- Hydration properties of commercial skim milk and whey powders, milk protein coprecipitate, whey protein concentrate, extruded sodium and calcium caseinate were studied. The properties of the concentrates were found to differ depending on the type and production method. The highest solubility was exibited by extruded sodium caseinate. Also, relatively high solubility of extruded calcium caseinate deserves stressing. The highest water absorption was stated for milk protein coprecipitate. The caseinate solutions produced the highest viscosities. All the preparations studied showed low gelation capacity.
