Veterinary Inspection - Opis:
- The aim of this article was to present important aspects of food safety policy in Poland. Ensuring the safety of products of animal origin is possible only if the producers obey the existing rules and regulations and with continuous control provided by the Veterinary Inspection. The multitude of food business operators (FBOs), and a long list of items they produce, are both essential factors to plan and to coordinate the activities of authorities by conducting risk assessment. Furthermore, the scarcity of human resources and time, in contrast to a large quantity of entities using additives and a long list of such products, makes impossible to inspect all the products manufactured by facilities that are under the supervision of the Veterinary Inspection. Consequently, it is essential to assess the minimal frequency of inspections for every FBO and to use the Risk Matrix (MR) or the Risk Priority Number (RPN) to choose product or additive to be inspected.
