Objectives: To determine the knowledge, attitude, and practices of Lebanese married women toward food safety and to assess the correlation of these factors with socio-demographic characteristics. Methods: The evaluation forms of the “Five Keys to Safer Food Manual” of the WHO (World Health Organization) were administered to 516 Lebanese married women living in Beirut and Mount Lebanon between December 2017 and May 2018. The questionnaire is divided into three sections: food safety knowledge (11 questions), attitude (10 questions), and practices (10 questions). A score was calculated for each section with one point for every correct answer. Findings: The mean of knowledge score was 8.23 ± 1.59 over 11, the attitude score was 7.43 ± 1.82 over 10, and the behavior score was 6.69 ± 2.32 over 10. The relationship between the knowledge score and other scores was weak (with behavior score r = 0.222 and attitude score r = 0.260; p-value <0.005). Knowledge and attitude scores were higher than practices score. Food safety knowledge, attitude and practices did not differ with age nor the number of kids. Years of marriage and employment only influenced practices. Frequency of cooking influenced knowledge and behavior. The main food safety problems were found in separating raw from cooked food, cooking food to the right temperature and keeping food at safe temperature whether hot-holding or thawing. Conclusions: Knowledge of food safety measures might not reflect good food safety practices. Therefore, there is a need to highlight the importance of safe practices and prevention of foodborne illnesses.

The article describes a primary school in Kenya, where the school’s educational space was analysed in two respects: a) safety and comfort; b) knowledge and skills development, as part of ethnographic research. The research results indicate that the school needs a change in physical space, teaching aids, and greater pedagogical awareness among the teachers. The new education system introduced in Kenya requires much more funding to ensure proper learning conditions and continuing education for teachers. If this demand is met, the quality of the education process may improve.

Providing the population with safe and good quality food is one of the most important objectives of every country. The outbreak and spread of foodborne diseases is independent of a country’s location or development level, and may occur everywhere. As most children spend their days at educational institutions, we shall focus on their food safety. Not only for their present state of health, but also because childhood nutrition and diet will basically determine their health in their adulthood and thus, influence the future economic and social performance of their society. This paper introduces background information about school catering in Hungary, based upon the results of an overall food safety survey. The results of our research showed that the food safety level of the different kitchen units is mostly determined by the level of food processing activities. The technical and technological level of the school kitchens did not significantly influence the food safety level of the kitchens. According to the results of our survey, improving the knowledge and the attitudes of employees in school kitchens is more important than technical and technological conditions.
W pracy przedstawiono informacje na temat żywienia w placówkach szkolnych na Węgrzech, oparte na wynikach ogólnej ankiety dotyczącej bezpieczeństwa żywienia. Zapewnienie ludności bezpiecznej żywności o dobrej jakości jest najwyższym priorytetem każdego kraju. Ponieważ większość dzieci spędza swoje dzieciństwo w placówkach dydaktycznych należy skupić się na bezpieczeństwie serwowanej w nich żywności. Nie tylko ze względu na obecny stan zdrowia dzieci, ale również dlatego że odżywianie w znacznym stopniu determinuje zdrowie młodych ludzi, co wpływa na przyszłe osiągnięcia ekonomiczne i socjalne danej społeczności. Wyniki badania wykazały, że poziom bezpieczeństwa żywienia w różnych stołówkach zależaqł przede wszystkim od poziomu przetworzenia żywności. Poziom techniczny i technologiczny kuchni szkolnych nie wpłynął w znaczący sposób na poziom bezpieczeństwa żywności w nich przygotowywanej. Zgodnie z wynikami ankiety, zwiększanie wiedzy i świadomości pracowników szkolnych kuchni było ważniejsze niż warunki techniczne i technologiczne.

A systematic approach to occupational safety and health (OSH) management and concepts of knowledge management (KM) have developed independently since the 1990s. Most KM models assume a division of knowledge into explicit and tacit. The role of tacit knowledge is stressed as necessary for higher performance in an enterprise. This article reviews literature on KM applications in OSH. Next, 10 sections of an OSH management system (OSH MS) are identified, in which creating and transferring tacit knowledge contributes significantly to prevention of occupational injuries and diseases. The roles of tacit knowledge in OSH MS are contrasted with those of explicit knowledge, but a lack of a model that would describe this process holistically is pointed out. Finally, examples of methods and tools supporting the use of KM in OSH MS are presented and topics of future research aimed at enhancing KM applications in OSH MS are proposed.

Several empirical studies of the social construction of risk have been conducted within the risk study paradigm but little attention has been paid so far to the flip side of this process, i.e., exclusion of risk from social consciousness by deliberately or involuntarily rendering it invisible, disregarding or marginalising it. This article, based on the concept of risk proposed by Ulrich Beck, Mary Douglas and Aaron Wildavsky and the findings of the sociology of scientific ignorance, introduces the “risk-concealment category.” This category applies to the mechanisms and processes underlying the social definition and construction of risk. It then presents the main functional areas of the mechanisms of risk-concealment in social practice and identifies the basic types of mechanisms which can be found at various stages of social risk definition and which lead to the social construction of the sense of security. The status of this text is projective and the possible paths of further exploration of the subject are outlined. The purpose of this article is to suggest a new research area focusing on the various aspects of risk-concealment and the underlying mechanisms, rules and action strategies. The mechanisms of risk assessment, political-economical risk definition and risk discourse are discussed.

The paper proposes the use of semantic modeling to describe the organizational knowledge resources. Key concepts related to semantic representation of knowledge in the form of ontology were also presented. The study indicated opportunities for creating new business models based on the organizational knowledge resources formalized in ontologies (ontology providers, organizations that certify knowledge available in the form of ontologies and clients using paid knowledge resources in ontology in order to automate certain areas of their activity. The investigations were presented in light of safety mechanisms whose implementation is necessary when using a semantic approach in describing the organizational knowledge resources and creating new business models based on this approach, including mechanisms for protecting information and knowledge from unauthorized access, certificates that describe the level of trust and the design of a secure user interface. The focus was also on the fact that the formalization of organizational knowledge resources and its representation in an electronic form (ontologies) poses a major challenge for knowledge engineers and leads to the necessity to cooperate in research on the borderline of management and IT sciences.
