Opis:
Health-conscious consumers are interested in products with an increased bioactive compound content. The nutritional quality is considered both as a stability and bioaccessibility concern. The aim of this study was to investigate the effect of horseradish products (horseradish root pomace, horseradish leaf pomace, microencapsulated horseradish root and leaf juice) on the physicochemical properties of biscuits, as well as to assess in vitro bioavailability and activity of phenolics. The bioactive compounds and antioxidant activity of horseradish products, which were used to replace the flour in biscuit dough, were analysed. Physicochemical parameters (pH, water activity, colour, phenolic compound contents, and antioxidant activities) were determined for the biscuits. Horseradish products compared to other cruciferous vegetables have a high content of phenolic compounds, as well as high antioxidant activity. Higher levels of bioactive compounds were found in microencapsulated horseradish leaf juice, compared to the other horseradish products used in the study. Enriched biscuits had a significantly higher total phenolic content (TPC) and antioxidant activity, compared to the control. After 180-day storage, TPC of biscuits with horseradish root products did not change significantly but in biscuits with horseradish leaf products it decreased by 27–29%. The bioaccessibility index of phenolic compounds after in vitro digestion of enriched biscuits ranged between 2.19 and 2.99. Microencapsulated horseradish leaf juice was more effective in enriching biscuits with bioactive compounds. The developed biscuits enriched with horseradish products could meet consumer expectations for healthy, functional food.

The study was performed to determine the bioavailable amounts of cadmium, lead, and zinc in the soils contaminated over the years of Zn-Pb ore mining and processing near Olkusz, Poland, and to identify the environmental risk (RAC) associated with the occurrence of the most mobile forms of these metals in the soil. The authors analyzed the topsoil samples for the basic physical and chemical parameters, as well as for total metal content (by aqua regia extraction), and for percentage of 1 M HCl- and 1 M NH4NO3 – extractable fractions. The results were compared with the content of these metals in a common grass species, Agrostis capillaris. In the study region, the Cd, Pb, and Zn contents were (respectively, in mg∙kg-1): 0.5–33.5, 2–529, and 4–7877. This means that in more than 24%, 30%, and 38% of samples, respectively, the metal content exceeded the limits defined by the Polish Environment Minister’s Regulation of September 9, 2002, with nearly 24% of soil samples contaminated by all three metals. On the basis of the Environment Minister’s Regulation of September 1, 2016, which is currently in force, and using the allowed limits for subgroup IV (industrial land), set at 15 mg∙kg-1 for Cd, 600 mg∙kg-1 for Pb, and 2000 mg∙kg-1 for Zn, the analysis also found the excessive metal content in a considerable percentage of the topsoil samples (33%, 13%, and 38%, respectively). The content of the studied elements in a common grass species, Agrostis capillaris, was significantly higher than the so-called natural content. A strict association was found between the total Cd, Pb, and Zn content, and the potentially available 1 M HCl – extractable fraction. The environmental risk presented by the content of mobile Cd, Pb, and Zn forms, assessed in all the studied soil samples using Risk Assessment Codes (RAC), demonstrates very high environmental risk associated with Cd, high environmental risk connected with Zn, and moderate environmental risk related to Pb.

Interactions between phenolics and dietary fibers, such as β-glucan, are important for the bioactivities of phenolics. However, interactions between aronia phenolics and β-glucan in the digestion process, both promoted for their health benefits, have not been studied. The aim was to study the interactions between aronia phenolics and β-glucan in an in vitro simulated digestion and in the adsorption process. After extracting aronia phenolics with chemically- and enzymatically-assisted extraction, and characterizing the phenolics, the aronia extract was subjected to simulated oral, gastric, and intestinal digestion without or with β-glucan. Flavonol release increased throughout oral, gastric, and intestinal digestion, while the recovery of phenolic acids and anthocyanins after an increase in the gastric phase, decreased in the intestinal phase. β-Glucan entrapped phenolics, lowering the quantities of recovered phenolics. It also adsorbed aronia phenolics at pH 1.5, 3.0, and 7.0. In comparison to 15 and 30 mg/L concentrations of β-glucan, a solution with the lower concentration (15 mg/L) allowed for the entrapment of the higher quantity of phenolics and had high adsorption capacity. Entrapment of aronia phenolics by β-glucan is important for the bioaccessibility and concentration of phenolics that reach the lower parts of the digestive tract which depends on β-glucan concentration.
