Opis:
Frozen pears, obtained by repeated freezing and thawing under cold outdoor conditions in winter, are very popular in northeast China. The effects of three freeze-thaw cycles (FT1–FT3) on Nanguo pear flavor were studied under fast (−80°C) and slow (−20°C) freezing conditions. Significant differences were found in the flavor of Nanguo pear after subsequent freeze-thaw cycles. The total soluble solid (TSS) content of fresh pear was 14.17 g/100 g and increased significantly after the first freeze-thaw cycle to 17.57–18.17 g/100 g. Lower TSS content was found in pears after the repeated freeze-thawing process. Citric acid was determined as the main organic acid of Nanguo pear. Its content and the overall content of organic acids decreased successively after each freezing and thawing cycle. The electronic tongue analysis results showed that the sourness of fresh pears generally decreased after their repeated freezing and thawing, that the odor of Nanguo pear changed significantly after freeze-thaw cycles, and that nitrogen oxides and hydrocarbons were the most differentiating odor compounds. The content of ethyl caproate was the highest in the volatile compound profile of the Nanguo pear and ranged from 377.26 to 526.77 μg/kg. In short, after repeated freezing and thawing, the changes in the chemical composition impart the frozen pear a unique flavor.

Investigations were performed to examine the possibility of using an electronic nose to monitor development of fungal microflora during the first eighteen days of rapeseed storage. The Cyranose 320 device manufactured by Sensigent was used to analyse volatile organic compounds. Each sample of infected material was divided into three parts and the degree of spoilage was measured in three ways: analysis of colony forming units, determination of ergosterol content, and measurement of volatile organic compounds with the e-nose. Principal component analysis was performed on the generated patterns of signals and six groups of different spoilage levels were isolated. An analysis of sensorgrams for a few sensors with a strong signal for each group of rapeseed spoilage was performed. The ratio of the association time to the steady state was calculated. This ratio was different for the low level and the highest level of ergosterol and colony forming units. The results have shown that the e-nose can be a useful tool for quick estimation of the degree of rapeseed spoilage.

Detection and identification of toxic environmental gases have assumed paramount importance precisely in the defense, industrial and civilian security sector. Numerous methods have been developed for the sensing of toxic gases in the environment ever since surface acoustic wave (SAW) technology came into existence. Such SAW sensors called electronic nose (E-Nose) sensor use the frequency response of a delay line/resonator. SAW device is focused and given importance. The selective coating between input and output interdigital transducers (IDTs) in the SAW device is responsible for corresponding changes in operating frequency of the device for a specific gas/vapour absorbed from the environment. A suitable combination of well-designed SAW delay lines with selective coatings not only help to improve sensor sensitivity and selectivity but also leads to the minimization of false frequency alarms in the E-Nose sensor. This article presents a comprehensive review of design, development, simulation and modelling of a SAW sensor for potential sensing of toxic environmental gases.

Celem pracy jest określenie możliwości wykrywania zakłóceń w przebiegu procesu oczyszczania ścieków prowadzonych za pomocą reaktora typu SBR przy zastosowaniu elektronicznego nosa skonstruowanego z wykorzystaniem matrycy nieselektywnych rezystancyjnych czujników gazu. Pomiarów dokonywano podczas procesu oczyszczania ścieków miejskich, który przeprowadzano w cyklu 12-godzinnym w bioreaktorze laboratoryjnym. Wykonano ciągłe pomiary powietrza pobieranego ponad zwierciadłem ścieków w reaktorze SBR za pomocą matrycy czujnikowej opartej na rezystancyjnych czujnikach gazu typu MOS podczas stabilnej pracy systemu oraz symulacji awarii procesu napowietrzania. Do interpretacji wyników wykorzystano analizę PCA. Przeprowadzone badania laboratoryjne wskazują, że, wykorzystując matrycę czujnikową, można wnioskować o przebiegu procesu oczyszczania ścieków w reaktorze i natychmiast uzyskiwać informację o stanach odbiegających od normy.
The objective of this article is to determine the possibility of biological process disturbances detect in SBR reactor using developed electronic nose device with application of non-selective gas sensor array. The SBR reactor allows to reduce organic carbon and nutrients concentration level. Measurements were performed during wastewater treatment, which was conducted in 12 hours working cycle. Continuous headspace analysis using the sensor array based on a resistive gas sensors MOS type was performed. To interpret the results, the PCA analysis was applied. Conducted studies have shown that using a sensor array it is possible to inform about abnormal conditions meaning disturbances of the process.

The dynamic recent development of technologies provides more and more new tools, thanks to which it is possible to quickly detect and identify the chemical composition of volatile organic compounds of fungal origin. An ‘electronic nose’ (e−nose) is one of such tools. The Forest Research Institute launched in the period of 2018−2020 the project entitled ‘Forecasting threats to forest ecosystems through the implementation of innovative electronic odor recognition system’. Its aim is to use an electronic nose to detect the odors of fungal pathogens that cause damping−off of seedlings belonging to Fusarium, Rhizoctonia, Cylindrocarpon, Phytophthora and Pythium genera as well as pine foils on an example of pine tree lappet caterpillars (Dendrolimus pini L.). In presented paper special attention was paid to the organic compounds of fungal origin. Many authors indicate that a large number of fungi secrete specific organic compounds that can be used to recognize them. The composition of these compounds may, however, differ depending on the conditions in which the organism develops or even on the virulence itself. Similar research made it possible to introduce an e−nose device for general use. They are used, inter alia, at airports to detect dangerous substances, to determine the quality of coffee, or to check food for its suitability for consumption. The aim of this work is to review the basic information on the volatile organic compounds released by fungi, their composition and the possibility of using an electronic nose for their early detection. Paper provides information on: methods used to identify volatile organic compounds, the basic differences between the discussed methods and information on the examples of the use of this technology in various industries, from the food industry, through medicine, to the army.
