Opis:
Coconut water is an increasingly popular raw material, mainly due to its hydrating and health-promoting properties. The aim of the work was to develop exemplary model fruit mousses with coconut water and to evaluate the effect of thermal fixation processes on the stability of polyphenols and antiradical activity, which were pasteurized and stored for 6 months in real conditions. The nutritional value of the mousses, i.e. the content of vitamins and minerals, was determined, and the influence of storage on the content of polyphenols and antioxidant properties measured with the DPPH radical and ABTS•+ radical cation methods was assessed. It has been shown that coconut water can be an ingredient in mousses, which allows for the creation of new dessert products. It was found that the developed products contained compounds of antioxidant nature. The highest content of phenolic compounds was found in the sample with the addition of protein 178.43b±11.39 µg gallic acid/mL. The content of polyphenols in the tested samples was stable during storage. In the test with the use of ABTS•+ radicals, the highest activity was shown by mousse with the addition of caffeine tested one day after preparation (4.43a±0.24 TE/g dw), while in the test with the use of DPPH radicals, the sample tested one day after preparation with the addition of almond protein had the highest activity anti-radical (6.87a±0.37 TE/g dw). The highest total acidity was recorded in the case of mousses with the addition of almond protein (MPr - 0.84a±0.03 g / 100 g).
Woda kokosowa jest coraz bardziej popularnym surowcem, głównie ze względu na swoje właściwości nawadniające i prozdrowotne. Celem pracy było opracowanie przykładowych, modelowych musów owocowych z udziałem wody kokosowej oraz ocena wpływu procesów utrwalania termicznego na stabilność polifenoli i aktywność przeciwrodnikową, które poddano pasteryzacji i przechowywano przez 6 miesięcy w warunkach rzeczywistych. W musach ustalono wartość odżywczą, tj. zawartość witamin i składników mineralnych, a także oceniono wpływ przechowywania na zawartość polifenoli i właściwości przeciwutleniające mierzone metodami z rodnikiem DPPH oraz kationorodnikiem ABTS•+. Wykazano, że woda kokosowa może być składnikiem musów, co pozwala na uzyskanie nowych produktów deserowych. Stwierdzono, że opracowane produkty zawierały związki o charakterze przeciwutleniaczy. Najwyższą zawartość związków fenolowych stwierdzono w próbie z dodatkiem białka 178.43b±11.39 µg kwasu galusowego/mL. Zawartość polifenoli w badanych próbach była stabilna w czasie przechowywania. W teście z wykorzystaniem rodników ABTS•+ najwyższą aktywność wykazał mus z dodatkiem kofeiny poddany badaniom jeden dzień po przygotowaniu (4.43a±0.24 TE/g s.m.), natomiast w badaniu z zastosowaniem rodników DPPH próba zbadana jeden dzień po przygotowaniu z dodatkiem białka migdałowego wykazała najwyższą aktywność przeciwrodnikową (6.87a±0.37 TE/g s.m.). Najwyższą kwasowość ogólną odnotowano w przypadku musów z dodatkiem białka migdałowego (MPr - 0.84a±0.03 TE/g s.m.).

Introduction: Natural products represent a gold mine for scientists looking for compounds for the treatment of health problems and diseases with their different biological and pharmacological activities. However, recent research is focused on finding natural sources of antioxidants. Objective: The objective of current research was to determine the phytochemical profile of Algerian fenugreek (Trigonella foenum-graecum L.), and Syrian cumin (Cuminum cyminum L.) seeds in order to characterize their phenolic compounds and to determine their antioxidant activities. Methods: Total phenolic, flavonoids, condensed and hydrolysable tannins contents were quantified using Folin-Ciocalteu, aluminium chloride, vanillin and ferric chloride methods, respectively. Phenolic compounds were identified by HPLC method and antioxidant activity was measured using DPPH assay. Results: The higher amounts of total phenolic compounds, flavonoids, condensed and hydrolysable tannins were given by fenugreek. Results of HPLC analysis of our plants showed that eight phytochemical compounds were found in cumin extract, and seven molecules in fenugreek extract. Moreover, fenugreek possessed higher antioxidant activity. Conclusion: This study confirmed that our plants are a good source of phenolic contents and possess a high antioxidant activity.

Spirulina platensis is a microalga that contains a lot of secondary metabolites and is utilized as a dietary supplement. It can inhibit fat peroxidation better compared to the chemical antioxidant. Laboratory-scale closed reactor system was designed for Spirulina cultivation. This research aims to analyze identified secondary metabolite (Phytochemical contents) and the antioxidant activity or value of Inhibition Concentration 50% (IC50) of the fresh lab-scale cultivated Spirulina platensis. The antioxidant content was evaluated using DPPH method (1,1–diphenyl-2-pikrilhidrazil) on various sample concentrations as well as using Vc (Ascorbic Acid) as a positive control. The principle of hydrogen absorption by free radicals from antioxidants was demonstrated with the absorption value using a spectrophotometer at a wavelength of 517 nm. The results show that Spirulina platensis lab-scale cultivation was resulting in 5.0±0.01 g/10.0 L wet basis on the 10th day. The results show that Spirulina platensis has positive compounds of flavonoid, steroids, triterpenoids, phenolic, and saponins. Fresh Spirulina platensis has a value of IC50 647.045 ppm and Vc as a positive control has the IC50 of 2.085 ppm. The potential as a source of natural antioxidants was categorized as a very weak capacity. Therefore this study can be concluded that Spirulina platensis cultivated in Laboratory-scale has a potential to act as antioxidant candidate.

Bacopa monnieri (L.) Wettst is a very high-value medicinal plant that is commonly used for improving cognitive functions. However, the availability of very limited information on the drying method of B. monnieri has prompted to optimize a suitable drying method. The present study therefore aimed to evaluate the influence of the following six drying treatments on the quality of B. monnieri sample: microwave drying at 300 W and 600 W, hot air-drying at 50EC and 70EC, solar drying, and freeze-drying (FD). The quality attributes of the dried samples were comparatively analyzed in terms of color, total color difference, moisture content, water activity (a w), antioxidant activity, and bacoside A and bacopaside I content. The results of this study showed significant differences (P < 0.05) among the different drying methods in International Commission on Illumination (CIE) parameters, namely lightness index (L*), red-green index (a*), and yellow-blue index (b*), ΔE and a w values. Among the samples dried with the six drying methods, freeze-dried B. monnieri samples had an attractive color with the lowest total color difference value (11.415%), a w value (0.15%), and maximum bacoside A (3.389%) and bacopaside I (0.620%) content. Moreover, Fourier transform infrared spectroscopy (FT-IR) analysis showed no major difference in the functional groups in B. monnieri samples processed by the different drying methods. Considering the retention of quality after drying, FD was found to be very effective for future large-scale production of good quality dried B. monnieri products.

The increase in the costs of storage and disposal of post-production residues has resulted in the search for new directions for their recycling, which is closely related to the necessity of protecting the natural environment and promoting a circular economy. Moreover, the apparent interest shown by the food market in raw materials with high antioxidant activity implies an increasing use of by-products. The objective of the study was to determine the effect of the type and concentration of the solvent on the efficiency of extracting polyphenols from distillery stillage as well as their antioxidant activity by using several solvents: methanol:water (70:30 v/v), methanol:water (100:0 v/v), ethanol:water (70:30 v/v) or ethanol:water (100:0 v/v). The DPPH radical method was used to determine the antioxidant activity of the obtained extracts. The normalised variable (NV) and statistical measure (MS) were determined, based on which the effectiveness of the solvents was evaluated. The highest polyphenolic content and the antioxidant activity were obtained by using ethanol:water (70:30 v/v) as a solvent in the extraction of polyphenolic compounds from distillery stillage.

In the recent times plants are becoming more popular. Their beneficial pro-health properties result from the content of numerous characteristic compounds. Reports are confirming their beneficial antioxidant, antibacterial and anti-inflammatory properties. The aim of this study was to compare the antioxidant potential and the characteristics of water extracts obtained from plants: yarrow herb (AM) (Achillea millefolium L.), knotweed herb (PA) (Polygonum aviculare L.), horsetail herb (EA) (Equisetum arvense L.), and motherwort herb (LC) (Leonurus cardiaca L.). Extracts osmolality was from 0,142a±0.02 mOsm/kg H2O for the AM extract to 0,176c±0,01 mOsm/kg H2O for the EA extract. The test with the use of the Folin-Ciocalteu reagent showed that the EA extract had the highest content of reducing compounds (54,24 d±2,19 mg GAE/g dw). It was shown that the highest activity against the DPPH radical was obtained for the extract from Equisetum arvense L. (5.97c ± 0.11 mg TE/1 g dw), and this extract also showed the highest antioxidant capacity measured with the radical ABTS method (7.23b±0.06 mg TE/g dw). These analyses were also confirmed by the tests carried out using the FRAP test, EA extract also showed 40% higher activity compared to the lowest AM extract. It has been shown that the investigated herbal raw materials can be an attractive raw material with antioxidant properties that can be used in application in food technology.
Surowce roślinne cieszą się coraz większą popularnością. Ich korzystne właściwości prozdrowotne wynikają z zawartości licznych charakterystycznych związków. Dostępne są doniesienia, potwierdzające ich korzystne właściwości antyoksyda-cyjne, przeciwbakteryjne i przeciwzapalne. Celem niniejszej pracy było porównanie potencjału przeciwutleniającego oraz charakterystyka ekstraktów wodnych uzyskanych z następujących roślin: ziele krwawnika (AM) (Achillea millefolium L.), ziele rdestu ptasiego (PA) (Polygonum aviculare L.), ziele skrzypu (EA) (Equisetum arvense L.) oraz ziele serdecznika (LC) (Leonurus cardiaca L.). Osmolalność ekstraktów wynosiła od 0,142a±0,02 mOsm/kg H2O dla ekstraktu AM do 0,176c±0,01 mOsm/kg H2O dla ekstraktu EA. Test z odczynnikiem Folin-Ciocalteu wykazał, że ekstrakt EA charakteryzował się najwyż-szą zawartością związków redukujących (54,24d±2,19 mg GAE/g sm). Najwyższą aktywność wobec rodnika DPPH uzyska-no dla ekstraktu z Equisetum arvense L. (5,97c±0,11 mg TE/1g sm), ekstrakt ten wykazał także najwyższą zdolność antyok-sydacyjną mierzoną metodą z kationorodnikiem ABTS (7,23b±0,06 mg TE/g sm). Analizy te zostały również potwierdzone w teście z użyciem metody FRAP, ekstrakt EA wykazywał o 40% wyższą aktywność w porównaniu z najniższym uzyskanym wynikiem (AM). Wykazano, że badane surowce zielarskie mogą być atrakcyjnym źródłem związków polifenolowych o właściwościach przeciwutleniających, które mogą znaleźć znacznie szersze niż dotychczas zastosowanie w technologii żywności.

In this study, DPPH radical scavenging activity, ABTS radical cation decolorization assay, FRAP reducing power, total phenolic content, total flavonoid content and phenolic compounds of leaves of plants, grown in Afyon/Turkey were investigated. These plants were poppy, daisy, dandelion, manger, chickweed, black chicory and white chicory. Phenolic acids including gallic acid, ferulic acid, chlorogenic acid, coumaric acid, ellagic acid, vanilic acid, caffeic acid, cinnamic acid, 4-hydroxybenzoic acid, 2,5-dihydroxybenzoic acid and flavonoids including catechin, apigenin, naringin, rutin and quercetin amounts in leaves were determined. Among plants leaves, leaves of daisy and manger had statistically highest DPPH value and leaves of poppy and dandelion had statistically highest ABTS value, while leaves of White chicory had statistically highest FRAP value, total phenolic content and total flavonoid content. Leaves of black chicory and white chicory had higher phenolic compounds compared to that of other plants. These results suggest the using of these leaves as sources of natural antioxidants.

Opis:
The article presents research on the exploring of extraction process of biologically active substances from the leaves of the Moringa oleifera tree using ethanol. Ethanolic extracts were obtained using three different techniques: maceration with shaking, ultrasound-assisted extraction and extraction in Soxhlet apparatus, in different time variants: 1, 2 and 4-hours. After solvent evaporating and drying, the yields of dry extracts obtained in particular processes were calculated. The antioxidant activity of extracts was analyzed spectrophotometrically using DPPH radical scavenging method, and total phenolic content (TPC) was determined by Folin-Ciocalteu method. By means of gas chromatography with mass selective detector (GC-MS), 11 biologically active compounds present in ethanolic extracts were identified, among which α-tocopherol had the greatest share. Based on the results, the influence of the extraction technique and time on the yield and antioxidant activity of M. oleifera leaf extracts were discussed.

W trakcie przeprowadzonych badań oceniono możliwości wykorzystania trawy jęczmienia (Hordeum vulgare L.) jako wzbogacającego składnika przekąskowych produktów funkcjonalnych. Zmieloną trawę z 4 odmian rośliny wykorzystano jako składnik recepturowy funkcjonalnych kulek zbożowych i oceniono pod kątem zawartości polifenoli i chlorofili oraz potencjału antyoksydacyjnego. Wykazano, że odmiana młodego jęczmienia charakteryzuje się różną zawartością związków polifenolowych ogółem oraz chlorofilu. Młody jęczmień wpływa na aktywność przeciwutleniającą funkcjonalnych produktów zbożowych. Odmiana jęczmienia decyduje o składzie i o właściwościach funkcjonalnych przekąskowych kulek zbożowych. Najkorzystniejsze efekty, stwierdzono w próbach z udziałem trawy jęczmiennej odmian Zenek i Iron.
The paper assesses the possibilities of using barley grass (Hordeum vulgare L.) as an enriching component of functional snack products - cereal balls with barley grass. Ground grass from 4 cultivars of the plant was used as a recipe component of cereal balls and assessed in terms of antioxidant potential and the content of polyphenols and chlorophylls. It was shown that young barley influences the antioxidant activity as well as the content of polyphenols in functional products. It was found that the barley variety from which the barley grass was produced influenced the functional properties of ce-real balls. In terms of the functional properties of cereal balls, the best results were obtained for barley grass of the Zenek and Iron varieties.

Introduction: Hop (Humulus lupulus L.) is a common plant in Europe, with many beneficial health effects. In addition to the use in brewing, hops are a valuable source of active substances used in conventional and folk medicine, such as humulones and lupulones, as well as antioxidants, including phenolic compounds. Objective: The aim of the study was to evaluate and compare the antioxidant activity of alcoholic extracts of fresh hop leaves collected in 2017 and 2018. Material and methods: The raw material consisting of fresh hop leaves was extracted using ultrasoundassisted extraction. Methyl, ethyl and isopropyl alcohol at three concentrations were used as extractants. The antioxidant activity of extracts was determined using DPPH and FRAP methods. Total phenolic content was evaluated using the Folin-Ciocalteu technique. Results: All the extracts showed antioxidant potential as well as the phenolic content. Regardless of the harvesting year and methods of evaluation, the highest antioxidant activity and the total polyphenol content were observed for extracts prepared in undiluted methanol, obtained during one hour lasting extraction. Conclusion: The results of the studies have suggested that hop leaves can be a potential source of healthpromoting antioxidants.

Comparison of in vitro antioxidative activities of crude methanolic extracts of three species of Passiflora from greenhouse using DPPH, ABTS and FRAP methods

Introduction:. It is well documented that many species from Passifloraceae family can provide edible and nutritious fruits while the leaves of cultivated plants are renewable and waste material. This biomass may be further used in various sectors, especially as a bioactive food additive and as source of innovative pharmaceuticals, cosmetics or feed additives. The biomaterials and green chemistry are new sectors bioeconomy according to the high-level horizontal strategies and bio-based industries in Europe. In recent years, attention has been paid to the biological activity and phytochemical profiles of extracts from different species of Passiflora. However, there is little comparative studies using the same procedures and techniques in the same laboratory conditions for study of plant material obtained from the similar greenhouse conditions. Objective: This study was focused on the examination of antioxidative activities of low concentrations of crude extracts from leaves of Passiflora incarnata L., Passiflora caerulea L., and Passiflora alata Curtis. Methods: The activity was evaluated using 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2’-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical scavenging and ferric reducing antioxidant power (FRAP) methods. Results of study were supported by estimation of chemical composition with secondary metabolites profiling in extracts which were carried out previously for the same extracts from three Passiflora species. One-way ANOVA analysis revealed significant differences in the antioxidant activity of various concentrations of the extracts using the DPPH and ABTS radical models, and FRAP method. Results: Measurement of antioxidant capacity (expressed as trolox equivalent, TE) showed that the most active was extract of P. caerulea > P. alata > P. incarnata. Phytochemical analysis for extracts of P. caerulea and P. incarnata showed greater similarities in metabolites content than P. alata. However, comparative statistical analysis of antioxidant activity showed that despite this phytochemical similarities, extract from P. alata leaves had higher activities than extract from leaves P. incarnata. Antioxidant effect of extract from P. alata can be explain by terpenoids presented in this extract. In this work, there have been discussed activities against Acanthamoeba castellanii strain, antibacterial and antifungal activities against selected clinical microorganisms (Enterococcus faecalis, Escherichia coli, Staphylococcus aureus, and Candida albicans, Microsporum gypseum), and anti-leukemic activities tested in human acute lymphoblastic leukemia cell lines for this extracts, which have been described in previous authors’ publications. Conclusion: Our current and previous studies showed that the same crude extracts from leaves of P. alata, P. caerulea, P. incarnata exerted not only antioxidant potential in vitro but also few interesting properties such as antibacterial, antifungal, amoebostatic, amoebicidal activities, which indicate the possibility of using these extracts in both a healthy diet and natural cosmetics. Leaves of this species may become an interesting source of biomaterials which can exert health-promoting effects.

In this work the studies on the antioxidative properties of extracts from various morphotic parts of the ground elder (leaves, rhizomes, seeds and flowers) were presented. Moreover, the effect of different extraction methods (ultrasonic assisted extractions, extraction in a Soxhlet apparatus, extraction at the boiling point of the solvent used), solvent and its amount, and extraction time on the antioxidative properties of the obtained extracts were tested. The studies showed that all parts of ground elder can show radical scavenging activity, and it depends mainly on the method of extraction and extraction time. But the most beneficial is ultrasonic assisted extraction which used lower amount of solvent (ethanol). In case of all parts of the ground elder (leaves, rhizomes, seeds and flowers) it allows to obtain very high values of the antioxidant capacity (above 90%) for very short extraction time amounted to 20–40 minutes.

Aerial parts of Mercurialis annua L. were used in the present study, and fatty acid content in lipid extract was determined using GC-FID. The major fatty acids identified were α–linolenic acid (20.3%), heptadecanoic acid (12.8%), palmitic acid (11.9%), pentadecanoic acid (11.7%), cis-10-pentadecenoic acid (11.2%), linoleic acid (7.7%), tridecanoic Acid (4.6%), stearic (4.4%), cis-11,14-eicosadienoic acid (3.8%), beside of minor fatty acids (palmitoleic acid, cis-13,16-docosadienoic acid, arachidic acid, behenic acid, cis-10-heptadecenoic acid and myristic acid). Antioxidant properties of the extract were determined via DPPH radical scavenging, β-carotene bleaching assay and NO radical scavenging assay. The extract produced significant antioxidant activity in-vitro. The data shown here may broaden our knowledge on composition and antioxidant activity of lipid constituents from Mercurialis annua L.

Essential oils from needles, fruits and bark was extracted from Pinus pinea L. (stone pine) grown wildly in Jordan. The chemical composition, antibacterial activity, antioxidant activity of essential oils was evaluated. The chemical compositions were identified using Gas-Chromatography-Mass spectrometry (GC-MS) and retention Indices (Van den Dool & Kratz). The results show that the essential oil obtained from needles composed mainly of Guaiol (12.7%), limonene (11.42%), and β-caryophyllene (7.61%), while fruit contains limonene (32.56%), and α-pinene (6.78%). The essential oils from barks were rich in β-caryophyllene (16.51%), limonene (14.83%), caryophyllene oxide (11.83%), and longifolene (7.51%). In vitro, antibacterial activity of the essential oil samples was evaluated using agar-well diffusion method against three different strains of bacteria (Gram¬-positive bacteria: Staphylococcus aureus and Gram-negative bacteria: Klebsiella pneumoniae and Escherichia coli). The results showed that essential oil showed appreciable antibacterial activity against S. aureus. The essential oil from fruit exhibited weak antibacterial activity against E. coli and K. pneumoniae. Essential oils of P. pinea showed appreciable antioxidant activity in-vitro.

In this study, the ability of hexane (HSE), chloroform (CSE), ethyl acetate (EASE) and methanolic (MSE) stems extracts from Phragmites australis or EDTA (as standard) to chelate iron using ferrozine method or zinc and copper using the murexide method is carried out in vitro. When the increased volumes of the HSE studied were taken from a stock solution of a fixed concentration 1 mg/ml at 25–175 μl for the iron and zinc chelating assay, 1–7 mg/ml for the copper chelating assay gave a significant (p≤ 0.01) activity. The obtained results showed that the HSE have the highest capacity to chelate ferrous ions below the EDTA (standard chelator) with absorbance arrive to the lesser extent 0.24±0.005, 0.04±0.013 which expresses 86% and 97% (compared to the control) of inhibition, respectively. For the murexide chelation, the results obtained also showed that the HSE and EDTA have a good (p≤ 0.01) chelating dose dependent effect towards zinc and copper ions with increased absorbance 0.45±0.02 and 0.42±0.02 with 54% and 56% of inhibition, respectively, for the zinc chelation and 0.66±0.03, 0.13±0.005 represent 44% and 88% for copper chelation. In contrast to the antioxidant capacity, the extract of hexane, ethyl acetate, chloroform and methanol from leaves, stems and roots of the Phragmites australis plant have a very low scavenger effect to the radical DPPH where the maximum inhibition is approximately 13.79%, obtained with the maximum volume. Finally, the HPLC analysis of effective extract (HSE) confirmed the presence of oxalic, citric, malic, succinic, fumaric, formic, acetic, propionic and butyric or iso butyric acid.
