he movement toward commercialization of the process and the recent actions of various governmental agencies to accept irradiated foods as wholesome, even when high doses are applied has stimulated increased interest in this treatment. Concern for the fate of vitamins when foods are irradiated is almost entirely centered on maintenance of their biological function as essential nutrients. The aim of this work was to assess the effects of ionizing radiation on vitamin A and ßeta-carotene contents in commercialized food products of animal origin, specifically fresh bovine liver and pork pâté de foie. As present Brazilian legislation has no restriction of dose limits to be applied on foods, the 60Co gamma irradiation doses for these experiments were 3 kGy and 30 kGy. The results show a full retention of vitamin content when the applied dose was 3 kGy and a loss of about 60% when the dose was 30 kGy. When applying high doses, it would be necessary to consider this content reduction and proceed to a vitamin supplement when necessary.

Introduction and aim. Vitamin-A-deficiency is a public health problem among preschool children of Nigeria. Study determined the contribution of bread and biscuits to vitamin A-daily-requirement of preschool children in Lagos-State, Nigeria. Material and methods. A community-based-study using a cross-sectional-design with analytical component was carried out from 2013-2015. Multi-stage-sampling-technique was used to select mothers of preschool-children (n=1599) in 5 Local-Government-Areas of Lagos. Respondents’ socio-demographic information and samples consumption-pattern were collected using validated, food-frequency-questionnaire/dietary recall. Retinyl palmitate content of randomly selected commonly-consumed brands of oven-fresh-bread stored for 5-days and biscuits (30- to 60-days) at prevailing outdoor-market-temperatures were analysed using High-Performance-Liquid-Chromatography. Contribution to preschool children’s vitamin A-daily-requirements were determined. Data were analysed using Student’s t-test and ANOVA at p<0.05. Results. Mean age of preschool children was 31.44±5.28 months. Mean intakes of samples were bread (117.6 ±15.9 g/d) and biscuits (59.8±27.9 g/d). Range of contribution to vitamin-A-daily-requirement of preschool-children was 0-178.4 %. Samples contribution to vitamin A-daily-requirement of pre-school-children were oven-fresh bread (68.3 %); 5 days bread (20.7%); 30-days biscuits (25.0%) and 60-days biscuits (6.8%). Overall contribution to vitamin A-daily-requirement were bread (51.4%) and biscuits (22.4%). Statistically significant difference existed between samples contribution and vitamin-A-daily-requirement of preschool children. Conclusion. Bread and biscuits samples contributed significantly to the vitamin-A-daily-requirement of preschool children.

Opis:
Long-term exposure to cadmium (Cd) leads to the development of a number of conditions associated with liver and kidney damage, reproductive and cardiovascular disorders, in addition to visual impairment, blindness and hearing loss, among others. Cadmium has been classified as a human carcinogen by the International Agency for Research on Cancer. The toxicity of Cd is related to its pro-oxidant properties and the associated increase in oxidative stress. Antioxidant ingredients may be helpful in preventing the adverse effects of Cd. The effect of well-known antioxidant vitamins (E, C, A and β-carotene) in the prevention of Cd-induced toxicity is presented in this study. Numerous studies in animal models have shown that the effects of vitamins: E, C, A, and β-carotene were effective in reducing Cd concentrations in organs and tissues and reduced Cd-induced changes in liver, kidney, and reproductive, circulatory, nervous, immune, and respiratory systems. In contrast, the limited number of human studies does not allow to accurately determine the role of these nutrients in reducing Cd-induced toxicity, indicating the need for further studies clarifying the role of antioxidant vitamins in reducing Cd-induced toxicity. However, it seems reasonable to promote the consumption of natural food products that are sources of antioxidant vitamins in groups of people with occupational and environmental exposure to Cd.

The aim of the study was to evaluate the stability of vitamin C and beta-carotene in the freeze-drying process compared to other thermal drying methods. Tomato puree was selected as a model product for testing the stability of vitamin C and vitamin A in drying processes, due to its properties, such as: appropriate consistency, which was favorable for the analyzes performed, and the presence of the above-mentioned vitamins. Model studies were performed on the stability of vitamin C and betacarotene under the conditions of air-drying at 105°C, drying under reduced pressure at 70°C and freeze-drying on a tomato puree matrix. Results proved that freeze-drying is superior to other drying methods with the lowest losses of both vitamin C (losses of 4%) and beta-carotene (losses of 25%) in tomato purée. In the case of drying at 70°C under reduced pressure, the loss of beta-carotene is 55%, and vitamin C - 78%. In the case of air-drying at 105°C, vitamin C is 100% degraded, and the loss of beta-carotene is 91%. Moreover, it can be concluded that vitamin C in a higher dose has a protective effect on carotenoids.

Opis:
The energy exercised at combating Vitamin A deficiency is a crucial feat to public health challenge among vulnerable niche of people in developing nations. Effort to ameliorate the prevalence of vitamin A deficiency, bio-fortified cassava processed to garri which encompasses more pro-vitamin ‘A’ carotenoids than the white cassava has been presented to such areas. This study therefore examined the awareness, perceptions and willingness to pay for Pro-vitamin ‘A’ garri in Oyo state, Nigeria. Multistage sampling procedure was used to collect data from 150 sampled respondents and analysed using descriptive statistics and double-hurdle model. Results revealed that about 47.5% of the respondents are aware of the availability of pro-vitamin ‘A’ garri but have low level of awareness. However, 67.3% of the consumers are aware of pro-vitamin A’’ garri from agricultural extension agents, radio and friends. The maximum, minimum and average amount the consumers were willing to pay for pro-vitamin ‘A’ garri per kilogram was ₦500 ($1.39), ₦160 ($0.44) and ₦220.08 ($0.61) respectively. The double hurdle model showed that income, other income sources and awareness (agricultural extension agents and friends) exerted significant and positive influence on consumers’ willingness to pay for pro-vitamin ‘A’ garri. Similarly, education and radio awareness significantly and positively influenced the amount willing to pay for one kilogram of pro-vitamin ‘A’ garri while household size exerted a significant and negative influence. The study therefore advocate for nutrition education as an important tool in communicating the nutritional and health benefits of bio-fortified crops and also an important factor that affects acceptability of bio-fortified crops.

Opis:
Objectives The increasing number of devices emitting electromagnetic radiation (EMR) in people’s everyday life attracted the attention of researchers because of possible adverse effects of this factor on living organisms. One of the EMR effect may be peroxidation of lipid membranes formed as a result of free radical process. The article presents the results of in vitro studies aimed at identifying changes in malondialdehyde (MDA) concentration – a marker of lipid peroxidation and antioxidant role of vitamin A during the exposure of blood platelets to electromagnetic radiation generated by liquid-crystal-display (LCD) monitors. Material and Methods Electromagnetic radiation emitted by LCD monitors is characterized by parameters: 1 kHz frequency and 220 V/m intensity (15 cm from display screen). The time of exposure was 30 and 60 min. The study was conducted on porcine blood platelets. The samples were divided into 6 groups: unexposed to radiation, unexposed + vitamin A, exposed for 30 min, exposed for 30 min + vitamin A, exposed for 60 min, exposed for 60 min + vitamin A. Results The MDA concentration in blood platelets increases significantly as compared to control values after 60 min of exposure to EMR. A significant decrease in MDA concentration after the addition of vitamin A was noticed. In the blood samples exposed to EMR for 30 and 60 min the MDA concentration was significantly increased by addition of vitamin A. Conclusions The results show the possibly negative effect of electromagnetic radiation on the cellular membrane structure manifested by changes in malondialdehyde concentration and indicate a possible protective role of vitamin A in this process. Opis:
Background. Antioxidant vitamins such as alpha-tocopherol (vitamin E), ascorbic acid (vitamin C), and beta-carotene (provitamin A), play a significant role in protecting the body from an excess of free radicals. The vitamin content of the diet is thus very important. Objective. To assess whether the dietary intake of vitamins A, C and E is adequate in a selected group of adolescents living in Warsaw. Material and methods. The mean vitamin consumption was estimated using three-day dietary records whilst vitamin contents of selected foodstuffs were obtained from Food Composition Tables. Both were related to Polish nutrition standards applied to adolescents; i.e. EAR (Estimated Average Requirement) for vitamins A and C and AI (Adequate Intake) for vitamin E. Results. Dietary vitamin C in adolescents and vitamin E in girls were around 18-25% lower than that recommended. Diets that were deficient in vitamins C and E were recorded in 47% to 67% adolescents. Conclusions. It is therefore necessary to increase the consumption of vegetables and fruit which provide a valuable dietary source for these vitamins.

Opis:
Vitamins D, C, E and A, which belong to antioxidants, exhibit anticancer activity. The mechanism of vitamin D antitumor activity involves the inhibition of cell proliferation, stimulation of apoptosis, inhibition of angiogenesis and an increased activity of metalloproteinases in the extracellular matrix. Vitamin D prevents the development and progression of breast cancer; its lower levels in the serum of premenopausal women are linked to the development of triple negative cancer (E-, PR-, HER2-). Cohort studies on the effects of VDR (vitamin D receptor) polymorphisms and studies related to vitamin D supplementation in postmenopausal women in the context of reduced risk of breast cancer are controversial. Vitamin D exerts a protective effect against ovarian and endometrial cancer. Vitamin C protects cells against the formation of mutagenic nitro compounds, enhances the immune system by promoting the activity of NK, T and B cells. Vitamin C supplementation improves treatment outcomes in disseminated breast cancer; the vitamin acts synergistically with cisplatin, it increases paclitaxel and doxorubicin cytotoxicity and abolishes toxic effects of tamoxifen. Vitamin C combined with chemotherapy in ovarian cancer prolongs patient’s survival. It increases sensitivity to cisplatin. Vitamin E exerts anticancer effects via multiple pathways. Its increased administration reduces the risk of breast cancer and ovarian cancer. The reduction in the incidence of endometrial cancer remains controversial. Vitamin A also exerts antioxidant effects. The compound reduces the incidence of DNA damage in cells exposed to hydrogen peroxide and protects cell organelles (including mitochondria) against the negative impact of lipid peroxidation. It reduces the risk of multiple tumors, including breast and cervical cancer.
Witamina D oraz witaminy C, E i A, należące do antyoksydantów, wykazują aktywność przeciwnowotworową. Mechanizm działania witaminy D obejmuje hamowanie proliferacji komórkowej, stymulację apoptozy, hamowanie angiogenezy i zwiększanie aktywności metaloproteinaz macierzy pozakomórkowej. Witamina D zapobiega rozwojowi raka piersi i progresji choroby; niższe jej stężenia w surowicy kobiet przed menopauzą wiążą się z rozwojem raków potrójnie negatywnych (E-, PR-, HER2-).

Opis:
Ophthalmic drug delivery is an important area of research that aims to improve the efficacy and convenience of treatment for various eye conditions. There are multiple ways in which drugs can be delivered to the eye, including eye drops, ointments, gels, and inserts. The most prevalent way of administering medication to the eye is through eye drops. They are easy to use and can be self-administered by patients. Nonetheless, eye drops have the disadvantage of being prone to removal by tears, which may result in insufficient drug absorption and reduced effectiveness. Irregular use of active substances can exacerbate the disease, resulting in prolonged treatment with questionable efficacy. Soft contact lenses that serve as ophthalmic drug delivery systems (DDS) can become a viable substitute for traditional treatments. These polymeric lenses can be embedded with various active compounds, some of which are not readily soluble in water or physiological fluids. One such drug is Cyclosporine A (CyA), an immunosuppressant with a high molecular weight and hydrophobic properties, chronically used to treat dry eye syndrome (DES). The article discusses the development of a method for modifying Hilafilcon B contact lenses obtained from drugstores with Cyclosporine A (CyA). The drug was administered to the lenses using an immersion technique, and the process parameters were monitored to control drug release efficiency and profile. The drug release was measured in an Artificial Lacrimal Fluid (ALF) buffer, mimicking tear fluid with a pH of 7.9. The stability of CyA in this buffer was assessed. For the parameters used, the best drug application and release profile was achieved by immersing the contact lenses for 24 hours at 25°C in a CyA solution containing 20 μg/ml of the active substance and adding 5 mg/ml of Vitamin E.

Opis:
Synthetic analogs of vitamin D for potential use in differentiation therapy should selectively regulate genes necessary for differentiation without inducing any perturbations in calcium homeostasis. PRI-1906, an analog of vitamin D2, and PRI-2191, an analog of vitamin D3 bind nuclear vitamin D receptor (nVDR) with substantially lower affinity than 1,25-dihydroxyvitamin D3 (1,25-D3), but have higher differentiation-inducing activity as estimated in HL-60 leukemia cell model. To examine how their increased differentiation-inducing activity is regulated we tested the hypothesis that membrane-mediated events, unrelated to nVDR, take part in the differentiation in response to PRI-1906 and PRI-2191. The induction of leukemia cell differentiation in response to the analogs of vitamin D was inhibited by LY294002 (phosphatidylinositol 3-kinase inhibitor), PD98059 (inhibitor of MEK1,2, an upstream regulator of extracellular-signal regulated kinase) and rapamycin (p70S6K inhibitor) pointing out that activation of signal transduction pathways unrelated to nVDR is necessary for differentiation. On the other hand, inhibition of cytosolic phospholipase A2 accelerated the differentiation of HL-60 cells induced by either 1,25-D3 or by the vitamin D analogs suggesting possible existence of a feedback loop between extracellular-signal regulated kinases and phospholipase A2.
