This study was carried out to evaluate the effects of sesame (Sesamum indicum L.) oil cake on pasta processing and the functional characteristics of the end product. The pasta produced from wheat flour fortified with 5, 7.5, 10, 12.5, and 15% (w/w) sesame oil cake showed a significant increase in total protein (i.e., ranging from 12.3 and 16.0 g/100 g), lipid (i.e., 3-fold) and crude fiber (i.e., 0.58 to 0.91 g/100 g) contents with the increasing addition of sesame oil cake. Consistograph tests showed that the pressure maximum decreased significantly from 267.2 kPa for the wheat flour dough (control) to 157.6 kPa upon the addition of 15% (w/w) sesame oil cake to wheat flour. Drop-in pressure after 250 and 450 s was lower for the control sample than for those containing 5, 7.5, 10, 12.5, and 15% (w/w) sesame oil cake. The elasticity value for the control dough was 500.1 Pa, and it was reduced to 392.3 Pa with the addition of 15% (w/w) sesame oil cake to wheat flour resulting also in a significant reduction in the extensibility. The pasta from the flour blend with 7.5% (w/w) sesame oil cake exhibited the highest cooking loss, at 5.40 g/100 g. Sensorial evaluation of the flavor and stickiness of pasta produced from the flour blends containing up to 10% (w/w) of sesame oil cake was satisfactory and recommended to open the door for industrial utilization of such valuable and nutritious by-products. Sesame components and gluten network interactions are believed to play a key role in modifying pasta’s functional characteristics and require more investigation.

Global warming has increased interest in growing soya in Poland. Variable weather conditions during the vegetation seasons, however, still make its cultivation potentially risky. In this study we wanted to assess how contrasting climate conditions influence on seed yield, 1000 seed weight and other important physical traits, as well as on contents of nutrients, dietary fibre constituents, trypsin inhibitor and phenolic components in nine soybean genotypes of different earliness. The field experiments were conducted in two consecutive vegetation seasons at Radzików, located in central Poland. Comprehensive seed characteristics of physical and chemical traits allowed to identify the best varieties for different end-uses, food or feed. A significant effect of variety and year of cultivation were observed for all evaluated traits. With the exception for the length of vegetation period, seed yield, seed coat and soluble non-starch polysaccharide content, significant interactions between variety and year of cultivation were found for the remaining traits. Weather conditions, such as very low precipitation with an average temperature above the multi-year average temperature in the month of July, when pod and seed is in full development, had a negative effect on all seed traits evaluated, regardless of variety earliness.
Globalne ocieplenie klimatu spowodowało wzrost zainteresowania uprawą soi w Polsce. Zmienne warunki pogodowe w okresie wegetacji sprawiają jednak, że jej uprawa jest nadal potencjalnie ryzykowna. W niniejszych badaniach chciano ocenić, jak kontrastujące warunki klimatyczne wpływają na plon nasion, masę tysiąca nasion i inne ważne cechy fizyczne, a także na zawartość składników pokarmowych, składników błonnika pokarmowego, inhibitora trypsyny i związków fenolowych w dziewięciu genotypach soi o różnej wczesności. Doświadczenia polowe przeprowadzono w dwóch kolejnych sezonach wegetacyjnych w Radzikowie, położonym w centralnej Polsce. Kompleksowa charakterystyka nasion pod względem cech fizycznych i chemicznych pozwoliła na wytypowanie najlepszych odmian do różnych zastosowań końcowych, spożywczych lub paszowych. Stwierdzono istotny wpływ odmiany i roku uprawy dla wszystkich ocenianych cech. Z wyjątkiem długości okresu wegetacji, plonu nasion, okrywy nasiennej i zawartości rozpuszczalnych polisacharydów nieskrobiowych, dla pozostałych cech stwierdzono istotne interakcje między odmianą a rokiem uprawy. Warunki pogodowe, takie jak bardzo niskie opady przy średniej temperaturze powyżej średniej wieloletniej w miesiącu lipcu, kiedy strąki i nasiona są w pełni wykształcone, miały negatywny wpływ na wszystkie oceniane cechy nasion, niezależnie od wczesności odmiany.

The paper presents the effect of extrusion-cooking conditions (moisture content and screw speed) on the physical properties of extruded Jerusalem artichoke straw. A single screw extruder was used for straw processing. Shredded Jerusalem artichoke straw moistened to 30, 40, and 50% was subjected to an extrusion-cooking process at various screw speeds (70, 90, and 110 rpm). Selected physical properties and pasting profile were tested. Significant differences were observed depending on the moisture content of the samples and the various screw speed on their physical properties. Notably, increased moisture content lowered the specific mechanical energy, increased processing efficiency, water solubility, peak viscosity and breakdown. The maximum efficiency and the highest breakdown was observed for the sample with 50% moisture content processed at an extruder screw speed of 90 rpm. The sample obtained at 30% moisture and at 90 rpm was characterized by the lowest efficiency and hot paste viscosity, and the highest specific mechanical energy. The results showed that the extrusion-cooking process yielded desirable changes to the structure of the analysed lignocellulosic biomass.

The extrusion-cooking technique may be used to convert the common bean into functional food products. There is still insufficient information on the properties of extruded beans. The aim of this work was to investigate the effect of extrusioncooking conditions on the pasting properties of two cultivars of the common bean (Aura and Toska) available on the Polish market. The bean was extruded using a twin-screw extruder at variable screws speeds and different amounts of water were added directly to the barrel. The pasting properties of the obtained extrudates were measured using a Micro Visco-Amylo-Graph. The extruded beans revealed more stable viscosity characteristics than the unprocessed ones. The addition of increased amounts of water to the processed material raised the peak viscosity of both extruded bean varieties. A higher screws speed during bean processing resulted in a higher peak viscosity only in the case of the Aura cultivar. However, the decreasing value of the cold paste viscosity was observed at higher speeds. This may indicate the negative effect of the extruder’s screws speed on the gel formation ability of the extruded bean. The results showed that the extrusion-cooking process reduced the retrogradation tendency of bean paste due to starch degradation occurring during processing.

The main aim of the study was to determine selected characteristics of extruded snacks supplemented with Dracocephalum moldavica L. seeds added to the recipe in amounts ranging from 5 to 20% of the basic raw material composition. The effect of the screw speed on the selected corn-based snacks characteristics has also been been studied. A single-screw extruder was employed to obtain the snacks in the form of readyto- eat extrudates. Several properties were evaluated, among them: the expansion ratio, the water absorption and solubility indices as well as pasting properties, depending on the level of the additive and the screw speeds applied. Extruded snacks supplemented with Dracocephalum moldavica L. seeds exhibited an enhanced nutritional value compared with corn snacks due to the high content of fibre, protein and ash. The addition of the seeds decreased the expansion ratio significantly. The water absorption index of the snacks decreased as the level of seed addition in the processed blends was raised, while the water solubility index was significantly affected by the variable screw speed during the processing of the supplemented snacks. The recommended level of Dracocephalum moldavica seeds in corn-based snacks should not exceed 15% due to the high nutritional value as well as the high expansion and efficient treatment intensity of the components resulting in the ready-to-eat characteristic of the supplemented snacks.

Undamaged pea seeds of Agra, Wenus, Kwestor, Bursztyn, Rola, Turkus, Set, Kujawski and Ramrod cultivars divided into 3 size fractions were evaluated for physicochemical properties, the rate of fresh weight increments, leachate electroconductivity as well as cooking time. In Kujawski, Turkus, Bursztyn and Ramrod cultivars or in the case of small seeds, the mean fresh weight increments during seed incubation in water were greater, while in Set and in the case of large seeds, the increments were smaller.
