- The influence of formulas based on ripening cheese protein enriched with soya isolate, sodium caseinate, DL-methionine, DL-tryptophan and demineralised whey proteins on selected indexes in rats was examined. Nutritional studies showed high biological value of proteins in formulas (PER from 2.66 to 3.28), particularly in those enriched with free amino acids (PER 3.28) or with whey proteins (PER 3.23). The value of proteins in formulas, varied but did not influence hematological indexes in rats. Their values were in the range regarded as physiologically normal. The T/N indices in the rat liver tended to decrease when the protein quality increased.
