W artykule przedstawiono wyniki badań dotyczących oceny warunków chłodniczych w transporcie mięsa i jego przetworów. Analizowano transporty bezpośrednie i pośrednie, wykonywane w sezonie letnim i zimowym. Wykazano, że w przypadku dostaw hurtowych a zwłaszcza detalicznych do wielu odbiorców występują trudności w utrzymaniu obowiązujących w przewozie mięsa norm termicznych. Szczególny wpływ na nadmierny wzrost temperatury w nadwoziach izotermicznych mają operacje związane z wyładunkiem poszczególnych partii towarów w czasie, których zachodzi konieczność wielokrotnego otwierania drzwi komory chłodniczej. Stwierdzono, że pomimo ciągłej pracy agregatów chłodniczych występują trudności w osiągnięciu właściwego zakresu temperatury w przestrzeni ładunkowej. Problemy ulegają nasileniu w sezonie letnim.
The article presents results of the research concerning the evaluation of cooling conditions in the transportation of meat and meat products. Direct and indirect deliveries in the summer and winter season were analysed. It was shown that in the case of wholesale and retail delivery to many receivers there occurred difficulties in maintaining temperature norms applying to the transportation of meat. Activities associated with unloading particular parts of goods, when there is a necessity to open the door of the cooling chamber, had particular influence on the excessive increase in temperature in the isothermal body. It was stated that despite the continuous operation of the refrigeration units there occurred difficulties in reaching appropriate temperature in the loading space. A particular intensification of problems with maintaining appropriate temperature in the isothermals was observed in the summer season. - Źródło:
