new impression on the application of these products as an absorbent medium.

Despite its numerous advantages, garlic chives (Allium tuberosum Rottler ex Sprengel) remains a species that is little known of and therefore underestimated in Poland. Cultivation requirements of garlic chives in the climatic conditions of West Pomerania have long been studied at the Department of Horticulture, West Pomeranian University of Technology in Szczecin. An example of such research is the experiment, conducted in 2007-2009, whose aim was to determine the effect of blanching two-year old garlic chives plants on the yield of dry matter and the macro- and micronutrient content. Control plants were non-blanched, two-year old plants. Each year, on 10th April, the seeds were sown directly in a field, 5 seeds per point, 30 x 20 cm apart. The plants were blanched by being covered with low plastic tunnels coated with one or two layers of black nonwoven polypropylene fabric. Blanched leaves were collected 4 weeks after installing the tunnels. Field experiments were established and carried out at the Vegetable Research Station in Dołuje (near Szczecin), and chemical analyses were performed at the Regional Chemical and Agricultural Station in Szczecin. The highest content of phosphorus and total nitrogen was found in the leaves blanched under a double layer of nonwoven fabric, as compared to non-blanched plants. An opposite trend was observed for potassium and calcium. The highest content of these macronutrients was noticed in non-blanched leaves of garlic chives. No significant effect of blanching was found regarding the leaf content of magnesium and sulphur. The highest level of copper was reported in non-blanched leaves, and the leaves covered with a double layer of nonwoven fabric were the richest in iron. The lowest content of zinc was found in the leaves blanched under one layer and the lowest level of manganese in those blanched under two layers of black nonwoven fabric.

Plant derived extracts and phytochemicals have long been a subject of research in an effort to develop alternatives to conventional insecticides but with reduced health and environmental impact. In the present study, the aphid settling deterrent activity of extracts obtained from garlic (Allium sativum L.), wormwood (Artemisia absinthium L.) and tansy (Tanaceum vulgare L.) against peach potato aphid (Myzus persicae [Sulz.]) was investigated. The settling of M. persicae on host plant leaves was strongly deterred by soap 1%, soap 4%, Bioczos Forte 2% + soap 1%, Bioczos 1% + tansy extract 1%. Their effect was observed after 1 hour aphid had got access to the plants and it lasted until the end of the experiment, i.e. 24 hours after application. After 24 hours, aphid settling was deterred by the following combinations of extracts: Bioczos 2%, Bioczos 2% + soap 1%, Bioczos 5%, Bioczos 5% + soap 1%, Bioczos 1% + wormwood extract 1%, Bioczos 1% + wormwood extract 1% + soap, tansy extract 1% + wormwood extract 1% and tansy extract 1% + wormwood extract 1% + soap 1%.

Freshly prepared garlic (Allium sativum L.) juice, containing the antimicrobial allicin, was evaluated as a possible grain pro-tectant against the maize weevil, Sitophilus zeamais (Motsch.). Each experiment was set out in Completely Randomized Design (CRD) with four replications, and there was a control treatment. Adult mortality and weight loss percentage were investigated. There was an observed increase in adult mortality following days of exposure in all treatments. Statistically significant (p < 0.05) reduced grain loss was also observed in all the treatments when compared with the control. The juice samples were freshly prepared from an indigenous Nigerian garlic cultivar (GUN) and a cultivar purchased from a supermarket in Germany (GAG). These garlic juice samples exhibited lethal effects causing at least 90% adult mortality in contact toxicity tests. The amount of allicin in GUN was 1.88 mg/ml according to High Pressure Liquids Chromatography (HPLC) analysis, while the amount of allicin in GAG was 3.50 mg/ml. This study highlights the potential of A. sativum containing allicin for biorational control of maize grains against S. zeamais infestation and damage.

Garlic (Allium sativum L.) as an antibiotic alternative determining the hygienic quality of cow’s milk from organic farms. The purpose of this study was to determine the effi cacy of cow’s diet supplementation with a garlic as an antibiotic alternative in the prevention and treatment of subclinical mastitis. The study was conducted on an organic farm located in the Natura 2000 area in the Narew river valley. The major criterions of choosing organic farm to the experiment were as follows: possession a herd of Black and White Polish Holstein-Friesian cows (numbering more than 30 cows) with diagnosed subclinical mastitis and holding a certifi cate for ecological production and compliance with organic farming standards. The study involved 7 cows diagnosed with subclinical mastitis, whose diet was supplemented with a garlic in a dose of 5 g/per capita/per day. The supplement was administered every day at the same time (in the evening), for 21 days individually into each animal’s feeder. The hygienic status of milk samples, measured based on the somatic cells count (SCC) and colony forming units (CFU), was investigated as an indicator of the subclinical mastitis (initial level is a diagnosis). The dietary inclusion of garlic has improved each of the above-mentioned traits during supplementation, without compromising milk production and technological quality. After 21 days of supplementation, the SCC and CFU decreased by about 60%. The study needs to be repeated, taking into account the greater number of cows.

Two simultaneous experiments were carried out in a breeding farm of New Zealand White rabbits (Oryctolagus cuniculus f. domesticus) to determine the feasibility of replacing coccidiostats with garlic and oregano preparation. The research took place during June and July, the period of the greatest threat of coccidiosis caused by Eimeria spp. (Apicomplexa: Eimeriidae). In one investigation, 40 rabbits aged 1–3 months were divided into four groups of ten animals: Group A being a control which received no coccidiostats in feed, Group B receiving the coccidiostat Baycox in water once at weaning, Group C receiving the coccidiostat robenidine in feed, and group D receiving herbal extracts in feed. In the second trial, six mated females were allocated equally to three groups analogous to A, C, and D above during pregnancy and lactation. Bulk stool samples were collected from each group of rabbits at weekly intervals for coproscopic analysis, and the production results of the animals were recorded. In the young rabbits, both the faecal coccidia oocyst counts and body weight gains were more favourable in group D than the remaining groups. Also, the female rabbits of group D were the least infected. The results demonstrate that garlic and oregano feed additives exert a positive influence on the level and course of coccidia infection, with regard to maintaining a good level of animal productivity, and these herbal extracts appear to have potential value in coccidiosis prophylaxy.
