The aim of the study was to evaluate the impact of different levels of agricultural technology on the content of ash and minerals in grain of 8 spring barley cultivars. A two-factor field experiment was conducted in 2010-2012, at the Institute of Cultivation and Production of Malopolska Plant Growing Company, Polanowice near Krakow. The first factor was composed of two levels of agricultural technology: A1 (10/20/50 NPK kg ha-1) and A2 (additional N fertilisation in an amount of 20 kg ha-1 and an application of the fungicides Amistar 250 EC+ Tilt Turbo used in doses 0.6+0.6 L ha-1 at the shooting phase and the earing phase, respectively, as well as the growth regulator Cerone 280 SL at a dose of 0.75 L ha-1 applied in the late phase of shooting). The second factor consisted of 8 cultivars of spring barley: Blask, Stratus, Atico, KWS Olof, Nagradowicki, Rubinek, Skarb, and Suweren. Determinations of the ash content were performed by the gravimetric method according to PN - ISO 2171.1994; determinations of Na, K, Ca, Mg, Fe, Zn, Mn were conducted by flame atomic absorption spectrometry (F-AAS), and Cu (PN-EN 14084:2004) was measured by flameless atomic absorption spectrometry (ET-AAS) after mineralisation in a microwave sample preparation system (MarsXpress). The average ash content was significantly differentiated by the year of cultivation, being the highest in 2012. The average identified content of minerals, except iron, depended significantly on a cultivar and, except calcium and zinc, on a year of cultivation. Average concentrations of the majority of minerals (except Na, K and Fe) depended significantly on the applied cultivation technologies, although higher levels of the elements, except Ca, were assessed in barley cultivated traditionally (technological variant A1).

In this study, the content of minerals in silver birch (Betula pendula Roth.) tree saps was tested using atomic absorption spectrometry to evaluate the intraspecies variability. The mean values of zinc (2.79 - 4.49 mg dm-3), sodium (0.66 - 2.76 mg dm-3) and copper (0.02 - 0.19 mg dm-3) for tree saps collected from particular locations did not differ significantly. The mean calcium (77.83 mg dm-3) and magnesium (13.38 mg dm-3) content in the sap from trees growing in a farmyard was significantly higher than in sap from other sites, where calcium ranged between 25.85 and 41.04 mg dm-3 and magnesium varied from 5.98 to 8.00 mg dm-3. Based on the results of tree sap analyses, it can be claimed that mineral content detected in birch saps is low when compared to the dietary standards (RDA, AI), although saps from individual trees can have a copper and zinc content, owing to which birch sap can be considered as a potentially valuable source of these two minerals. However, the prospective health-promoting benefits related to the high content of zinc and copper are not explicit. According to our study, this mineral content is highly variable, both between particular trees in a single location and between distant locations. For example, in the case of copper, one liter of sap collected from neighbouring trees can contain from zero to several dozen percent of the Recommended Dietary Allowances, making it impossible to identity specific nutritional benefits.

Fish meat is a valuable dietary component owing its exceptionally high nutritional value, as it contains high quality protein, fat (including n-3 acids) and a variety of vitamins and minerals. The aim of this study was to determine the content of ash and minerals (macro- and microelements) in three freshwater fish species, and quantitative changes in smoked and marinated products. The research material originated from three species, i.e. common carp (Cyprinus carpio), rainbow trout (Oncorhynchus mykkis) and northern pike (Esox lucius). The following parameters were determined in samples of raw as well as processed fish meat: ash (using the gravimetric method, according to PN-ISO 936:2000) and the minerals Na, K, Ca, Mg, P, Fe, Zn, Mn, Cu (using inductively coupled plasma optical emission spectrometry ICP-OES). The statistical analysis of the results did not show significant differences in the ash content in meat of the three fish species. The ash content in processed fish meat differed significantly from that in raw fish, thus indicating changes in concentrations of the minerals. The differences depended on the applied processing technology. As for the mineral content, the examined fish species achieved high nutritional quality, with the highest content of magnesium, iron and zinc in common carp, potassium and phosphorus in rainbow trout and calcium in pike. The levels of the minerals in processed fish meat differed significantly from those in the raw material, especially in carp products (higher amounts of almost all the determined elements). Smoking as well as marinating resulted in a considerable increase in the sodium contet, and the highest values were obtained for marinated rainbow trout. Monitoring the content of macro- and microelements in fish meat is important for the consumer.

Tree saps were once commonly used in the countries of Northern, Central and Eastern Europe. Although once almost forgotten, their popularity has been growing recently as part of an interest in organic food and traditional medicine. Tree saps, tapped mainly from birch and maple trees, are drunk both fresh and fermented or are used as raw material for the production of food products, e.g. syrups. The aim of this study was to determine the content of inorganic anions in tree saps, as this parameter is often associated with toxicity of plant products. We measured the content of chlorides, nitrates and sulphates in the saps of six tree species with high pressure ion chromatography with the conductometric detection method. We detected the presence of chlorides, nitrates and sulphates in the studied tree saps. The highest concentration of nitrates was in the saps tapped from Norway maple (65.578 mg dm-3) and boxelder (108.313 mg dm-3). On the other hand, the highest concentration of sulphates was detected in the white willow tree saps (112.512 and 35.389 mg dm-3), while the one of chlorides, in the hornbeam tree sap (47.257 mg dm-3) and the Norway maple tree sap (41.143 mg dm-3). The detected content of chlorides, sulphates and nitrates in the tree saps under study does not reach toxic levels. Therefore we conclude that tree saps do not pose any health threat to consumers regarding their content of inorganic ions. Additionally, we observed a high intra- and interspecies variability in the concentration of inorganic anions in saps. This observation should be taken into account while designing any quality monitoring protocol regarding tree saps.

Tree sap has been used for centuries not only as a source of nutrients available in early spring but also as medicinal substance in folk medicine. Traditionally, it was used to treat various conditions, mostly anaemia and chronic fatigue. This study has been designed to establish the content of metallic elements (sodium, potassium, calcium, magnesium, zinc and copper) in sap collected from eight different species (silver birch, downy birch, hornbeam, Norway maple, boxelder maple, black walnut, black alder and white willow) and to identify which sap has mineral content which would be most beneficial for human health. We measured concentrations of calcium, magnesium, sodium, potassium and zinc on an atomic absorption spectrometer equipped with single-element, hollow cathode lamps and an air/acetylene burner. The content of copper was determined using an atomic absorption spectrometer with Zeeman correction equipped with an electrothermal atomizer and argon as inert gas. White willow sap was determined to have the highest concentrations of magnesium, zinc, calcium and potassium. Moreover, this sap contained the lowest concentration of sodium among all the tree species. The sap with the lowest detected concentration of the metallic elements originated from black alder and boxelder. In conclusion, tree sap can be a valuable source of metallic elements, namely copper, zinc and magnesium, in human diet. Tree sap tapped from white willow is the most valuable in terms of its mineral content. Moreover, the most popular sap of sliver birch has proven to be a rich source of magnesium and zinc
