Opis:
Food preservation using high pressure is a promising technique in food industry as it offers numerous opportunities for developing new foods with extended shelf-life, high nutritional value and excellent organoleptic characteristics. High pressure is an alternative to thermal processing. The resistance of microorganisms to pressure varies considerably depending on the pressure range applied, temperature and treatment duration, and type of microorganism. Generally, Gram-positive bacteria are more resistant to pressure than Gram-negative bacteria, moulds and yeasts; the most resistant are bacterial spores. The nature of the food is also important, as it may contain substances which protect the microorganism from high pressure. This article presents results of our studies involving the effect of high pressure on survival of some pathogenic bacteria - Listeria monocytogenes, Aeromonas hydrophila and Enterococcus hirae - in artificially contaminated cooked ham, ripening hard cheese and fruit juices. The results indicate that in samples of investigated foods the number of these microorganisms decreased proportionally to the pressure used and the duration of treatment, and the effect of these two factors was statistically significant (level of probability, P ≤ 0.001). Enterococcus hirae is much more resistant to high pressure treatment than L. monocytogenes and A. hydrophila. Mathematical methods were applied, for accurate prediction of the effects of high pressure on microorganisms. The usefulness of high pressure treatment for inactivation of microorganisms and shelf-life extention of meat products was also evaluated. The results obtained show that high pressure treatment extends the shelf-life of cooked pork ham and raw smoked pork loin up to 8 weeks, ensuring good micro-biological and sensory quality of the products.

The aim of this study was to determine the simultaneous occurence of Salmonella spp., L. monocytogenes, verotoxigenic E. coli (VTEC), and Campylobacter spp. in slaughtered cattle and in beef meat subjected for human consumption. A total of 406 bovine hides and 406 corresponding carcasses were used to collect the samples with a swab method after exsanguination and evisceration of animals, respectively. Furthermore, 362 beef meat samples were purchased in local retail shops over the same period of time as for the bovine samples. Food-borne bacterial pathogens were identified with standard ISO methods with some modification by the use of PCR for VTEC. The isolated bacteria were then molecularly speciated (Campylobacter), serotyped (L. monocytogenes) and characterized for the presence of several virulence marker genes (VTEC and Campylobacter). It was found that 49 hide (12.1%) and 3 (0.7%) carcass samples were contaminated with more than one bacterial pathogen tested. Most of the hides were positive for Campylobacter spp. and VTEC (27 samples) and Campylobacter spp. together with L. monocytogenes (12 samples). Eight bovine hides contained L. monocytogenes and VTEC while L. monocytogenes and Salmonella spp. were detected in one sample. Furthermore, 3 pathogens (Campylobacter spp., L. monocytogenes and VTEC) were simultaneously identified in one bovine hide tested. In case of bovine carcasses 2 samples contained Campylobacter spp. and VTEC whereas one carcass was positive for L. monocytogenes and VTEC. On the other hand, 10 out of 362 (2.8%) minced beef samples were contaminated with at least two pathogens tested. The majority of these samples were contaminated with L. monocytogenes and Salmonella spp. (6 samples). It was noticed that equal number of C. jejuni and C. coli were found, irrespective of the origin of the samples. Most of the strains possessed more than one pathogenic factor as identified by PCR. Molecular serotyping of L. monocytogenes revealed that the majority of the isolates (27 out of 31; 87.1%) belonged to 1/2a serogroup. It was found that most of the VTEC isolates possessed the Shiga toxin stx2 gene (12 strains) whereas only 2 strains were stx1-positive. The eneterohemolysin and intimin markers were identified only in 7 and 2 isolates, respectively. PCR analysis revealed that 4 VTEC belonged to O91 serogroup, 2 strains were O145 and 1 isolate was identified as O113. None of the VTEC detected in the study was O157 serogroup.

W pracy analizowano jakość mikrobiologiczną dostępnych na rynku, próżniowo pakowanych wędlin plasterkowanych, ze szczególnym uwzględnieniem występowania w nich chorobotwórczych bakteri z rodzaju Listeria. Analizie poddano 27 produktów mięsnych pochodzących od różnych producentów Przeprowadzone badania wykazały, że około 40% analizowanych wyrobów charakteryzowało się wysokim zanieczyszczeniem mikrobiologicznym, które przekraczało poziom 108 jtk/g. Jednocześnie stwier dzono, iż 12 prób (około 44%) było zanieczyszczonych mikroorganizmami Listeria spp., przy czym u siedmiu z nich były obecne bakterie Listeria monocytogenes, a w pozostałych pięciu - Listeria innocua W ośmiu wędlinach występowały również bakterie z grupy coli. Uzyskane wyniki wskazują więc, że( jakość mikrobiologiczna dostępnych na rynku pakowanych próżniowo przetworów mięsnych budzi za strzeżenia ze względu na zbyt częste występowanie w nich Listeria monocytogenes i dużą liczebność bakterii fermentacji mlekowej.
Microbiological quality of vacuum-packaged sliced meat products, which are available on the marketplace, has been analysed in this paper in terms of Listeria spp. occurrence. 27 samples of meat products from various producers were investigated. Results demonstrated that about 44% of them showed a high level of microbial contamination, exceeding 108 cfu/g. It has also been found that 12 samples (about 44%) were contaminated by Listeria spp. and in seven of them Listeria monocytogenes was determined while in the remaining five Listeria innocua. Coliforms bacteria were isolated from eight of the examined meat products. Obtained results indicate that microbiological quality of commercially purchased vacuum- packaged meat products is disputable due to both a high incidence of Listeria monocytogenes and a high lactic acid bacteria count.
