W artykule skupiono się na poszukiwaniu perspektyw wzrostu polskiego eksportu produktami rolno-spożywczymi z gospodarkami należącymi do Unii Europejskiej i będącymi najważniejszymi rynkami eksportowymi dla Polski w zakresie dóbr rolno-spożywczych. Zidentyfikowano grupy tych towarów, które charakteryzują się dodatnimi i ujemnymi wskaźnikami ujawnionych przewag komparatywnych oraz wskaźnikami bilansu handlowego. W badaniu zastosowano metodę opartą o macierz mapowania produktów.
The article focuses on the search for growth prospects for Polish exports of agri-food products with economies belonging to the European Union and being the most important export markets for Poland in terms of agri-food products. Groups of these goods were identified that are characterized by positive and negative indicators of revealed comparative advantages and indicators of the trade balance. The study used a method based on the product mapping matrix.

Introduction. Osteoporosis, a disease associated with ovarian hormone deficiency following menopause, is the most common cause of age-related bone loss. Although an optimal intake of Ca is vital – both bone accretion during growth and maintenance in adult life – a great percentage of the population consumes far below the recommended amounts of this mineral. On the other hand, there are evidences that fructans enhance not only Ca absorption, but bone calcium as well. Objective. In the knowledge that estrogen deficiency and insufficient Ca in the diet during postmenopause cause serious problems with resultant osteoporosis, the aim of this study is to assess the effects of a diet enriched in fructan-containing sources alone, or in the “strawberry matrix”, on the structure of bone in OVX rats under calcium hypoalimentation. Materials and method. Experimental animals were female Wistar rats, sham-operated or ovariectomized. The treatment with Ca-restricted diets also contained one of the sources of fructan (Jerusalem artichoke, yacon, Beneo Orafti Synergy1), in the amount providing 8% of fructans. Femur architecture of rats was assessed by tomography and Ca content by the AAS method. Results. Ovariectomy led to a significant decrease in femoral Ca content, total mineral content and bone density of rats. This study shows that a diet containing inulin-type fructan (especially as a component of strawberry product) improved bone quality (i.e. increase in Ca content in femur, total density in middle part of bone, as well as decrease of endosteal circumference) in OVX rats under calcium hypoalimentation. Conclusions. These findings suggest that a fructan-enriched diet could be potentially useful for postmenopausal osteoporosis. It is important to determine an optimal dietary level of fructan with the long-term goal of developing a dietary strategy in osteoporosis prevention.

Introduction and objective. Acrylamide (AA) is a carcinogenic and genotoxic food contaminant occurring in carbohydrate-rich foods produced at high cooking temperatures. The aim of the study was to determine the importance of AA exposure with respect to traditional food and to assess the associated risks. Materials and method. 165 food samples were collected from local markets in Lesser Poland. The participants enrolled in the study were 500 residents: (males – 179, females – 321) who had purchased food from local markets. Exposure of the participants to AA was assessed by combining the analytical AA results with data on the individual consumption of traditional foods. Risk assessment of AA exposure from traditional foods was estimated and the margin of exposure (MOE) values were calculated. Results. The highest mean AA level was measured in pretzels (92 µg kg−1), followed by bagels (74.81 µg kg−1) and pork paté (59.56 µg kg−1). The average and 95th percentile values of AA exposure were 0.213 and 0.458 [µg kg−1 body weight (BW) day−1]. The calculated values of MOE for the average [798 and 2,019 for both benchmark dose lower confidence limit (BMDL) 0.17 and 0.43 mg kg−1 BW day−1] and 95th percentile AA exposure values (371 and 939 for both BMDL 0.17and 0.43 mg kg−1 BW day−1) suggest that there is a health concern with respect to adult residents. Conclusions. The results of the study confirm the general recommendation to the consumers, especially certain population groups, to eat a balanced healthy diet and to limit the amount of baked cereal products and fried products.

Introduction. Osteoporosis, the “quiet epidemic”, is one of the most serious threats to public health. It is known that estrogen plays a significant role in the regulation of bone turnover, and its loss at menopause causes osteoporosis. Added to this, insufficient calcium intake accelerates bone mass loss, increasing the risk of fractures. Objective. The study aimed to answer the question whether a fructan-enriched diet could be helpful in preventing from disturbances in bone turnover caused by calcium restriction combined with ovariectomy-induced estrogen deficiency. The differences related to the kind of fructan and “matrix effect” of fructan action (form of addition) were also evaluated. Materials and method. The study was conducted using sham-operated (control groups) or ovariectomized (OVX) rats fed a calcium restricted diet. The treatment diets contained one of three fructan sources – Jerusalem artichoke, yacon and Beneo Orafti Synergy1 – added alone or as an ingredient of strawberry sorbet, all in the amount providing 8% fructans. Analyses of biological material included: serum Ca, Mg and P concentrations, alkaline phosphatase activity (ALP), osteocalcin (OC) and C-telopeptide degradation products from type I collagen (CTX). Densitometric parameters of femora were also assayed. Results. Among markers of bone turnover, the ALP activity depended both on the kind of fructan and the form of addition. The highest value was shown in the OVX group fed a low-calcium diet, whereas administration of diet enriched with Jerusalem artichoke led to an almost 50% decrease in the value of this parameter. Dietary fructans also lowered the OC level. Feeding rats with diet containing sorbet enriched in yacon or Jerusalem artichoke resulted in a decrease of CTX, compared to the diet containing yacon alone or fructan formulation in both forms No significant differences were observed in densitometric parameters between treatment groups. Conclusions. The obtained findings suggest that fructan administration with a calcium-restricted diet might exert a positive effect on bone turnover parameters. Regarding the form of their addition, it is possible that other constituents of sorbets contributed to the fructan action. It remains open whether this impact would be significant over a longer period of time.

Introduction and objective. Mycotoxins are toxic metabolites produced by certain types of fungi, causing pathological changes in humans and animals. The aim of this study was to assess the degree of contamination of selected cereal grains, bran and cereal products intended for children, with mycotoxins using GCxGC-TOF-MS technique. The study involved mycotoxins belonging to the type A and B trichothecenes group, including T-2 toxin (T-2), HT-2 toxin (HT-2), scirpenol (SCI), 15-monoacetoxyscirpenol (15-MAS), diacetoxyscirpenol (DAS), triacetoxyscirpenol (TAS), fusarenon-X (FUS-X), nivalenol (NIV), deoxynivalenol (DON), 3-acetyl-DON (3-Ac-DON), 15-acetyl-DON (15-Ac-DON). The study also assessed the effect of conditions in which the samples were stored, including temperature (6 °C and 28 °C) and time (14 and 28 days), on fungal growth and mycotoxin production. Among all studied compounds, only DAS and HT-2 toxins were detected in tested samples, with the exception of products intended for children. Measured HT-2 mycotoxin content in tested samples was in the range 83.9 – 196.4 μg kg-1. Results and conclusions. Experiments with storage conditions showed a statistically significant increase in the HT-2 toxin level after 14 days of storage in all samples, irrespective of temperature. Prolonged storage (additional 14 days) did not cause significant changes in the HT-2 content. Further analyses showed a statistically significant effect of storage temperature on HT-2 toxin levels only in cereal products intended for children after both 14 and 28 days. Interestingly, lower temperature (6 °C) was more optimal then higher temperature (28 °C) for the HT-2 toxin production. No significant effect of storage temperature on HT-2 level was observed for cereal grains and bran.

Background. Carbohydrate-rich foods, such as breakfast products, snacks and biscuits because of its nutritional or sensory qualities are an inherent part of human diet. However, their production might contribute to the formation of acrylamide, 3-monochloropropane-1,2-diol (3-MCPD) and its esters and glycidyl esters. Objective. The aim of this work was to assess the levels of acrylamide, free and bound 3-MCPD and glycidyl esters in selected carbohydrate-rich, thermal processed products, present on the market in Poland in 2016-2017. Material and Methods. The survey involved 60 samples of snacks, breakfast products and biscuits. Acrylamide and free 3-MCPD was determined using modified QuEChERS approach. Analysis of 3-MCPD and glycidyl esters was based on the acid-catalysed method of sample preparation, derivatisation with PBA and GC-MS analysis. Results. Free 3-MCPD contents were within the values of 9.3-63.3 μg kg-1, with the highest mean content for muesli (33.3 μg kg-1), and the lowest for baby biscuits (11.7 μg kg-1). The levels of bound 3-MCPD were higher (from 9.3 μg kg-1 to 1500 μg kg-1). The highest average content was observed for sugar free biscuits (599 μg kg-1), whereas the lowest for breakfast cereals (50.2 μg kg-1). Glycidyl esters were detected only in four samples with the highest content at the level of 28.8 μg kg-1. The acrylamide levels varied from 195 to 1352 μg kg-1, with the highest content for organic biscuit samples (913 μg kg-1), and the lowest for muesli (348 μg kg-1). Conclusions. Regular consumption of popular snacks such as potato chips, crackers and biscuits may result in risk to human health as the effect of high content of acrylamide or 3-MCPD. Due to a high level of these contaminants detected in some type of breakfast products, and products targeted for children, its consumption should be restricted, especially in younger population groups.
Wprowadzenie. Produkty bogate w węglowodany, takie jak przekąski, produkty śniadaniowe i herbatniki ze względu na ich właściwości odżywcze lub sensoryczne, są nieodłączną częścią codziennej diety. Ze względu na fakt, że technologia ich produkcji wymaga zastosowania wysokich temperatur, co sprzyja tworzeniu niektórych zanieczyszczeń, mogą być one zanieczyszczone akrylamidem, 3-monochloropropano-1,2-diolem (3-MCPD) i jego estrami oraz estrami glicydolu. Cel badań. Celem pracy była ocena występowania akrylamidu, wolnego i związanego 3-MCPD oraz estrów glicydolu w wybranych próbkach produktów bogatych w węglowodany, obecnych na rynku detalicznym w Polsce w latach 2016- 2017. Materiał i metody. Badania obejmowały 60 próbek przekąsek, produktów śniadaniowych i herbatników. Zawartość akrylamidu i wolnego 3-MCPD oznaczono za pomocą zmodyfikowanej metody QuEChERS. Estry 3-MCPD i estry glicydolu analizowano z wykorzystaniem hydrolizy kwasowej, derywatyzacji z użyciem PBA i końcowej detekcji techniką GC-MS. Wyniki. Zawartość wolnego 3-MCPD mieściła się w granicach 9.3-63.3 μg kg-1, z najwyższą średnią zawartości w musli (33.3 μg kg-1), a najniższą w herbatnikach przeznaczonych dla dzieci (11.7 μg kg-1). Zawartość związanego 3-MCPD była znacznie wyższa (od 9.3 μg kg-1 do 1500 μg kg-1). Najwyższą średnią zawartość stwierdzono w herbatnikach bez dodatku cukru (599 μg kg-1), natomiast najniższą w płatkach śniadaniowych (50.2 μg kg-1). Estry glicydolu wykryto jedynie w czterech próbkach (najwyższa zawartość – 28.8 μg kg-1). Zawartość akrylamidu wahała się w zakresie 195-1352 μg kg-1, przy czym najwyższą ilość oznaczono w próbkach herbatników ekologicznych (913 μg kg-1), a najniższą w musli (348 μg kg-1). Wnioski. Regularne spożywanie popularnych przekąsek, takich jak chipsy ziemniaczane, krakersy i herbatniki, z uwagi na wysokie zawartości w nich akrylamidu i 3-MCPD może przyczynić się do narażenia zdrowia. Ze względu na znaczną ilość badanych zanieczyszczeń w niektórych popularnych produktach śniadaniowych oraz produktach przeznaczonych dla dzieci, ich spożywanie powinno być ograniczone, zwłaszcza w młodszych grupach wiekowych.

Introduction and objective. The goal of the study was a microbiological, qualitative and quantitative analysis of bioaerosol at the workplace of medical personnel (Health Emergency Departments (HEDs), ambulances), and comparative administration offices with an expected neutral occupational exposure to biological agents measured with individual Button Sampler. Materials and method. Personal sampling was performed with Button Sampler instrument loaded with gelatine filters in 10 HEDs, in 9 ambulances and in 9 offices to assess the occupational biological agents’ exposure in air. Sampling was conducted from March until April 2016. Samples were quantitatively assessed for viable and total number of bacteria and fungi. Routine procedures for microbiological diagnostics were implemented. Data were analysed using Kruskal–Wallis and Mann-Whitney statistical tests with α=0.05. P value less than 0.05 were considered significant. Results. At the workplaces assessed, the concentrations of viable microorganisms in HEDs were 1.3 × 102 – 4.2 × 103 CFU/m3 for bacteria, 3.4 × 100 – 8.1 × 101 CFU/m3 for fungi; in ambulances 1.3 × 102 – 1.4 × 103 CFU/m3 (bacteria), 6.7 × 100 – 6.5 × 102 CFU/m3 (fungi) and in offices 4.2 × 101 – 5.0 × 103 CFU/m3 (bacteria), 0 – 7.9 × 102 CFU/m3 (fungi). In outdoor air, the number of microorganisms reached the level: 1.0 × 102 – 5.9 × 102 CFU/m3 for bacteria and 1.5 × 102 – 8.2 × 102 CFU/m3 for fungi. The predominant isolated bacteria were Gram-positive cocci. The prevalent fungi species belonged to the genus Aspergillus and Penicillium. Conclusions. The quantitative assessment of examined indoor air was similar to control outdoor air, and were relatively low. The level of microbiological contamination did not exceed 5 × 103 CFU/m3 which is recommended as an admissible level in public spaces in Poland.

Celem pracy była ocena częstotliwości spożycia owoców i warzyw przez dzieci w wieku 1 - 3 lat na podstawie wyników badań ankietowych przeprowadzonych wśród matek tych dzieci. W kwestionariuszu zawarto pytania dotyczące częstotliwości spożycia owoców i warzyw, a także wiedzy na temat właściwego odżywienia małych dzieci pod względem podawania im tych produktów. Badania ankietowe przeprowadzono wśród 300 matek chłopców i dziewczynek w wieku 1 - 3 lat w kilku żłobkach na terenie Zakopanego. Uzyskane wyniki poddano analizie statystycznej testem χ² (Pearsona). Jak wskazały respondentki, aż 93 % matek biorących udział w badaniu interesowało się zasadami zdrowego żywienia dotyczącymi spożycia owoców i warzyw przez dzieci. Spośród dzieci uczęszczających do żłobków na terenie Zakopanego (zgodnie z deklaracją ankietowanych) 85 % chętnie spożywało owoce i warzywa, a do ulubionych należały: jabłka, banany, truskawki oraz pomidory, marchew i ogórki. Według niespełna 30 % respondentek dzieci spożywały owoce i warzywa 2 - 3 razy dziennie, natomiast ok. 20 % ankietowanych zadeklarowało, że ich dzieci konsumują tego typu produkty tylko raz dziennie. Zdecydowana większość matek podawała owoce zamiast słodyczy. Zaobserwowano, że wraz ze wzrostem poziomu wykształcenia tendencja ta miała charakter rosnący. Mamy zachęcały dzieci do jedzenia owoców i warzyw najczęściej przez wspólną konsumpcję oraz zabawę. Jak deklarowały ankietowane, ponad połowa dzieci spożywała głównie owoce i warzywa w stanie surowym, rzadziej gotowane i smażone. Ponadto kobiety serwowały dzieciom różnego typu soki owocowe i warzywne.
The objective of the research study was to assess the consumption frequency of fruit and vegetables by children aged 1-3 on the basis of the results of questionnaire survey conducted amongst the mothers of those children. The questionnaire comprised the questions on the consumption frequency of fruit and vegetables as well as on the knowledge of how to properly feed small children in terms of providing them with fruit and vegetables. The questionnaire survey was conducted amongst 300 mothers of the boys and girls aged 1 - 3 in several crèches in Zakopane. The results obtained were statistically analysed using χ2 Pearson test. It was found that 93 % of the responding mothers were interested in the principles of healthy eating in terms of fruit and vegetable consumption by children. Of all the children attending crèches in Zakopane (according to the statements made by the surveyed) 85 % eagerly ate fruit and vegetables; apples, bananas, raspberries, and tomatoes, carrots, and cucumbers were their favourite fruits. Almost 30 % of the respondents declared that their children ate fruit and vegetables 2 - 3 times a day, whereas 20 % of the mothers surveyed declared that their children ate that type of products only once a day. The vast majority of the mothers provided their kids with fruit instead of sweets. It was found that this tendency increased with the increasing level of mothers’ education. The mothers encouraged their children to eat fruits and vegetables through games or eating in the company of other kids. As declared by the mothers, over half of the children consumed mainly raw fruit and vegetables and rarely the cooked and/or fried fruits and vegetables. Also, the women surveyed provided their children with different types of fruit and vegetable juices.

In our subsequent studies of birch tree saps we focused on assessing their antioxidant capacity. For research we chose four groups of silver birch trees (Betula pendula Roth.), consisting of five individuals. Antioxidant capacity was examined using spectrophotometric technique. The highest antioxidant capacity, tested by the Folin-Ciocalteau method and expressed as a total phenolics content was 6.59 mg GAE/100 ml of tree sap, and in turn the lowest one 0.88 mg GAE/100 ml. The highest antioxidant capacity determined ABTS method and expressed as radical scavenging activity (RSA) was 30.9% and lowest 5.38% The average values of antioxidant capacity both expressed as a phenolic compounds content and as radical scavenging activity for tree saps collected from four particular locations did not differ significantly. Based on the obtained results of tree sap analyses, it can be claimed that compared to other food products, e.g. fruit and vegetable juices, birch saps are not a rich source of phenolic compounds and when compared e.g. to tee infusions, they have low antioxidant capacity. Although it can be increased by the introduction of functional additives, such as herbal extracts or concentrated fruit juices.

The aim of the study was to evaluate the impact of different levels of agricultural technology on the content of ash and minerals in grain of 8 spring barley cultivars. A two-factor field experiment was conducted in 2010-2012, at the Institute of Cultivation and Production of Malopolska Plant Growing Company, Polanowice near Krakow. The first factor was composed of two levels of agricultural technology: A1 (10/20/50 NPK kg ha-1) and A2 (additional N fertilisation in an amount of 20 kg ha-1 and an application of the fungicides Amistar 250 EC+ Tilt Turbo used in doses 0.6+0.6 L ha-1 at the shooting phase and the earing phase, respectively, as well as the growth regulator Cerone 280 SL at a dose of 0.75 L ha-1 applied in the late phase of shooting). The second factor consisted of 8 cultivars of spring barley: Blask, Stratus, Atico, KWS Olof, Nagradowicki, Rubinek, Skarb, and Suweren. Determinations of the ash content were performed by the gravimetric method according to PN - ISO 2171.1994; determinations of Na, K, Ca, Mg, Fe, Zn, Mn were conducted by flame atomic absorption spectrometry (F-AAS), and Cu (PN-EN 14084:2004) was measured by flameless atomic absorption spectrometry (ET-AAS) after mineralisation in a microwave sample preparation system (MarsXpress). The average ash content was significantly differentiated by the year of cultivation, being the highest in 2012. The average identified content of minerals, except iron, depended significantly on a cultivar and, except calcium and zinc, on a year of cultivation. Average concentrations of the majority of minerals (except Na, K and Fe) depended significantly on the applied cultivation technologies, although higher levels of the elements, except Ca, were assessed in barley cultivated traditionally (technological variant A1).

Fish meat is a valuable dietary component owing its exceptionally high nutritional value, as it contains high quality protein, fat (including n-3 acids) and a variety of vitamins and minerals. The aim of this study was to determine the content of ash and minerals (macro- and microelements) in three freshwater fish species, and quantitative changes in smoked and marinated products. The research material originated from three species, i.e. common carp (Cyprinus carpio), rainbow trout (Oncorhynchus mykkis) and northern pike (Esox lucius). The following parameters were determined in samples of raw as well as processed fish meat: ash (using the gravimetric method, according to PN-ISO 936:2000) and the minerals Na, K, Ca, Mg, P, Fe, Zn, Mn, Cu (using inductively coupled plasma optical emission spectrometry ICP-OES). The statistical analysis of the results did not show significant differences in the ash content in meat of the three fish species. The ash content in processed fish meat differed significantly from that in raw fish, thus indicating changes in concentrations of the minerals. The differences depended on the applied processing technology. As for the mineral content, the examined fish species achieved high nutritional quality, with the highest content of magnesium, iron and zinc in common carp, potassium and phosphorus in rainbow trout and calcium in pike. The levels of the minerals in processed fish meat differed significantly from those in the raw material, especially in carp products (higher amounts of almost all the determined elements). Smoking as well as marinating resulted in a considerable increase in the sodium contet, and the highest values were obtained for marinated rainbow trout. Monitoring the content of macro- and microelements in fish meat is important for the consumer.

The modified surface layers of Mg enriched with Al and Si were fabricated by thermochemical treatment. The substrate material in contact with an Al + 20 wt.% Si powder mixture was heated to 445ºC for 40 or 60 min. The microstructure of the layers was examined by OM and SEM. The chemical composition of the layer and the distribution of elements were determined by energy dispersive X-ray spectroscopy (EDS). The experimental results show that the thickness of the layer is dependent on the heating time. A much thicker layer (1 mm) was obtained when the heating time was 60 min than when it was 40 min (600 μm). Both layers had a non-homogeneous structure. In the area closest to the Mg substrate, a thin zone of a solid solution of Al in Mg was detected. It was followed by a eutectic with Mg17Al12 and a solid solution of Al in Mg. The next zone was a eutectic with agglomerates of Mg2Si phase particles; this three-phase structure was the thickest. Finally, the area closest to the surface was characterized by dendrites of the Mg17Al12 phase. The microhardness of the modified layer increased to 121-236 HV as compared with 33-35 HV reported for the Mg substrate.

Warzywa kapustowate ze względu na właściwości antykancerogenne zawartych w nich glukozynolanów stały się przedmiotem wielu badań. W pracy przedstawiono informacje na temat występowania, budowy i właściwości prozdrowotnych glukozynolanów oraz ich roli w żywieniu i prewencji chorób nowotworowych. Scharakteryzowano zawartości tych bioaktywnych związków w różnych warzywach kapustowatych oraz ich pobieranie z dietą przeciętnego Polaka. Zaprezentowano strukturę i charakterystykę chemiczną oraz metabolizm glukozynolanów i ich pochodnych. Ponadto przybliżono działania prozdrowotne tych wtórnych metabolitów roślin z rodziny krzyżowych, zwracając szczególną uwagę na ich właściwości przeciwutleniające i przeciwnowotworowe. Glukozynolany zawarte w roślinach jadalnych, dostarczone do organizmu człowieka zarówno jako składnik diety, jak i wyizolowane związki chemiczne mogą zmniejszać ryzyko rozwoju nowotworów. Spożywanie ich może być więc jednym ze sposobów profilaktyki nowotworowej, a dobór odpowiedniej strategii profilaktycznej powinien zależeć od typu nowotworu, rodzaju organu i uwarunkowań genetycznych.
The aim of the paper was to display the occurance, structure and pro-health properties of glucosinolates and their derivatives as well as their role in cancer prevention. The focus was made on the content of the biologically active compounds in cruciferous vegetables and their intake from Brassica in Poland. Subsequently the structure and chemical characteristics of glucosinolates were presented. Most consumed Brassica species in human nutrition are cabbage, red cabbage, savoy cabbage, cauliflower, broccoli, brussels sprouts, radish and rapeseed. The most important biologically active substances present in these plants are glucosinolates. Their concentration and relative proportions depend on the environmental conditions of cultivation and storage of plants which are soil fertility, temperature, hydration level, and the presence of pathogens and insects. There are more than 300 different compounds belonging to the glucosinolate known. They are characterized by similarities in structure, which is based on a β-D-tioglucose group, sulfonated oxime group and the side chain derived from one of the seven amino acid. The authors paid special attention to the antioxidant and anticancer properties of these compounds. These properties result from the presence of glucosinolates and associated enzyme – myrosinase. When the contact of these compounds occurs, it comes to the formation of isothiocyanates, indoles and other derivatives with high biological activity, which are essential in the prevention of cancer. Current research on the impact of purified or partially purified derivatives of glucosinolates show the impact of these substances on the development of cancer, and giving hope for the creation of effective chemopreventive measures. Given these data the sufficient consumption of brassica vegetables is important. In Poland, by far the most consumed is cabbage, although for many years the trend is downward. The share of other Brassica vegetables in the diet of Poles are much smaller. The total consumption of cruciferous plants decreases, which, due to their functional properties is not a good fenomenon. The substantions present in vegatables and other edible plants can reduce the risk of cancer. They exert its function as both taken with the diet as well as an isolated chemical compounds. Therefore, its consumption may be one of the ways of preventing cancer. The selection of appropriate treatment strategies should depend on tumor type, body type and genetics.
