Opis:: Artykuł poświecony jest zagadnieniu możliwości oddziaływania na poziom cen mleka surowego poprzez ceny kluczowych artykułów pochodnych, będących powszechnym przedmiotem handlu międzynarodowego. W toku rozważań ustalono, że nie ceny mleka kształtują ceny podstawowych artykułów pochodnych takich jak ser twardy cheddar, odtłuszczone mleko w proszku i masło w blokach, lecz ceny tych produktów kształtują cenę mleka surowego. Może to mięć znaczenie w oddziaływaniu na poziom cen skupu mleka w Unii Europejskiej po zniesieniu kwot mlecznych.
The paper presents the concept of econometric models for predicting the level of prices of raw milk in New Zealand, based on the prices of SMP, butter and cheddar cheese, as the products strongly correlated with the prices of raw milk. The article also states that the prices of basic products which are a commodity in international exchanges influence on the prices of raw milk and not vice versa.

Opis:: Because of the ever−changing nature of the environment, the limited availability of natural resources, and the increased number of people in the world, modifications in food production can be very important. In order to prevent irreversible damage occurring in the natural environment, food sources that are an alternative to pig meat, beef and poultry from industrial production are being sought. An alternative may be the meat of slow−moving animals. The studies show the impact of livestock (such as pigs and cattle) price changes in comparison to wild game purchase prices. An average correlation was found (r=–0.536) between unit purchase prices of pig livestock and unit purchase prices of wild boar. Regarding the changes in the purchase prices of beef livestock and the purchase prices of the deer carcasses, a weak correlation was observed (r=0.219), while a lack of correlation (r=–0.012) was found between the change in the price of beef and roe−deer. On the basis of the conducted studies, it was stated that in the situation of predicting prices for carcasses of game animals in Poland, information on the apparently substitutive good of farm animals should not be included. The average or low level of correlation, or in case of roe−deer carcass – the lack of correlation between the prices of farmed animals and the prices of wild game, make it possible to conclude that the processes taking place on the analyzed markets in terms of price developments were separate and unrelated.

Opis:: Badania prowadzono w latach 2004-2007. Analizowano ceny skupu żywca wołowego (zł/kg), uzyskiwane przez producentów rolnych oraz ceny detaliczne poszczególnych produktów i wyrębów wołowych (zł/kg) w Polsce oraz w wybranych krajach UE. Obliczono procentowy udział ceny detalicznej produktów i wyrębów z wołowiny (%) w Polsce, Niemczech i Holandii. Na podstawie korelacji Pearsona określono zależność pomiędzy ceną skupu żywca wołowego a ceną detaliczną produktów i wyrębów wołowych w Polsce, Niemczech i Holandii.
The study was conducted in 2004-2007 to analyse the purchase prices of live cattle (zloty/kg) paid to agricultural producers and retail prices of different beef products and cuts (zloty/kg) in Poland and selected EU countries. The proportion of retail prices of beef products and cuts (%) in Poland, Germany and Holland was calculated. Pearson cor-relation was used to calculate the relationship between purchase prices of live cattle and retail prices of beef products and cuts in Poland, Germany and Holland.
