Opis:
This article presents the results of the organoleptic evaluation of the hen eggs obtained from organic and conventional farms located in Pomeranian Province. The eggs were bought in the stores located in Gdynia. An organoleptic analysis of raw and boiled eggs from two kinds of egg farming, organic and conventional one, was performed. The eggs were assessed by 36 consumers. The analysis was carried out by means of double blind pick and organoleptic evaluation was done with five point rating scale. The final result was calculated assuming the determined significance coefficients for the defined quality parameters. The carried out studies confirmed the increasing interest in organic food, including organic hen eggs, however, the high price is a factor limiting the consumption of organic eggs. The organoleptic quality of the organic eggs was rated very high, whereas their tastiness (palatability) is highest value of the organic eggs. The low rating of conventional eggs could be caused by the long storing time and inappropriate storage conditions.
Artykuł prezentuje wyniki konsumenckiej oceny organoleptycznej jaj kurzych pochodzących z hodowli ekologicznej i konwencjonalnej prowadzonych w województwie pomorskim.

Opis:
The objective of the study was to determine the activity of antioxidant enzymes and the level of GSH and MDA in yolk and albumen of hen’s eggs. The experiment was carried out with 99 hens of three heritage breeds (‘Greenleg Partridge’ - group I, ‘Sussex’ - group II, ‘Rhode Island Red’ - group III). Layers were reared in the litter system and had outdoor access. Birds were fed ad libitum standard diets based on concentrates for laying hens and had free access to water throughout the experiment. All the groups were managed under uniform environmental (air humidity and temperature, lighting programme) and feeding conditions. At 48 weeks of age, 6 eggs from each group were collected. In the samples of egg yolks and albumens the concentration of GSH and MDA, and activity of SOD, GPx and CAT were estimated. The results were statistically analysed by one-way analysis of variance and significant differences were estimated with Duncan’s multiple range test. The highest activity of SOD, the highest level of GSH and the lowest level of MDA were characterised by eggs from ‘Sussex’ hens, which may indicate their best quality. Based on the obtained results, it can be concluded that the activity of antioxidant enzymes (mainly SOD) and the levels of GSH and MDA which occur in eggs may depend on the breed of hens.

Opis:
The objective of this study was to evaluate the risk of soil transmitted zoonotic helminth infections for families with young children, inhabitants of villages in the Mazowieckie Province of Central Poland. Epidemiological survey was conducted at 33 randomly selected households with 2–3 children present. Examination of soil samples from yards surrounding the houses for the presence of geohelminth eggs was conducted, the households were inspected, and family members interviewed using a designed questionnaire. Among 55 localities examined, i.e. 33 backyards, 10 vegetable gardens and 12 sandpits, contamination was found in 2 backyards (6.1%) and 1 sandpit (8.3%) at 3 households (9.1%). Of the total 550 examined soil samples, 4 (0.7%) were found to contain Trichuris and Toxocara eggs, with an average density of 1.5 and 2.0 eggs per sample. The study showed a low level of soil contamination, which was the result of inhabitants care about the sanitation of their domiciles. However, the results of the questionnaire survey demonstrated the need to warn rural residents about the risk factors for zoonotic helmints infections. In particular, parents should be advised how to minimize the threat of parasitic diseases for children in the rural environment. The presented study showed that promotional campaigns implemented in recent years on the prevention of parasitic zoonoses have had little effect to increase the awareness of the rural community. The present results confirmed that Toxocara is the most common zoonotic agent among geohelminths in the rural environment.

Opis:
In the present work the carbon and nitrogen isotopic composition of food products bought in the retail trade in Warsaw is demonstrated. The research was carried out using meat (pork, chicken), hen eggs and honey. These products originated from the conventional and ecological farms. The values of the isotopic ratios are expressed as δ notation and correspond to the international standards (V-PDB for δ13C, and air for δ15N) according to the following general formula: δ(‰) = [(R sample / R standard) – 1] × 1000, where R represents the ratio between the less abundant and more abundant isotopes, in particular 13C/12C and 15N/14N. The results received in our laboratory, were compared with results presented in the literature for similar products. The results of the study show that the N and C stable isotope ratios in the tested products can be applied to verify their authenticity.

Opis:
From the sanitary and epidemiological aspects, information concerning the developmental forms of intestinal parasites, especially the eggs of helminths present in our environment in: water, soil, sandpits, sewage sludge, crops watered with wastewater are very important. The methods described in the relevant literature may be classified in various ways, primarily according to the methodology of the preparation of samples from environmental matrices prepared for analysis, and the sole methods of counting and chambers/instruments used for this purpose. In addition, there is a possibility to perform the classification of the research methods analyzed from the aspect of the method and time of identification of the individuals counted, or the necessity for staining them. Standard methods for identification of helminths’ eggs from environmental matrices are usually characterized by low efficiency, i.e. from 30% to approximately 80%. The efficiency of the method applied may be measured in a dual way, either by using the method of internal standard or the ‘Split/Spike’ method. While measuring simultaneously in an examined object the efficiency of the method and the number of eggs, the ‘actual’ number of eggs may be calculated by multiplying the obtained value of the discovered eggs of helminths by inverse efficiency.

Opis:
Introduction and objective. The main source of many zoonoses is soil contaminated with feline and canine faeces. Thus, the aim of this study was to estimate the prevalence of intestinal parasites in stray dogs and cats adopted in Lodz shelter (Poland). Materials and methods. In total, 163 faecal samples were collected from 95 dogs and 68 cats from 2011 to 2012. The samples were processed by sedimentation techniques using Mini Parasep®SF. Results. Six parasite genera belonging to protozoa, cestoda, and nematoda, were found in dogs, while eight were found in cats. Out of the 163 fecal samples, 37.4% were positive for the presence at least one species of intestinal parasites. The majority of positive dog samples contained eggs from Toxocara and Trichuris genera, and the family Ancylostomatidae, while Toxocara and Taenia eggs, as well as Cystoisospora oocysts, predominated in cat faeces. A significantly higher prevalence of parasites was noted in cats (48.5%) than in dogs (29.5%) (χ2=6.15, P=0.013). The Toxocara genus was the most prevalent parasite in both populations; eggs were found in 27.9% and 16.8% of cats and dogs, respectively. Animals younger than 12 months of age showed higher infection rates with Toxocara, but differences were not statistically significant. The average numbers of Toxocara eggs/gram of faeces in positive puppy and kitten samples were over 5 and 7 times higher than in older dogs and cats, respectively. Mixed infection were found in dogs (5.3%) and cats (8.8%). Conclusions. Cat faeces represent a more important potential source of environmental contamination with zoonotic parasites than dog faeces. Among the detected parasites of stray dogs and cats, Toxocara present an important zoonotic risk for the local human population, especially children.
