Opis:
This research aims to determine the concentration of the use of nilem skin gelatin in order to obtain the most preferred ice cream. The treatment is the concentration of the use of nilem skin gelatin 0.2%, 0.3%, 0.4%, and CMC 0.4% (control) of the total mixture of ice cream ingredients (full cream milk powder, skim, stabilizer, emulsifier, and water) with 4 repetitions. The parameters observed were the level of preference for the color, aroma, texture, and taste of ice cream. The most preferred ice cream is obtained by using nilem skin gelatin at a concentration of 0.4%.

Opis:
This research aims to determine the best concentration of Rusip fermentation solution for inhibiting histamine formation and its effect on the quality of salted-boiled mackerel tuna (Euthynnus affinis). The studies were conducted in August-September 2018 at the Fisheries Product Processing Laboratory and Microbiology and Molecular Biotechnology Laboratory of Fisheries and Marine Sciences Faculty, Padjadjaran University. This work used an experimental method with 4 variables and 3 repetitions, namely salted-boiled mackerel tuna (Euthynnus affinis) that soaked in rusip fermentation solution with a concentration of 0%, 10%, 20%, and 30% for 30 minutes and storage at some above room temperature (25-27 ºC). Parameters observed included TPC, Histamine levels, pH, and organoleptic values (aroma, appearance, and texture). The result showed that the use of 30% rusip fermentation solution was able to inhibit the formation of histamine and produced the lowest histamine levels of 29.80 mg/100 g. The number of histamine-forming bacteria is positively correlated with histamine content during storage. Based on the organoleptic value (aroma, appearance, and texture), the use of 30% rusip fermentation solution was still received by panelists and fulfilled the best quality requirements according to SNI 2717-1-2009 until the fifth day of storage compared to the other treatments.

This research aims to know the level of freshness of mackerel (Rastrelliger kanagurta (Cuvier, 1816)) contained in Rancaekek market, Resik market, and Tanjungsari market. Methods of the research was survey methods and the level of freshness of the sample using organoleptic test. The samples were observed organoleptically including the appearance of the eyes, gill appearance, mucus appearance, meat condition, aroma, and texture. Based on observations on the freshness of mackerel from the parameters of eye appearance, gill appearance, mucus condition, meat condition, aroma, and texture, it can be concluded that the fish marketed by Rancaekek market scored 7.1, which means that it is in the fresh category, fish marketed in the Resik market got a score of 7.4, which means it is in the fresh category, and the fish marketed by the Tanjungsari market gets a score of 6.9, which means that it is within the fresh limit.

Opis:
Aims of the research are to determine the type of activated carbon with high absorption rate in absorbing heavy metals of lead in green shells. This research used experimental method with complete randomized design then analyzed used analysis of variance and duncan test to see the decrease of lead in green shells by using different charcoal filters. The results showed that the highest decrease in green shell was by using coconut shell activated filter are 0,28 with a decrease percentage of 36,51%. The best lead decrease in water maintenance coconut shell activated filter treatment are 0,33 ppm. The coconut shell activated charcoal has a low ash content compared to other types and large pore charcoal size. Factors that supporting the metal absorption by charcoal include ash content on charcoal, charcoal pores, carbon concentration and pH concentration. Water quality measurements were measured in the morning and evening as supporting parameters in the study. Water quality measurements are in a range that can still be tolerated by green shells. Based on these results it can be concluded that the use of coconut shell activated charcoal is the best type of charcoal in lowering lead in green shells.

Opis:
Hairtail fish (Trichiurus lepturus Linnaeus, 1758) are a major commodity of high economic value in Pangadaran. This study aims to determine the most selective fishing gear for hairtail fish commodities based on the frequency of hairtail fish length, the proportion of the main catch and by-catch in Pangandaran District. Data collected are primary and secondary data. Primary data consists of catch data and fish size length. The catch is obtained by collecting the results of landing fish with gill nets and beach seines. Fish size length data obtained through direct measurement when the fish is landed. Secondary data collected is data on capture fisheries production in Pangandaran District. Data analysis consisted of calculation of length size distribution and comparison of main and by-catches with fishing gears. The analysis was carried out with the help of Microsoft Excel software. The results of this study indicate that hairtail fish in Pangandaran District were captured using gill nets and beach seines. Based on the results of the research conducted on August 2018 until January 2019, it can be concluded that gill net fishing gears are more selective compared to beach seines based on several parameters observed, namely the length distribution and the proportion of main catch : by-catch. The results showed that the comparison of the length distribution of hairtail fish that was appropriately caught between gill nets and beach seines was 85.74% : 30,74%. Comparison of the proportion of main catch : by-catch between gill nets and beach seines was 52.38%: 23.57%.

Opis:
The fishing ground can be determined by detecting oceanography parameters in seawater area. One of the oceanographic parameters that can be used is chlorophyll-a. This research aims to analyze the relationship between chlorophyll-a and total catch of shortfin scad along with potential map areas for fishing shortfin scad (Decapterus sp.) in Pekalongan seawater. The research was conducted in two stages, which are field data collection in January and downloading and processing satellite image data in February. This research used the survey method with spatial analysis. Primary spatial data used is the distribution of chlorophyll-a and data of shortfin scad fishing production. The study shows an average concentration of chlorophyll-a from 2013-2017 in Pekalongan seawater ranges around 0,16 - 1,55 mg/m3. The result of linear regression test shows that chlorophyll-a has a role as one of the factors that influence the total catch of shortfin scad in Pekalongan seawater, East Java by 23%. Other factors influence the remaining 77%. Based on the assessment of fishing ground, there are 25 potential coordinate points of shortfin scad fishing area in Pekalongan seawater that can be categorized as a potential fishing ground.
