Because of side effects and increasing resistance to antibiotics, considerable attention hasbeen given to extract sand biologically active compounds isolated from medicinal plants. In the present study, phytochemical screening and antibacterial activities of different concentrations of various extracts of Onosma chlorotricum were evaluated and compared with those of vancomycin and amikacin. Total phenolic and flavonoid contents and the antibacterial activity of methanol, n-hexane, and aqueous extracts (5 mg/ml to 0.156 mg/ml final concentration) of O. chlorotricum against Staphylococcus aureus, Pseudomonas aeruginosa, and Escherichia coli were evaluated using disc diffusion and microdilution methods. Total phenolic and flavonoid contents were determined according to the Folin-Ciocalteu and aluminum chloride colorimetric assays, respectively. The results showed that the total phenolic and flavonoid contents of these extracts ranged from 56.10 ± 0.13 to 74.12 ± 0.05 mg GAE/g dry extract and from 19.3 ± 0.6 to 23.20 ± 0.41 mg QE/g dry extract, respectively. The methanol extract with the highest phenolic and flavonoid content showed the highest antibacterial activity against all the tested bacterial strains, with the highest inhibition zone of 21 ± 0.7 mm and the lowest MIC and MBC values of 78.12 μg/ml for S. aureus. The antibacterial effects and the total phenolic content of O. chlorotricum were remarkable. The results suggest that the effects of methanol extract on wound healing could be tested in an animal model.

Elderflower is a valuable herbal raw material widely used in food, pharmaceutical and cosmetic industry. It is a rich source of bioactive compounds, such as polyphenols (e.g. chlorogenic acid, rutin, quercetin), that are responsible for their health benefits. Elderberry flowers demonstrate mainly diaphoretic, antipyretic, diuretic, antibacterial and anti-inflammatory properties and have been used in folk medicine as remedy for various ailments and diseases. The aim of the study was to evaluate selected bioactive properties of fresh and dried elderberry flowers, depending on the origin. Flowers were collected from three locations of wild elderberry shrubs and from three cultivars (Sampo, Haschberg, Samyl) growing on plantation. Methanolic extracts of fresh and dried flowers were analyzed in terms of the antioxidant activity using ABTS radical method and the total phenolic content by Folin-Ciocalteau reagent method. The results were statistically analyzed by Anova in Statistica 12.5 program. The obtained results indicate that drying process causes a deterioration of bioactive properties of elder flowers. Fresh flowers demonstrated significantly higher antioxidant activity as well as higher total phenolic content than dried flowers. Furthermore, flowers of wild elderberry differed from flowers of cultivated elderberry. In most cases, flowers of cultivars showed higher values of analyzed parameters compared to the wild elder flowers. The highest average antioxidant activity and the highest average content of total polyphenols was found in flowers of Sampo cultivar.

The aim of this study was to evaluate the effect of phenolic substances commonly found in plants selected strains of fungi from the point of view of the cognitive and the possible practical application in the food industry. The research material were strains of Aspergillus, which tested the effect of some phenolic acids.

The study analyzed colour intensity, the total phenolic and flavonoid contents, as well as antioxidant and antibacterial activities of honeys from Serbia. All the tested honeys contained considerable levels of phenolics. The highest phenolic content was obtained in forest honey - 1389.71 mg gallic acid equivalents/kg. High levels of phenolics and flavonoids were also determined in honeydew, meadow and oregano honeys. The radical scavenging activity measured by DPPH method in linden and forest honey was 0.45 and 2.75 mmol Trolox equivalents/kg, respectively. The ferric reducing potential was the greatest in forest honey - 6.04 mmol Fe2+/kg. Darker honeys had a greater phenolic content and antioxidant activity. The antimicrobial activity of honeys against six bacterial strains isolated from human material were studied using a microwell dilution assay. The minimal inhibitory concentration of honeys ranged from 6.25% w/w (for oregano honey against Enterococcus faecalis and honeydew honey against Streptococcus pneumoniae) to >50% w/w (meadow honey against Staphylococcus aureus). The minimal bactericidal concentration ranged from 12.5% w/w (honeydew and bee pollen enriched honey against E. faecalis) to >50% w/w. Higher values of antimicrobial activities were found in honeydew, oregano, and forest honeys, while meadow honey showed the lowest antimicrobial activity. Analyzed honeys exhibited a strong antioxidant and broad-spectrum antibacterial activity against multidrug-resistant pathogenic bacteria. Phenolic compounds, especially in dark amber forest and honeydew honey, as well as in amber oregano honey, may contribute to their efficacy in therapeutic administration.

The study of the kinetics of extraction of phenolic compounds and flavonoids from crushed roots of Carlina acaulis using 40% and 70% of water-ethanol mixture by infusion method is described in the article. The total value of the mass transfer coefficient and the value of the transfer coefficient through the cell wall, in the intercellular space and the volume of the extractant were determined. Particles of Carlina acaulis roots of different sizes (0.2, 0.3, 0.5 mm) were studied; different concentrations of ethyl alcohol were used - 40% and 70%; the ratio of raw materials: extractant was 1:10. The analytical dependence of the mass transfer coefficient k and the leaching coefficient A on the solid particle size d and the concentration of the extractant was obtained, which allows to predict the extraction process and to design equipment for the technological process in production. Kinetic equations of the process of extraction of phenolic compounds and flavonoids from Carlina acaulis roots by infusion method are derived. The obtained equations allow to determine the concentrations of phenolic compounds and flavonoids in the extracts at a given point in time with a particle size of the solid phase from 1 to 10 mm, as well as to determine the optimal diameter of the solid phase particles for maximum extraction of the target substance.

This study is the evaluation of the coagulation efficiency of the aluminum sulfate on the removal of catechol and pyrogallol. The study has focused on the impact of inorganic components of hardness Algerian waters. Jar-test trials were conducted on the two phenolic compounds dissolved in distilled water only, which was later enriched with minerals. Several reaction parameters varied, including the effect of pH and the influence of the salt content, and this approach yielded a better understanding of interaction between phenolic compounds and calcium/magnesium salts. The results indicate that the process efficiency depends on the number and position of OH in molecules. The main mechanisms would be either a physical adsorption, an exchange of ligand, or complexation on the floc surface of aluminum hydroxide. Moreover, the addition of inorganic salts appears to improve removal efficiency of tested phenolic compounds and have an effect on the optimal pH range for coagulation.

Ten grape-vine cultivars (5 white and 5 red skinned) were cultivated in south-east region of Poland. Samples were frozen and for analyzes extracts in 80 % MeOH were prepared. Contains of total phenols, phenylpropanoids, flavonols and anthocyanins were measured, using UV/VIS method. Additionally, radical scavenging activity with DPPH was determind. In red skinned fruits content of phenolic compounds was higher than in white skinned ones. Cultivars showed great diversity: the highest level of phenolics was observed in ‘Heridan’ and the lowest in ‘Bianca’ cultivars. Radical scavenging activity (RSA) was also very high in red grapes, especially in skin (over 90 % of free radical was neutralized). Antioxidant activity of white fruit cultivars was ranged between 9 and 50 % (‘Bianca’ and skin of ‘Jutrzenka’ cultivars, respectively). In analyzed tissue correlation (r = 0.70) between total phenolics and RSA was found.
Dziesięć wybranych odmian winogron (5 o białej i 5 o czerwonej skórce) uprawiano w południowo- wschodnim regionie Polski. Z zamrożonych próbek owoców przygotowywano ekstrakty w 80 % metanolu, w których oznaczano sumę związków fenolowych, fenylopropanoidy, flawonole i antocyjany stosując metodę UV/VIS. Ponadto oznaczono zdolnooeć neutralizowania wolnego rodnika za pomocą metody z DPPH. W owocach o czerwonej skórce zawartooeć składników fenolowych była większa niż w owocach o skórce białej. Stwierdzono znaczne zróżnicowanie odmianowe: najwyższy poziom fenoli obserwowano w odmianie Heridan, najniższy w odmianie Bianca. Aktywnooeć antyrodnikowa (RSA) była również bardzo duża w czerwonych winogronach, szczególnie w skórce (ponad 90 % neutralizacji wolnego rodnika). W przypadku odmian o skórce białej aktywnooeć antyoksydacyjna była zawarta w przedziale 9–50 % (Bianca i skórka odmiany Jutrzenka). W analizowanych tkankach stwierdzono dodatnia korelację (r = 0.70) pomiędzy sumą związków fenolowych a RSA.

Jabłka są źródłem wielu cennych związków fenolowych, które posiadają udokumentowane właściwości przeciwutleniające, przeciwbakteryjne, przeciwwirusowe, przeciwzapalne, przeciwalergiczne, a nawet antyrakowe. Ponadto są tanim i wysoce popularnym produktem w Polsce oraz na całym świecie. Te zdrowotne, ekonomiczne i społeczne czynniki powodują, że jabłka są w centrum zainteresowania wielu ośrodków naukowych jako potencjalne źródło naturalnych związków fenolowych, mających zastosowanie (w postaci przeciwutleniaczy, suplementów diety oraz związków bakteriobójczych) w przemyśle spożywczym, farmaceutycznym, kosmetycznym i innych. W pracy omówiono prozdrowotne właściwości jabłek oraz stosowane metody izolacji i identyfikacji związków biologicznie czynnych z jabłek.
Apples are a source of many valuable phenolic compounds which possess well documented antioxidant, antibacterial, antiviral, anti-inflammatory, antiallergic, and even anticancer properties. Moreover, they are inexpensive and highly popular products in Poland and all over the word. These pro-healthy, economic and social factors causes that apples are in the limelight of many scientific centers as a potential source of natural phenolic compounds which have application, as antioxidants, diet supplements, antimicrobial compounds, in food, pharmaceutical and cosmetic industries, and many other. In this work the pro-healthy properties of apples as well as methods of isolation and identification of biologically important compounds from apples are discussed.

Beer is one of the most consumed types of alcoholic beverage in the world.Beer is brewed using the following ingredients: water, barley, hops and yeast, but the selection of the raw materials and brewing processes determines the nutritional value and content of phenolic compounds in the final product. The aim of this article is to characterize the phenolic compounds of beer, as well as presenting the impact of the beer production process on its antioxidant properties.
Piwo jest jednym z najpowszechniej spożywanych napojów alkoholowych na świecie. Podstawowymi składnikami wyko-rzystywanymi do produkcji piwa jest woda, jęczmień, chmiel i drożdże, a dobór surowców i procesów warzenia determinuje wartość odżywczą i zawartość związków fenolowych w final-nym produkcie. Celem artykułu jest charakterystyka obecnych w piwie związków fenolowych, a także przedstawienie wpływu poszczególnych procesów produkcji piwa na zawartość fenoli, jak również na jego właściwości antyoksydacyjne.

The food-use of the tamarind (Tamarindus indica L.) fruit produces shell and seeds as by-products. In this work, the effects of the tamarind shell moisture content and the temperature of their extrusion on the dietary fiber content and physiochemical properties, such as water absorption capacity (WAC), oil absorption capacity (OAC), and glucose dialysis retardation index (GDRI) of the extrudates, were estimated. Moreover, the effects of the extrusion variables on the total phenolic and total flavonoid contents and on the antioxidant capacity of the tamarind shell were evaluated. The dry powdered tamarind shell was conditioned to have 32 or 39 g of water per 100 g of shell, prior to being subjected to extrusion. Subsequently, the conditioned samples were processed at 90°C, 100°C and 110°C in a single screw extruder. A non-extruded tamarind shell was taken as a control. The extrusion resulted in a 138.3% increase in the soluble dietary fiber content, along with 40.3% and 18.4% reductions of total phenolic and total flavonoid contents, respectively. The antioxidant capacity of the tamarind shell with moisture content of 32 g/100 g extruded at 100°C and 110°C was similar to that of non-extruded material. Moreover, the extruded products had the higher OAC compared to that of the control and they displayed an excellent response with regard to controlling the GDRI. The extrusion advantageously modified properties of the tamarind shell particularly when material with a moisture content of 32 g/100 g at 100°C was processed.

The aim of the work was to determine the content of Fe, Mg, and Zn and selected organic compounds before and after extraction into the artificial digestive juices obtained from preparations containing B. monnieri. Commercial preparations in the form of tablets and capsules and B. monnieri shoot cultures were used in the experiment. The metal content in the considered mineralized samples was analyzed by atomic absorption spectrometry and organic compounds by RP-HPLC method. The maximum measured content of the metals released into the digestive juices was as follows: Fe – 32.85; Mg – 367.51; and Zn – 16.41 mg/100 g of the preparation. The existing research shows that metals are best released into the artificial digestive juices from the B. monnieri shoot cultures, and least efficiently from the commercial preparations available in the form of tablets. The phenolic compounds analyzed in the methanol extracts and the extracts of the artificial digestive juices were as follows: protocatechuic acid, p-hydroxybenzoic acid, neochlorogenic acid, chlorogenic acid, isochlorogenic acid, caffeic acid, ferulic acid, cynaroside, trifolin, and luteolin. Bacoside A was only determined in the extracts from the B. monnieri shoot cultures. The experimental results revealed that B. monnieri distributed in the form of tablets did not break down in the artificial digestive juices during the considered time intervals.

Arthrospira platensis (Spirulina platensis) is a well-known microalga and has been utilized as a medicinal agent and foodstuff by humans since at least 16th century. The aim of this study was to determine zinc content as well as determine phenolic and indole compounds from commercial preparations containing Arthrospira platensis (lyophilizate, tablets, and capsules) before and after extraction with methanol and incubation with artificial digestive juices. The secondary aim of this study was to evaluate the quality of these preparations. The samples were incubated in artificial stomach juice and in intestinal juice. The samples were mineralized and their zinc(II) ions content was estimated using flame absorption atomic spectroscopy (F-AAS). The maximum zinc(II) ions content released into the digestive juices was found to be up to 1.6 mg 100 g-1 of the preparation. Phenolic compounds identified in the examined extracts are as follows: gallic acid; protocatechuic acid; 3,4-dihydroxyphenylacetic acid; p-hydroxybenzoic acid; syringe acid; cinnamic acid; and quercetin. Furthermore, indole compounds identified were 5-hydroxy-L-tryptophan, 5-methyl-L-tryptophan, L-tryptophan, tryptamine, and 5-methyltryptamine. Consequently, it was also found that the distributed Arthrospira platensis in the form of tablets does not disintegrate in the artificial digestive juices. Among the examined preparations, only hard capsules met the requirements of the European Pharmacopeia 8th ed.

Walnut (Juglans regia L., fam. Juglandaceae) fruit is found to be very rich in phenolic compounds and thus to show wide spectrum of biological activities like antioxidant, anti-inflammatory, or antitumour properties. Ethanol or methanol are preferentially used for preparation of walnut extracts for cosmetic applications. However, it is commonly known that alcohol causes dehydration and redness of the skin. The aim of this work was to prepare aqueous extract of undamaged walnut seeds rich in pellicles and to evaluate its antioxidant, anti-apoptotic, anti-inflammatory, and anti-aging properties in vitro. Conducted research clearly demonstrated that simple water extraction of undamaged kernels with pellicles allows to obtain rich in phenolic compounds (36-38 mg per g of lyophilisate) walnut extract, which protects fibroblasts and keratinocytes against oxidative stress induced by UVB dose of 35 mJ/cm2 (5-6-h exposure on a sunny day), protects keratinocytes against UVB-induced apoptotic death, limits the development of the inflammation in epidermis, and also possesses ability to inhibit collagenase and elastase. Thus, obtained aqueous walnut extract (at relatively low concentration of 5 µg/ml) is found to be a promising compound of sunscreen and anti-aging cosmetic formulations.

The study examined the antioxidative physiological effects of phenolics from an ethanol-water extract of blackthorn flowers orally administrated to C57/BL6 mice for 28 days in daily doses of 25 mg of total phenolics/kg body weight. Contents of phenolics in the intestine, liver, and kidneys collected after 1, 7, 14, 21, and 28 days of extract administration were analyzed by UPLC-MS/MS method. In the same tissues, the antioxidative properties were determined as ferric reducing antioxidant power (FRAP), ABTS•+ scavenging activity, content of reduced glutathione (GSH), and activity of superoxide dismutase (SOD) and catalase (CAT). The lipid peroxidation in tissues was also evaluated by thiobarbituric acid reactive substances (TBARS) assay. The exposed mice (compared to the control ones) had a lower content of TBARS in all tissues mostly on the third/fourth week of daily consumption. SOD activity and GSH content increased on the 28th day in tissues. CAT activity was higher only in the liver after one week of consumption but remained unchanged in other organs throughout the experiment. Phenolic profiles were different in individual tissues. The most prominent increases compared to the control were determined for contents of 3-O-feruloylquinic acid, 4-O-p-coumaroylqiunic acid, kaempferol pentoside, and quercetin rhamnoside in the intestine; for ferulic acid and quercetin 3-O-rutinoside in the liver; and for quercetin 3-O-rutinoside, ferulic acid, and 4-O-p-coumaroylquinic acid in the kidneys. The screened phenolics with different distribution in tissues could be responsible for slight differences in the recorded antioxidative effects.
