    Opis:
    Recent traceability requirements create necessity of organization of the food production process in the completely new way. This way of production organization is typical rather for large industry, than for traditional way of work at the rural areas. This fact generates tensions as well as resistance of the farmers, especially farmers working in traditional way. This paper presents new ideas of industrial application of automation standards and methodologies for reliable, robust and user-friendly food traceability system. Due to the high level of automation and application of industrial IT solutions together with multimodal data transmission, presented traceability system can be implemented in traditional food production farms and operated intuitively by personnel without specialized training. As a result application of presented system will signifi-cantly reduce tensions and resistance connected with implementation of new technologies in tradi-tional food production farms.

    Billions of people in the world are at risk of getting unsafe food. There is an urgent need to improve efficiency and effectiveness of food supply chains. The global population is expected to reach at least 9 billion by the year 2050, requiring up to 70% more food than nowadays and demanding food production and distribution to become much more sustainable. Today, food safety is a worldwide concern due to a number of food safety scandals. As supply chains become more globalized and complex, the ability to track and trace products from fork to farm becomes more difficult but remains equally important. Good traceability may minimize the production and distribution of unsafe or poor quality products. It allows targeting the product affected by a food safety problem, minimizing disruption to trade and any potential public health risks. The objective of this paper is therefore to conduct a comprehensive analysis of traceability methods and technologies in food supply chains.

    Opis:
    Traceability in solids is difficult to ensure, as in piece goods. The batch as a whole will change constantly mixing processes by their composition and size. For traceability not only an appropriate identification system but also an approach to batch management is required. The systems supporting traceability provides a sophisticated batch concept and a batch coding persecution of lots within a single company, between customer-supplier dyads, as well as along the entire distribution chain. The introduction of a traceability systems is connected with technical and organizational effort. In the event of an inter-company implementation further agreements with suppliers and/or customers are required. Is a traceability system implemented, but it offers flexible opportunities to share quality information and thus to improve quality across the entire grain chain.
    Rozporządzenie 178/2002 UE nakłada na wszystkich uczestników łańcucha żywnościowego obowiązek identyfikowalności (traceability), czyli śledzenia pochodzenia produktu. Jest ono trudniejsze w przypadku towarów sypkich niż towarów jednostkowych. Poszczególne partie podlegają procesom mieszania się, z punktu widzenia składu oraz wielkości. W celu zapewnienia identyfikowalności wymagany jest nie tylko właściwy system identyfikacji, ale również zarządzanie partiami. Systemy wspierające identyfikowalność powinny być przystosowane do odpowiedniej systematyki i sposobu kodowania partii towarów wewnątrz przedsiębiorstwa, jak i pomiędzy poszczególnymi ogniwami łańcucha dystrybucji. Wdrożenie systemów wspierających monitorowanie pochodzenia produktów wiąże się z nakładami technologicznymi i organizacyjnymi. W przypadku implementacji międzyorganizacyjnej niezbędne są porozumienia między dostawcami i/lub dostawcami. Wdrożenie odpowiedniego systemu identyfikowalności pozwala na elastyczną wymianę informacji dotyczących jakości, a tym samym na poprawę jakości w całym łańcuchu dostaw.

    After the accession of Poland to the European Union farmers have to fulfil high food quality requirements. In accordance with the requirement 172/2002 of the European Commission, they should keep documentation regarding their part in the product’s flow in the food chain. This paper focuses particularly on the analysis to what degree requirements are satisfied by the analysed farms. A cluster analysis and a point assessment technique were used.
