- The aim of this paper was to determine the best conditions for a culinary process, in which nitrates and nitrite are removed from carrot at a possibly high degree and the losses in total carotenoids and ß-carotene are possibly small. lt was found that commercial carrot exhibited relatively high concentration of nitrates (330 mg KNO:Jkg carrot) at a presence of nitrites (0.6 mg NaNO2/kg). The highest concentration of nitrates and nitrites (290 mg KNO:Jkg and 0.64 mg NaNO2Jkg) contained the core, followed by the parenchyma (58.8 mg KNO:Jkg and 0.48 mg NaNOifkg), and the peel (20.6 mg KNO:Jkg and 0.36 mg NaNOifkg). The concentration of nitrates and nitrites in carrot changed upon the culinary processes and depended on their performance. Cooking decreased the content of these compounds at the highest degree (KNO3 by 56.9% and NaNO2 by 58.6%). Tue smaller decreases (KNO3 by 20.3% and NaNO2 by 58.3%) resulted from soaking of peeled carrot. The storage of peeled carrot in water appeared more expedient than on air because of a decrease in their content of nitrates an.d nitrites. In morsel-cut raw and cooked carrot stored at +4°C the content of nitrates decreased by 14.3% to 23.6% while that of nitrites increased by 125% to 248%. The content of total carotenoids and ß-carotene did not change much upon culinary processing.
