Opis:
Within last 30 years, in the modern societies, especially those more wealthy ones, relatively deep transformation took place in respect of purchasers' preferences and expectations as well as the values presented by them. These changes also apply to foodstuffs. Food products belong to the ones bought regularly and they take and important position in the structure of household expenditures. The article concentrates on the presentation of changes taking place in the European societies in respect of consumption, with particular stress on the foodstuffs. An attempt was also made to show the specificity of food producers' activities being the response to the current changes.

Sustainable consumption refers to the concept of sustainable development, and collaborative consumption is one of its manifestations. The aim of the article is to identify attitudes and behaviours of Polish consumers related to the idea of sustainable consumption. The implementation of the objective required the use of relevant Polish and foreign literature sources as well as the results of empirical research carried out as part of the research projects financed with the resources of the National Science Centre (2011/03/B/HS4/04417 and 2013/09/B/HS4/01965). The research findings point to the fact that the respondents’ knowledge on collaborative consumption is limited in Poland, and not everyone is interested in using this form of consumption.
Zrównoważona konsumpcja odwołuje się do koncepcji zrównoważonego rozwoju, a jednym z jej przejawów jest konsumpcja kolaboratywna. Celem artykułu jest identyfikacja postaw i zachowań polskich konsumentów wobec idei zrównoważonej konsumpcji. Realizacja założonego celu wymagała wykorzystania polskiej i zagranicznej literatury przedmiotu, jak również wyników badań empirycznych przeprowadzonych w ramach realizacji projektów badawczych finansowanych ze środków Narodowego Centrum Nauki (2011/03/B/HS4/04417 i 2013/09/B/HS4/01965). Wyniki badań wskazują, że w Polsce wiedza respondentów na temat konsumpcji kolaboratywnej jest ograniczona i nie wszyscy są zainteresowani wykorzystaniem tej formy konsumpcji.

Sustainable consumption and sustainable development are the two areas of action with the signifi cant infl uence on each state’s economy, especially the developed one. Sustainable consumption does not have to mean lowering the intensity of consuming – it should be rather connected with effi ciency. In the defi nitions of sustainable consumption and development there are particularly emphasized the element of future and protection of living environment. For this purpose we should introduce and implement the policy of pro-ecologic education and educating citizens about the issues concerning selection of products and services and their impact on the environment. Sustainable consuming is also just, intergenerational and intragenerational using of the Earth’s resources considering abilities of absorbing and neutralizing implemented substances and waste. Otherwise there occurs air pollution, soil contamination, decrease of fresh water quantity, accumulation of waste, increasing economic and social disproportions, thus lowering of ecologic safety and deterioration of living conditions.
Zrównoważona konsumpcja i zrównoważony rozwój to dwa obszary działań o znacznym wpływie na gospodarkę każdego państwa, szczególnie rozwiniętego. Zrównoważona konsumpcja nie musi oznaczać obniżenia intensywności konsumowania; należy ją wiązać raczej z efektywnością. W defi nicjach zrównoważonej konsumpcji i zrównoważonego rozwoju szczególnie akcentuje się element przyszłości i ochrony środowiska życia, dlatego też należy wprowadzać i realizować polityki proekologicznego wychowywania i edukowania obywateli w kwestiach dotyczących wyboru produktów i usług oraz ich wpływu na środowisko. Zrównoważone konsumowanie to też sprawiedliwe, międzypokoleniowe i wewnątrzgeneracyjne korzystanie z zasobów Ziemi, uwzględniające zdolności przyswajania i neutralizowania wprowadzanych do środowiska substancji i odpadów, majace na celu niedopuszczenie do zanieczyszczenia powietrza, skażenia gleby, spadku ilości wody zdatnej do użytku, nagromadzenia odpadów, narastających dysproporcji gospodarczych i społecznych, a więc obniżenia bezpieczeństwa ekologicznego i pogorszenia warunków życia.

In the article the author attempts to present the system approach towards sustainable consumption. The systemic analysis were carried out in relation to the idea of sustainable development and ecological crisis with the emphasis put on its reasons. The attention was drawn to properties, functions and a structure of the systems in question. The author outlined the issues related to the conception of needs and the needs generation mechanisms both in real and virtual worlds. Furthermore, he pointed out the consequences related to different ways of the consumption issues understanding and a risk for a human being arising due to the approach. Subsequently, the decision process was discussed in relation to the above mention problems and heed was paid to optimization procedures and responsibilities for the taken decisions. In this context the author discussed the moderation and economy.

Consumerism of the XXI century consists in the fact that people consume material goods and services that are not supported by actual needs. It is an element of “material” side of thinking, actions of managers, entrepreneurs, which contributed to the threat of global biosphere and the survival of humanity. Excessive consumption generates waste of goods, natural resources and human labor. Additionally there is overproduction and environmental degradation. Water supply process includes water abstraction, water treatment services, water distribution network. City inhabitants, industrial units or individual production units relay on the process to get water for their use. Empirical data have indicated that individual cost of water supply strongly depends on the size of both industrial units and the city area. The city size can affect the cost in two opposing ways; positive as together with the increase in area the efficiency of the supply network utility increases, or negative as the increase in area means longer distances of the water distribution network to cover. The article discusses the issue of the evaluation of IT solutions in terms of sustainable development. Information systems manufacturers are increasingly showing interest in the market of pro-environmental services. The products they offer are to fit into the sector related to the reduction of energy intensity, renewable energy sources as well as waste management and recycling. However, there are many doubts about the benefits as well as the legitimacy of using such solutions. The article attempts a preliminary analysis of the potential benefits and problems that may occur using the example of a household energy consumption management system. The analysis takes into account the negative environmental and social effects that co-occur in the dissemination of IT solutions. These effects, often overlooked or not considered at all, constitute an important component of growth barriers for the entire ICT sector.

W zachowaniach współczesnych konsumentów wyróżnić można dwa, stojące w opozycji wobec siebie, trendy. Z jednej strony widoczny jest ogólnie panujący konsumpcjonizm, a więc nadmierne przywiązywanie wagi do posiadania dóbr materialnych, z drugiej zaś rosnąca świadomość, że coraz ważniejszym aspektem konsumpcji staje się etyka. W artykule scharakteryzowano oba trendy, a ponadto zwrócono uwagę na ideę zrównoważonej konsumpcji. Przedmiotem rozważań są więc dwa skrajne oblicza współczesnej konsumpcji – konsumpcja nadmierna, niezrównoważona, prowadzącą do nieodwracalnych szkód w środowisku i społeczeństwie, oraz konsumpcja trwała i zrównoważona, prowadząca do poprawy jakości życia obecnych i przyszłych pokoleń.
In the contemporary consumers’ behaviour, one may distinguish the two, opposing each other, trends. On the one hand, there can be seen generally prevailing consumptionism, hence, an excessive attachment of importance to possession of material goods and, on the other hand, the growing awareness that the more and more important aspect of consumption becomes ethics. In the article, there are characterised both trends and, additionally, the author pays attention to the idea of sustainable consumption. The subject of considerations are, therefore, two extreme faces of the contemporary consumption – excessive consumption, unsustainable one, leading to irreversible harms to the environment and society, and the stable and sustainable consumption, leading to improvement of the quality of life of the present and future generations.

Celem pracy jest przedstawienie problematyki pomiaru zrównoważonej konsumpcji na podstawie najnowszych badań w dziedzinie pomiaru zrównoważonego rozwoju. Jednym z celów europejskiej polityki ochrony środowiska jest zrównoważona produkcja i konsumpcja (SCP –Sustainable Consumption and Production). Sustainable Consumption and Production zajmuje ważne miejsce w tzw. zielonej gospodarce (green economy), czyli takim rozwoju społeczno-gospodarczym, który w bardziej efektywny sposób realizuje cele zrównoważonego rozwoju. W pracy poddano analizie dostępną literaturę na temat mierników zrównoważonej konsumpcji zarówno polsko-, jak i angielskojęzyczną. W celu omówienia pomiaru postępu na drodze zrównoważonej konsumpcji wykorzystano m.in. raporty Europejskiej Agencji Środowiska (EEA – European Environment Agency), dane Eurostatu oraz prace Głównego Urzędu Statystycznego.
The aim of the study is to present the issue of measuring sustainable consumption in the light of the latest research into sustainable development. Sustainable consumption and production (SCP) is one of the objectives of EU environmental policy. SCP occupies animportant place in the so-called green economy, i.e. socio-economic development that meets the objectives of sustainability more effectively. This paper examines the available literature, in both Polish and English, on measurement of sustainable consumption. In order to assess the progress towards reaching sustainable consumption, the author uses, inter alia, the reports of the European Environment Agency (EEA), Eurostat reports and the research outcomes obtained by the Polish Central Statistical Office.
