Opis:
Black elder is a deciduous shrub widely used in medicine, pharmacy and food industry. This study presents a comparison of the elemental composition of fruits (berries) from the Black elder (Sambucus nigra L.) cultivars Albida, Bohatka, Dana, Heidegg13, Mammut and Sambo, grown in the Czech Republic and harvested in two seasons (2011 and 2013). The fruits were collected at full maturity from an experimental orchard at the Research and Breeding Institute of Pomology, Holovousy Ltd. The raw material was decomposed using hot nitric acid and the determination of the elemental content (Ca, K, P, Zn. Cu, Mn, Na, Mg) was performed by inductively coupled atomic emission spectrometry in accordance with a valid ISO standard. Concentration of all the analyzed elements in the various Sambucus nigra cultivars was different, and the differences were statistically significant (p < 0.05). All the investigated cultivars were a good source of major and trace elements. The concentration of the analyzed elements in Sambucus nigra decreased in the following order K > Ca > P > Mg > Na > Fe > Mn > Zn > Cu. The results demonstrated that Sambucus nigra fruits can be used as functional food in prevention and treatment of diseases associated with deficiency of elements in the human diet. On average, 100 g of Sambucus nigra fruits can cover about 20% of the recommended dietary allowance of main elements for women and men. In terms of the content of individual elements, the cultivars Albida and Sambo have proven to be most promising. The chemical composition of Sambucus nigra varied with the year of harvest, but the variation in the elemental content did not exceed 20% in most cases.

Opis:
Extrusion-cooking is used to produce directly expanded gluten-free snacks, especially for consumers with celiac disease. The aim of the study was to evaluate the effect of various fruits type supplementation as well as the processing screw speed on the physical properties and texture of ready-toeat corn-based gluten-free snacks. Black elderberry, chokeberry and strawberry were dried and used in the amount of 5 to 20% as a corn grit replacement. The directly expanded snacks were processed with a single-screw extruder at various screw speeds (80 and 120 rpm) and tested to measure their expansion ratio, bulk density, colour profile as well as their texture profile. The results showed the various effects of adding different types and amounts of fruit on the physical properties and texture of supplemented gluten-free snacks. A higher amount of fruit resulted in a significant decrease in the expansion ratio and an increase in the bulk density of the snacks. Reduced lightness and a more pronounced red tint were observed when red fruits were added. The desired hardness of the snacks suggested that the addition of fruit should be retained below 15% of the recipe content. The screw speeds applied showed a significant effect on the expansion, bulk density and texture of the tested snacks.

Freeze-dried elderberry and chokeberry were proposed as natural colorants for gluten-free wafers. In addition to colour, other physical and sensorial properties of wafer sheets were also evaluated. The elderberry powder was significantly darker (L* equal 37.61) than the chokeberry powder (L* equal 41.01), and it was characterized by a considerably lower a* value (4.21 in comparison with 12.32). These powdered fruits were added in the range from 0 to 5 %. A new indicator of wafer batter delamination was developed, which can also be proposed for other liquids. Significant and favourable changes were noted in the colour of both batter and wafers, with an increased content of fruits from 1 to 5%. Gluten-free wafers with a 5% addition of fruits were characterized by L*, a*, b* values, respectively, equalling 35.73, 6.05 and 3.24 for elderberry, and 39.74, 7.15 and 5.05 for chokeberry. Wafers with a 5% addition of chokeberry and elderberry, in comparison to control wafers, had significantly higher contents of minerals, including iron, potassium, calcium, magnesium and sodium. The freeze-dried elderberry powder, as compared to the chokeberry powder, was found to significantly increase the content of these minerals. In addition, the total flavonoids content was higher in the wafers containing elderberry. Freeze-dried chokeberry and elderberry can be proposed as natural colorants and valuable functional components for wafers.

Studies suggest a variety of biological effects for isoflavones and anthocyanins, but there is little information regarding small intestinal absorption and metabolism. In this article, absorption and metabolism studies of selected phytochemicals, especially isoflavones and anthocyanins are reviewed. To assess small intestinal absorption an isolated preparation of luminally and vascularly perfused rat small intestine was used, with a synthetic perfusate free from blood components as vascular medium. Luminal media consisted of a buffered sodium chloride solution spiked with the phytochemicals. Viability and functional integrity of the organ preparation was maintained during the entire perfusion. Venous and luminal aliquots were analyzed for the phytochemicals with HPLC. Complex foods (tofu) were predigested with an in vitro digestion system using pepsin and pancreatin before perfusion experiments. Vascular uptake of the lipophilic isoflavone genistein was higher than for the more hydrophilic glycosides genistin, daidzin and cyanidin-3-glucoside. The isoflavone glycosides were hydrolyzed to their aglycons, which appeared at the vascular and luminal side. In contrast, anthocyanidin glucosides were not cleaved during perfusion experiments. All of the investigated phytochemicals were partly glucuronidated. These conjugates were vascularly absorbed and luminally secreted. Tofu ingredients influenced isoflavone uptake, extent of glucuronic conjugation and distribution of glucuronides in the small intestine. Ethanol, in contrast, had no significant influence on cyanidin-3-glucoside absorption. The investigated phytochemicals are absorbed at various extent in the small intestine, partly as conjugates. The implication of a simulated digestion and the use of the isolated perfused rat small intestine are suitable tools to investigate and evaluate the influence of food matrix on the intestinal handling of phytochemicals.

Celem badań było określenie wpływu zanieczyszczeń komunikacyjnych na skład chemiczny kwiatów i owoców bzu czarnego. Surowce pozyskano z 16. stanowisk naturalnych w południowo-wschodniej części Polski. Stanowiska znajdowały się w różnym oddaleniu od ciągów komunikacyjnych o zróżnicowanym natężeniu ruchu drogowego. Surowiec zbierano od czerwca (kwiat) do sierpnia (owoc) 2009 r. i natychmiast po zbiorze suszono w temp. 30°C. Zawartość flawonoidów (w przeliczeniu na kwercetynę) oznaczono spektrofotometrycznie wg Farmakopei Polskiej VIII (2008), a wybranych składników mineralnych - włącznie z metalami ciężkimi (Cr, Zn, Pb, Cu, Cd, Ni, Fe i Mn) - po mineralizacji materiału roślinnego na sucho metodą IPC. Bliska odległość od ciągów komunikacyjnych oraz większa intensywność ruchu drogowego wpłynęły w istotny sposób na skład chemiczny surowca bzu czarnego, który zawierał mniej flawonoidów w stosunku do surowców pozyskiwanych z terenów bardziej odległych. W doświadczeniu stwierdzono istotną zależność między zawartością Cr, Fe, Cd i Cu w owocu bzu czarnego oraz Fe, Zn, Cu, Cr, Cd, Pb i Mg w kwiecie bzu czarnego a miejscem ich pozyskiwania. Bliskość ciągów komunikacyjnych i większa intensywność ruchu drogowego znacznie przyczyniły się do zwiększenia zawartości tych pierwiastków w analizowanym surowcu. Na skład chemiczny obydwu przebadanych rodzajów surowca bzu czarnego istotny wpływ ma miejsce ich pozyskiwania ze stanu naturalnego.
