Opis:
The objective of this research was to determine the influence of iota-carrageenan and its acid and enzymatic hydrolysates on the physical properties of milk ice cream mixes. The main factors considered were the Turbiscan stability index, backscattering profile, particle size distribution and median diameter (D50), the consistency index and the flow behavior index of ice cream mix before and after 24 h of maturation at 4°C. The microstructure of emulsion was also analysed based on confocal laser scanning microscopy (CLSM). The addition of iota-carrageenan resulted in lower stability of emulsion compared to emulsions with its acid and enzymatic hydrolysates. The sedimentation, coalescence and flocculation were observed based on the backscattering profile and CLSM images. The addition of stabilisers contributed to an increase in D50 of ice cream mix from 17.56 to 37.05–45.50 µm before maturation and from 34.73 to 46.73 µm after maturation. The iota-carrageenan after commercial lactase treatment improved the stability of milk ice cream mixes by increasing the consistency index to 0.104 and a flow behaviour index to 0.702. Finally, it may be concluded that the stabilisers used – iota-carrageenan and its hydrolysates – significantly influenced the physical properties of milk ice cream mixes and, hence, can be used as beneficial ingredients in the recipe of milk ice cream mixes.

Avocado pulp is low in sugar contents but quite high in dietary fiber, nutrients, and phytochemicals with potential health benefits. In this study, the avocado pulp was incorporated into ice cream. The effects of replacing milk fat with avocado on the physical and chemical properties of ice cream and consumer acceptability were evaluated. Milk fat-based ingredients of the ice cream were partially replaced with avocado pulp at ratios of 10, 20, and 30% (w/w). All ice creams were subjected to physical and chemical analyses and were evaluated in sensory acceptability tests. Replacing milk fat with avocado pulp significantly reduced moisture content, protein, and fat content, while it increased the carbohydrate (3.70 to 7.91 g/100 g) and crude fiber content (0.39 to 1.38 g/100 g). A higher content of avocado pulp caused a reduction in overrun and retarded the melting rate due to the effect of high fiber content. Increased viscosity and hardness were observed. The ice cream with the highest avocado pulp content had approximately 3-fold higher total phenolic content determined by the Folin-Ciocalteau method and 2-fold higher antioxidant capacity evaluated as DPPH• and ABTS•+ scavenging activity, and ferric reducing antioxidant power compared to that of the control. Sensory evaluation showed the 20% (w/w) avocado pulp was the suitable ratio for incorporating in the ice cream, which showed a good level of overall acceptability. Thus, our results suggest the potential use of avocado pulp to replace milk fat in frozen dairy products.

Opis:
The differences in the butter content of cholesterol depending on the butter plasma acidity and type of lactic acid bacteria used for cream ripening were examined. Statistically significant effect of the plasma acidity on the content of cholesterol in butter was shown. Lower content of cholesterol was found in the butters with the higher plasma acidity. The butter content of cholesterol was also found to decrease when the Lactobacillus acidophilus strains, unusual in butter production, were employed for cream ripening.
Przebadano zróżnicowanie zawartości cholesterolu w maśle w zależności od stopnia ukwaszenia plazmy oraz rodzaju stosowanych szczepionek bakterii fermentacji mlekowej w procesie dojrzewania biologicznego śmietanki (tab. 1). Badania wykazały istotny statystycznie wpływ stopnia ukwaszenia plazmy masła na zawartość w nim cholesterolu. Niższą zawartość cholesterolu stwierdzono w próbkach o wyższej kwasowości plazmy (tab. 2, 3, 4; rys. 1, 2). Wykazano także redukcję zawartości cholesterolu w maśle w wyniku zastosowania nietypowych przy tego typu produkcji szczepów Lactobacillus acidophilus.
