Opis:
Shaping the quality of food aroma as an important factor in product selection and acceptance is still the current goal of the conducted scientific research. Many studies indicate that the quality of aroma in the hedonistic category depends on the volatility and concentration of odorants that can cause extremely desirable or undesirable sensory sensations. In turn, indicators for assessing the impact of selected factors affecting the quality of food aroma are retention and the odor activity value (OAV). Food flavorings are preferred because of their standardized quality, strength of aroma and sterility, while super-spices due to their multifunctionality. The attention is also drawn to the growing interest in food emulsions as universal carriers of aroma compounds, and the possibility of shaping their stability in foods, especially those with reduced fat content, by appropriate selection of natural emulsifiers and/or thickeners.

Fixation is a necessary tea processing step that affects the quality of tea, including its aroma. However, there are no guidelines to follow whether the Cyclocarya paliurus leaves need to be fixated to produce tea. The aim of this study was to determine the volatile metabolites in fixated and unfixated C. paliurus tea by gas chromatography-mass spectrometry in order to identify the volatile compounds that differentiate them and establish the key aroma compounds. Compared with the unfixated tea, the fixated tea had higher contents of amines, phenols, nitrogen compounds, ether, alcohol, terpenoids, ester and aromatics. A total of 147 metabolites that differentiated both types of teas were identified using principal component analysis (PCA) and orthogonal partial least squares discriminant analysis (OPLS-DA). Among them, 22 and 25 volatile compounds of teas processed without and with fixation, respectively, had relative odor activity values greater than 1. These metabolites had green, fruity, sweet, woody, herbal, floral, fresh, spicy, earthy and waxy odor. This study showed that fixation technology improved the quality of C. paliurus tea, which provided the basis for the production of C. paliurus tea, and promoted the standardization of the preparation technology of C. paliurus tea.

Volatile compounds are very important to the flavour and quality of the wine. The study aimed to determine the effect of grape variety (Rondo and Zweigelt), yeast, malolactic fermentation (MLF) and yeast×MLF interaction on the content of volatile compounds in red wines. The wines were produced by sequential inoculation with five commercial yeast strains and a commercial lactic acid bacteria (LAB) strain (induced malolactic fermentation) as well as by inoculation with five commercial yeast strains and without LAB inoculation (spontaneous malolactic fermentation). The volatile compounds were determined by headspace solid-phase microextraction/gas chromatography-mass spectrometry (HS-SPME-GC/MS). Forty-six volatile compounds belonging to alcohols, esters, acids, aldehydes, ketones, furan compounds, sulfur compounds and volatile phenols were identified in the wines. The grape variety was the factor with a significant impact on the highest number of volatile compounds, 32 out of 46. Furthermore, 7 compounds were affected by yeast, 10 by MLF and only 3 by yeast×MLF interaction. Characteristic bands in Fourier transform infrared (FTIR) spectra were assigned to the vibrations of functional groups of volatile compounds. The whole FTIR spectra were analysed in detail; three characteristic spectral ranges for different classes of volatile compounds such as 3650-2700, 1750-1500, and below 1500 cm-1 were shown. The most remarkable spectral changes were observed for the last two areas.

Opis:
Two instrumental techniques applied for food quality assessment such as gas chromatography-olfactometry (GC-O) and electronic nose (e-nose) are characterized. The principle of each technique and typical analytical approaches in odour determination are briefly described. Furthermore, the examples of applications, performed also in the author’s laboratory, are given.
Scharakteryzowano dwie techniki instrumentalne stosowane w ocenie jakości produktów spożywczych, tj. chromatografię gazową w połączeniu z detekcją olfaktometryczną oraz nos elektroniczny. Opisano zasady działania obu technik oraz typowe procedury analityczne stosowane w ocenie zapachu. Ponadto podano przykłady praktycznego zastosowania obu technik, włącznie z tymi, które wykorzystano w pracowni autorów.
