Opis:
The present article evaluates and verifies the technological process of delicatessen rusks production in terms of its compatibility with the ISO 2200 norm. Risk analysis has been conducted which allowed to establish Critical Control Points (CCPs) and CPs – one CCP during the stage of raw material reception, and two CPs during heating and cooling. With the aid of the decision tree, critical borders for control measures for the CCP have been defined and located within the technological scheme reflecting the course of the technological process. Further requirements for CCP monitoring have been established, along with procedures for re-establishing the process and maintaining control, based on monitoring results. Finally, procedures for effective storing of HACCP documentation have been determined.

Food health safety has always been an important element for consumers. Enterprises in the food sector want to meet customer expectations and the requirements set out in national and international legislation and implement a variety of tools, methods, or techniques in their organizations. Increasing health safety and even improving the quality of produced food is possible through properly planned training of employees. This training should be tailored to the capabilities and needs of both employees and the enterprise. Nowadays, with the era of the COVID -19 pandemic, training in food safety becomes of particular importance, as the production of safe food is a basic objective to be taken into account by all employees. Under these circumstances, it seems appropriate to carry out additional training in the prevention of the spread of COVID-19 in the context of the health safety of the produced food. The aim of the present paper is to examine the subjective assessment of food employees regarding the amount and quality of food safety training in the COVID-19 pandemic. The research is a pilot study conducted at the turn of December 2020.

The purpose of the publication is to determine the level of consumer awareness regarding the knowledge of quality marks and food safety awareness in the aspect of purchasing decisions. The research covered a group of 51 respondents who were residents of the Silesian Voivodship. On the basis of literature research and analysis in the field of food quality and safety, the following hypothesis was formulated: By using generally known management methods, we can determine the degree of consumer awareness in terms of quality labels and food safety in the aspect of purchasing decisions. The research was conducted on a quarterly basis in 2018 based on a questionnaire (CAWI - Computer Assisted Web Interview). The results of research and their analysis have shown that consumer awareness regarding the awareness of quality marks increases, however, there is still a great need to build consumer awareness regarding the existence of quality marks and information that they provide to the consumer in terms of both quality and food safety. Research has shown that consumers are aware of the quality marks existence, but their knowledge about familiarity is still too small. It was shown that consumers, when making purchasing decisions, pay attention to product quality, price, quality certificate and ecological certificate. The factor that determines the safety of the product according to consumers turns out to be its composition. Consumers showed in research that they will not buy a product that has palm oil, sulfur dioxide, glucose-fructose syrup and aspartame.

The purpose of the work was to identify the potential microbial hazards that may occur during the manufacturing process of creamy cream cheese, and to present the means of their elimination or minimization. The analysis demonstrated that among the most crucial stages that should be particularly monitored are: the quality of raw materials, the control of pasteurization and souring parameters as well as temperature of product packaging, ensuring proper storage conditions of the finished product and hygiene throughout the production. Of these, the most critical step in the entire process (critical control points - CCP) is a heat treatment process which is pasteurization. On the basis of the analysis, it can be concluded that the monitoring of such a process and consistent adherence to Operational Pre-Condition Programs at the thermisation and centrifuging and later packaging, can help guarantee a safe product and its long shelf life.

Bezpieczeństwo żywności to ogół koniecznych do spełnienia warunków i działań, które muszą być podjęte podczas wszystkich etapów procesu produkcji żywności i obrotu handlowego żywnością, celem zapewnienia życia i zdrowia ludzi. Wiele osób nie zastanawia się nad tym, skąd pochodzi kupowana przez nich żywność, gdzie została wyprodukowana, w jakich warunkach. Duża cześć konsumentów nie czyta etykiet, aby sprawdzić, jakie polepszacze czy konserwanty zostały użyte. A to, co jemy wpływa na nasze zdrowie, życie. Żywność, która nie spełnia odpowiednich wymagań, może powodować różnorodne choroby, w tym nawet nowotwory. W artykule przedstawiono wyniki badań dotyczących postrzegania bezpieczeństwa żywności przez polskich konsumentów. Konsumenci mogli przedstawić swoją opinię na temat bezpieczeństwa żywności, ich przyzwyczajeń zakupowych, wiedzy na temat konserwowania żywności czy opakowań żywności. Badanie miało charakter ankietowy.

The purpose of the work was to identify the hazards relevant to the production of safe food and to assess the effects of a possible infection. The paper presents the microbiological hazards that can occur throughout the production of creamy cream cheese and indicates the means to their minimization or elimination. The analysis of microbiological hazards showed that in the manufacturing process of the type of cheese mentioned, there are a few critical steps that should be specifically overseen. In order to acquire a high quality product it is important to monitor a quality of raw material, the parameters of pasteurization and souring, temperature of product packaging, storage conditions of the finished product and maintain hygiene throughout the production. The process of heat treatment, which is pasteurization, is a critical step (critical control points - CCP) for the whole process. Monitoring this stage and consistent adherence to Operational Pre-Condition Programs at the thermisation and centrifuging and later packaging, guarantees a safe product and its long shelf life.

Billions of people in the world are at risk of getting unsafe food. There is an urgent need to improve efficiency and effectiveness of food supply chains. The global population is expected to reach at least 9 billion by the year 2050, requiring up to 70% more food than nowadays and demanding food production and distribution to become much more sustainable. Today, food safety is a worldwide concern due to a number of food safety scandals. As supply chains become more globalized and complex, the ability to track and trace products from fork to farm becomes more difficult but remains equally important. Good traceability may minimize the production and distribution of unsafe or poor quality products. It allows targeting the product affected by a food safety problem, minimizing disruption to trade and any potential public health risks. The objective of this paper is therefore to conduct a comprehensive analysis of traceability methods and technologies in food supply chains.

The present article consists in an assessment of the integrated management system on the example of Baldino Artstore Company which produces natural ice-cream. Baldino Artstore is a young company founded in 2015, located in Wroclaw in Krakowska Street. The company produces ice-cream and sherbets which are delivered to five shops in Wrocław and one in Nysa. The company employs 60 workers; during the summer season the number of employees doubles. Baldino is frequently referred to as “manufacture” because all goods they produce are hand-crafted, with the aid of modern and automatized devices. Baldino - cream and sherbets are made of natural ingredients and fresh products from a wide range of raw materials, from sweet to salty. The management system which operates in the company integrates various subsystems and facilitates an advanced management of quality, environment and work hygiene, fulfilling all requirements of food safety management for food producers, in accordance with the Regulation (EC) No 852/2004 of the European Parlament and of the Council of 29 April 2004 on the hygiene of foodstuffs. Each production stage is subject to internal control, beginning with the preparation of mixtures, pasteurization, filtering, maturing, freezing, up to the final stage of packaging. The norms functioning in the company include PN-EN ISO 9001 and PN-EN ISO 22000 (PN ISO 9000:2001. System Zarządzania Jakością – Podstawy i Terminologia; Wymagania) (1,2) the means of a survey among the company’s employees. The questions asked included: the employees’ awareness of systems functioning in Baldino Artstore, depending on the position a particular employee holds in the company; the employees’ opinion on the advantages of the integrated management system, as well as its drawbacks. The employees who too and categorised into following groups: up to 6 months, between 7 and 12 months, and over 12 months. The article presents a detailed discussion of the employees’ answers and the implications of what the results reveal.

The practical implementation of hazard analysis and critical control point (HACCP) and in particular the definition of the critical control points (CCPs) in the food industry is usually a complex structured task. This is particularly the case of food enterprise, where quality/safety manager ability, knowledge of the production processes and ‘‘sensitiveness’’ is usually the discriminate for the proper identification and prioritization of risks. The same applies for the definition of causes which may lead to food safety hazards. This paper addresses the issues of how quality/safety managers can objectively and automatically implement the HACCP principles of hazard analysis in the application of HACCP, which is the identification of risk priorities and of the related CCPs. The proposed methodology combines decision tree analysis approach for the analytical decomposition of the relevant steps in the manufacturing process of ice cream.
