The reflections outlined in this paper on smell and taste in modern and contemporary art are divided into three larger chapters: an introductory literature review is followed by a general discussion of sense perception in terms of philosophy, physiology, and intellectual history; and this forms the backdrop for the main body, in which eight different approaches to olfactory and gustatory art are proposed. These categories take different levels as their starting point: for instance, they illuminate the significance of smell and taste as materialities, they address aspects of the process of perception, they posit questions concerning the affect of smell and taste, they consider spatial and temporal aspects, and they discuss the relation between perception and knowledge. The main body of the paper is concerned with these categories and their respective theoretical background, also providing concrete examples of relevant works of art.

Podstawą wyższych funkcji nerwowych jest kojarzenie różnych informacji sensorycznych docierających do człowieka. W przypadku percepcji, będącej wynikiem holistycznego rozpoznania w obrębie mózgu, muszą zachodzić procesy scalania elementarnych komponentów pochodzących z różnych układów czuciowych, takich jak wzrokowe, słuchowe, smakowe czy węchowe. Istotną rolę w procesie percepcji odgrywa, często niedoceniany, zmysł czucia. Od 2009 roku Akademia Górniczo Hutnicza realizuje projekt rozwojowy, w ramach którego opracowana zostanie metoda i system oznaczania miejsc niebezpiecznych i szczególnie istotnych w dużym mieście dla osób niewidomych z wykorzystaniem markerów alowo-wibracyjnych. Jednym z elementów systemu identyfikacji ważnych lub niebezpiecznych miejsc jest przetwornik drganiowy noszony na nadgarstku przez osobę niewidomą. Z tego powodu konieczne było porównanie wrażliwości różnych obszarów skóry na nadgarstku na dwa bodźce dotykowe działające jednocześnie oraz określenie najmniejszej rozpoznawalnej w ponad 95% przypadkach odległości dwóch jednoczesnych ukłuć. Badaniami objęto grupę 33 osób w wieku 20–25 lat (w tym 12 kobiet i 21 mężczyzn), studentów Akademii Górniczo-Hutniczej w Krakowie. Badania progu czucia wykonano na obu nadgarstkach. Do pomiaru wrażliwości na dotyk wykorzystano estezjometr firmy MacKinnon-Dellon składający się z kolców o średnicy 1 mm zamontowanych na wspólnej ramie. Osoba badana miała określić, czy odczuwa jedno czy dwa ukłucia. Jeżeli podwójne ukłucie odczuwane było jako jedno, oznaczało to, że w danym miejscu skóra badanego jest mało wrażliwa. Odległość między kolcami zwiększano do momentu odczuwania przez pacjenta dwóch odrębnych ukłuć. Analiza uzyskanych wyników pozwoliła na stwierdzenie, że ponad 95% badanych prawidłowo rozpoznaje podwójne ukłucie na nadgarstku przy odległości 13 mm między sąsiednimi kolcami.
The higher functions of the nervous system coordinate various types of sensory information. In case of the perception, resulting from the effect of holistic recognition in the brain regions, the elementary components coming from various sensory systems (auditory, visual etc.) have to be integrated. Since 2009, the AGH University of Science and Technology implements a development project, aiming to develop a method and system for marking hazardous areas. Particularly, it is important for blind people using wave-vibration markers. One of the elements of the system for identification of hazardous places is a vibration transmitter on the wrist of a blind person. For this reason, it is necessary to compare the sensitivity of various areas on the wrist skin for two tactile stimuli acting simultaneously and to determine the smallest distance between two simultaneous stings that is recognized in more than 95% of cases. The control group included 33 persons aged 20–25 years, 12 female and 21 male students of the AGH University of Science and Technology. The tactile perception tests were performed on both wrists. The touch sensitivity measurements were performed by means of an esthesiometer, comprising two needles, with the diameter 1 mm, fixed on the frame. The examined person has to asses the sensation of a single or double stimulus. The distance between the needles was increasing, till the subject sensed the stimuli as two separate pricks. The experimental data revealed that over 95% participants correctly recognized the double prick with two needles set apart by a distance of 13 mm.

Intense development of computer technology has taken place in the last several decades made it possible to cartographically present variability of phenomena in a dynamic way. As a result of using animation techniques in cartography there appeared new methods of presentation of changes, referred to as direct. Considering the character of the relation between display time and real time, two basic types of animated maps have been distinguished: temporal and non-temporal. Other criteria of classifying animation are the presence and level of interactivity and the technical criteria of production. Regardless of the applied classification, perception of the contents of animated maps is one of the main issues, since using animation leads to a significant cognitive load specific for dynamic methods. Fast sequence of data and its quick disappearance can result in omission of some information because in the case of animated maps there is a higher risk of exceeding perception potential of users than in the case of static maps. Higher efficiency of animated map perception can be achieved by applying methods of cognitive overload reduction determined through experimental research. The most important of them are: using control tools, directing attention with dynamically blinking lights, locating connected objects close to one another, using sound, adapting generalization level to the characteristics of moving images and accounting for the age and experience of map users. Among more sophisticated solutions are such elements as so-called decay and a combination of static and animated map features in the form of semi-static animations.

The aim of the article is to consider the possibilities of incorporating the category of mental representation into the ecological theory of perception, devised by its originator, James J. Gibson, as a kind of antirepresentationalism. The full-blooded idea of perceptual representation seems “too heavy” for the needs of the ecological approach, according to which perception consists in directly collecting or apprehending the features of objects present in the environment by means of the senses. Since this process is a direct one, Gibson believes postulating mental representation does not in any way make it easier to understanding it. On the other hand, in contemporary philosophy of mind and cognitive psychology the concept of mental representation is almost indispensable. The article presents an attempt to interpret the perceptual process of information acquisition in terms of dynamic systems theory – or, more precisely, as a kind of simulation. The simulation model of perception based on a minimalist understanding of representation (as procedural knowledge) is meant to complement the ecological theory of perception proposed by Gibson.

The purpose of the article is to indicate the complexity of the store price image – its variously identified dimensions and dynamic character. This topic is extremely important for the effectiveness of brand store management and brand store competitiveness. The fact that the store price image is based on perception rather than reality does not facilitate the process of creating desirable store price image. In the article the results of a literature review are presented, and the final part of the paper contains some practical conclusions. Focusing on this topic is due to the significant changes in the store formats in Polish retailing.Purpose – The purpose of the article is to indicate the complexity of the store price image – its variously identified dimensions and dynamic character. This topic is extremely important for the effectiveness of brand store management.Design/Methodology/Approach – Literature review.Findings – The fact that the store price image is based on perception rather than reality, does not facilitate the process of creating desirable price store image – on the contrary. Proper and effective management of store price image requires a thorough knowledge of price management. So many different aspects are behind this area of marketing activities that managers become necessary to enter into related areas – e.g. consumer behavior psychology. Since the process of shaping the price image by consumers is a dynamic process, the management of price image cannot be perceived as static.Originality/Value – The main value of the article involves indication of complexity of the image price and thus difficulty of managing it. An overview of various approaches to the understanding of the price image, which is presented in the article, can facilitate an extremely demanding process of store price image management. Due to the current changes on the Polish retail market, it seems necessary to update the existing scientific achievements in the field of image price.

According to recent cross-cultural studies there exist culturally based differences between visual perception and the related cognitive processes (attention, memory). According to current research, East Asians and Westerners percieve and think about the world in very different ways. Westerners are inclined to attend to some focal object (a salient object within a perception field that is relatively big in size, fast moving, colourful) focusing on and analyzing its attributes. East Asians on the other hand are more likely to attend to a broad perceptual field, noticing relationships and changes. In this paper we want to describe the recent findings in the field and propose some directions for future research.

This study aims to illustrate how visual and auditory perception are conceptualized in Swedish and what differences there are between them. Previous studies often discuss perception in relation to the oppositely directed motions between the perceiver and the object perceived. In the Perceiver-as-Source type, perception occurs when our eyes/gaze reach the object perceived. In the Perceived-as-Source type, perception takes place when sense stimuli reach the perceiver. The data show two differences between visual and auditory perception. First, we find more metaphorical expressions for visual perception than for auditory perception. Second, we also find that, while visual perception has a stronger connection to the Perceiver-as-Source type, auditory perception is more strongly connected to the Perceived-as-Source type. These two differences are explained by the function of the perceptual organs.

Speech is almost never delivered in ideal quiet conditions. On the contrary, the acoustic signal reaching a listener's ears is degraded by background noise and reverberations. The current study investigates the perception of the voicing contrast of initial stops in English by Polish non-native listeners. Previous research showed that Polish learners do not match native speakers of English in production and perception of English voiced and voiceless stops, which results from different phonetic implementations of voicing in the two languages. In the current study, two groups of Polish listeners recognised voicing of English initial stops in one-syllable words both in quiet and in six-talker babble. The results revealed different patterns of recognition for the two conditions. The place of articulation interacted significantly with voicing both in quiet and in noise, however results obtained suggest that performance in noise did not simply reflect the performance in quiet.

Contemporary social psychology describes various deformations of processing social information leading to distortions of knowledge about other people. What is more, a person in everyday life refers to lay convictions and ideas common in his/ her cultural environment that distort his/her perceptions. Therefore it is difficult to be surprised that authors of narrations in which participants of history are presented use easily available common-sense psychology, deforming images of both the participants of history and their activities, as well as the sequence of events determined by these activities. Which cognitive biases, how often, and in what intensity they will be presented in historical narrations depend on statements of dominating common-sense psychology. The article outlines some biases made by historian-lay psychologists, such as attributional asymmetry or hindsight effects, whose occurrence in their thinking, as formed in the cultural sphere of the West, influences history perception and conducted historical interpretations.

The paper presents results of the survey carried out in a group of 560 respondents, the aim of which was to study perception of the landscape of the Polish Carpathians by residents of southern Poland, and methods of obtaining information regarding transformation and protection of the landscape (books, lessons, TV, Internet, trips, Google Earth etc.). Nearly 1/3 of the respondents spend no more than 10 minutes per week studying information about transformation and protection of the natural and cultural landscape, slightly over 1/3 spend up to 30 minutes, and the rest up to 3 hours. Most frequently, the respondents have contact with various landscapes during walks and trips, then by means of programs Google-Earth, Virtual 3D, Wind-World. Television, radio and newspapers are main sources of information regarding landscapes. The Internet was behind, but still the surveyed get more information from there than from lessons or specialist magazines, although the latter are appreciated for their credibility of information. The survey shows that protection of wildlife and historic object of architecture is the most important in the Polish Carpathians, followed by protection of rare species of plants and woods. Respondents would rather protect our natural landscape that cultural one, as they do not appreciate the value of protection of historically preserved whole scenic structures. The main obstacle in development of the information society is awareness of the potential of the Internet and skills in using it.

Imagery is an often used technique in psychological mental training and here also during rehabilitation. Imagery ability enhances imagery use. The perception of injury but also individual differences themselves influence the rehabilitation outcome. The first purpose of the study was to examine the mediation effect of injury perception between general imagery and rehabilitation imagery. Our second aim was to examine the mediating effects of the general ten dency to employ imagery within the relationship between personality and the imagery of rehabilitation itself. The studyinvolved 56 athletes (37 men and 19 women) suffered a physical injury. The respondents were asked to provide demographic information and then to complete following questionnaires: The Athletic Injury ImageryQuestionnaire-AIIQ-2, (Sordoni et al., 2002), The Imagination in Sport Questionnaire (Budnik-Przybylska, 2014) – short version, and Blecharz’s Scale of Perception of Injury in Sport (SPUwS) (Blecharz, 2008). Series of mediation analyses were performed to estimate the strength of the indirect relationship between the general tendency to use imagery and the use of imagery in rehabilitation. It was fund that the general tendency to use imagery turned out to have a strong direct effect on rehabilitation imagery. Reflection and seeking positive sides turned out to be a mediator between general tendency to use imagery and all rehabilitation imagery dimensions. Reflection has the strongest effect between the general tendency to use imagery and cognitive specific imagery. General tendency to use imagery mediates the relationship between personality and imagery of rehabilitation. Some personality traits also influence directly imagery of rehabilitation. Our findings have revealed that the general tendency to use ima - gery may strengthen the relationship between personality and rehabilitation imagery. It may help to adjust the methods which might positively influence the rehabilitation process.

Map perception consists of numerous processes of information processing, taking place almost simultaneously at different levels and stages which makes it conditioned by many factors. In the article, a review of processes related to the perception of a map as well as levels and properties of perception which impact its course and the nature of information obtained from a map is presented. The most important process constituting the basis of a map perception is a visual search (eye movement). However, as stated based on the studies, the process is individual depending on the purpose of map perception and it may be guided by its image (visual search guidance) or by the knowledge of users (cognitive search guidance). Perception can take place according to various schemes - “local-to-global” or “global-to-local”, or in accordance with the guided search theory. Perception is divided into three processes: perceiving, distinguishing and identifying, which constitute the basis to interpret and understand a map. They are related to various degrees of intellectual involvement of the user and to various levels of questions concerning the relations between signs and their content. Identification involves referring a sign to its explanation in the legend. Interpretation means transformation of the initial information collected from the map into derivative information in which two basic types of understanding take place: deductive and inductive. Identification of geographical space objects on the map and the interpretation of its content constitute the basis to introduce information into memory structures. In the brain a resource of information is generated called geographic knowledge or spatial representation (mental map) which may have a double nature - verbal or pictorial. An important feature of mental maps is organization of spatial information into hierarchical structures, e.g. grouping towns into regions as well as deformation of spatial relations between individual elements and their groups independent of consciousness. The process of map perception depends on various factors, including the nature, scale and map content, the degree of its complexity and compliance of the map language with cartographic principles. Important factors also include cartographic competencies of the recipient of a map conditioned by age, education and the task type. It is related to types of information about geographical space: semantic - concerning spatial references of particular objects and structural - connected to relations between elements of a map. Such relations may be determined at the regional or global level, they may concern qualitative or quantitative features as well as changes in time. Nowadays, an important factor impacting the nature and consequences of map perception is the situation in which the process occurs. Traditionally, static and unchanging maps are used under other conditions than computer maps and navigation systems, making it possible to freely zoom in and zoom out the image and its spatial scope as well as to quickly go from one image to another. Today, when the predominant way of map use is their perception on the screens of navigation systems, processes of map perception and factors conditioning it are also significant to understand the process. In the analysis of map perception, also tasks which are implemented using the map and the nature of information obtained by the map user must be taken into account.

Opis:
A perception-based interpretation of evaluation systems is proposed in this paper. Thus, a perception-based approach to create intelligent systems is considered. The evaluation systems can be employed eg. in order to assess student exams, as well as to other applications. Evaluation marks used in these systems are given as perceptions expressed by words. The words play the role of labels of perceptions, and are represented by fuzzy sets. This means that the idea of perception-based systems, introduced by Zadeh, is applied. Various algorithms of overall assessment are suggested in this paper. Overall evaluation is produced as an aggregation of component evaluation marks. Systems of this kind can be obtained using fuzzy neurons, so fuzzy neural networks are also mentioned as a method of perception-based reasoning. The usefulness in artificial intelligence of both fuzzy sets and neural networks, and especially a combination of these, is shown.

W pracy przedstawiono wyniki nieparametrycznej analizy wskaźnika percepcji korupcji. Na analizę tę składa się metoda jądrowa estymacji funkcji gęstości oraz wybrane metody estymacji przedziałowej wartości średniej wskaźnika percepcji korupcji. Do rozważanych metod estymacji wartości średniej należą: jedna z metod bootstrapowych oraz metody wykorzystujące dodatkowe informacje o zmiennej takie jak asymetria rozkładu, ograniczoność zbioru wartości zmiennej. Przeprowadzona analiza dotyczy estymacji wskaźnika percepcji korupcji w 2008 roku różnymi metodami, w oparciu o próby proste różnej liczebności. Porównanie uzyskanych wyników estymacji pozwoliło sformułować wnioski dotyczące dokładności oszacowań, a tym samym efektywności rozpatrywanych metod.

lthough the literature about the objective socio-economic characteristics of the Italian North-South divide is wide and exhaustive, the question of how it is perceived is much less investigated and studied. Moreover, the consistency between the reality and the perception of the North-South divide is completely unexplored. The paper presents and discusses some relevant analyses on this issue, using the findings of a research study on the stated locational preferences of entrepreneurs in Italy. Its ultimate aim, therefore, is to suggest a new approach to the analysis of the macro-regional development gaps. What emerges from these analyses is that the perception of the North-South divide is not consistent with its objective economic characteristics. One of these inconsistencies concerns the width of the ‘perception gap’, which is bigger than the ‘reality gap’. Another inconsistency concerns how entrepreneurs perceive in their mental maps regions and provinces in Northern and Southern Italy. The impression is that Italian entrepreneurs have a stereotyped, much too negative, image of Southern Italy, almost a ‘wall in the head’, as also can be observed in the German case (with respect to the East-West divide).

The attitude to corruption and the perception of it (as well as the acceptance or rejection of corruption) depends largely on the customs and traditions in a particular country, with the causes of corruption deriving from the political, economic, social conditions of a particular country and from the historical development, customs and culture. However, the demographic indicators must not be ignored. The existing researches thus show that the perception of corruption, at least to some extent, depends on gender (women are supposedly less corrupt and perceive corruption more; age and education). For the purpose of this article, the influence of demographic indicators (gender, age) on the perception of corruption in Slovenia was researched. The results were compared with the already known researches and it was determined that there are no statistically significant differences in the perception of corruption with regard to gender and age, which shows that Slovenia, in view of the specifics of the corruption perception (although the corruption perception is high in Slovenia), differs from other countries in which researches took place.

This article presents the impact of the Ukrainian crisis on the Polish civil society. At the beginning, the author describes the history and the present of the Polish-Ukrainian relations. Then the author analyses social perception of the crisis, which induces both interest and fear. According to the pools, we support Ukrainian integrity or prefer to stay neutral; there is lack of support for Russia or the separatists. Our feeling of insecurity is much higher than in other countries of Central and Eastern Europe. In the article, social activity is listed, such as demonstrations of solidarity or humanitarian aid. The author also evaluates, to what extent is the Polish civil society a functional background for the Polish government decision-making process.

Artykuł przedstawia projekt badawczy dotyczący zjawiska percepcji. Głównym celem pracy było zdefiniowanie i scharakteryzowanie aspektów, czynników oraz efektów percepcji form swobodnych, jako jednego z atrybutów w procesie powstawania formy architektonicznej. Przystępując do badania, określono wstępne oczekiwania w zakresie jego wyników. Pierwszym i zarazem głównym zamysłem było zwiększenie własnej wiedzy autora w zakresie zjawiska percepcji. Drugim problemem było stworzenie modelu symulacyjnego wyróżniającego instrumenty i cechy charakterystyczne, pozwalające opisać wpływ zjawiska percepcji na proces projektowania. Końcowym zadaniem była realizacja głównego, wcześniej już wspomnianego celu pracy – rozpoznanie ciągu aspektów, czynników oraz efektów związanych ze zjawiskiem percepcji. Prace nad badaniem rozpoczęto od określania ról pomiędzy twórcą i obserwatorem oraz ich wzajemnych relacji w ramach środowiska badawczego. Następnie zaprezentowano i rozwinięto zadania projektu badawczego – w tym celu przygotowano symulację grup faktów, związanych z nimi problemów oraz odpowiadających im pomysłów. Ostatnim elementem składowym opisującym model teoretyczny została intuicyjna grafika ukazująca rdzeń koncepcji projektu badawczego. Kolejnym krokiem było przeprowadzenie alteracji podstawowych atrybutów związanych z samym rdzeniem koncepcji. Następnie, aby wyróżnić i zbadać główne aspekty percepcji, przygotowano prototyp prostej symulacji badawczej. Pozwoliło to na obserwację procesu postrzegania oraz związanych z nią atrybutów, przy jednoczesnej możliwości kontroli czynników zewnętrznych oraz skoncentrowaniu uwagi na wrażeniach osoby poddanej badaniu, również w odniesieniu do tych czynników. Przed przeprowadzeniem samej symulacji jej parametry poddano alteracji, w tym m.in.: symulacjom związanym z materiałem, przestrzenią, czasem, energią, czy też danymi. Celem przeprowadzonych alteracji było rozwinięcie i wzbogacenie prototypu symulacji badawczej. Po przeprowadzeniu symulacji przygotowano i opisano koncepcję samego prototypu.
The paper presents a research project referring to the phenomenon of perception. The main aim of this study was to define and characterize aspects, factors and effects of the perception of free form as one of the attributes in the process of shaping the architectural form. There were several identified effects: the first and the main of the expected effects of the research project was to increase the author’s knowledge of perception itself. The second one was to create a simulation model which distinguished instruments and characteristic traits which allowed describing the influence of the perception phenomenon on the design process. The last assigment was to recognize the set of aspects, factors and effects related to the phenomenon of perception. At the beginning the relation between the creator and the observer in the research reality and their roles were defined. Then the aims of the research project were presented and developed – a simulation of the groups of facts, problems and ideas was prepared. As the last part of the description of the theoretical model, an intuitive image of the concept’s nucleus of the research project was introduced. The next step was to make alterations to the fundamental attributes of the concept nucleus itself. Furthermore to examine the main aspects of the perception, a simple prototype of research simulation was prepared. This allowed observing the process of perception and its attributes at the same time controlling the external factors and focusing on impressions of the person tested in combination with those factors. Before performing the research simulation, the process of its parameter altering was executed. The parameter alteration include, inter alia, material simulations, spatial simulations, timesimulations, energysimulations and infosimulations of the concept nucleus. The purpose of these simulations was the development and enrichment of the target research simulation prototype. After simulations, the concept of the prototype was prepared and described.

W artykule podjęto próbę dokonania deskrypcji procesu poznawczego, jakim jest percepcja, z trzech poziomów-perspektyw: nauki, metanauki i metalogopedii. By tego dokonać, założono, iż opisu świata można dokonywać za pomocą zdań: o rzeczywistości (opis), o zdaniach o rzeczywistości (nauka), o zdaniach o zdaniach o rzeczywistości (metanauka). By dojść do poziomu meta, przypomniano o roli pięciu klasycznych zmysłów człowieka oraz grup pól kory mózgowej, których funkcje ze zjawiska percepcji czynią problem neurologiczny i neuropsychologiczny. Ponadto przywołano założenia koncepcji sieci neuronalnej oraz kognitywistycznego ujęcia tytułowego procesu poznawczego. Z kolei by dokonać deskrypcji percepcji z poziomu metanauki, odwołano się do trzech stanowisk filozoficznych: realizmu, fenomenalizmu i idealizmu. Dodatkowo wykorzystano założenia filozofii języka. Nadało to tokowi wywodu wymiar ontologiczny i epistemologiczny. Metalogopedyczną refleksję na temat percepcji zbudowano, odwołując się do fenomenologii oraz filozofii percepcji Maurice’a Merleau-Ponty’ego. Szczególny nacisk położono na akcentowany przez filozofa fakt, iż percepcja jest funkcją uwarunkowań cielesnych (biologicznych) człowieka oraz aspektów znaczeniowych. Taka orientacja poznawcza umieszcza problematykę percepcji w granicach teorii logopedii i jej krytycznej oceny (poziom metalogopedii).
The article tries to describe the cognitive process of perception from the perspectives of science, meta-science, and meta-logopaedics. To achieve it, it has been assumed that the world can be described through statements about reality (description), statements about statements about the reality (science), and statements about statements about statements about the reality (meta-science). On the way to the ‘meta’ stage, the article mentions five human senses as well as the groups of the cerebral cortex areas which give perception neurological and neuropsychological character. Moreover, the concept of the neuronal network and the congnitivistic perspective on perception have also been mentioned. The meta-scientific description of perception makes reference to three philosophical beliefs: realism, phenomenalism, and idealism. The article also mentions the concepts of the philosophy of language. Such references give the article ontological and epistemological character. Meta-logopaedic reflection on perception has been built on phenomenology and the philosophy of perception of Maurice Merleau-Ponty. Special emphasis is put on his claim that perception is the function of bodily (biological) conditions and the meaning aspects. Such cognitive orientation places the problem of perception in the realm of logopaedic theory and its critical judgement (metalogopaedic level).

In a changing world, the concept of food also is also undergoing numerous changes. Along with the progress of civilization, the expansion of knowledge, the industrial revolution and the novel processing and preservation techniques, the role of food in Western societies has taken on a whole new meaning. Currently, the global market for functional foods is valued at 34 billion euro, which means that for a long time yet in Western civilization the prospective earnings will shape the consumer habits. It is widely recognized that the consumption of functional foods is a remedy for the overwhelming number of cases of civilization diseases that are directly related to lifestyle. The aim of this study was to discuss changes in the methods of food processing and the impact of public awareness of the health effects of processed foods on the characteristics of food products.
W zmieniającym się świecie koncepcja żywności również ulega licznym zmianom. Wraz z postępem cywilizacji, rozszerzeniem wiedzy, pojawieniem się rewolucji przemysłowej oraz nowatorskich technik przetwórczych i konserwujących rola żywności w społeczeństwach zachodnich nabrała zupełnie nowego znaczenia. Obecnie światowy rynek żywności funkcjonalnej wynosi 34 mld euro, co oznacza, że przez długi czas w cywilizacji zachodniej perspektywa zarobków będzie kształtować nawyki konsumentów. Powszechnie wiadomo, że spożycie żywności funkcjonalnej jest środkiem zaradczym dla przytłaczającej liczby przypadków chorób cywilizacyjnych, które są bezpośrednio związane z stylem życia. Celem tego artykułu było omówienie zmian w sposobie przetwarzania żywności i wpływu świadomości społecznej na zdrowie produktów spożywczych przetworzonych na cechy produktów żywnościowych.
