Opis:
Dietary fibers and phenolic acids are recognized for their various health benefits; thus, cellulose was selected as a carrier polymer of phenolic acids, including gallic acid and caffeic acid. Dried cellulose particles were prepared through the complexation of different amounts of cellulose (2.5, 5, 7.5 and 10%, w/v) with a constant amount of phenolic acids. Additionally, the complexation time was 15 or 60 min with the goal to determine an impact of the duration of complexation on the adsorption of phenolic acids onto cellulose. The prepared particles were stored at ambient temperature for 12 months to assess their storage stability. Cellulose particles were assessed for the amount of adsorbed phenolic acids and antioxidant activities. For both phenolic acids, the same correlation was established, i.e., reduction of adsorption of phenolic acids occurred with the increase of cellulose amount during complexation. The duration of complexation was not a significant factor in the adsorption of phenolic acids. Antioxidant activity generally followed the trend that was obtained for the amount of adsorbed phenolic acids. Comparing both phenolic acids, cellulose had a higher affinity for caffeic acid (4.665 g/kg) than for gallic acid (3.399 g/kg). However, greater stability of gallic acid/cellulose particles was observed throughout the storage. After storage, the content of gallic acid in cellulose particles slightly decreased (up to 3%), while that of caffeic acid decreased from 10 to 20%. The complexation of phenolic acids with cellulose was proven by recording infrared spectra. Formulated cellulose particles can be a valuable tool for the preparation of plant-based functional additives which can be used for the enrichment of products with phenolic acids in order to improve their antioxidant potential and stability.

The aim of this study was to evaluate the possibility of using insect flour for sponge cake supplementation. Consumer acceptance, chemical composition, textural properties, and microbiological characteristics were determined. The addition of mealworm flour significantly increased the content of nutrients, especially protein, ash, lipid, and dietary fiber. Mealworm flour influenced the color parameters as well as textural properties. The fatty acid profile was dominated by monounsaturated fatty acids, ranging from 9.72 g/100 g for wheat flour sponge cake to 41.82 g/100 g for sponge cake with 20% addition of mealworm flour. The amino acid profile of mealworm flour was characterized by a significantly higher content of essential amino acids compared to wheat flour and sponge cakes. Sponge cake supplementation resulted in a good nutritional value of protein except for lysine which was the limiting amino acid in all samples. However, the limiting amino acid index was 63.04-63.10% compared to 30.38% for the mealworm and wheat sponge cake, respectively. The presence of insect flour reduced the organoleptic properties of the obtained sponge cakes, regardless of its quantity. The addition of mealworm flour contributed to a significant reduction in the hardness and fracturability of the sponge cakes on the baking day and during the 30-day storage. Insect flour addition did not reduce the microbiological safety of the final product. The study results indicate the possibility of using mealworm flour in the production of confectionery products.

Opis:
Lactic acid (LA) fermentation of plant-based products is a commonly used process all over the world. Recently, except for extending the shelf-life of food and improving its palatability, the popularity of fermented food increased because of their nutritional and health-promoting quality. In this review, the existing knowledge about the effects of LA fermentation in different types of plant-based food matrices on their nutritive and health-promoting potential is presented and discussed based on the most recent studies. Furthermore, the toxicological and unfavorable effects are addressed. This review shows that although the biotransformation of several nutrients and bioactive compounds and the strain-dependent properties need more in-depth elucidation in several matrices, the recently published studies proved that LA-fermented cereals, fruits, vegetables, legumes, and seaweeds are good sources of health-promoting molecules. The obtained products offer a good alternative for a growing number of vegans, vegetarians, and flexitarians, who look for the plant-based, healthy alternatives. However, still more clinical trials evaluating the effect of their consumption on the human health are in demand.

Interactions between phenolics and dietary fibers, such as β-glucan, are important for the bioactivities of phenolics. However, interactions between aronia phenolics and β-glucan in the digestion process, both promoted for their health benefits, have not been studied. The aim was to study the interactions between aronia phenolics and β-glucan in an in vitro simulated digestion and in the adsorption process. After extracting aronia phenolics with chemically- and enzymatically-assisted extraction, and characterizing the phenolics, the aronia extract was subjected to simulated oral, gastric, and intestinal digestion without or with β-glucan. Flavonol release increased throughout oral, gastric, and intestinal digestion, while the recovery of phenolic acids and anthocyanins after an increase in the gastric phase, decreased in the intestinal phase. β-Glucan entrapped phenolics, lowering the quantities of recovered phenolics. It also adsorbed aronia phenolics at pH 1.5, 3.0, and 7.0. In comparison to 15 and 30 mg/L concentrations of β-glucan, a solution with the lower concentration (15 mg/L) allowed for the entrapment of the higher quantity of phenolics and had high adsorption capacity. Entrapment of aronia phenolics by β-glucan is important for the bioaccessibility and concentration of phenolics that reach the lower parts of the digestive tract which depends on β-glucan concentration.

Opis:
The trans fatty acids in milk fat from the indoor feeding ( March, April) and the pasture feeding period (May) were determined. An argentation thin layer chromatography (Ag-TLC) and gas liquid chromatography (GLC) on a polar capillary column (CP Sil 88) were used.The content of trans fatty acids in milk fat showed considerable seasonal variations. The trans 18:1 content for the pasture period was 5.73 g/100 g milk fat (MF) and only 1.83 g/100 g MF for the indoor feeding period. About one-half of trans 18:1 isomers in the samples from the indoor feeding period and more than 60% in the samples from May was trans-11 18:1 acid. The level of two trans 18:2 isomers (cis-trans and trans-cis) was about 4 times higher (0.81 g/100 g MF) in the pasture feeding period than in the indoor feeding period (0.18 g/100 g MF).
Przedmiotem badań byla zawartość kwasów tłuszczowych trans w tłuszczu mleka z okresu żywienia oborowego (marzec, kwiecień) i okresu żywienia pastwiskowego (maj). Oznaczenia przeprowadzano metodą chromatografii gazowej (GLC) na polarnej kolumnie kapilarnej (CP Sil 88) w połączeniu z metodą chromatografii cienkowarstwowej z azotanem srebra (Ag-TLC). Zawartość izomerów trans w tłuszczu mleka wykazywała znaczne wahania sezonowe. W okresie żywienia oborowego łączna zawartość izomerów trans 18:1 wynosiła 1,83 g/100 g tłuszczu, a w okresie żywienia pastwiskowego 5,73 g/100 g (tab. 1). Około 50% izomerów trans w tłuszczu z okresu żywienia oborowego i ponad 60% w tłuszczu mleka uzyskanego w maju stanowił izomer trans-11 18:1 (tab. 2). Zawartość izomerów trans kwasu 18:2 (cis-trans i trans-cis) była ponad czterokrotnie wyższa w tłuszczu mleka z okresu żywienia pastwiskowego (0,81 g/100 g tłuszczu) w porównaniu z tłuszczem mleka z okresu żywienia oborowego (tab. 4).

Opis:
Abeliophyllum distichum Nakai, an ornamental plant, contains a wide range of phytochemicals having pharmaceutical properties. The use of different plant-based extracts for the enhancement of yield and/or quality of soybean sprouts, one of the most inexpensive but nutritious food products, is common. The objective of this study was to examine the effect of A. distichum flower extract (ADE) on the yield and nutritional value of soybean sprouts. Soybean seeds were soaked in ADE solutions with concentrations (w/v) of 0.5% (ADE-0.5), 1% (ADE-1), 3% (ADE-3), and 5% (ADE-5). The effect of ADE concentration on the yield and different nutrient components varied. The highest soybean sprout yield and vitamin C content were found with ADE-3. The most abundant essential amino acid content was detected in ADE-1, whereas the greatest amounts of total isoflavones and total minerals were determined in ADE-5 and the ADE-untreated control, respectively. Overall results of yield, color, and contents of vitamin C, amino acids, and isoflavones suggest that 1% or 3% of A. distichum extract could be an optimum concentration to soak the soybean seeds for higher sprout yield and nutrient content.

Opis:
Aside from the possible health benefit of dietary consumption of glucosamine (GlcN), studies have also reported its flavour enhancing properties in varying food products. However, the impact of its inclusion on other quality attributes of meat products has been under-assessed. The present study examined the effect of the addition of ascorbic acid (0.1%) and varying levels of GlcN (0.75, 1.5 and 3.0%) on colour stability, textural as well as sensory attributes of beef burger. Except for L* (lightness) value, significant interaction (p<0.01) between storage time and added ingredient was observed for all colour parameters (a*; redness, b*; yellowness, chroma, and hue angle) in beef burger. Generally, although ascorbic acid preserved the colour attributes of beef burgers during storage, addition of GlcN resulted in the deterioration of these colour parameters. Whereas the present result did not confirm any flavour enhancing attributes of GlcN compared to control, GlcN improved beef burger’s yield and reduced product cook loss. However, level of GlcN above 1.5% resulted in significant flavour and textural deterioration (p<0.05), leading to decline in consumer acceptability of beef burger. This study showed that a moderate level of glucosamine could be used in meat products as a functional ingredient with some additional technological benefits and limited impact on sensory attributes. Ascorbic acid adequately protected the colour of beef burger during refrigerated storage.

Opis:
The effects of culture conditions (pH 4.0-5.0, 25-35°C, 48-96 h) on cell growth, lipid accumulation and lipid composition (fatty acids, mono-, di-, and triacylglycerols) are reported for Mortierella ramanniana var. angulispora IFO 8187 cultivated in shake flask in glucose medium. The highest yield of biomass (22.4 g/L), lipids (3.9 g/L) and y-C18:3 (178.1 mg/L or 8.8 mg/g dry cell weight) was observed at pH 4.5 and 30°C after 96 h of cultivation. The percentage of fatty acids in the oil changed upon the pH, cultivation time, and to a minor extent upon the growth temperature. The highest variations were observed for the dominating fatty acids: C18:1 (35.0%-45.3%), C16:0 (26.5%-32.4%), C18:2 (8.0%-13.7%) and for y-C18:3 (4.1%-8.2%). Among the lipid classes, triacylglycerols (63.5%-72.7%) dominated followed by free fatty acids (14.5%-15.3%). The percentage of monoacylglycerols increased about 2-fold (9.1%-20.0%) and that of diacylglycerols decreased about 3-fold (3.6%-1.2%) during the last 24 h of cultivation. C18:l and C16:0 dominated in all the lipid classes. The characteristic fatty acids in triacylglycerols were y-C18:3, C20:0, C20:1 and C22:0.
W celu sprawdzenia uzdolnień do syntezy kwasów tłuszczowych, w tym zwłaszcza kwasu y-linolenowego (y-C18:3), badano wpływ pH (4,0-5,0), temperatury (25°C-35°C) i czasu hodowli (48-96 h) grzyba strzępkowego Mortierella ramanniana var. angulispora IFO 8187 na wzrost i produkcję tłuszczu podczas hodowli wstrząsanych w pożywce z glukozą. Największą wydajność biomasy (22,4 g/L), tłuszczu (3,3 g/L) i kwasu y-C18:3 (178,1 mg/L tj. 8,8 mg/g suchej biomasy) stwierdzono po 96 h hodowli w pH 4,5 i temp. 30°C (rys. 1, 2). Zmiany procentowego udziału kwasów tłuszczowych w tłuszczu były zależne od pH i czasu hodowli, a w mniejszym stopniu od temperatury (tab. 1). Największym wahaniom ulegała zawartość kwasów tłuszczowych dominujących w tłuszczu tj. C18: (35.0-45,3%), C16:0 (26,5-32,4%), C18:2 (8,0-13,7%) i y-C18:3 (4,1-8,2%) (tab. 1). Frakcyjny skład tłuszczu wykazywał dominację triacylogliceroli (63,5-72,7%) i wolnych kwasów tłuszczowych (14,5-15,3%) (tab. 2). Udział monoacylogliceroli zwiększył się około dwukrotnie (9,1-20,0%), a diacylogliceroli zmniejszył się trzykrotnie (3,6-1,2%) w czasie ostatnich 24 h hodowli. Dominującymi kwasami tłuszczowymi wszystkich frakcji były C18:1 i C16:0 (tab. 3). Frakcja triacylogliceroli charakteryzowała się udziałem kwasu y-C18:3, C20:0, C20:1 i C22:0.

Quantitative descriptive analysis, consumer acceptability as well as physicochemical characteristics were employed to analyse the effect of ground chia seeds on the texture and quality of wheat bread. Chia seed oil changes and its impact on selected characteristics were determined. The share of chia seeds did not contribute to bread quality deterioration. The addition of 7.5% chia seeds significantly reduced consumer acceptance as well as contributed to the development of undesirable features in the sensory profile, including fatty, rancid, and off-flavour. The share of chia seeds in an amount not exceeding 5% did not deteriorate the overall quality of bread. The composition of fatty acids of bread with chia seeds, especially with their 5 and 7.5% addition, could be valuable from the nutritional point of view. The fatty acid profile of bread with 5 and 7.5% chia seeds was characterised by over 50% higher polyunsaturated fatty acids to saturated fatty acids ratio compared to wheat bread. The n-6/n-3 ratio in the fatty acid profile of wheat bread was 18.77, while in the fatty acid profile of chia seed bread it ranged from 1.42 to 0.67. Oil extracted from bread exhibited better quality features as compared to oil extracted from chia seeds and subjected to the oxidative stability test.
