Jest prawdą niemal banalną, że warunki życia współczesnego, rozwój nowych dziedzin nauki i techniki, a także rosnąca specjalizacja coraz bardziej oddalają nas od naszego dziedzictwa kulturowego. I to właśnie dziś, w czasach, kiedy mamy w kraju więcej ludzi wykształconych niż kiedykolwiek przedtem. Coraz trudniejszy staje się dostęp do niematerialnej schedy przekazanej nam przez liczne pokolenia przodków. A przecież świadomy udział w tej schedzie, którego znaczenie łatwo się gubi w krzątaninie dnia powszedniego, jest sprawą niezmiernej wagi (choć trudno mierzalną), bo stanowi o poczuciu przynależności do kultury narodowej, europejskiej, śródziemnomorskiej, decyduje o uczestnictwie w zbiorowej świadomości społecznej. Głód jest podstawową potrzebą biologiczną odczuwaną przez wszystkich ludzi. Sposób jego zaspokajania jest zdeterminowany przez wiele czynników, wśród których uwarunkowania kulturowe, a co za tym idzie religia, odgrywają olbrzymią rolę. Opracowanie ma charakter przeglądu literatury dotyczącej znaczenia jedzenia w największych religiach świata: chrześcijaństwa, islamu, hinduizmu, buddyzmu i judaizmu
The purpose of elaboration is to present opinion that food is a fascinating subject, and that could be subject of research by representatives of many scientific disciplines. Certainly it is worthwhile to ask about the specialties professionals representing various disciplines of humanities and covering different periods in the history of culture. It is almost a banal that the conditions of modern life, the development of new areas of science and technology, and the growing specialization are becoming increasingly alienated us from our cultural heritage. Especially today, at a time when in our country we have more educated people than ever before. It becomes increasingly difficult to access the immaterial legacy handed down to us by many generations of our ancestors. Conscious participation at this legacy whose meaning is easily lost in the bustle of daily life, is a matter of extremely important, (not suitable weigh), because it is a sense of belonging to the national, European and Mediterranean culture because decides on participation in the collective public awareness. Hunger is a fundamental biological need same perceived by all the people in the world. Way of satisfy hunger is determined by various factors, among which cultural determinants, and consequently religion to feature an enormous role. Elaboration is a strictly review of the literature on the meaning of food in the biggest religions of the world like: Christianity, Islam, Hinduism, Buddhism and Judaism.

Using the example of two books by Eustachy Kossakowski (1925–2001) – August Zamoyski (1974) and Lumières de Chartres (1989) – the text addresses the issue of reproducing works of art in the form of a photo album (photobook). The work of the photographer who makes reproductions of works of art is compared to the task of the translator, a reference to Walter Benjamin’s essay. The text is divided into two parts corresponding to albums. A detailed analysis allows us to see the differences between the books, as well as the change in Kossakowski’s approach to reproduced works of art. The first album consists of black-and-white photographs depicting in an original way the works of the prominent Polish sculptor August Zamoyski. Kossakowski recontextualizes individual objects photographed in the artist’s French studio. In the second book, the photographer publishes color photographs of the titular “lights of Chartres.” Taken inside the early Gothic cathedral, the photos move away from the documentation of the object, and the weight shifts to a near-abstract record of the artist’s emotions. Published alongside Anne Prache’s scholarly study, engravings and documentation of the edifice, Kossakovsky’s photographs constitute an original monograph of Chartres Cathedral. In the author’s view, Kossakowski’s photobooks go beyond the framework of a typical album of reproductions offering the mass public a substitute for contact with art. The photographer creates autonomous objects by translating the reproduced work of art into an object that fosters an aesthetic experience and becomes art itself. Kossakowski’s approach is juxtaposed with Mieke Bal’s reading of Benjamin’s text. While the album dedicated to Zamoyski seems to be based on unconventional documentation, in which the procedure of recontextualizing objects plays a dominant role, the Chartres monograph approaches the “ecstatic aesthetic” proposed by Bal. Lumières de Chartres provides a different perspective on the reproduction album, which, in addition to basic information and illustrative reproductions, is a carrier of emotions, a record of experiences and a medium of art. An analysis of the author’s publications, which include reproductions of August Zamoyski’s sculptures and documentation of Chartres Cathedral, emphasizes their autonomous and artistic character. Kossakowski observes and interprets Zamoyski’s work by looking at it from a distance. But in Chartres, we observe how he lets himself be captivated by the cathedral. The transformation of the cathedral into sensual light completely absorbs its subject - the metamorphosis of Zamoyski’s sculptures does not. Photography is not art, nor is it reproduction. It is only in the process of interpreting an object by looking at it with a camera to the eye that the artistry of translating a work of art into the format of a photograph and, further, a photo album is revealed. The photobook as a work of art is the true task of the photographer.

Celem artykułu jest zwrócenie uwagi na wykorzystanie standardów usług żywieniowych oraz nowych technologii w cateringu lotniczym. Żywienie pasażerów lotniczych powinno uwzględniać dwa aspekty. Pierwszym i bezwzględnie podstawowym aspektem jest bezpieczeństwo pasażerów. Potrawy podawane na pokładzie powinny odpowiadać wymogom bezpiecznej produkcji żywności i uwzględniać restrykcje dietetyczne obowiązujące poszczególnych konsumentów. Szczególnie na dużej wysokości, na której odbywa się przelot samolotem, zarówno smaki, zapachy, jak również samopoczucie gości mogą zmieniać się na niekorzyść. Dlatego też tak ważne jest, aby zagwarantować pasażerom komfort względem podstawowej potrzeby zaspokojenia głodu i pragnienia. Drugim aspektem jest atrakcyjność oferty, jaką przygotowują linie lotnicze w celu zaspokojenia potrzeb. Specyfika spożywania posiłków podczas lotu wprowadza konieczność zastosowania pewnych zasad żywieniowych. W celu zapewnienia jakości żywienia, a co za tym idzie zadowolenia pasażerów, należy przestrzegać standardów dotyczących przygotowania oraz ekspedycji posiłków w samolotach. Do realizacji standardów potrzeba jest wykorzystywania nowych technologii przygotowywania, transportu, przechowywania i podawania potraw pasażerom na pokładzie samolotu.
The aim of the article is to pay attention to the use of the standards of food services and new technologies in in-flight catering. Air passengers catering should consider two aspects. The first and absolutely basic aspect is passengers’ safety. The meals served aboard should meet the requirements of safety food production and take into account the dietary restrictions binding individual consumers. Especially at high altitude, where the flight takes place, both tastes, odours and guests’ frame of mind may have changed to worse. That is why it is so important to guarantee the passengers comfort in terms of their primary need to satisfy hunger and thirst. The second aspect is attractiveness of the offer prepared by airlines in order to satisfy the needs. The specificity of eating meals inflight introduces the necessity to apply certain catering rules. To ensure the quality of nutrition and, consequently, passengers’ satisfaction there should be observed the standards related to the preparation and despatch of meals on planes. The standards observation requires the use of new technologies of preparing, transporting, storing, and serving meals to passengers on the plane.
