Introduction: Moulds are the one of the known biological factors that have a negative impact on human health. Moulds are commonly present in residential and work environments. Materials plentiful in organic compounds, such as building materials or paints, are a splendid substrate for the development of moulds. The first documented mention of a study describing the harmful effects caused by moulds in buildings emerged in the early nineteenth century. In Copenhagen and then in Padua, moulds of the genus Penicillium, Cladosporium and Mucor were found in buildings. Objective: To present the current state of the allergic properties and other negative health effects caused by moulds isolated from buildings. Brief description of the state of knowledge: The literature and own research clearly shows that moulds and their secondary metabolites can evoke toxic effects on human and animal health, and cause symptoms similar to allergic diseases. These allergens have been noted in spores as well as other fungal fragments; however, most allergens are located in germinating spores, in the hyphal tips and in mycelia. Fungal allergy can express in different ways: asthma, rhinitis, conjunctivitis, urticaria and atopic dermatitis. Fungal allergy antigen is bound to IgE-dependent reactions but also to reactions independent of IgE. Conclusions: Moulds are a significant but difficult to detect etiologic agent of different allergic diseases. Prevention of this diseases is important for patients with suspected connection between common allergic symptoms and affinity with moulds.

Sera of 39 farmers, 119 foresters and 32 blood donors were investigated for the presence of antibodies against B. burgdorferi, A. phagocytophilum, B. microti and Bartonella spp. Semi-quantitative indirect immunofluorescence test was used to measure titers of anti-A. phagocytophilum, B. microti and Bartonella spp. IgG. ELISA test was used to measure titers of anti-B. burgdorferi IgM and IgG. B. burgdorferi was the most frequently observed among all the examined pathogens. 27.7% of farmers, 23.1% of forestry workers and 37.5% of control group were infected with Bartonella spp. Anti-A. phagocytophilum and anti-B. microti reactions were observed rarely. Sera of persons with single infection dominated in farmers and forestry workers. Co-infection with 2 pathogens was observed more frequently in forestry workers and farmers than in the control group. Co-infections with 3-4 pathogens were observed only in forestry workers. Among the observed co-infections, the most frequent were: B. burgdorferi with Bartonella spp. and B. burgdorferi with A. phagocytophilum. Moreover, in forestry workers, triple coinfections with B. burgdorferi, Bartonella spp. and A. phagocytophilum and one quadruple coinfection were observed. Persons with occupational risk of tick bites, especially forestry workers, more often have anti-B. burgdorferi antibodies and are more often co-infected with various tick-borne pathogens than the persons from the control group. It seems that more often coinfections in persons with occupational risk of tick bites are a consequence of the higher incidence of infection with B. burgdorferi, as anti-B. microti, A. phagocytophilum and Bartonella spp. antibodies are not more commonly prevalent in persons with occupational risk of tick bites than in healthy volunteers.

The aim of this study was to investigate the influence of Citrosept preparation and Scutellaria baicalensis root extract, administered per os to growing turkey hens in 3 different dosages, on the content of selected mineral elements in blood plasma of slaughter turkey hens. An attempt was also made to specify the most effective dosage of the applied preparations with the highest efficiency regarding increased levels of examined macro- and microelements in the birds’ blood. The research experiment was conducted on 315 turkey hens randomly divided into seven groups, each consisting of 45 turkey hens. Group C constituted the control group without experimental additions of the above-mentioned preparations. In turkey hens in groups II–IV, Citrosept preparation was instilled to water in the following dosages: Group II – 0.011 ml/kg of bm; Group III – 0.021 ml/kg of bm; Group IV – 0.042 ml/kg bm. For birds which belonged to groups V–VII, a preparation of Scutellaria baicalensis root extract was instilled to water in the following dosages: Group V – 0.009 ml/kg of bm; Group VI – 0.018 ml/kg of bm, Group VII – 0.036 ml/kg bm. In the examined plant extracts and blood plasma of the birds the levels of Na, K, Ca, Mg, Cu, Zn, and Fe were identified. The use of examined extracts influenced changes in the levels of all tested elements in slaughter turkey hens’ blood plasma. An upward tendency was recorded in the level of calcium and magnesium, and a downward tendency of sodium, potassium, copper, zinc, and iron in relation to the results achieved in the control group.

Introduction. The current state-of the art points to a positive impact of copper (Cu) supplements on the general health status in poultry. Copper induces beneficial changes in the haematological and biochemical blood parameters. It also displays immunostimulating properties and helps maintain a proper microbiological balance in the digestive tract. Objective. The objective of this study was to investigate the impact of Cu at the dose of 50 mg/kg BW, administered in organic and inorganic form, on the haematological and biochemical blood parameters and level of Cu bioaccumulation in the liver and pectoral muscle. Materials and method. The study was carried out on 45 BUT-9 turkeys which had been were reared for 16 weeks. They were divided into 3 experimental groups: I – the control group; II – fed with CuSO4 at the dose of 50 mg Cu·dm-3 H2O; III – received a Cu chelate with lysine at the same dose. Results. The administration of Cu at the dose exceeding the nutritional recommendations did not induce beneficial changes in the examined birds. This indicates that it is not necessary to administer Cu doses higher than the recommended levels. The extent of Cu accumulation in the pectoral muscle increased by 40% compared to the control group, whereas in the liver it was higher by 30–35% than in the birds without Cu administration. The level of Cu in tissues does not pose a risk to consumers. Conclusions. The supplementation of Cu at the dose of 50 mg has a negative impact on the level of the analyzed parameters. The results of the presented study indicate that the administered Cu dose exceeds birds’ demand for this element.

“Legal highs” known also as “smarts”, “legal drugs” or “boosters” contain in their composition psychoactive substances the production, sale and possession of which are not prohibited in legislation. They are offered for sale under the cover of collectors’ items, a salt bath, aroma sticks, or plant fertilizer. Marketing was the reason for such high sales of these “highs” in Poland. The phenomenon became of concern when information became available about the first cases of tragic health consequences. Raising the awareness of youth about the level of imminent danger and serious consequences associated with the use of legal highs may be a very effective way to develop appropriate attitudes of young people, and in the light of their own health can help them take proper life decisions. “Legal highs” are substances of natural or synthetic origin having psychostimulating properties. These compounds may differ in chemical structure, potency, half-life, metabolism and severity of side effects. Their pharmacological activity is associated with changes in the neurotransmitter system. After higher doses of “legal highs” psychotic symptoms may occur: visual and auditory hallucinations resembling schizophrenic endogenous psychoses. An alarming fact is the underestimation of the adverse effect of these substances on human health. Any actions aimed at improving this situation are extremely important; therefore, in one of the key projects undertaken at the Institute of Rural Health in Lublin, in cooperation with other scientific institutes, concerned the analysis of a selected series of “legal highs”. This research was meant top serve as a source of information for science and medicine, and for popularizing knowledge about legal highs.

Tekstura serów jest powiązana z wieloma czynnikami, wpływają na nią między innymi struktura, skład chemiczny oraz przeprowadzone procesy technologiczne podczas jego wytwarzania. Celem pracy było wykazanie wpływu zawartości tłuszczu, białka oraz wody na wartości pomiarowe podstawowych wyróżników profilowej analizy tekstury (TPA), takich jak: twardość I i II, kohezyjność, adhezyjność, elastyczność, żujność. Badany materiał poddawano dwukrotnemu ściskaniu do 50% pierwotnej wysokości przy prędkościach głowicy 0,83 mm·s⁻¹. Analizie poddano sześcienne próbki sera twarogowego kwasowego niedojrzewającego o długości boku 15 mm przy trzech poziomach zawartości tłuszczu. Uzyskane wyniki badań pozwoliły na opracowanie zależności matematycznych oraz uproszczonego modelu uwzględniającego wpływ zawartości wody, tłuszczu, białka na poszczególne wyróżniki profilowej analizy tekstury (TPA), charakteryzujących się dla twardości I i II wysokimi współczynnikami determinacji (w zakresie 0,7), a dla pozostałych niższymi (w zakresie 0,33÷0,5).
Texture is very important for the perception of consumers in terms of quality cheese. It is possible to determine the texture parameters by using the instrumental methods, which makes it easier to use them as a tool for quality control. In order to fully interpret the texture of the cheese to be aware of its effect on the structure, chemical composition and carried out the processes and its manufacture. The aim of the study was to demonstrate the impact of fat, protein and water on the basic parameters of measurement texture profile analysis (TPA) values such as: hardness I and II, cohesiveness, adhesiveness, springiness and chewiness. The test material was subjected to twice the compression up to 50% of the original amount at speeds of head: 0.83 mm·s⁻¹. Cubic samples were analyzed no matured acid curd cheese of side length 15 mm at 3 levels of fat content (0.5; 3.6; 8.9%). The obtained results led to the development of mathematical relations and the simplified model takes into account the effect of water content, fat, protein differentiators for each texture profile analysis (TPA), and the hardness I and II is characterized by high coefficients of determination (in the range of 0.7) for the others lower (in the range of 0.33÷0.5). The strong correlation of water content, protein and fat makes it difficult to obtain equations with high coefficients fit. The following conclusions and summary were based on studies and analysis: There was found a decrease in hardness I and II and the chewiness and cohesiveness with the increase of fat and decrease of protein and water content. There was observed the increase of the absolute value of the adhesiveness and the springiness with an increase of fat content and increase of protein and water content. For the acid curd cheese showed no significant effect of pH variation on the form of empirical equations. It was achieved positive correlation with the increase of fat and protein content, and negative for growth of the water content in the quark cheese for TPA determinants such as I and II hardness and chewiness. It was obtained a positive correlation with an increase of protein content, and negative for growth of the water content in the case of adhesiveness. In addition, there was no correlation values derived from changes in fat content.
