The purpose of this study is to investigate the role of culinary tourism experience between gender groups in Iranian culinary education tours. The research sample was randomly selected from 50 foreign tourists who participated in Persian Food Torus Institute’s culinary tours during four months. Kim et al. (2012) model of Memorable Tourism Experiences (MTEs) is used to design the research questionnaire and data. The results show that there is a significant difference in women’s desire for enjoyment, sense of freedom, power and refreshment rather than men. But in terms of tourism experiencenovelty, local culture, meaningfulness, and knowledge gained for both men and women, it was no difference.

This paper is devoted to the cultural heritage of the Podlasie region and in particular, the intangible heritage of culinary art. Changes in the definition of “intangible heritage” and the definitions related to culinary tourism are also discussed. The area of research has been defined as the Hajnówka county. On the basis of authors research examples of traditional dishes and products and the possibility of their use in order to increase the value of economically under-invested areas are considered. In addition, the paper presents cases of similar activities undertaken in Italy and Great Britain. To conclude, a comprehensive approach of combining tangible and intangible cultural heritage is proposed.

The earliest culinary recipes found in England were written in Anglo-Norman and they date back to the end of the 13th century (cf. Hieatt & Jones 1986). e rst English instructions were mostly translated from these. It is the 14th and 15th centuries when the text type was thriving. Scully (1995: 5) calls the period “a hey-day for medieval cookery,” due to the greater availability of the culinary texts comparing to the earlier times. us, a discussion of the evolution of the English recipe should start from the 14th century. e majority of the available studies deal with the particular features of the culinary instruction, as for instance Culy (1996) who discusses the use of null objects. e main focus of the present paper is to provide a brief comparison of some selected features of the culinary recipes at different stages of their development. e discussion will proceed from the earliest available English culinary material, i.e., the medieval recipe, through the early Modern English texts to the contemporary cooking instructions. e issues which will be taken into consideration are: (i) the general structure of the recipe, especially the components found in the earliest texts, i.e., the heading and the procedure; (ii) the function of the recipe in the particular periods; and (iii) the intended audience for whom the recipes were written down.

The topic of reflection undertaken herein are public events having an evident culinary character. In the first part of her essay, the author proposes a typology of culinary events, with special focus on those events which appear in the public space the most often. Their number and considerable complexity are associated with the target participant group, the current patterns of consumption, gastronomic styles, and finally with functions which have been ascribed to those events. In the second part, she discusses selected culinary events organised in the Silesian voivodeship which have characteristic dishes (e.g. wodzionka, moczka, kołocz) associated with the local cuisine as their Leitmotif. These events are usually in the form of open-air festivals with contests for the best-prepared dish as their regular feature.

The aim of the undertaken studies was to determine the effect of the herbicides used in the experiment on important features of the consumption values of three varieties of edible potato. Test results come from a field experiment conducted in 2007–2010. The experiment was established as two-factor in the split-plot system in three repetitions. Two factors were tested in the experiment: factor I - potato varieties: Satina, Tajfun, Cekin; factor II – five methods of weed control. Darkening of the pulp of cooked tubers after 10 min, 2 and 24 hours shape the ways of weed control of the plantation and the genotype of the grown varieties. The use of herbicides in 2–5 variants has significantly increased the darkening of the pulp. The Tajfun variation darkened to the lowest degree, and Cekin to the largest degree.

The linguistic situation in the Middle English period was complex, with three languages (Latin, French and English) playing the crucial role depending on such factors as register, medium, context and language user. Latin was the written language of high status, French was the official language both written and spoken, and English was the language of low status used in informal, spoken contexts (see for instance Crespo 2000). Additionally, one should not forget that, apart from the three languages being present in various areas of language, it was in the Middle English period that a great number of Scandinavian loanwords, which had been borrowed after the Scandinavian invasions, surfaced in the written English sources (e.g., Miller 2012; Moskowich 1993). The aim of the proposed paper is to show how the multilingual situation of medieval England has been reflected in the culinary recipes of the 14th and 15th centuries. The recipe has already been analyzed by a number of scholars, for instance Görlach (1992, 2004) or Carroll (1999). They all agree that one of the distinctive features of the text type is the use of verbs (or verbal structures) – an issue already investigated by the present author (see Bator 2013, 2014). In the present paper our attention will be put on the following verbal triplets: ME nym ~ take ~ recipe (= ‘to take’), ME mess ~ serve ~ (a)dress (= ‘to serve’), ME boyle ~ seethe ~ parboile (= ‘to cook’). The analysis is to reveal the differences which arose among the synonyms, such as the semantic shades of meaning of the verbs, or their dialectal distribution. The study is also to reveal whether any of the languages mentioned above dominated the semantic area. The data used for the present research come from a corpus of over 1,500 recipes from the 14th- and 15th-century culinary collections.

Considering that in the last few years culinary matters have become a fashionable topic, the author is making a preliminary attempt at assessing many myths and authoritative opinions related to it. With respect to this aim, she has reviewed utilitarian literature, to which culinary handbooks certainly belong ("Concerning the studies of comestibles in culture"). In this context, she has singled out cookery books pertaining to only one region, Upper Silesia. This region has a complicated history, being an ethnic borderland, where after the 2nd World War, the local population of Silesians acquired new neighbours: repatriates from the Eastern Borderlands annexed by the Soviet Union, settlers from central and southern Poland, as well as former emigrants coming back from the West ("The treasures of culinary heritage’ in cookery books from Upper Silesia"). The author discusses several Silesian cookery books which focus only on the specificity of traditional Silesian cuisine, the Silesians’ curious conservatism and attachment to their regional tastes and culinary customs, their preference for some products and dislike of other ones. From the well-provided shelf of Silesian cookery books, she has singled out two recently published, unusual culinary handbooks by the Rev. Father Prof. Andrzej Hanich (Opolszczyzna w wielu smakach. Skarby dziedzictwa kulinarnego. 2200 wypróbowanych i polecanych przepisów na przysmaki kuchni domowej, Opole 2012; Smaki polskie i opolskie. Skarby dziedzictwa kulinarnego. 2500 wypróbowanych i polecanych przepisów na przysmaki kuchni domowej, Opole 2014), which have become a culinary bestseller in Upper Silesia. The author perceives these books as an interesting and unusual example of a monothematic "collective lecture" pertaining to the multi-cultural character of Opole Silesia, the noticeable foreign influences and the globalisation of culinaries. In her opinion, these books constitute a very rich set of materials pertaining to the present-day culture of consumption in Poland, with a discernible emphasis on Opole Silesia.

Over the last 25 years, a rapid development in gastronomic services in Łódź and other large Polish cities has been observed, as a result of a growing interest in good cooking both on the part of inhabitants and visitors (culinary tourism). The article is an attempt to describe the potential of gastronomic resources in Łódź as a possible basis for creating a new tourism product for the city. The paper presents a historical outline of Łódź gastronomy, the specificity of the local cuisine and its delicacies, the major culinary events, and the structure and location of gastronomic establishments at the beginning of the 21st c., as well as other elements which may be used to create an attractive offer for tourists.

Common millet (Panicum miliaceum L.) and foxtail millet, also known as Italian millet (Setaria italica P. Beauv.), are among crop grasses that in the Antiquity and the early Byzantine period were grown on a relatively large scale. Yet although the sources indicate that they were among popular crops, they were neither as widespread not as highly regarded by consumers as wheat and barley. Views pertinent to the dietetic doctrine with regard to those to plants evolved before Galen’s lifetime and were very consistent, considering that they did not change over the period from the 2nd to the 7th century. This doctrine pointed to the less beneficial qualities of both these crop plants in comparison to the most highly values grains used in bread-making, especially to wheat. Also, common and foxtail millet were constantly present in the cuisine of the period in question, both being used as food in the rural areas rather than in cities. They were usually put in boiled dishes, because millet bread was unpopular owing to its brittleness and disagreeable taste. Both common and foxtail millet were included among the fármaka used in the period between the 2nd and 7th century, although they certainly were not as favoured in medicine as wheat and barley. Common millet was more often mentioned in the healing role. Both grains were used in medical procedures as components of healing diets, especially foods helpful in alleviating gastric disorders. Flour ground from common millet was applied as powder, whereas the grain itself found use as a component of warming cataplasms and poultices which usually had a drying quality. In addition, millet to was considered to be an efficacious antidote against poisons.

A model system was used to investigate the effect of cooking on the level of selected chlorinated carbohydrate residues in muscle fat of fattened ducks and in decoction fat.
W układzie modelowym badano wpływ gotowania na poziom pozostałości wybranych chlorowanych węglowodorów w tłuszczu mięśni tuczonych kaczek i w tłuszczu wywaru. Materiałem do badań były próbki mięśni udowych i piersiowych tuczonych kaczek. Chlorowane węglowodory (γ-HCH, DDE, DDD i DDT) oznaczano metodą chromatografii gazowej. W tłuszczu mięsa surowego stwierdzono średnio 0,04 ppm γ-HCH i 0,38 ppm DDT (udo) oraz 0,12 ppm γ-HCH i 0,78 ppm DDT (pierś). Po gotowaniu od gorącej wody w tłuszczu mięśnia udowego obserwowano średnio 0,03 ppm γ-HCH i 0,20 ppm DDT, w tłuszczu mięśnia piersiowego 0,08 ppm γ-HCH i 0,08 ppm DDT. Podczas gotowania od zimnej wody wyniki wynosiły dla uda 0,03 ppm γ-HCH i 0,15 ppm DDT, dla piersi 0,09 ppm γ-HCH i 0,29 ppm DDT. Podczas gotowania od gorącej wody w tłuszczu wywaru z uda poziom γ-HCH wynosił - średnio 0,04 ppm, DDT 0,38 ppm, dla wywaru z piersi 0,21 ppm γ-HCH i 0,93 ppm DDT. Podczas gotowania od zimnej wody w tłuszczu wywaru z uda obserowano 0,05 ppm γ-HCH i 0,40 ppm DDT, dla wywaru z piersi 0,48 ppm γ-HCH i 1,54 ppm DDT. W tłuszczu wywaru wyraźnie wzrastała zawartość DDD w porównaniu z tłuszczem mięsa surowego.

The objective of the study was the estimation of quality of spaghetti-form commercial gluten-free pastas with diversified raw material composition. The experimental material consisted of 9 pastas, including 7 gluten-free pastas and 2 wheat pastas (from semolina and from flour from common wheat grain) which constituted the control sample. The packaging was evaluated for correct labelling, and the content of crumble was determined. The content of basic chemical components was assessed, such as water, total protein, mineral components (ash). Culinary and sensory evaluation of the pastas was carried out. It was found that a majority of the gluten-free pastas, except for the buckwheat pasta, contained significantly less total protein, which translated into greater loss of dry matter during their cooking. In terms of sensory features, pastas made of rice flour and from a mixture of maize and rice flour were highly rated, while the buckwheat pasta was definitely rated the lowest.

Although noun phrase modification and its evolution in early English writings have been the subject of many scholarly discussions, none of them has compared the use of noun phrases in the same text-type (= recipes) directed at different audiences. Thus, the present paper investigates the use of noun phrase modifiers in Middle English culinary and medical recipes. The study explores possible conditioning factors which may have influenced the use of pre- and post-modifiers in the two types of instructions written in the 14th and 15th centuries. Among others, the following questions will be considered: (i) which modification patterns prevailed in the examined material? (ii) was there any link between the type of the instruction and the choice of modifiers? (iii) did the modification patterns change over time? The corpus for the analysis consists of almost 2,300 recipes, which encompasses culinary and medical samples of approximately equal length.

Spośród państw regionu bałkańskiego Serbię wyróżnia ogromny areał ziem uprawnych (około 5 milionów hektarów), z czego ponad 80 procent jest wykorzystywanych przez rolnictwo. Produkty żywnościowe stanowią jeden z najważniejszych komponentów serbskiego eksportu. Od 1 marca 2012 roku, kiedy Serbia uzyskała status państwa kandydującego do Unii Europejskiej, szansą przetrwania dla rozbudowanego sektora rolno-spożywczego stało się przygotowanie go do skutecznej rywalizacji z państwami unijnymi o bardzo podobnej ofercie towarowej. Okazję na zwiększenie chłonności rynku wewnętrznego stwarza wzrost świadomości kulinarnej społeczeństwa serbskiego, które mimo kryzysu ekonomicznego coraz częściej poszukuje nowych, nieznanych dotąd smaków lub nowych form dla smaków znanych w serbskiej kuchni. Prawdziwym wyzwaniem dla serbskiego rolnictwa staje się promocja turystyki kulinarnej, stwarzająca możliwość skutecznego konkurowania z innymi krajami bałkańskimi, przedstawiającymi bardziej zróżnicowaną ofertę atrakcji turystycznych. Promocja serbskich produktów regionalnych odbywa się poprzez imprezy należące do kanonu turystyki kulinarnej – festiwale, konkursy kulinarne, turystyczne szlaki kulinarne, a także rekonstrukcje kuchni średniowiecznej. Turystyka kulinarna w realiach Serbii otwiera możliwości dla zrównoważonego rozwoju obszarów peryferyjnych, a jednocześnie pozwala na zachowanie starych zwyczajów i tradycji.
Its huge area of cultivated lands (about 5 million hectares) makes Serbia stand out against other states of the Balkan region. Food products are still one of the most important components of Serbian export. From 1 March 2012, when Serbia was granted the candidate status to the European Union, making ready to effectively competite with the Member States of the EU, which offer very similar products, became a chance of survival for Serbia’s agricultural and –food industry sector . A chance to increase the absorbency of the internal market creates an increasing culinary awareness in the Serbian society; despite the economic crisis, the Serbians are looking for new, previously unknown tastes or new taglines for tastes already known in Serbian cuisine. The real challenge for Serbian agriculture is the promotion of culinary tourism, which involves exhibiting the ability to compete with other Balkan countries by depicting a more diverse range of attractions.Promotion of the regional products is done by events typical for culinary tourism – festivals, culinary competitions, culinary tourist routes, as well as reconstructions of medieval cuisine. In the realities of Serbia, culinary tourism opens the opportunities for sustainable development of the periphery areas and, at the same time, makes it possible to retain old customs and traditions.

The article recounts actions oriented at experiencing and reliving culinary traditions, undertaken by the Local Action Group of the “Mroga” Society for the Local Community Development. The Society operates in five communes: Koluszki, Brzeziny, Dmosin, Jeżów and Rogów, located in the north-eastern part of the current Łódź voivodeship, east of the city of Łódź. In the past, this area, which bordered regions whose characteristic features indicated their distinct regional identities (the Łęczyca Land and the Łowicz Principality from the north, the Rawa Land from the east, the Opoczno and Piotrków Lands from the south, and Łódź from the west), was devoid of definite features typical to folk culture. Currently it is still an area which, due to the absence of a consistent and enduring cultural foundation to refer to, cannot be described in the categories of an ethnographic or geographic region. By following the tourist trail laid by the Society, known as the “Appetite Trail”, I reconstruct the vision of what the community resident in the five communes covered by the activity of the “Mroga” Local Action Group defines as the region’s culinary tradition, and I deconstruct the Group’s actions that reduce the tradition to the level of a tourist attraction.
