Opis:
The use of preservatives in industrial food production is now common practice. However, there is growing concern among consumers over the harmful effects of common chemical preservatives. As a result, there is increased demand for food that that has undergone little or no processing. In recent years, there has therefore been great interest in finding alternatives to chemical preservatives for use in the meat industry, in the form of natural ingredients. Possible solutions include the use of plant extracts, essential oils or antimicrobial peptides. This paper provides a review of research on the replacement of artificial preservatives in meat products with traditional chemical compounds of natural origin.

Functional foods, in addition to meat, also include its products in which the desired content of EFAs, dietary fiber and the limited content of undesirable salts and nitrates are increased. Red meat is a very good source of bioactive ingredients, vitamins and trace elements.

However since March 2007 Belarus has ceased import purchases of Polish meat. In the article problems which have arisen recently are studied. Also the analysis conducted in this article discovers the reasons of the problems and ways of their solution are offered.

Opis:
Snacks have become an integral part of the population's diet, allowing for quick satisfaction of hunger between meals. While traditional snacks, such as potato chips are still ubiquitous and popular around the world, healthier alternatives such as meat snacks are increasingly being sought. Drying is one of the oldest food preservation techniques. The most common drying techniques includes sun and hot air drying and are still used on a commercial scale. However, these processes are often slow, unprofitable and have a negative impact on the final quality of the product. For this reason, new raw material pre-treatment technologies are introduced and key drying parameters are modified in order to optimize the entire process. This review characterizes dried meat in terms of nutritional value and summarizes commonly used techniques for the production of this type of products. Tarczyński S.A., a leader on the Polish market in the meat industry, has developed a new, highly effective technology for drying and producing meat snacks of various shapes, which is in line with the trend of modern on-the-go food products.
Przekąski stały się obecnie nieodłącznym elementem diety populacji, pozwalając na szybkie zaspokojenie głodu między posiłkami. Podczas gdy tradycyjne przekąski, takie jak czipsy ziemniaczane, są nadal wszechobecne i popularne na całym świecie, coraz częściej poszukuje się zdrowszych alternatyw, na przykład przekąski mięsne. Suszenie to jedna z najstarszych technik konserwowania żywności. Najbardziej powszechne techniki suszenia, w tym suszenie na słońcu i gorącym powietrzem, są nadal stosowane na skalę komercyjną. Jednak procesy te są często powolne, mało opłacalne i mają negatywny wpływ na końcową jakość produktu. Z tego powodu wprowadzane są nowe technologie wstępnej obróbki surowca oraz modyfikowane są kluczowe parametry suszenia w celu optymalizacji całego procesu. W niniejszym przeglądzie scharakteryzowano pod kątem wartości odżywczych suszone mięso oraz podsumowano powszechnie stosowane techniki wytwarzania tego typu wyrobów. Tarczyński S.A., lider na polskim rynku w branży przetwórstwa mięsnego, opracował nową, wysoce efektywną technologię suszenia i produkcji przekąsek mięsnych o różnych kształtach, co wpisuje się w trend nowoczesnych produktów on-the-go food.

The aim of this study was to analyze the technological, textural, colour and sensory characteristics of model meat products produced with the addition of egg-yolk protein preparation (by-products of phospholipids extraction process at supercritical conditions). Model meat products consisted of pork class I, backfat class I and additives such a NaCl, NaNO2 and sodium isoascorbate. Functional additive (egg-yolk protein preparation) was added at different level of concentration: 0% (C), 2% (P1), 4% (P2) and 8% (P3). Experimental stuffings were heat treated in water bath and stored for 3 weeks under refrigeration. Thermal drip, yield of production process, NaCl, NaNO2 contents, texture profile analysis and physical parameters of colour (according to the CIE L*a*b* colour scale) were determined. Sensory assessment included: overall appearance, colour, odour and consistency of model meat products. It was observed that addition of egg yolk proteins to the model meat products influenced on increasing yield of the production process and on reducing mass losses caused by heat treatment. Furthermore, the addition of protein preparate resulted in increased accumulation of sodium nitrite in experimental products, what may be take into consideration in further studies on reducing the level of this substance in meat processing. The values of hardness, gumminess and chewiness of experimental samples were higher (α ≤ 0.05) than those obtained for control variant. After 3 weeks of storage model products produced with egg-yolk protein addition were characterized by lower (α ≤ 0.05) value of chewiness than control sample. Moreover, after 24 hours there were no statistical (α ≤ 0.05) differences beetwen b* (yellowness) values of P1 variant meat products and control sausages. All investigated variants after 3 weeks of storage did not differ significantly within L* (lightness) and a* (redness) values. Sensory assessment showed that P1 variant of experimental products obtained the highest scores of colour, consistency and overall appearance.

It was shown that the optimum system of management by activities of enterprises operated in food industry, especially in producing of meat products, should be based on use of international standards requirements ISO 9001, ISO 14001, ISO 22000 and OHSAS 18001, which norms should be observed in structure of the integrated quality management system. There were analyzed the factors that influence negatively on safety of meat foods and state of nature nearby the enterprise, and proposed methods of minimization their influence. The aim of this study was to compare the quality of selected meat products, i.e. frankfurters, Polish kabanos sausages, and salami, with their plant-based (vegetarian) analogs. Five items from five different product batches were analyzed in each examined product category. The analyzed items were vacuum-packaged in bags to standardize the parameters of the compared products, and their quality was evaluated before the use-by date declared by the manufacturer. Meat products had higher dry matter and lipid contents. Salami contained more protein, whereas frankfurters and kabanos sausages contained less protein than their respective analogs. Moreover, traditional kabanos sausages had a higher pH than their vegetarian alternatives. Indicators of the nutritional value of lipids and pH of vegetarian frankfurters and salami were higher than those of their meat counterparts. In turn, lipids of vegetarian kabanos sausages had lower ratios of unsaturated to saturated fatty acids, monounsaturated to saturated fatty acids and hypocholesterolemic to hypercholesterolemic fatty acids than traditional kabanos sausages. Among the color parameters, redness (a*), yellowness (b*) and chroma (C*) of plant-based meat analogs were higher compared to those of meat products. These results indicate that the names of plant-based analogs, which make a direct reference to the corresponding traditional meat products, can be misleading for consumers who expect products with similar quality attributes.

The aim of the study was to evaluate the influence of lyophilized plant extract on color of canned meat with reduced amount of sodium (III) nitrite measured by spectrophotometric methods. The results were collected through the X-RiteColor® Master software. The results of the experiment show that reduc-tion of nitrite salt is possible but additional fortification is required: the best results were obtained when the extract was added in the amount of 0.015%.

By means of steam distillation at high boiling temperature (130-170°C) the phenolic compounds of smoke were isolated from smoked meat products. Eugenol, siringaldehyde acetosyringone and acetovanillone are predominant in hot smoked meat products whereas guaiacol, maltol, phenol and m-cresol are predominant in cold smoked products.
Fenole niskowrzące mogą być oddestylowane w parze wodnej w temp. ok. 100°C. Fenole dymu wędzarniczego wykazują wyższą temperaturę wrzenia i w tych warunkach są nielotne albo bardzo słabo. Można je oddestylować w przegrzanej parze wodnej w temperaturze 130-170°C. Do podwyższenia temperatury użyto roztworów chlorku litu metodą Antonacopulosa. W tych warunkach większość składników fenolowych dymu wędzarniczego lub mięsnych produktów wędzonych jest ilościowo oddestylowywana. Przez zastosowanie tej metody stwierdzono, że produkty mięsne wędzone na gorąco lub zimno zawierają wyraźnie różniące się frakcje fenolowe. W produktach wędzonych na gorąco przeważają eugenol, aldehyd syringowy, acetosyringon i acetowanillon podczas gdy w produktach wędzonych na zimno przeważają guajakol, maltol, fenol i m-kresol. We wszystkich produktach dominował w większych ilościach eugenol. Aromat wędzonych produktów mięsnych zależy w dużym stopniu od zawartości eugenolu. Wzrost zawartości fenoli w dymie wędzarniczym i tym samym wzmocnienie aromatu wędzonych produktów mięsnych nie musi być związany ze wzrostem policyklicznych węglowodorów aromatycznych. Intensywny aromat produktów mięsnych poprzez wędzenie jest możliwe również gdy faza dużych cząstek (sadza), która jest znana jako transporter 3,4-benzopyrenu jest zatrzymana na drodze od generatora do komory wędzarniczej.

Introduction and objective. Salmonella is a foodborne pathogen which causes gastrointestinal illness in consumers, and exhibits resistance to antimicrobials of veterinary and clinical significance. The aim of this study is to detect the prevalence and antimicrobial resistance of Salmonella isolates from meat in Latvia. Materials and method. A total of 3,152 samples of raw and ready-to-eat (RTE) meats were collected during the official control and in-house control procedures in 2015. Samples were tested in accordance with ISO 6579:2002. All S. Typhimurium, S. Enteritidis and other isolates recovered from the official control samples (S. Derby, S. Give) were tested for antimicrobial resistance. The minimum inhibitory concentration (MIC) values were investigated in line with the requirements of the European Committee on Antimicrobial Susceptibility Testing (EUCAST). Results. The prevalence of Salmonella was 0.8% (25/3152). The highest prevalence (1.5%) of Salmonella was found in minced meat and meat preparations (7/481), while the lowest (0%) in frozen meat and meat preparations (0/349) and RTE meats (0/364). The most common serovars were S. Typhimurium (36%, 9/25) and S. Derby (32%, 8/25). In total, 62% (13/21) of Salmonella isolates were resistant to at least one antimicrobial agent. Altogether, 40% (8/20) of isolates were resistant to sulfamethoxazole, 25% (5/20) to nalidixic acid, ciprofloxacin, ampicillin and 20% (4/20) to tetracycline. All isolates were susceptible to ceftazidime, cefotaxime, meropenem, azithromycin and tigecycline. S. Typhimurium exhibited antimicrobial resistance more often (87.5%) than other serovars. Conclusion. The study shows that the presence of Salmonella in meat, together with the high prevalence of resistant strains, is a significant public health related issue in Latvia.

Background. Globalisation is the direct or indirect source and cause of many economic, social, political and cultural processes and phenomena. These processes also affect agribusiness and food production. One of the important developments in recent decades is the ever-increasing scale of food adulteration. Its consequence is a reduction in the level of food safety, both in its health and economic aspects. The latter is due to the presence of impaired, or even adulterated, food on the market, which exposes consumers to non-equivalent exchanges. Sectors particularly vulnerable to these illegal trade practices include meat and fish products. Objective. The aim of the article is to identify the dominating methods/categories of food adulteration using the example of the Polish market for the food production sectors of meat and fish. Material and methods. The research was conducted using data from the Agricultural and Food Quality Inspection (AFQI), the official food control institution responsible for quality and food adulteration controls in Poland. The study covered the period from 2010 to 2020. Results. Research has shown an exceptionally significant level and diversity of methods of adulterating meat and fish products. These products are adulterate much more often than other food products. The conducted research has shown many methods and ways of adulterating both meat and fish products. It is worth emphasizing that the greater concentration of counterfeiting methods concerns meat products. The study revealed an extremely significant variety of adulterating methods for meat and fish products, significantly beyond those typically cited in the literature. Conclusions. The results of the research indicate the need to intensify official food controls on the Polish market. In particular, this should apply to the group of meat and fish products due to their high level of adulteration.

The effects of the supplier and the mass of pork thighs together with some production parameters including mass loss during ham production, mass of the final products and relative content of non-protein nitrogen (NPN) on the texture profile of Slovenian dry-cured ham – Kraški pršut were investigated to determine its optimal texture. The study included 32 dry-cured hams from two mass classes (heavy with thigh mass at salting of 11.7–12.1 kg and light with thigh mass at salting of 10.5–10.7 kg) and two different pork thigh suppliers from regular production. Slices cut transversally from the thigh at approximately 8 cm from the femur head were used for physicochemical parameter (pH, contents of moisture, total fat, protein, NaCl, and NPN) analysis, instrumental texture analysis profile analysis (TPA), and sensory analysis. Pork thigh mass had a significant effect on the TPA parameters; light samples were harder, chewier, springier, more cohesive and resilient compared to the heavy samples. NaCl content and sensory scores for saltiness were higher in the light Kraški pršut samples than in the heavy ones. Based on the median for hardness in the sensory analysis, the samples were classified into three ranks of texture using linear discriminant analysis (9 variables, 100% correct classification): optimal (median 4.0; 19% of samples), slightly too soft (median 3.5, 72% of samples), and soft (median 3.0; 9% of samples). Kraški pršut mass and hardness were significantly correlated to saltiness, pastiness, aroma, and all TPA parameters (p≤0.05). Positive correlation (p≤0.05) was also observed between NPN and pastiness. These findings indicate the importance of supplier, mass of pork thighs, and production parameters for optimizing the texture of Kraški pršut.
