Minerals are among the most important substances promoting the beneficial effect of tree sap on a human body. However, the composition of tree saps is characterised by high intra- and interspecies variability and it is also known to vary in time even when collected from trees of the same species. The aim of this work was to evaluate the time-related variability of the mineral content in birch tree sap, to prove dependencies between the mineral composition and basic physical parameters of tree saps, and to refer the results obtained in our study to the Polish nutritional standards. Based on the results, it can be concluded that there is no point in time when birch sap invariably achieves superior nutritive values. This is proven by the fact that two of the three tested birch trees had a higher content of minerals at the beginning of sap collection, while the remaining one produced better sap at the end of the experiment. The differences in the mineral composition of tree saps observed during the two-week study raise doubt about the nutritional benefits of their content. For example, one liter of sap collected during two weeks from the three tested birches supplied from 8.49 to 26.34%, 0.9 to 2.80% and 9.17 to 20.23% of the adequate intake of potassium defined in the Nutritional standards for the Polish population (2013). For zinc, the recommended dietary allowance value based on the Nutritional standards for the Polish population (2013) was covered by one liter of sap in the following ranges: from 0 to 2.11%, from 0.85 to 21.50% and from 7.34 to 15.63%. Moreover, it is impossible to estimate the nutritional value of tree saps, understood as the mineral content, from the physical parameters of birch saps. The values of the examined parameters did not correspond reliably to the mineral content. Nonetheless, electrolytic conductivity may reflect more faithfully the nutritional benefits. The higher the EC in the saps from two out of the three birch trees tested, the higher the expected concentration of minerals important for humans, i.e. calcium, zinc and potassium.

Celem przeprowadzonych badań było określenie zawartości cukrów prostych i sacharozy w wybranych odmianach cebuli pochodzących z poletek doświadczalnych założonych w trzech gospodarstwach hodowlano-nasiennych. Oznaczenia poszczególnych cukrów przeprowadzono za pomocą chromatografi i cieczowej HPLC z detekcją ELSD. Średnia zawartość sumy cukrów prostych i sacharozy w badanych odmianach cebuli była zróżnicowana i wynosiła od 3,01 do 4,71 g·100 g⁻¹ surowca. Najmniejszą średnią zawartością sumy oznaczanych cukrów odznaczała się odmiana Bila, największą zaś odmiana Majka.
The aim of this study was to determine the content of glucose, fructose and sucrose in the selected varieties of onion. The samples of eight varieties of onion were collected from the three plant breeding and seed production farms: Plantico Zielonki LLC, Polan LLC, Spójnia „Hodowla i nasiennictwo ogrodnicze” LLC. Following varieties were collected from each farm: Wola var., Bila var., Ławica var., Petra var., Błońska var., Wama var., Majka var. as well as Polana var. High-performance liquid chromatography system controlled with the Varian Workstation software version 6.9.1, consisting of two high pressure Varian LC 212 pumps, an autosampler Varian ProStar 410, an evaporative light scattering detector Varian ELSD 385 LC and an integrating module Varian Star 800, was used for analysing the content of sugars in the onions. The Cosmosil Sugar-D, 4.6 × 250 mm chromatographic column was used for chromatographic separation. Differences in the average sugar content have been identified. The average content of three sugars ranged between 3.01 and 4.71 g·100 g⁻¹ raw material. The lowest average concentration of three sugars was detected in the Bila var., and the highest in the Majka var. The biggest differences in the content of fructose, glucose, sucrose as well as total sugars, determined between three farms, were found for varieties Majka and Petra. Significant differences were also found in the case of sucrose content in Błońska var. and Ławica var. The highest average glucose and total sugars content were found in the Plantico Zielonki farm (1.722 and 3.773 g of the raw material · 100 g⁻¹ of raw material), while the lowest in the Spójnia farm (1.415 and 3,459 g of raw material · 100 g⁻¹ material).

Tree saps were once commonly used in the countries of Northern, Central and Eastern Europe. Although once almost forgotten, their popularity has been growing recently as part of an interest in organic food and traditional medicine. Tree saps, tapped mainly from birch and maple trees, are drunk both fresh and fermented or are used as raw material for the production of food products, e.g. syrups. The aim of this study was to determine the content of inorganic anions in tree saps, as this parameter is often associated with toxicity of plant products. We measured the content of chlorides, nitrates and sulphates in the saps of six tree species with high pressure ion chromatography with the conductometric detection method. We detected the presence of chlorides, nitrates and sulphates in the studied tree saps. The highest concentration of nitrates was in the saps tapped from Norway maple (65.578 mg dm-3) and boxelder (108.313 mg dm-3). On the other hand, the highest concentration of sulphates was detected in the white willow tree saps (112.512 and 35.389 mg dm-3), while the one of chlorides, in the hornbeam tree sap (47.257 mg dm-3) and the Norway maple tree sap (41.143 mg dm-3). The detected content of chlorides, sulphates and nitrates in the tree saps under study does not reach toxic levels. Therefore we conclude that tree saps do not pose any health threat to consumers regarding their content of inorganic ions. Additionally, we observed a high intra- and interspecies variability in the concentration of inorganic anions in saps. This observation should be taken into account while designing any quality monitoring protocol regarding tree saps.
