- The paper presents a unified assessment of food quality level. The quality of food as an object of evaluation of the characteristics of the chemical composition, displays objective function that depends on the individual characteristics of the products that can be determined experimentally. Multicriteriamodel ofevaluation food is reduced to the problem of optimization with a given objective function, which comprehensively considers all parameters of quality products, and clearly described the required characteristics of the product.
