- The effect of phospholipids, sulfur compounds and pheophytins on the oxidation kinetics of double improved rapeseed oil was examined in model systems. Also, the oxidative stability of oils from various stages of industrial refining, assuming they may change relations between the minor components was studied. A correlation was found between oxidative stability and phospholipid content in the oil. Pheophytins revealed a strong content-dependent prooxidative activity, which decreased upon darkness and phospholipids. Sulfur compounds only slightly improved oil oxidative stability. Among the selected industrial oils, crude oil revealed the greatest oxidative stability, while alkali refined oil the lowest.
