Red head cabbage comes in many varieties, which differ from one another in the length of vegetative period, yield quality and general biological value. The aim of our study has been to determine the content of anthocyanins in extracts from three different cultivars of red head cabbage (cv. Koda, Haco POL and Kissendrup SWE) and to examine their antioxidative activity. It was found that the content of anthocyanins in extracts from red head cabbage was significantly varied, depending on a cultivar. Extracts from cv. Kissendrup SWE contained significantly more anthocyanins, whereas those obtained from cv. Koda had the smallest content of those compounds. Anthocyanins extracted from cv. Haco POL red cabbage demonstrated the highest antioxidative capacity. Weak correlation was shown between the content of anthocyanins and their antioxidative capacity (R2 from 0.278 to 0.297).
Kapusta głowiasta czerwona ma wiele odmian, które różnią się długością okresu wegetacji, jakością plonu i ogólną wartością biologiczną. Celem pracy było oznaczenie zawartości związków antocyjanowych w ekstraktach trzech odmian kapusty głowiastej czerwonej (Koda, Haco POL, Kissendrup SWE) i zbadanie ich aktywności antyoksydacyjnej. Stwierdzono, że zawartość antocyjanów w ekstraktach z kapusty głowiastej czerwonej istotnie zależała od odmiany kapusty. Ekstrakty z kapusty odmiany Kissendrup SWE zawierały istotnie najwięcej antocyjanów, a najmniej ekstrakty z kapusty odmiany Koda. Antocyjany wyodrębnione z kapusty odmiany Haco POL wykazywały największą aktywność przeciwutleniającą. Wykazano słabą korelację między zawartością związków antocyjanowych a ich aktywnością antyoksydacyjną (R2 od 0,278 do 0,297).

Mineral components (bioelements) are one of the five major groups of nutrients in human diet, next to proteins, lipids, carbohydrates and vitamins. The required daily amounts per capita are over 100 mg of macroelements and less than 100 mg of microelements. Every industrial processing technology applied to vegetable produce causes precipitation of bioelements and consequently undesirable losses of these components. The purpose of this study has been to analyze the content of bioelements (Ca, Mg, Zn, and Fe) determined in homogenizates and extracts from three red cabbage cultivars (Koda, Haco POL, Kissendrup SWE). Correlation coefficients served to assess the concordance between the plant material preparation methods used for determination of bioelements. The correlation between the content of Mg versus Ca and Zn versus Fe in edible parts of cabbage (homogenizates) compared to the levels of these metals in red cabbage extracts was tested. Two methods for the preparation of plant material for chemical analyses were used: homogenization and extraction. Citric acid solution of the concentration of 0.1 mol dm–3 was used for extraction. The content of bioelements was determined using atomic absorption spectrophotometry (AAS). The content of Ca and Zn in red cabbage depended on the method applied to the plant material preparation, i.e. homogenization or extraction. The content of Mg and Fe depended on the cabbage cultivars. Irrespective of the plant material preparation methods, the red cabbage cultivars Kissendrup SWE and Koda contained the highest average levels of Ca, Mg, Zn, and Fe, while the lowest ones were determined in cv. Haco POL. High correlation obtained for Mg enables us to convert the content of this element in homogenizates (A) into its content of extracts (B) – conversion factor A:B = 0.9. Positive and highly significant correlations were found between the content of the bioelements: Ca and Mg, Zn and Fe in cabbage homogenizates.
Składniki mineralne (biopierwiastki) z żywieniowego punktu widzenia stanowią jedną z pięciu podstawowych grup składników odżywczych dla człowieka, oprócz białek, tłuszczów, węglowodanów i witamin. Dzienne zapotrzebowanie na składniki mineralne dla 1 osoby wynosi: makroelementy powyżej 100 mg i mikroelementy poniżej 100 mg. Każda obróbka przemysłowa produktów roślinnych powoduje wytrącenie się biopierwiastków, i w konsekwencji niepożądane straty tych składników. Celem pracy było zbadanie zawartości biopierwiastków (Ca, Mg, Zn i Fe) oznaczonych w homogenizatach i w ekstraktach z trzech odmian kapusty czerwonej (Koda, Haco POL, Kissendrup SWE). Oceniono zgodność zastosowanych metod przygotowania materiału roślinnego do oznaczania biopierwiastków za pomocą współczynnika korelacji. Poszukiwano korelacji między zawartością Mg a Ca oraz Zn i Fe w części jadalnej kapusty czerwonej (homogenizatach) i w otrzymanych z niej ekstraktach. Zastosowano dwie metody przygotowania materiału roślinnego do analiz chemicznych: homogenizację i ekstrakcję. Do ekstrakcji zastosowano roztwór kwasu cytrynowego o stężeniu 0.1 mol dm–3. Zawartość biopierwiastków oznaczono metodą atomowej spektrometrii absorpcyjnej. Zawartość Ca i Zn w kapuście czerwonej zależała od metody przygotowania materiału roślinnego do badań, zawartość Mg i Fe – od odmiany kapusty. Niezależnie od metody przygotowania materiału roślinnego, odmiany kapusty czerwonej Kissendrup SWE i Koda zawiera ły najwięcej Ca, Mg, Zn i Fe, a najmniej odmiana Haco POL. Wysoka korelacja w przypadku Mg daje możliwość przeliczenia zawartości tego pierwiastka w homogenizatach (A) na zawartość w ekstraktach (B) – przelicznik A:B = 0.9. Stwierdzono dodatnią i wysoce istotną zależność między zawartością biopierwiastków Ca i Mg, Zn i Fe w homogenizatach z kapusty.

Brassica oilseed crops have very high sulfur requirements. The progressive decrease in the sulfur content of soil, the growing share of cruciferous vegetables in agricultural ecosystems and a significant drop in annual wet and dry deposition of sulfur have prompted a growing body of research into sulfur as a valuable fertilizer ingredient. The aim of this study was to determine the effect of sulfur fertilizers applied to soil on nitrogen, phosphorus, potassium, calcium, magnesium and sulfur concentrations in the root residues, straw and oil cake of winter and spring rapeseed. The experimental material was collected from a field experiment conducted in 2005-2008 at the Agricultural Experiment Station in Bałcyny (Poland). The highest concentrations of nitrogen, phosphorus, magnesium and sulfur were noted in the oil cake of both winter and spring rapeseed. Potassium levels were highest in the root residues of winter and spring rapeseed. Winter rapeseed accumulated the highest amounts of calcium in roots, and spring rapeseed – in straw. Sulfur fertilizers applied to soil decreased nitrogen concentrations and increased calcium and sulfur levels in the roots of both spring and winter rapeseed, whereas phosphorus concentrations increased only in the roots of winter rapeseed. Sulfur fertilization led to a drop in the potassium content of winter rapeseed roots (by 0.7 g kg-1 DM) and an increase in potassium levels in spring rapeseed roots (by 1.2 g kg-1 DM). The application of sulfur fertilizers significantly increased potassium and sulfur concentrations in the straw of both spring and winter rapeseed (by 1.3-1.7 and 0.5-0.6 g kg-1 DM, respectively). The application of sulfur fertilizers at optimal doses for winter rapeseed significantly increased the calcium content of straw (by 1.3 g kg-1 DM), but did not lead to differences in nitrogen levels. Sulfur fertilization significantly reduced nitrogen (by 0.7 g kg-1 DM) and calcium (by 0.6 g kg-1 DM) concentrations of spring rapeseed straw. The content of all the analyzed macronutrients increased significantly in spring rapeseed oil cake in response to sulfur fertilization. Sulfur also increased the concentrations of the evaluated macronutrients, excluding nitrogen and phosphorus, in winter rapeseed oil cake.

Sulfur application has a significant effect on the yield of oil bearing plants of the family Brassicaceae , especially when the sulfur content of soil is low . Sulfur fertilization also affects the value of plant raw materials, reflected by the concentrations of mineral and biologically active compounds in biomass. The aim of this study was to determine the effect of sulfur application to soil on the concentrations of copper, zinc and manganese in the root residues, straw and oil cake of winter and spring rapeseed. A three-year (2005-2008) field experiment was conducted at the Agricultural Experimentation Station in Bałcyny (NE Poland). In both spring and winter rapeseed, oil cake contained the highest levels of copper and zinc, followed by root residues and straw. The highest concentrations of manganese per kg dry matter (DM) were found in the root residues of winter rapeseed and in the cake of spring rapeseed. The concentrations of micronutrients (Cu, Zn, Mn) were slightly higher in the roots of winter rapeseed, compared with spring rapeseed. Sulfur fertilization decreased copper levels and increased manganese levels in the root residues of spring and winter rapeseed. Sulfur application to soil increased zinc concentrations in winter rapeseed roots, and it had no significant influence on the zinc content of spring rapeseed roots. Spring rapeseed straw contained considerably higher levels of zinc and manganese than winter rapeseed straw. The copper content of straw was comparable in spring and winter rapeseed. Sulfur application to soil increased the concentrations of zinc and manganese in winter rapeseed straw, and it had no significant effect on the levels of those minerals in spring rapeseed straw. Spring rapeseed cake had a significantly higher content of copper and zinc, compared with winter rapeseed cake. Manganese concentrations in the cake of spring and winter rapeseed were similar. Sulfur fertilization contributed to a significant increase in the concentrations of zinc and manganese in winter rapeseed cake. The manganese content of spring rapeseed cake decreased significantly in response to sulfur fertilization, which had no effect on the concentrations of the other micronutrients.

In a model pot experiment, the influence of elevated levels of cadmium and lead in soils on rapeseed (Brassica napus L.) growth, development, biomass (g DM pot-1), cationic ratios (Cd2+:- Ca2+, Cd2+:Mg2+, Pb2+:Ca2+, Pb2+:Mg2+) and tolerance index Ti, has been examined. The tested soils were: two organic soils (acidic and neutral) and a mineral one with pH differentiated into neutral and acidic. The metals were spiked into soils in doses of 10 mg Cd kg–1 DM and 100 mg Pb kg–1 DM of soil. Under the applied doses, the sensitivity of rapeseed to Cd was higher than to Pb. The application of Cd caused visible symptoms of chlorosis on plant leaves and a statistically significant (p < 0.01, p < 0.05) decrease in aerial biomass. The influence of Pb on B. napus biomass yield was not significant. The soil type and its reaction differentiated the biomass of plants in the following decreasing order: mineral neutral > organic neutral > mineral acidic > organic acidic. The Cd added to soil increased the Cd2+:Ca2+ and Cd2+:Mg2+ ionic ratios, while Pb caused an increase in Pb2+:Ca2+ and Pb2+:Mg2+ ratios compared to the control. The significantly higher values for the above ions ratios were recorded in rapeseed roots rather than in shoots. The results showed a crucial role of the soil type in determining the milimolar ionic relations in B. napus plants. The plant was more vulnerable to chemical composition changes in contaminated treatments comparing to control when grown on mineral soils (both acidic and neutral) than on organic ones. The high Ti value proves generally low sensitivity of B. napus to soil Cd and Pb contamination.

Our objective was to determine the content of macro- and micronutrients, toxic heavy metals as well as total phenols in 10 broccoli (Brassica oleracea var. italica) cultivars. The experiment was designed at the Poznań University of Life Sciences, Poland, and completed during two plant growing seasons. Broccoli seedlings were planted in a field in early July and the plants were harvested between September and October. The content of general forms of nitrogen was measured by distillation with the Kjeldahl method. The content of potassium, calcium and sodium was assessed by flame photometry, and the content of magnesium, cadmium, lead, nickel, copper, zinc, manganese and iron was determined by flame atomic absorption spectroscopy (FAAS). The content of heavy metals, macronutrients and sodium in the broccoli heads depended on a cultivar. Having analyzed the levels of macronutrients in ten broccoli cultivars, it was concluded that cv. Agassi and Tradition had the highest content of nitrogen and phosphorus. A very high amount of phosphorus was also found in cv. Beaumont. The highest concentrations of calcium and potassium were found in cv. Monte Carlo. The cultivars Agassi, Beaumont, Tiburon and Tradition were characterized by the highest content of magnesium. The highest content of sodium occurred in the cultivars Beaumont and Monopoly. With respect to micronutrients, the highest content of iron, copper, zinc and manganese was revealed in cv. Agassi. The highest content of nickel was determined in the cultivars Beaumont and Monte Carlo. In addition, the cultivar Monte Carlo was characterized by the highest content of lead, and Beaumont had the highest content of cadmium. However, the maximum permissible levels of cadmium and lead were not exceeded in the heads of the ten broccoli cultivars. In both years of the study, the highest content of phenols was found in cv. Steel and the lowest one appeared in cv. Agassi.

The study has been performed to analyze the content of nitrates V and III as well as lead and cadmium in Brassica vegetables, both fresh and after 5-month storage in a cool storeroom. The experimental material consisted of Chinese cabbage, red and white cabbage, savoy cabbage and Brussels sprouts. The content of nitrates in the plant material was determined with the spectrophotometric method based on Griess reaction, whereas concentrations of heavy metals were assayed with the AAS method after dry mineralization. The 5-month storage period was found to decrease (by ca 65±5%) the content of nitrates V in savoy cabbage and Brussels sprouts. In turn, a ca 2-fold increase in the concentration of these compounds was determined in Chinese cabbage, and a similar tendency was observed in white cabbage. Chinese cabbage turned out to be the richest in the analyzed, undesirable elements and compounds, e.g. after storage it was characterized by an exceeded permissible level of nitrates V (750 mg kg–1 f.w.) and by the biggest, ca 10-fold, increase in concentrations of lead and cadmium. Besides, storage was observed to cause a significant increase in the content of nitrates III in the analyzed vegetables, except red cabbage, in which their content was shown to decrease by about 40%. Concentrations of nitrates III and V, Pb2+ and Cd2+ in tissues of the cabbage plants should be monitored regularly in order to prevent their excessive accumulation in the food chain of man.
Celem badań było przeanalizowanie zawartości azotanów V i III oraz ołowiu i kadmu w świeżych warzywach kapustnych i po ich 5-miesięcznym przechowywaniu w chłodnych magazynach. Materiał badawczy stanowiły: kapusta pekińska, kapusta głowiasta czerwona i biała, kapusta włoska oraz kapusta brukselska. W materiale roślinnym zawartość azotanów oznaczono metodą spektrometryczną, opartą na reakcji Griessa, natomiast metale ciężkie – metodą AAS po mineralizacji suchej. Okres 5-miesięcznego przechowania wpłynął na obniżenie (o ok. 65±5%) zawartości azotanów V w główkach kapusty włoskiej i brukselskiej, natomiast ok. 2-krotny wzrost koncentracji tych związków odnotowano w kapuście pekińskiej, podobną tendencję zaobserwowano w przypadku kapusty białej. Kapusta pekińska okazała się warzywem najbardziej skażonym substancjami niepożądanymi, po przechowywaniu bowiem odnotowano przekroczenie (750 mg kg–1 ś.m.) zawartości azotanów V oraz największy, ok. 10-krotny wzrost zawartości ołowiu i kadmu. Przechowywanie spowodowało istotny wzrost zawartości azotanów III w analizowanych warzywach z wyjątkiem kapusty głowiastej czerwonej, w której nastąpił ok. 40% spadek koncentracji omawianych związków. W celu zapobiegania nadmiernemu gromadzeniu się tych związków w łańcuchu pokarmowym człowieka, niezbędne jest regularne monitorowanie azotanów V i III oraz Pb2+ i Cd2+ w tkankach badanych roślin.

Chinese flowering cabbage (Brassica campestris L. ssp. chinensis var. utilis Tsen et Lee) is an important leafy vegetable species, which originates from Guangdong province in southern China. There is a variety called purple Chinese flowering cabbage (Brassica campestris L. ssp. chinensis L. Makino var. purpurea Bailay), which is popular in the Yangtze River basin, e.g. in Wuhan and Sichuan provinces. This manuscript is a review of recent studies on the nutritional value, breeding methods and factors affecting the yield of Chinese flowering cabbage. This vegetable is rich in glucosinolates, polyphenols, amino acids, fatty acids, soluble sugar and vitamin C. It also exhibits some antioxidative activity, e.g. the TEAC value was 16.93 μmol Trolox g-1 and the FRAP value was 12.01 µmol Fe(II) g-1 in total. Controlling the Cd level in Chinese flowering cabbage is important due to the fact that it can easily accumulate Cd in its edible leaves and flowering stems. To reduce the effect given by Cd, foliar spray with trace elements had been studied. Moreover, nitrogen fertilizer, biofertilizer and several cultivation methods have been implemented to improve the yielding and nutritional value of Chinese flowering cabbage. Depending on the conditions, fertilisation increased the yield from 19.1% to 168%, whereas the fresh weight of a single plant varied from 0.835 kg to 1.683 kg and the average yielding in the field ranged from 7.857 t ha-1 to 19.1 t ha-1. In the last part of this paper, we reviewed the different breeding methods that have been used to develop new varieties of Chinese flowering cabbage meeting specific requirements, such as selecting a hybrid with kale to enrich the genotype, increase the resistance or discover a specific bolting gene. In brief, Chinese flowering cabbage has the potential for future research and commercial market.

The study was based on a three-year field experiment conducted on degraded black soil, classified as class IIIb soil in the Polish soil valuation system, with neutral pH, high content of phosphorus and potassium, average content of magnesium, and low content of sulphur. The two-factor experiment was carried out in northern Poland (52°73′ N; 18°88′ E), in a split-block design with four replications. The preceding crop each year was sugar beet. The aim of the study was to evaluate the effect of varied levels of nitrogen (first factor – 0, 60, 120 and 180 kg ha-1) and sulphur (second factor – 0, 20 and 60 kg ha-1) applied to the soil and onto the leaves on the content and ratio of these elements in the seeds of the Star cultivar of spring rapeseed. Little variation was noted between growing seasons in the content of nitrogen and sulphur and in their proportions in the seeds. Application of nitrogen alone (without sulphur) and combined application of nitrogen with sulphur caused an increase in the nitrogen content in the seeds and in the N:S ratio. The sulphur content in the seeds of the plants fertilized with nitrogen and sulphur together was significantly higher than in the seeds of the plants fertilized with nitrogen alone and lower than in the plants fertilized with sulphur alone. The highest N:S ratios were obtained in the seeds of plants fertilized with nitrogen alone, and the lowest – following the application of sulphur alone. Application of nitrogen or nitrogen and sulphur caused an increase in the N:S ratio towards optimal values for fodder crops. The method of sulphur application did not significantly affect its content in the rapeseeds or the N:S ratio.

The experiments on celery, curly kale and lettuce reported in this paper were carried out in a greenhouse, with plants grown in 2 dm3 pots filled with peat substrate. The trials were established in a completely randomized design. The aim was to determine the effect of increasing nitrogen doses (0.3, 0.6, 0.9, 1.2 g N dm-3 of substrate) on N-tot., NO3-N, concentrations of P, K, Ca, Mg, Fe, Zn, Mn and Cu as well as ratios between these elements in three vegetable species such as curly kale, lettuce, and celery, distinguished by different degrees of sensitivity to salinity. An increase in the content of total nitrogen and NO3-N in lettuce, curly kale and celery appeared to be parallel to the increasing doses of nitrogen, while the average total nitrogen content was similar in all the tested species, and the content of N-NO3 in kale was about five-fold lower than in lettuce and celery. The level of nitrogen fertilization influenced the content of potassium and magnesium in lettuce as well as the content of phosphorus, potassium, calcium and magnesium in celery. The nitrogen doses significantly differentiated proportions between the nutrients in plants, mostly the K:Mg and Zn:Cu ratios. The increasing doses of nitrogen modified the content of microelements and proportions between various components in the tested plant species.

The experiment was conducted on three cultivars of canola (Brassica napus L.): Exceed, Cyclone and Legend, with the objective of investigating the alleviation of the rhizospheric lead toxicity by exogenous potassium. Seeds were germinated in pots and when plants were twenty-day-old, lead @15.0 and 30.0 mg kg-1 soil was added to pots. Plants were foliar sprayed twice with KCl solution. Plants were arranged in a completely randomized design. Various growth and production parameters were evaluated at physiological maturity. The fresh and dry weight of stems increased by 17.6% and 25.6%, correspondingly, when the plants were treated with KCl as compared to the control, but decreased by 20.4%, and 13.9%, respectively, in plants treated with 15.0 mg kg-1 of lead. These reductions in weight were higher under 30.0 mg kg-1 of lead applications. Roots (fresh and dry weight) of plants under the dual combination of lead and potassium decreased but this reduction was lower than in plants treated with lead only, which confirmed that potassium alleviated the toxic effect of the lead metal. The seeds (number and total yield) also decreased due to lead toxicity. The research was carried out at the Zawady Agricultural Experimental Station, Poland, in 2018-2021. The experiment was performed with three repetitions in a split-plot system. The factors of the experiment were three morphotypes of winter oilseed rape: population, long-stemmed, semi-dwarf. The second factor consisted of the following preparations or the lack thereof: 1) control, 2) soil conditioner, 3) inorganic biostimulator containing PK, 4) Si biostimulant (plant resistant biostimulant). The aim was to investigate whether the use of soil preparations containing microorganisms and micro- and macro-elements or the foliar application of stimulants containing phosphorus, potassium and silicon would have a better effect on the quality of seeds, i.e.: total protein, crude fat and crude fibre of three different morphotypes of winter oilseed rape. The research showed that the highest concentration of total protein and crude fat was found in the semi-dwarf heterosis morphotype, while the population form had the highest content of crude fibre. In all tested cultivars, after the application of preparations containing potassium and phosphorus and on objects where silicon was used, there was a significant decrease in the protein concentration. The research has shown that the best feed and utility value of seeds was obtained in areas where phosphorus and potassium had been applied in a foliar manner. However, in the case of the traditional variety and the long-stemmed hybrid, the differences in the fat content were statistically insignificant in all objects with biostimulating preparations, while in the case of the semi-dwarf hybrid, this tendency was demonstrated only in the objects with the organic and silicon-containing preparations. All of the tested cultivars were distinguished by the highest concentration of total protein, fat and crude fibre as well as fibre in the season with the lowest annual rainfall.
