Opis:
The present study was undertaken to determine the combined effffect of microwave blanching and micro-perforated modifified atmosphere packaging in maximizing shelf life on the basis of quality attributes which were evaluated during storage. The carrots were blanched in water using a microwave at 360 W and then stored in micro-perforated modifified atmosphere packaging. The results indicated that blanched carrots in micro-perforated modifified atmosphere packaging showed an improved storage quality. In particular, it was observed that the fifirmness of the pretreated samples in the micro-perforated package were signifificantly improved. The enzyme activity (peroxidase) initially increased and then decreased with longer storage times. There was also a greater reduction in water content in sample C8, probably due to a higher rate of evaporation through the perforations. Water mobility which comprises tightly bound water, loosely bound water, and immobilized water were observed in all samples, while the free water level was insignificant in pretreated micro-perforated samples. The free water, T24 peak was observed for the control sample which increased with increase in storage duration. Also, the effects of this preservation method on other quality parameters such as β-carotene, water activity, moisture content, and microbial load was limited. However, sample C8 was more effective in retaining quality. Overall, this study demonstrated that blanching carrot in micro-perforated MAP at C8 was the most useful technique in preserving the storage qualities of carrot.

Celem badań przedstawionych w niniejszym artykule było określenie wpływu trzech różnych mieszanin gazowych oraz trzech różnych folii na zmiany jakości świeżych pieczarek przechowywanych w warunkach chłodniczych. Zrealizowane badania obejmują ocenę sensoryczną oraz analizę zmian składu mieszaniny gazowej wewnątrz opakowań. Badania wykonane były na pieczarkach przechowywanych w chłodziarce, w temp. 8˚C. Ocenę jakości pieczarek przeprowadzono w dniu zakupu oraz co drugi dzień przez 21 dni przechowywania.
The aim of the study is to investigate the influence of three different gas mixtures and three types of packaging film to changes the quality of fresh mushrooms stored in modified atmosphere. Analysis of research includes sensory evaluation and analysis of changes in the composition of the gas mixtures inside the packaging Tests were performed at the mushrooms stored in a refrigerator at a temperature of 8˚C, at the date of purchase and every second day during 21 days of storage. Selection of the gas mixture composition and the type of the packaging bag has an impact on changes in quality of mushrooms.

Opis:
The effects of combined aminoethoxyvinylglycine (AVG) and modified atmosphere packaging (MAP) treatments on quality attributes of ‘0900 Ziraat’ sweet cherry fruit during the cold storage and shelf life were investigated in this study. Significantly lower weight loss and decay ratios were observed in all treatments throughout the cold storage period as compared to the control. A similar case was also observed referring to the shelf life. MAP treatments were found to be more effective in retarding the weight loss and decay ratio. Higher hue angle values were measured from AVG-treated fruit at harvest. Similarly, hue angle of AVG and MAP-treated fruit were also higher than for the control in all periods of cold storage and on the 7th and 21st day of shelf life. AVG-treated fruit had higher firmness values than the control at harvest. However, higher firmness values were measured from MAP-treated fruit during the cold storage and shelf life. At the end of cold storage, lower SSC and higher titratable acidity values were observed in AVG and MAP-treated fruit than in the control. AVG + MAP treatments yielded significantly higher vitamin C, total phenolics and antioxidant activity values than the control. Contrarily, the control fruit had significantly higher total monomeric anthocyanin than the other treatments. Based on current findings, it was concluded that combined AVG + MAP treatments could be used as a beneficial tool to maintain the quality of sweet cherry fruit throughout the cold storage and shelf life.
