Culinary tourism was characterized in the paper and the perspectives for its development were analyzed, as well as the possible uses of traditional and regional cuisine of the Podhale (mountain region of Małopolska) as a tourist product. Moreover, the cuisine of the Podhale Region was presented with its specialities, as well as the potential use of Polish regional cuisine in tourism to make it a tourist attraction, which may be of major importance for individual region or locality. It causes that a certain dish becomes identified with specific place, which attracts tourists to this region. Traditional dishes reflect also the customs prevalent in the given area; therefore a tourist may acquire information about the culture of the places he visits.

W artykule skupiono się na poszukiwaniu perspektyw wzrostu polskiego eksportu produktami rolno-spożywczymi z gospodarkami należącymi do Unii Europejskiej i będącymi najważniejszymi rynkami eksportowymi dla Polski w zakresie dóbr rolno-spożywczych. Zidentyfikowano grupy tych towarów, które charakteryzują się dodatnimi i ujemnymi wskaźnikami ujawnionych przewag komparatywnych oraz wskaźnikami bilansu handlowego. W badaniu zastosowano metodę opartą o macierz mapowania produktów.
The article focuses on the search for growth prospects for Polish exports of agri-food products with economies belonging to the European Union and being the most important export markets for Poland in terms of agri-food products. Groups of these goods were identified that are characterized by positive and negative indicators of revealed comparative advantages and indicators of the trade balance. The study used a method based on the product mapping matrix.

Introduction and objective. Mycotoxins are toxic metabolites produced by certain types of fungi, causing pathological changes in humans and animals. The aim of this study was to assess the degree of contamination of selected cereal grains, bran and cereal products intended for children, with mycotoxins using GCxGC-TOF-MS technique. The study involved mycotoxins belonging to the type A and B trichothecenes group, including T-2 toxin (T-2), HT-2 toxin (HT-2), scirpenol (SCI), 15-monoacetoxyscirpenol (15-MAS), diacetoxyscirpenol (DAS), triacetoxyscirpenol (TAS), fusarenon-X (FUS-X), nivalenol (NIV), deoxynivalenol (DON), 3-acetyl-DON (3-Ac-DON), 15-acetyl-DON (15-Ac-DON). The study also assessed the effect of conditions in which the samples were stored, including temperature (6 °C and 28 °C) and time (14 and 28 days), on fungal growth and mycotoxin production. Among all studied compounds, only DAS and HT-2 toxins were detected in tested samples, with the exception of products intended for children. Measured HT-2 mycotoxin content in tested samples was in the range 83.9 – 196.4 μg kg-1. Results and conclusions. Experiments with storage conditions showed a statistically significant increase in the HT-2 toxin level after 14 days of storage in all samples, irrespective of temperature. Prolonged storage (additional 14 days) did not cause significant changes in the HT-2 content. Further analyses showed a statistically significant effect of storage temperature on HT-2 toxin levels only in cereal products intended for children after both 14 and 28 days. Interestingly, lower temperature (6 °C) was more optimal then higher temperature (28 °C) for the HT-2 toxin production. No significant effect of storage temperature on HT-2 level was observed for cereal grains and bran.

A forecast of the negative impact exerted on the environment by selected trace elements in "Bełchatów" Power Plant has been prepared on the basis of the results of investigations into these elements’ distribution carried out as part of earlier research on coal from “Bełchatów” Field and the data on updated analyses of the content of these elements in 55 brown coal samples from test boreholes. Work in "Bełchatów" Power Plant, which is supplied with coal from "Szczerców" Field, will be accompanied by trace elements transfer. On the basis of the conducted investigations it has been found that the biosphere is most threatened by mercury emissions. As shown by the presented results of analyses and calculations, the emissions of mercury in "Bełchatów" Power Plant are low. Mercury is accumulated chiefly in gypsum produced in the FGD plant. The content of mercury in slag and ash is low.

The aim of the study was to evaluate the impact of different levels of agricultural technology on the content of ash and minerals in grain of 8 spring barley cultivars. A two-factor field experiment was conducted in 2010-2012, at the Institute of Cultivation and Production of Malopolska Plant Growing Company, Polanowice near Krakow. The first factor was composed of two levels of agricultural technology: A1 (10/20/50 NPK kg ha-1) and A2 (additional N fertilisation in an amount of 20 kg ha-1 and an application of the fungicides Amistar 250 EC+ Tilt Turbo used in doses 0.6+0.6 L ha-1 at the shooting phase and the earing phase, respectively, as well as the growth regulator Cerone 280 SL at a dose of 0.75 L ha-1 applied in the late phase of shooting). The second factor consisted of 8 cultivars of spring barley: Blask, Stratus, Atico, KWS Olof, Nagradowicki, Rubinek, Skarb, and Suweren. Determinations of the ash content were performed by the gravimetric method according to PN - ISO 2171.1994; determinations of Na, K, Ca, Mg, Fe, Zn, Mn were conducted by flame atomic absorption spectrometry (F-AAS), and Cu (PN-EN 14084:2004) was measured by flameless atomic absorption spectrometry (ET-AAS) after mineralisation in a microwave sample preparation system (MarsXpress). The average ash content was significantly differentiated by the year of cultivation, being the highest in 2012. The average identified content of minerals, except iron, depended significantly on a cultivar and, except calcium and zinc, on a year of cultivation. Average concentrations of the majority of minerals (except Na, K and Fe) depended significantly on the applied cultivation technologies, although higher levels of the elements, except Ca, were assessed in barley cultivated traditionally (technological variant A1).

In our subsequent studies of birch tree saps we focused on assessing their antioxidant capacity. For research we chose four groups of silver birch trees (Betula pendula Roth.), consisting of five individuals. Antioxidant capacity was examined using spectrophotometric technique. The highest antioxidant capacity, tested by the Folin-Ciocalteau method and expressed as a total phenolics content was 6.59 mg GAE/100 ml of tree sap, and in turn the lowest one 0.88 mg GAE/100 ml. The highest antioxidant capacity determined ABTS method and expressed as radical scavenging activity (RSA) was 30.9% and lowest 5.38% The average values of antioxidant capacity both expressed as a phenolic compounds content and as radical scavenging activity for tree saps collected from four particular locations did not differ significantly. Based on the obtained results of tree sap analyses, it can be claimed that compared to other food products, e.g. fruit and vegetable juices, birch saps are not a rich source of phenolic compounds and when compared e.g. to tee infusions, they have low antioxidant capacity. Although it can be increased by the introduction of functional additives, such as herbal extracts or concentrated fruit juices.

In this study, the content of minerals in silver birch (Betula pendula Roth.) tree saps was tested using atomic absorption spectrometry to evaluate the intraspecies variability. The mean values of zinc (2.79 - 4.49 mg dm-3), sodium (0.66 - 2.76 mg dm-3) and copper (0.02 - 0.19 mg dm-3) for tree saps collected from particular locations did not differ significantly. The mean calcium (77.83 mg dm-3) and magnesium (13.38 mg dm-3) content in the sap from trees growing in a farmyard was significantly higher than in sap from other sites, where calcium ranged between 25.85 and 41.04 mg dm-3 and magnesium varied from 5.98 to 8.00 mg dm-3. Based on the results of tree sap analyses, it can be claimed that mineral content detected in birch saps is low when compared to the dietary standards (RDA, AI), although saps from individual trees can have a copper and zinc content, owing to which birch sap can be considered as a potentially valuable source of these two minerals. However, the prospective health-promoting benefits related to the high content of zinc and copper are not explicit. According to our study, this mineral content is highly variable, both between particular trees in a single location and between distant locations. For example, in the case of copper, one liter of sap collected from neighbouring trees can contain from zero to several dozen percent of the Recommended Dietary Allowances, making it impossible to identity specific nutritional benefits.

Fish meat is a valuable dietary component owing its exceptionally high nutritional value, as it contains high quality protein, fat (including n-3 acids) and a variety of vitamins and minerals. The aim of this study was to determine the content of ash and minerals (macro- and microelements) in three freshwater fish species, and quantitative changes in smoked and marinated products. The research material originated from three species, i.e. common carp (Cyprinus carpio), rainbow trout (Oncorhynchus mykkis) and northern pike (Esox lucius). The following parameters were determined in samples of raw as well as processed fish meat: ash (using the gravimetric method, according to PN-ISO 936:2000) and the minerals Na, K, Ca, Mg, P, Fe, Zn, Mn, Cu (using inductively coupled plasma optical emission spectrometry ICP-OES). The statistical analysis of the results did not show significant differences in the ash content in meat of the three fish species. The ash content in processed fish meat differed significantly from that in raw fish, thus indicating changes in concentrations of the minerals. The differences depended on the applied processing technology. As for the mineral content, the examined fish species achieved high nutritional quality, with the highest content of magnesium, iron and zinc in common carp, potassium and phosphorus in rainbow trout and calcium in pike. The levels of the minerals in processed fish meat differed significantly from those in the raw material, especially in carp products (higher amounts of almost all the determined elements). Smoking as well as marinating resulted in a considerable increase in the sodium contet, and the highest values were obtained for marinated rainbow trout. Monitoring the content of macro- and microelements in fish meat is important for the consumer.

Introduction. Osteoporosis, the “quiet epidemic”, is one of the most serious threats to public health. It is known that estrogen plays a significant role in the regulation of bone turnover, and its loss at menopause causes osteoporosis. Added to this, insufficient calcium intake accelerates bone mass loss, increasing the risk of fractures. Objective. The study aimed to answer the question whether a fructan-enriched diet could be helpful in preventing from disturbances in bone turnover caused by calcium restriction combined with ovariectomy-induced estrogen deficiency. The differences related to the kind of fructan and “matrix effect” of fructan action (form of addition) were also evaluated. Materials and method. The study was conducted using sham-operated (control groups) or ovariectomized (OVX) rats fed a calcium restricted diet. The treatment diets contained one of three fructan sources – Jerusalem artichoke, yacon and Beneo Orafti Synergy1 – added alone or as an ingredient of strawberry sorbet, all in the amount providing 8% fructans. Analyses of biological material included: serum Ca, Mg and P concentrations, alkaline phosphatase activity (ALP), osteocalcin (OC) and C-telopeptide degradation products from type I collagen (CTX). Densitometric parameters of femora were also assayed. Results. Among markers of bone turnover, the ALP activity depended both on the kind of fructan and the form of addition. The highest value was shown in the OVX group fed a low-calcium diet, whereas administration of diet enriched with Jerusalem artichoke led to an almost 50% decrease in the value of this parameter. Dietary fructans also lowered the OC level. Feeding rats with diet containing sorbet enriched in yacon or Jerusalem artichoke resulted in a decrease of CTX, compared to the diet containing yacon alone or fructan formulation in both forms No significant differences were observed in densitometric parameters between treatment groups. Conclusions. The obtained findings suggest that fructan administration with a calcium-restricted diet might exert a positive effect on bone turnover parameters. Regarding the form of their addition, it is possible that other constituents of sorbets contributed to the fructan action. It remains open whether this impact would be significant over a longer period of time.

Tree saps were once commonly used in the countries of Northern, Central and Eastern Europe. Although once almost forgotten, their popularity has been growing recently as part of an interest in organic food and traditional medicine. Tree saps, tapped mainly from birch and maple trees, are drunk both fresh and fermented or are used as raw material for the production of food products, e.g. syrups. The aim of this study was to determine the content of inorganic anions in tree saps, as this parameter is often associated with toxicity of plant products. We measured the content of chlorides, nitrates and sulphates in the saps of six tree species with high pressure ion chromatography with the conductometric detection method. We detected the presence of chlorides, nitrates and sulphates in the studied tree saps. The highest concentration of nitrates was in the saps tapped from Norway maple (65.578 mg dm-3) and boxelder (108.313 mg dm-3). On the other hand, the highest concentration of sulphates was detected in the white willow tree saps (112.512 and 35.389 mg dm-3), while the one of chlorides, in the hornbeam tree sap (47.257 mg dm-3) and the Norway maple tree sap (41.143 mg dm-3). The detected content of chlorides, sulphates and nitrates in the tree saps under study does not reach toxic levels. Therefore we conclude that tree saps do not pose any health threat to consumers regarding their content of inorganic ions. Additionally, we observed a high intra- and interspecies variability in the concentration of inorganic anions in saps. This observation should be taken into account while designing any quality monitoring protocol regarding tree saps.

The comparative research was conducted. It concerned fuel properties, flue gas parameters, contents of dust (fly ash) and gaseous substances polluting the air in the flue gases emitted from a domestic CH boiler burning bituminous coal, pellets from coniferous wood, cereal straw, miscanthus, and sunflower husks, coniferous tree bark, and oats and barley grain. The emission factors for dust and gaseous air pollutants were established as they are helpful to assess the contribution of such boilers in the atmospheric air pollution. When assessing the researched boiler, it was found out that despite the development in design and construction, flue gases contained fly ash with a significant EC content, which affected the air quality.
Celem pracy badawczej była ocena ilości i składu substancji zanieczyszczających emitowanych przez kotły małej mocy, wyposażone w samoczynny podajnik paliwa do komory spalania. Przeprowadzono badania porównawcze właściwości paliw, parametrów spalin, zawartości pyłu (popiołu lotnego) i gazowych substancji zanieczyszczających powietrze w emitowanych spalinach z kotła CO małej mocy spalającego węgiel kamienny (ekogroszek), pelety z drewna drzew iglastych, ze słomy zbożowej, z miskanta, z łusek słonecznika, korę drzew iglastych, ziarno owsa i ziarno jęczmienia. Ustalono wskaźniki emisji pyłu i gazowych substancji zanieczyszczających powietrze, pomocnych w ocenie udziału tego rodzaju kotłów w zanieczyszczeniu środowiska. Oceniając badany kocioł stwierdzono, że mimo osiągniętego postępu w konstrukcji, spaliny zawierają popiół lotny, ze znaczną zawartością węgla EC (black carbon), w ilości wpływającej na jakość powietrza.

Introduction. Osteoporosis, a disease associated with ovarian hormone deficiency following menopause, is the most common cause of age-related bone loss. Although an optimal intake of Ca is vital – both bone accretion during growth and maintenance in adult life – a great percentage of the population consumes far below the recommended amounts of this mineral. On the other hand, there are evidences that fructans enhance not only Ca absorption, but bone calcium as well. Objective. In the knowledge that estrogen deficiency and insufficient Ca in the diet during postmenopause cause serious problems with resultant osteoporosis, the aim of this study is to assess the effects of a diet enriched in fructan-containing sources alone, or in the “strawberry matrix”, on the structure of bone in OVX rats under calcium hypoalimentation. Materials and method. Experimental animals were female Wistar rats, sham-operated or ovariectomized. The treatment with Ca-restricted diets also contained one of the sources of fructan (Jerusalem artichoke, yacon, Beneo Orafti Synergy1), in the amount providing 8% of fructans. Femur architecture of rats was assessed by tomography and Ca content by the AAS method. Results. Ovariectomy led to a significant decrease in femoral Ca content, total mineral content and bone density of rats. This study shows that a diet containing inulin-type fructan (especially as a component of strawberry product) improved bone quality (i.e. increase in Ca content in femur, total density in middle part of bone, as well as decrease of endosteal circumference) in OVX rats under calcium hypoalimentation. Conclusions. These findings suggest that a fructan-enriched diet could be potentially useful for postmenopausal osteoporosis. It is important to determine an optimal dietary level of fructan with the long-term goal of developing a dietary strategy in osteoporosis prevention.
