The fundamental aim of this research was to study changes in the physical properties of spaghetti during cooking and after the first hour of storage. In addition, the research evaluated the cooking properties of pasta. For testing purposes, eight samples of spaghetti, produced using semolina and common wheat flour, were used. After cooking, the samples of spaghetti were stored for 2, 5, 10, 20, 30, 40, 50 and 60 min. After storage, the samples of cooked spaghetti were cut, and both the cutting force (hardness) and the cutting energy (firmness) of the samples were determined. It was found that, after storage, the cutting force and energy of cooked pasta decreased, in average terms, from 1.0 to 0.44 N and from 0.84 to 0.43 mJ, respectively. The statistical analysis showed a significant correlation between the storage time and the textural parameters of pasta. The hardness and firmness of pasta, which was al dente after cooking, were found to decrease about twice during storage, as a result of water migration. The hardness of pasta stabilised after 50 min of the storage of cooked spaghetti. Moreover, the obtained data revealed that the diameter increase index of spaghetti could indicate the quality of pasta.

The paper provides the results of the subsequent forest management plans conducted for Forest Districts lying on the grounds of the Notecka Primeval Forest. The objective of the studies was to define the trends of changes of indicators used in the assessment of the state of forests and forest management. The obtained results refer to the longer period of time (44 years) and account for important changes in the structure and functioning of the Notecka Primeval Forest.

Praca zawiera podstawowe założenia koncepcji systemu waloryzacji lasów dla potrzeb projektowania podziału gospodarczego i decyzji regulacyjnych w urządzaniu lasów wyżynnych i górskich. System będzie funkcjonował na bazie danych Systemu Informatycznego Lasów Państwowych (SILP). Podstawowymi produktami systemu będą: - wskaźnik struktury funkcji lasów dla dowolnej jednostki przestrzennej, - wizualizacja i zobrazowania kartograficzne struktury funkcji lasu, - projekt podziału gospodarczego w lasach, - wyniki analiz przestrzennych dla celów regulacyjnych. Koncepcja systemu jest obecnie wdrażana w Biurze Urządzania Lasu i Geodezji Leśnej w Brzegu. Wyniki wstępnych prac aplikacyjnych będą opublikowane w 2001 roku.
The study comprises the most important assumptions dealing with the concept of forest valorization for purposes of planning forest systems and regulation decisions in upland and mountain forest management. The concept will operate on the basis of database from the State Forest Informatics System (SFIS). The main products of the system will include: - Forest function structure index for any spatial unit, - Cartographic visualization and imaging of forest function structure, - Proposal of the forest system division, - Results of spatial analyses for regulation purposes. The concept of proposed system is currently being implemented at the Forest Management and Geodesy Office in Brzeg. Results of initial application works will be published in 2001.

The paper presents a description of the concept of a forest regulation method in the forest conversion system and a comparative analysis of its features as exemplified by the Siemianice Experimental Forest Range, Zielonka Experimental Forest Range and Łopuchówko Forest Range, Kąty working circle. In addition, the study also offers detailed data concerning the method of realisation of the mature pine stand reconstruction by a group clear cutting system performed on the experimental surface in the Podanin Forest District and the results obtained after 20 years.

The paper presents an outline of problems associated with dynamic ecosystem stability viewed from the angle of a forest which was completely excluded from productive utilisation. The following notions were distinguished: forest stability, stand stability and managed forest stability. The author's own interpretation of forest development was presented. The model portrays the development of the forest and the role of self−regulation as a negative and positive feedback. The relationship between the effect of self−regulating capabilities and the effect of ecosystem resistance to de−stabilising actions was taken into consideration.

The paper contains general results of the searches which have been done on different experimental plots situated in the Polish Lowland.
