The aim of this study was to determine the chemical composition of roe deer meat considering the animals’ sex and age and to estimate the content of amino acids in the meat from two selected groups of the animals, i.e. 2-3-year-old males and females. A further goal was to assess the biological value of proteins as compared to the FAO standard. The study has revealed that in proteins from the roe deer muscle tissue the content of exogenous amino acids (in g/100g) is higher by 20-30% on average comparing to the level of amino acids, in the FAO/WHO (1973) standard protein. Among the endogenous amino acids, the highest (in g/100 g of protein) and the lowest concentrations were found for glutamic acid and proline, respectively. The research has also shown that roe deer meat possesses a high content of protein and a relatively low content of fat.

The aim of this work was to compare the concentration of calcium and phosphorus and Ca/P ratio in the meat, gills and liver of perch ( Perca fluviatilis L.) caught from the Lake Góreckie, Strzeszyńskie and Wędromierz (the Wielkopolska Lake District). The study involved 30 individuals of fish caught in spring. The muscles samples for analyses were taken from the large side muscle of the fish body above the lateral line. Calcium concentration was determined by atomic absorption spectrophotometer Solar 969, Unicam. Phosphorus content was analyzed with colorimetric method, by spectrophotometer Lambda 25, Perkin-Elmer (at wavelength 430 nm). The mean content of Ca in the meat of fish caught from Lake Góreckie, Strzeszyńskie and Wędromierz was 3.175, 0,516 and 2.498 g kg -1 , respectively. The significantly higher amo - unts of Ca were determined in the gills than in the meat and liver and ranged from 63.09 g kg -1 (the Lake Góreckie) to 70.24 g kg -1 (the Lake Strzeszyńskie). The mean content of P was at the same level in the meat and in the liver and ranged from 2.703 g·kg -1 to 2.812 g kg -1 . Ratio of calcium to phosphorus in the meat of fish caught from the lake Góreckie, Wędromierz and Strzeszyńskie was 1.174:1, 0.254:1 and 0,888:1, respectively.

The aim of the study was to adapt a method to determine acrosin activity of human spermatozoa to arctic fox (Alopex lagopus L.) spermatozoa. We modified this method by reducing sperm count per sample from 1÷10 × 106 to 25÷200 × 103, incubation time from 180 minutes to 60 minutes, and Triton X-100 concentration in the reaction mixture from 0.01% to 0.005% per 100 cm3. It has also confirmed that arctic fox seminal plasma is rich in proteinases and their inhibitors. To completely abolish the inhibitory effect of seminal plasma on acrosin activity it is recommended to wash the spermatozoa four times. Benzamidine served an inhibitor of acrosin activity.

The aim of this work was to compare the concentrations of Pb, Cd and Co in the meat, gills and liver of common bream (Abramis brama L.) caught from Żnińskie Duże Lake. Analyses were carried out on 20 individual fish caught in autumn, in the natural environment. Measurements of the mass of the fish body (BW) and body length (Lc) were taken on the each specimen. Muscle samples were taken from the large side muscle of the fish body above the lateral line. Pb, Cd and Co concentrations were determined on an atomic absorption spectrometer Solaar 939 QZ. Significance of differences in the average content of metals was calculated by one-way analysis of variance (ANOVA). Analyses of the variance indicated that the mean value of Pb was highest in gills (0.880 mg kg-1 dry weight) and lowest in the liver (0.068 mg kg-1 dry weight). The same results were observed for Co, and those values were 2.391 and 0.357 mg kg-1 dry weight, respectively. The highest mean concentration of Cd was determined in the liver (0.143 mg kg-1 dry weight). There were statistically significant differences in the content of all analyzed metals between the muscle, gills and liver (at p ≤ 0.05). Analyses indicated that the mean concentrations of Pb, Cd and Co were detected in the following order: Co > Pb > Cd (in the meat and gills) and Co > Cd > Pb (in the liver). Co and Pb accumulated in the large amounts in the gills (gills > meat > liver). Cd concentrations detected decreased in the following order: liver > meat > gills. Results of the principal component analysis (PCA) substantiated very good separation of the three analyzed tissues in respect of their metal content, which confirms the results obtained from the analysis of variance.

The objective of this study was to determine the effect of age and reproductive season on selected properties of semen from the arctic fox, Alopex lagopus L. The experiment used 40 ejaculates collected manually from 6 animals (3 foxes aged one year and 3 foxes older than three years). Statistically less semen (0.39 cm³) was collected from the young compared to the older animals, and the ejaculates obtained were characterized by higher concentration of spermatozoa (195.04 x 10⁶/cm³). In turn, sperm acrosomal extracts from the older animals contained statistically more acrosin (6,4 mU/10⁶ spermatozoa). In the sperm acrosomal extracts prepared during the first semen sampling, the mean acrosin activity did not exceed 2.3 mU/million spermatozoa. At subsequent semen sampling dates, the activity of the analysed enzyme increased to reach 7.72mU/million spermatozoa. In the extracts obtained from the semen collected at the end of the breeding season of arctic foxes, the acrosin activity again reached a value obtained at the beginning of the season.

The aim of the study was to determine concentrations of some elements, incluing minerals and heavy metals (Na, K, Mg, Zn, Fe, Cu, Cd, Pb), in the meat (musculus longissimus dorsi) of the wild boar (Sus scrofa L.) depending on the sex of the animals. The wild boars were shot during the hunting 2011-2012 season, in the Province of Podkarpacie (województwo podkarpackie), Poland. Podkarpacie, situated in south-eastern Poland, is known for its variety of wildlife living in natural habitat. The study involved 16 animals (8 of each sex) aged 2 years. Meat samples were freeze-dried (Lyovac GT2, Finn-Aqua) and then mineralised in a microwave mineraliser (Ethos Plus, Milestone). Samples prepared in this way were later analysed for the concentration of minerals, using various techniques. The content of heavy metals (Cd and Pb) was determined by atomic emission spectroscopy, while the levels of other elements (Na, K, Mg, Zn, Fe and Cu) were assayed using an atomic absorption spectrometer. The analyses indicated no significant statistical differences between males and females in the quantity of most metals in their bodies, except copper (Cu), whose average amount was higher in meat samples from females (7.5 mg kg-1) than from males (6.15 mg kg-1) (p ≤ 0.01). The determinations of heavy metals revealed that the average lead (Pb) concentration exceeded the acceptable limit only in meat samples from males (0.13 mg kg-1). When examining the levels of minerals in wild boar meat, a positive and statistically significant correlation was found only between the average quantities of K and Mg.

It is well known that iron participates in oxygen transport as well as it is a cofactor in many fundamental enzymatic and nonenzymatic processes. Accordingly, disturbances of iron homeostasis can cause serious clinical consequences. In humans, dietary iron can enter the body in two main forms: heme and nonheme. The former is a component of many hemoproteins (including myoglobin, hemoglobin, cytochromes b and c) and is easily absorbed in the duodenal enterocytes. Red meat is an excellent source of heme iron, while the less bioavailable nonheme form is found in large amounts in milk products and vegetables. For this reason, consumers of meat have a better iron status than vegetarians and vegans. The aim of this paper was to discuss the role of heme iron in the human diet. Heme iron found in muscle protein should be supplied to humans to prevent iron deficiency, which can lead to anemia. It is easily absorbed by the human body and its main source is red meat. In addition, heme iron, which is mainly found in myoglobin in meat, contributes to the desirable bright red color and to the most undesirable brown color of meat. Both heme and nonheme iron are catalysts of lipid oxidation in meat. This process lowers the nutritive value through oxidation of polyunsaturated fatty acids, which produces an undesirable flavor and aroma. The present review is focused on the role of heme iron, which is mainly found in meat and is the principal source of iron in the human diet.

Opis:
Graphene due to its extraordinary properties and a wide range of potential applications, has aroused a great interest. Although there are many ways to obtain graphene, the existing methods still possess certain disadvantages. Numerous attempts are made to scale up a new and efficient production method of this material on an industrial scale. A very popular method to obtain graphene is a two-step process. It is based on the oxidation of graphite and subsequent reduction to graphene. This article presents a new way of low-temperature reduction of graphene oxide (GO) in presence of various solvents. Indeed, using of appropriate organic solvents in a particular stage of graphene preparation affects the reduction process and the exfoliation of graphene oxide. The possibility to reduce GO in the presence of a disperser opens new paths for the preparation of graphene containing composites.
Grafen cieszy się ogromnym zainteresowaniem ze względu na swoje szczególne właściwości oraz szeroki zakres potencjalnych zastosowań. Znane sposoby otrzymywania grafenu są obarczone pewnymi wadami, co powoduje, że wciąż podejmuje się próby opracowania nowej, skutecznej metody produkcji tego materiału na dużą skalę. Powszechną techniką wytwarzania grafenu jest proces dwuetapowy, polegający na utlenianiu grafitu do jego tlenku, a następnie redukcji do grafenu. W pracy przedstawiono nową metodę niskotemperaturowej redukcji tlenku grafenu (GO) z zastosowaniem różnych rozpuszczalników. Jak wynika z przeprowadzonych badań, użycie odpowiednich rozpuszczalników organicznych na jednym z etapów otrzymywania grafenu pozwala skutecznie zredukować oraz eksfoliować tlenek grafenu. Możliwość redukcji GO w obecności rozpuszczalników odgrywa istotną rolę w procesie otrzymywania kompozytów z udziałem grafenu.

The aim of this study was to determine concentrations of Na, K, Mg, Ca, P, Zn and Fe in the meat of ruffe (Gymnocephalus cernua L.) and to investigate the relationship between fish sex or age and the mineral content of fish meat. 90 individuals of ruffe were caught in autumn (from October 9 to November 6) from the Vistula River, near Toruń and he local wastewater treatment plant. The muscle tissues from the large side muscle in a fish body, above the lateral line, were taken for analyses. All frozen meat samples were freeze dried in a freeze dryer and then tissues were mineralized in a microwave mineralizer. Concentrations of minerals were determined by flame atomic absorption spectroscopy. As the analyses indicated, the concentrations of macroelements were arranged in the order: K > Ca > P > Na > Mg and the content of microelements was noted in the following decreasing sequence: Zn > Fe. The ranges of the mean concentrations of Na, K, Mg, Ca and P (g kg-1) were as follows: from 2.38 to 2.68, from 14.74 to 16.16, from 1.47 to 1.60, from 5.63 to 8.06, from 2.18 to 3.59, respectively. The ranges of the mean concentration of microelements (mg kg-1) were from 49 to 74 for Zn and from 26 to 29 for Fe. Statistically significant relationships between the age and the macro- and microelement concentrations were verified, and this tendency was comparable to the data obtained by other authors. Results of these studies showed that the sex of ruffe was not an important factor for the levels of macro- and microelements in this species.

In this paper, the influence of a laser surface treatment on the structure and properties of aluminium alloy has been determined. The aim of this work was to improve the tribological properties of the surface layer of the EN AC-51100 aluminium alloy by simultaneously melting and feeding silicon carbide particles into the molten pool. The silicon carbide powder was introduced into the liquid metal using a gravity feeder within a constant feed rate of 1 g/min. A high power diode laser (HPDL) was used for remelting. Laser beam energies used in experiments were 1.8 kW, 2.0 kW and 2.2 kW, combined with the constant velocity of 50 mm/min. As a result of the laser treatment on the aluminium alloy, a composite layer with greater hardness and wear resistance compared to the based material was obtained.

Small-angle X-ray scattering experiments were carried out on cellulose membranes obtained by phase inversion from a solution of the polymer in 1-ethyl-3-methylimidazolium acetate, by coagulation in water and selected primary alcohols. The invariant, Q, and the Guinier radius, $R_{G}$, computed directly from the small-angle X-ray scattering curve allowed us to estimate the pore dimensions and the pore volume fraction. It was found that both content and dimensions of pores depend on molecular mass of the coagulant used. Also, it was found that the dipole moment of coagulant molecules has a large influence on the volume content of the pores.
